A feedlot demonstration utilizing Encore®, a new longterm implant product, was completed at the Allee Demonstration Farm at Newell, Iowa in 1999. Seventyone steers (697 lbs.) were allotted by weight and hide color and assigned to one of three treatments: 1) Encore® (43.9 mg estradiol = E) on day 0; 2) Encore® plus Component® TS (140 mg trenbolone acetate = ETS0) on day 0; or 3) Encore® on day 0 followed by Component® TS (ETS100) on day 100. Due to wide standard deviation in the weight of steers at the beginning of the demonstration, cattle were harvested in two groups. Approximately half of each treatment group was sorted by visual appraisal as to market readiness. Statistical interactions existed within treatment group between first and second harvest dates, therefore data were split and analyzed accordingly. In the first harvest group, ETS0 steers had higher marbling scores than ETS100 steers, and lower average daily gain than E steers and ETS100 steers. In the second harvest group, ETS0 steers had more fat at the 12th/13 rib than ETS100 steers, but did not differ from E steers. Marbling scores were also higher for ETS0 steers than either ETS100 or E steers in the second harvest group. Pooled data reveal that ETS0 steers had higher marbling scores than ETS100 steers and tended to have higher marbling scores than E steers. First harvest E and ETS100 steers had greater average daily gain than ETS0 steers. In the second harvest group, ETS0 steers had heavier final ending weights than E steers but did not differ from ETS100 steers. Final ending weights, rib eye area, fat thickness at the 12th/13th rib, KPH fat, and calculated yield grades did not differ among treatment groups in the pooled data.

This study was conducted to assess the effect of air-dried Moringa stenopetala leaf (MSL) supplementation on carcass components and meat quality in Arsi-Bale goats. A total of 24 yearling goats with initial body weight of 13.6+/-0.25 kg were randomly divided into four treatments with six goats each. All goats received a basal diet of natural grass hay ad libitum and 340 g head^(−1) d^(−1) concentrate. The treatment diets contain a control diet without supplementation (T1) and diets supplemented with MSL at a rate of 120 g head^(−1) d^(−1) (T2), 170 g head^(−1) d^(−1) (T3) and 220 g head^(−1) d^(−1) (T4). The results indicated that the average slaughter weight of goats reared on T3 and T4 was 18.2 and 18.3 kg, respectively, being (P<0.05) higher than those of T1 (15.8 kg) and T2 (16.5 kg). Goats fed on T3 and T4 diets had higher (P<0.05) daily weight gain compared with those of T1 and T2. The hot carcass weight in goats reared on T3 and T4 diets was 6.40 and 7.30 kg, respectively, being (P<0.05) higher than those of T1 (4.81 kg) and T2 (5.06 kg). Goats reared on T4 had higher (P<0.05) dressing percentage than those reared in other treatment diets. The rib-eye area in goats reared on T2, T3 and T4 diets was higher (P<0.05) than those of T1. The protein content of the meat in goats reared on T3 and T4 was 24.0 and 26.4%, respectively being significantly higher than those of T1 (19.1%) and T2 (20.1%). In conclusion, the supplementation of MSL to natural grass hay improved the weight gain and carcass parts of Arsi-Bale goats indicating Moringa leaves as alternative protein supplements to poor quality forages.

Correlation between genetic parameters and factors such as backfat thickness (BFT), rib eye area (REA), and body weight (BW) were estimated for Canchim beef cattle raised in natural pastures of Brazil. Data from 1648 animals were analyzed using multi-trait (BFT, REA, and BW) animal models by the Bayesian approach. This model included the effects of contemporary group, age, and individual heterozygosity as covariates. In addition, direct additive genetic and random residual effects were also analyzed. Heritability estimated for BFT (0.16), REA (0.50), and BW (0.44) indicated their potential for genetic improvements and response to selection processes. Furthermore, genetic correlations between BW and the remaining traits were high (P > 0.50), suggesting that selection for BW could improve REA and BFT. On the other hand, genetic correlation between BFT and REA was low (P = 0.39 ± 0.17), and included considerable variations, suggesting that these traits can be jointly included as selection criteria without influencing each other. We found that REA and BFT responded to the selection processes, as measured by ultrasound. Therefore, selection for yearling weight results in changes in REA and BFT.

Forty one young bulls of herds selected for 378 day's weight (W378), born in 1996, were finished on pastures of Panicum Maximum (Jacq.), Panicum Maximum (Jaq) cv. Tanzania 1 and Brachiaria brizantha (Hoschst) Stapf cv. Marandu at the Sertaozinho Experimental Station, São Paulo State, Brazil. The samples, representing the W378 mean for each herd, were composed by 11 Nellore Selection (NeS) and by 10 of each one of the groups Nelore Control (NeC), Guzera Selection (GuS) and Caracu (Ca). The slaughter was carried out when the animals were 824 days older, with a body condition score averaging 7.6, in a 1-9 scale. The minimum and maximum adjusted means for the main traits, including all groups, were: average weight daily gain, 406 (NeC) and 501 g (NeS); slaughter weight (SW), 446.8 (NeC) and 544.3 kg (NeS); carcass weight (CW), 249.8 (NeC) and 309.7 kg (NeS); dressing percentage (DP), 54.0 (GuS) and 56.3% (NeC and NeS). In the 9(th) - 11(th) rib section: muscle, 59.6 (NeC) and 65.2% (Ca); fat, 15.6 (Ca) and 21.4% (NeC); bone, 18.9 (NeC) and 20.2% (GuS); fat thickness (FT), 2.0 (Ca) and 4.2 mm (NeC); loin eye area, 65.6 (NeC) and 71.1 cm(2) (NeS and Ca); Warner-Bratzler shear force (SF), 4.5 (Ca) and 6.6 kg (GuS) and total cooking losses (TCL), 22.5 (NeC) and 24.9% (GuS). The selection for weight promoted higher SW and CW in the NeS group, without changing the DP, the physical composition of the rib, SF and TCL in the meat. However, there was lower FT compared to NeC. The GuS animals had intermediates SW and CW, compared to NeS and Ca and lower DP. The Ca animals presented higher muscle percentage, in the rib section, and also higher meat tenderness compared to the meat of the Zebu animals.

In secondary steelmaking, the enhancement of the reaction rate in the low carbon period during the decarburization of steel is considered the most effective method to produce ultralow carbon steel. In a previous study, it was revealed that the surface reaction is dominant during the final stage of the actual refining process. In order to improve the surface reaction rate, it is necessary to enlarge the reaction region, which is usually achieved by increasing the plume eye area. In this study, water model experiments were carried out to estimate the influence of bottom stirring conditions on the gas-liquid reaction rate; for this purpose, the deoxidation rate during the bottom bubbling process was measured. Five types of nozzle configurations were used to study the effect of the plume eye area on the reaction rate at various gas flow rates. The results reveal that the surface reaction rate is influenced by the gas flow rate and the plume eye area. An empirical correlation was developed for the reaction rate and the plume eye area. This correlation was applied to estimate the gas-liquid reaction rate mat the bath surface.

[EN]Most of the information indicating ageing improves tenderness has been collected on the loin and rib-eye muscles over relatively short ageing times, assuming that all muscles will react similarly. In the present study, the effect of extended ageing times on instrumental texture (56 d) and sensory characteristics (42 d) of six different beef sub-primals [striploin (SL), inside round (IR), outside round (OR), eye of round (ER), blade eye (BE) and chuck tender (CT)] was studied. The effects of two ageing temperatures (1and 58C) were also compared. In general, ageing increased tenderness (P<0.05) of SL, BE, ER and CT sub-primals, although BE shear force increased after 42 d of ageing. On the other hand, ageing had no effect on IR tenderness (P<0.05) and resulted in a decrease in tenderness of OR (P<0.05) until day 35, with a later increase after 42 d of ageing. Increasing ageing temperature (58C) had limited effect on tenderness, but ageing time and temperature increases led to lower flavour and higher off-flavour intensity (P<0.05) of the studied sub-primals. These results suggest that cutspecific maximum ageing times and rigid adherence to temperature maximums would be of benefit to optimize postslaughter processes and meat quality

L’aptitude à reconnaitre les expressions faciales des autres est cruciale au succès des interactions sociales. L’information visuelle nécessaire à la catégorisation des expressions faciales d’émotions de base présentées de manière statique est relativement bien connue. Toutefois, l’information utilisée pour discriminer toutes les expressions faciales de base entre elle demeure encore peu connue, et ce autant pour les expressions statiques que dynamiques. Plusieurs chercheurs assument que la région des yeux est particulièrement importante pour arriver à « lire » les émotions des autres. Le premier article de cette thèse vise à caractériser l’information utilisée par le système visuel pour discriminer toutes les expressions faciales de base entre elles, et à vérifier l’hypothèse selon laquelle la région des yeux est cruciale pour cette tâche. La méthode des Bulles (Gosselin & Schyns, 2001) est utilisée avec des expressions faciales statiques (Exp. 1) et dynamiques (Exp. 2) afin de trouver quelles régions faciales sont utilisées (Exps. 1 et 2), ainsi que l’ordre temporel dans lequel elles sont utilisées (Exp. 2). Les résultats indiquent que, contrairement à la croyance susmentionnée, la région de la bouche est significativement plus utile que la région des yeux pour discriminer les expressions faciales de base. Malgré ce rôle prépondérant de la bouche, c’est toute de même la région des yeux qui est sous-utilisée chez plusieurs populations cliniques souffrant de difficultés à reconnaitre les expressions faciales. Cette observation pourrait suggérer que l’utilisation de la région des yeux varie en fonction de l’habileté pour cette tâche. Le deuxième article de cette thèse vise donc à vérifier comment les différences individuelles en reconnaissance d’expressions faciales sont reliées aux stratégies d’extraction de l’information visuelle pour cette tâche. Les résultats révèlent une corrélation positive entre l’utilisation de la région de la bouche et l’habileté, suggérant la présence de différences qualitatives entre la stratégie des patients et celle des normaux. De plus, une corrélation positive est retrouvée entre l’utilisation de l’œil gauche et l’habileté des participants, mais aucune corrélation n’est retrouvée entre l’utilisation de l’œil droit et l’habileté. Ces résultats indiquent que la stratégie des meilleurs participants ne se distingue pas de celle des moins bons participants simplement par une meilleure utilisation de l’information disponible dans le stimulus : des différences qualitatives semblent exister même au sein des stratégies des participants normaux.

Para estudar o efeito da suplementação da dieta sobre o desempenho de novilhas na fase de terminação mantidas em pastagem de capim-marandu sob lotação intermitente, durante a estação chuvosa, foram utilizadas 20 novilhas cruzadas (¼ Nelore, ¼ Santa Gertrudes, ½ Braunvieh) com peso corporal médio de 300 kg e 22 meses de idade. Os tratamentos constituíram-se de dois tipos de suplementação: sal mineral (SM) ad libtum e suplemento protéico energético (SPE) fornecido a 0,3% do peso corporal (PC) por dia com avaliações realizadas a cada 28 dias, no período entre dezembro de 2006 e março de 2007 Foram avaliados o desempenho animal e as características de carcaça medidas por ultrassom. Observou-se o efeito (P=0,057) da suplementação sobre o ganho de peso dos animais suplementados, 0,700 kg/dia e 0,587 kg/dia dos animais que receberam sal-mineral. Houve efeito da suplementação na área de olho de lombo e profundidade do músculo Gluteus medius. As demais características analisadas pela técnica de ultrassom não diferiram entre si em função da suplementação. A suplementação protéica energética da dieta permite ganhos adicionais, o que reflete em aumento da deposição de músculo de novilhas mantidas em pastagem de capim-marandu durante o período das águas.
