Dehydration of food materials requires water removal from it. This removal of moisture prevents the growth and reproduction of microorganisms that cause decay and minimizes many of the moisture-driven deterioration reactions (Brennan, 1994). However, during food drying, many other changes occur simultaneously resulting in a modified overall quality (Kompany et al., 1993). Among the physical attributes of dried food material porosity and microstructure are the important ones that can dominant other quality of dried foods (Aguilera et al., 2000). In addition, this two concerned quality attributes affected by process conditions, material components and raw structure of food stuff. In this work, temperature moisture distribution within food materials during microwave drying will be taken into consideration to observe its participation on the microstructure and porosity of the finished product. Apple is the selective materials for this work. Generally, most of the food materials are found in non-uniformed moisture contained condition. To develop non uniform temperature distribution, food materials have been dried in a microwave oven with different power levels (Chua et al., 2000). First of all, temperature and moisture model is simulated by COMSOL Multiphysics. Later on, digital imaging camera and Image Pro Premier software have been deployed to observation moisture distribution and thermal imaging camera for temperature distribution. Finally, Microstructure and porosity of the food materials are obtained from scanning electron microscope and porosity measuring devices respectively . Moisture distribution and temperature during drying influence the microstructure and porosity significantly. Specially, High temperature and moisture contained regions show less porosity and more rupture. These findings support other literatures of Halder et al. (2011) and Rahman et al (1990). On the other hand, low temperature and moisture regions depict uniform microstructure and high porosity. This work therefore assists in better understanding of the role of moisture and temperature distribution to a prediction of micro structure and porosity of dried food materials.

Further miniaturization of magnetic and electronic devices demands thin films of advanced nanomaterials with unique properties. Spinel ferrites have been studied extensively owing to their interesting magnetic and electrical properties coupled with stability against oxidation. Being an important ferrospinel, zinc ferrite has wide applications in the biological (MRI) and electronics (RF-CMOS) arenas. The performance of an oxide like ZnFe2O4 depends on stoichiometry (defect structure), and technological applications require thin films of high density, low porosity and controlled microstructure, which depend on the preparation process. While there are many methods for the synthesis of polycrystalline ZnFe2O4 powder, few methods exist for the deposition of its thin films, where prolonged processing at elevated temperature is not required. We report a novel, microwave-assisted, low temperature (<100°C) deposition process that is conducted in the liquid medium, developed for obtaining high quality, polycrystalline ZnFe2O4 thin films on technologically important substrates like Si(100). An environment-friendly solvent (ethanol) and non-hazardous oxide precursors (β-diketonates of Zn and Fe in 1:2 molar ratio), forming a solution together, is subjected to irradiation in a domestic microwave oven (2.45 GHz) for a few minutes, leading to reactions which result in the deposition of ZnFe2O4 films on Si (100) substrates suspended in the solution. Selected surfactants added to the reactant solution in optimum concentration can be used to control film microstructure. The nominal temperature of the irradiated solution, i.e., film deposition temperature, seldom exceeds 100°C, thus sharply lowering the thermal budget. Surface roughness and uniformity of large area depositions (50x50 mm2) are controlled by tweaking the concentration of the mother solution. Thickness of the films thus grown on Si (100) within 5 min of microwave irradiation can be as high as several microns. The present process, not requiring a vacuum system, carries a very low thermal budget and, together with a proper choice of solvents, is compatible with CMOS integration. This novel solution-based process for depositing highly resistive, adherent, smooth ferrimagnetic films on Si (100) is promising to RF engineers for the fabrication of passive circuit components. It is readily extended to a wide variety of functional oxide films.

Raw fillets of saithe, red fish and salmon were stored over a period of 2 days at 6 to 9 °C before preparing by frying, deep-frying or cooking in a microwave oven. The raw and prepared fillets were tested for bacterial loads, TVBN (total volatile basic nitrogene) and for the sensorial status. It was shown that saithe and red fish started more rapidly to spoil under these conditions than salmon. The fillets showed growing bacterial populations and produced high amounts of TVBN. Sensory changes, especially in flavour and odour, took place but the scores kept in an acceptable range. The investigations indicated that it is possible to store raw fillets for 1 or even 2 days in refrigerator but due to the loss of quality it is recommended to use only really fresh fillets stored in very clean containers. It was further shown that it is very important to heat fillets sufficiently during cooking or frying in order to destroy all microorganisms and to obtain safe and stable meals.

O presente trabalho teve como objetivo principal comparar dois métodos de extração de elementos-traço em sedimentos que são assistidos por radiação micro-ondas. Foram coletadas amostras de sedimentos superficiais em um manguezal localizado na baía da Ilha Grande e em três manguezais localizados na baía de Sepetiba, RJ. As amostras de sedimentos coletadas foram secas, destorroadas e peneiradas. Sub-amostras foram submetidas a análises de caracterização física e química. Os métodos de extração de elementos-traço comparados foram o EPA-3051A e o método água régia assistido por micro-ondas. Os elementos-traço analisados foram: Cd, Cr, Cu, Ni, Pb e Zn. As concentrações dos elementos-traço nos extratos produzidos foram determinadas por FAAS (Espectrometria de absorção atômica com chama). Foram encontradas nos sedimentos dos manguezais estudados concentrações acima dos níveis estabelecidos pela Resolução CONAMA 344/2004 para os elementos-traço: Cd, Ni, Pb e Zn. Os resultados mostraram que as capacidades de extração de elementos-traço dos métodos EPA-3051A e água régia assistido por micro-ondas variam em função das características físico-químicas dos sedimentos. A análise estatística pela técnica de regressão linear simples mostrou que as duas metodologias são estatisticamente similares apenas para o Cr e os valores dos coeficientes de determinação (R2) obtidos obedeceram à seqüência: Cu > Pb > Zn > Ni > Cr > Cd. Na análise pela técnica estatística de regressão linear múltipla ocorreram melhorias estatisticamente significativas nos coeficientes de determinação quando foram incluídas as seguintes variáveis independentes: potencial redox e fósforo total para o Cd, argila para o Cr, areia para o Ni e fósforo total para o Pb e para o Zn

Nos últimos anos, a irradiação por micro-ondas tem sido cada vez mais usada na síntese de varias moléculas orgânicas, devido a uma série de vantagens que essa nova tecnologia apresenta. Até o momento, existem poucos estudos sobre polimerizações assistidas por micro-ondas e menos ainda sobre a modificação de polímeros usando essa nova fonte de energia. Polímeros heterocíclicos contendo anéis azóicos, como o tetrazol possuem interesse acadêmico e comercial devido as suas várias aplicações. Nesta Dissertação foi estuda a modificação química da poliacrilonitrila pela incorporação em sua cadeia polimérica de 10% de grupos tetrazol empregando-se a irradiação de micro-ondas e o método convencional (térmico). Foram utilizados um forno de micro-ondas doméstico e um reator de micro-ondas monomodo nas reações assistidas por micro-ondas. As reações em reator foram realizadas em vaso aberto, em solução (DMF) ou em massa, sendo variado o tempo e a temperatura reacional, bem como a potência do equipamento. Os copolímeros produzidos foram caracterizados por espectroscopia na região do infravermelho (FTIR) e os teores de grupos tetrazol incorporados na PAN foram determinados por titulometria de neutralização. A poliacrilonitrila foi modificada quimicamente com sucesso tanto no forno doméstico quanto no reator de micro-ondas, como foi verificado pela sua análise de FTIR. Pela determinação do grau de incorporação de grupos tetrazol nos polímeros concluiu-se que, para a reação em solução, nas temperaturas mais elevas, bem como em uma potência maior, o teor de heterocíclico incorporado no polímero está muito próximo do valor obtido pelo método convencional. Já as reações conduzidas em massa apresentaram graus de incorporação inferiores as das feitas em solução.

Polímeros contendo anéis heterocíclicos, como o imidazol, possuem um grande interesse comercial e científico devido ao seu emprego em diversas áreas. Esses polímeros podem ser obtidos pela modificação química de polímeros comerciais como a poliacrilonitrila. Geralmente, esse tipo de reação é realizada por aquecimento convencional (térmico). Entretanto, mais recentemente, a irradiação por micro-ondas também começou a ser utilizada como fonte de energia para esse fim. Nesta Dissertação foi estudada, comparativamente, a modificação química da poliacrilonitrila comercial com etilenodiamina sob ativação de P2S5, empregando como fonte de aquecimento: o método convencional (térmico) e irradiação de micro-ondas, geradas em forno de micro-ondas doméstico e em reator de micro-ondas (Discover CEM), para produzir o copolímero de poliacrilonitrila e 2-vinil-imidazol. As reações foram efetuadas em diferentes tempos reacionais, em diferentes temperaturas no reator de micro-ondas e em diferentes potências do forno doméstico. Os copolímeros produzidos foram caracterizados por espectroscopia na região do infravermelho (FTIR) e por ressonância magnética de núcleo de hidrogênio (NMR-1H). A poliacrilonitrila foi modificada quimicamente com sucesso em todos os métodos empregados, como foi verificado pela sua análise de FTIR. Os melhores resultados obtidos foram: em 48 h de aquecimento térmico, 20 min de irradiação de micro-ondas em forno doméstico e 20 min a 80C em reator de micro-ondas, no entanto todas as análises indicaram uma derivatização abaixo de 10 %

Nesta dissertação foram avaliadas metodologias para reação de amidação de amostras comerciais de poli (metilmetacrilato), PMMA, com alilamina e benzilamina. A reação foi executada em tubo selado sob aquecimento a 90 C por sete dias, sem que nenhuma quantidade mensurável de amida pudesse ser detectada por FTIR e RMN. A reação foi reavaliada sob catalise de DBU, 3,4% molar, sem que nenhum resultado positivo obtido. O emprego de DBU associado ao NaCN como co-catalisador mostrou-se eficaz é o PMMA pode ser derivatizado em 30 %, com alilamina, e 13 % com benzilamina, sob as mesmas condições de temperatura e tempo. A analise elementar e o RMN-1H foram conclusivos na quantificação das reações enquanto o FTIR mostrou-se pouco eficaz devido a sobreposições de bandas. A taticidade das amostras comerciais de PMMA e do material produzido pode ser avaliada por RMN. Experimentos exploratórios efetuados em forno de microondas monomodo sob as mesmas relações molares com aquecimento a 120 C por 30 minutos com 80 W de potencia não foram capazes de promover alterações na matriz polimérica

Production of bioethanol through acidic and enzymatic hydrolysis of aquatic Azolla sp., as a new source of bio-mass, has been performed, as a means to control increasing growth and reducing undesirable effects of this plant in Anzali lagoon. After sampling, drying and crushing, Azolla was hydrolyzed, using diluted acid and enzyme. Diluted acid hydrolysis was done using both autoclave and a high-pressure system (Batch Synth® Microwave synthesizer). The effects of temperature and time (in autoclave) and concentration of acid (in both) were compared. Cellubrix®, a ommercial cellulase source, was used for enzymatic hydrolysis process. The amounts of reducing sugars, glucose and furfural, released from hydrolyzate, were measured. To produce alcohol, Sacchromyces cerevisiae (to ferment sixcarbon sugars), Zygowilliopsis californica and Pichia stipitis (to ferment five-carbon and sixcarbon sugars) were used. Maximum amounts of glucose (4.83% w/w) and reducing sugars (14.15% w/w) were obtained using acid hydrolysis in autoclave. In the microwave oven, maximum glucose (5.04% w/w) and reducing sugars (13.27 w/w) were obtained at 180 and 200 °C, respectively. Under these conditions, maximum produced furfural was 1.54 g/L. The difference between amounts of furfural obtained from acid hydrolysis of Azolla in microwave oven compared to autoclave was statistically significant. Amounts of alcohol produced and its yields were 3.99 g/L and 33.13% for S. cerevisiae in 48 hours, 3.73 g/L and 30.45% for Pichia stipites in 48 hours, and 3.73 g/L and 30.45% for Z. californica in 24 hours after inoculation, respectively, with significant differences. Statistical comparison of results showed significant differences (P<0.05) in glucose production, at different conditions. Amounts of reducing sugars and glucose increased after optimization of levels of acid, time, and temperature. The overall optimum released sugar and glucose were obtained with 1.67% (w/v) acid using autoclave. Higher temperatures in microwave oven caused a significant increase (P<0.05) in furfural. Furfural severely inhibits fermentation. Hence, regarding the issues of energy consumption and time, amounts of inhibiting substances and sugar production, autoclave is found to be superior to the high temperature and pressure, generated in microwave oven, for hydrolyzing Azolla. Furthermore, given the amounts of Azolla in Anzali lagoon, it may be recommendable to use this plant as a biomass resource.

Effects of different thawing method i.e. in a refrigerator, in water, at air ambient temperature and in a microwave oven on proximate, chemical (PV, TBA, FFA, TVB-N, SSP, FA), biochemical (pH, WHC,ThL), microbial (total viable, psychrotrophic, coliform, Shewanella and yeast-mould count) and sensory analysis were carried out on frozen whole Caspian sea Kutum (Rutilus frisii kutum) and Rainbow trout (Oncorhynchus mykiss) carcasses. The values of ash, protein, SSP, WHC, PUFA, PUFA/SFA. EPA+DHA/C16:0, pH, and microbial count of thawed samples decreased significantly while fat, PV, TBA, FFA, TVB-N, SFA and MUFA increased compared to the fresh fish (unfrozen) as control samples. Also, sensory evaluation all of thawed samples showed a significant (p<0.05) quality loss compared to the fresh fish as control samples. The lowest chemical and biochemical values as well as microbial growth were determined in water thawed samples. Therefore, based on this study thawing in water is most suitable for frozen whole rainbow trout.

The objective of this work was to study the textural properties of edible films made from sour (acid) whey for food wrapping application. Acid whey is often regarded as a waste product, obtained as a watery effluent in the manufacturing of cottage cheese. In general, owing to its high nutritional value, whey has gained importance as an additive in food manufacturing processes and in health drink formulations. In this work, fresh sour whey was used to make edible films. The proteins in the whey were concentrated by ultrafiltration to reduce the water content. Only natural ingredients such as acid whey and agar were used to form the film under controlled heating (650 W) in a microwave oven. The structural and surface characteristics of the films were tested by a texture analyser and scanning electron micrographs.

El fang biològic es produeix en les plantes de tractament d'aigües residuals urbanes i industrials. El tractament i la gestió dels fangs és un dels problemes més importants en el camp del tractament de les aigües residuals. Aquesta situació es preveu que es veurà agreujada en el futur, per un increment del volum de fang produït associat a l'exigència de nivells més alts de depuració i per l'augment dels nombre d'estacions depuradores en funcionament. D'altre banda, les limitacions que presenten les opcions tradicionals de gestió dels fangs, fa necessari buscar solucions innovadores i efectives per a solucionar el problema que suposa la gestió d'aquests fangs biològics. Els fangs biològics són de naturalesa carbonosa i amb un alt contingut de matèria orgànica. Aquestes característiques, permeten la conversió del fang en un sòlid adsorbent de tipus carbonós. Aquesta conversió ofereix el doble benefici de reduir el volum de fang que ha de ser gestionat i alhora produir un adsorbent amb un cost inferior a la dels adsorbents convencionals (carbons actius comercials). Fins el moment, els tractaments alta temperatura han demostrat la seva efectivitat per du a terme el procés de transformació dels excedents de fang biològic en un sòlid adsorbent carbonós (carbó actiu). Com a alternativa a aquests processos a alta temperatura, es proposa un nou procés d'obtenció d'un sòlid adsorbent carbonós a partir dels excedents de fangs biològics, mitjançant un tractament a baixa temperatura, combinant el tractament per microones amb l'addició d'un reactiu químic (H2SO4). La present tesi analitza el tractament dels excedents de fangs biològics utilitzant un tractament mitjançant microones i l'addició d'àcid sulfúric (H2SO4), al mateix temps analitza la possibilitat d'utilitzar els sòlids adsorbents obtinguts per a millorar la qualitat de les aigües residuals. Paràmetres d'operació com poden ser la quantitat d'àcid sulfúric addicionada al fang, el nivell de potència del forn microones i el temps de tractament, es modificaran per tal de determinar la influència que poden tenir sobre la qualitat del sòlid adsorbent. Un cop determinada la qualitat dels diferent sòlids adsorbents s'avalua la seva capacitat per a l'eliminació de colorant i metalls en fase líquida. Els resultats obtinguts es comparen amb els obtinguts per un carbó actiu derivat de fangs i un carbó actiu comercial.

We report a new procedure to convert the polymer precursor poly(xylylidene tetrahydrothiophenium chloride) (PTHT) into poly(p-phenylenevinylene) (PPV) using microwave irradiation. Spin-coated PTHT films were irradiated at room temperature under ambient conditions in a commercial microwave oven, with varying power from 20W to 100W. Complete conversion was reached within only 5 min of irradiation for powers above 50W, yielding PPV films with absorption and photoluminescence spectra that are practically indistinguishable from the spectra of thermally converted PPV films, which require ca. 2 h of a high temperature (similar to 200 degrees C) thermal treatment. In addition to a much faster conversion procedure, the irradiation with microwaves led to a red shift in the absorption spectrum of a PTHT film, which varied linearly with the time of irradiation. In this present work a method for the determination of Ca, Fe, Ga, Na, Si and Zn in alumina (Al(2)O(3)) by inductively coupled plasma optical emission spectrometry (ICP OES) with axial viewing is presented. Preliminary studies revealed intense aluminum spectral interference over the majority of elements and reaction between aluminum and quartz to form aluminosilicate, reducing drastically the lifetime of the torch. To overcome these problems alumina samples (250 mg) were dissolved with 5 mL HCl + 1.5 mLH(2)SO(4) + 1.5 mL H(2)O in a microwave oven. After complete dissolution the volume was completed to 20 mL and aluminum was precipitated as Al(OH)(3) with NH(3) (by bubbling NH(3) into the solution up to a pH similar to 8, for 10 min). The use of internal standards (Fe/Be, Ga/Dy, Zn/In and Na/Sc) was essential to obtain precise and accurate results. The reliability of the proposed method was checked by analysis of alumina certified reference material (Alumina Reduction Grade-699, NIST). The found concentrations (0.037%w(-1) CaO, 0.013% w w(-1) Fe(2)O(3), 0.012%w w(-1)Ga(2)O(3), 0.49% w w(-1) Na(2)O, 0.014% w w(-1) SiO(2) and 0.013% w w(-1) ZnO) presented no statistical differences compared to the certified values at a 95% confidence level. A method for the multi-elemental determination of metals (Al, Ba, Ca, Cu, Fe, K, Mg, Mn, Sr and Zn), metalloids (B and Si), and non-metals (Cl, P and 5) in the babassu nut and mesocarp, sapucaia nut, coconut pulp, cupuassu pulp and seed, and cashew nut by axially viewed inductively coupled plasma optical emission spectrometry is presented. A diluted oxidant mixture (2 ml HNO(3) + 1 ml H(2)O(2) + 3 ml H(2)O) was used to achieve the complete decomposition of the organic matrix in a closed-vessel microwave oven. The accuracy of the entire proposed method was confirmed by standard reference material analysis (peach leaves-NIST SRM1547). The certified values showed a good agreement at a 95% confidence limit (Student`s t-test). The average RSD for repeatability of calibration solutions measurements were in the range of 1.1-6.7%. Limits of quantification (LOQ = 10 x LOD) were in the level of 0.00072-0.0532 mg/l. The macro and micronutrient ranges in the different nuts and seeds did not exceed the dietary reference intake (DRI), except for Mn in the babassu nut. (C) 2010 Published by Elsevier Ltd.

For the chemical method of synthesis of co-precipitation were produced ferrite powders manganese-cobalt equal stoichiometric formula Mn (1-x) Co (x) Fe2O4, for 0 < x < 1, first reagent element using as the hydroxide ammonium and second time using sodium hydroxide. The obtained powders were calcined at 400 ° C, 650 ° C, 900 ° C and 1150 ° C in a conventional oven type furnace with an air atmosphere for a period of 240 minutes. Other samples were calcined at a temperature of 900 ° C in a controlled atmosphere of argon, to evaluate the possible influence of the atmosphere on the final results the structure and morphology. The samples were also calcined in a microwave oven at 400 ° C and 650 ° C for a period of 45 minutes possible to evaluate the performance of this type of heat treatment furnace. It was successfully tested the ability of this group include isomorphic ferrite with the inclusion of nickel cations in order to evaluate the occurrence of disorder in the crystalline structures and their changes in magnetic characteristics.To identify the structural, morphological, chemical composition and proportions, as well as their magnetic characteristics were performed characterization tests of X-ray diffraction (XRD), scanning electron microscopy (SEM), transmission electron microscopy (TEM), energy dispersive spectroscopy (EDX), thermogravimetric (TG), vibrating sample magnetometry (MAV) and Mössbauer spectroscopy. These tests revealed the occurrence of distortion in the crystal lattice, changes in magnetic response, occurrence of nanosized particles and superparamagnetism
