Apple is a fruit that offers promising prospect for industrialization as it has favorable characteristics for this purpose and can obtain products with good acceptance. In Brazil, approximately 15% of the production is processed into juice, and a portion is exported. Among the fresh fruit and juice, apple adds US$ 30 million annually to the Brazilian foreign exchange earnings. The aim of this study was to characterize, using chemical analysis, concentrated juices, commercial apple juice, nectar, and soft drink. In addition, to compare them with their respective Quality and Identity Standards (PIQ) published by the Ministry of Agriculture, Livestock and Food Supply (MAPA) and Codex Alimentarius. Concentrated juices and commercial beverages were analyzed in triplicate for soluble solids content (Brix), pH, total acidity (AT), and ratio. In concentrated juices, the Total Sugar Reducer (ART) was also assessed. The results obtained in the laboratory were compared with the PIQ and Codex Alimentarius to verify compliance with applicable regulations. Seven concentrate juices, five juices, six nectars, and three apple-flavoured soft drinks were analyzed. The Brix of pulpy and clarified concentrated juices were, respectively, 71.16±1.29 and 40.40±0.57°Brix. In all concentrated juices, the Brix was in accordance with Codex Alimentarius. The Brix and AT in sweetened clarified juices were 11.50±0.14°Brix and 0.18±0.04g of malic acid/100g sample. In pulpy whole juices the values ​​were 11.20±0.70°Brix and 0.30±0.06g of malic acid/100g sample. The values of Brix and AT in apple-flavoured soft drinks were 11.03±0.93°Brix and 0.18±0.04g of malic acid/100ml sample. Commercial juices and soft drinks also presented °Brix and AT in accord with the PIQ established by MAPA. The apple nectars could not be compared with the standards because they are not published by MAPA or Codex Alimentarius. The definition of the PIQ is an important tool for quality control of beverages manufacture in Brazil. Therefore, it is recommended for the control agencies to define the parameters that are not established.

The production of ethanol and sugar from sugarcane juice generate as byproduct, the bagasse. Currently, the bagasse, an industrial lignocellulosic biomass, can be used for production of second-generation ethanol, since when it is submitted to hydrolytic processes generates fermentable sugars. The objective of this study was to produce fungal enzymes capable of hydrolyzing this lignocellulosic biomass to generate glucose. For this, we used the mushroom species Lentinula edodes, Pleurotus ostreatus, Pleurotus eryngii, and Pycnoporus sanguineus as potential sources of laccase, manganese peroxidase and lignin peroxidase enzymes, capable of hydrolyzing the crushed sugarcane. The hydrolysis process was performed with the highest enzymatic activities observed from laccase in L. edodes (39.23 U-mL after 25 day incubation), P. ostreatus (2.5 U U-mL after 27 day incubation), P. sanguineus (80 U-mL after 27 days of incubation) and P. eryngii (16.45 U-mL 15 days incubation). MnP and LiP showed no significant results. The enzymatic hydrolysis of sugarcane bagasse in natura (32,17% hemicellulose, cellulose 52,45% and 10,62% lignin) and bagasse hydrolyzate with 7,0% H2SO4 (0,20% hemicellulose, 68,82% to 25,33% cellulose and lignin) were evaluated for each enzymatic obtained. Compared to others, the enzymes produced by P. sanguineus incubated in sugarcane bagasse showed better efficiency resulting in glucose with an average content of 0,14 g-L. Although the levels of glucose determined in this work were low in relation to the literature, it can be stated that the laccase, manganese peroxidase and lignin peroxidase enzymes demonstrated good hydrolytic potential, especially those produced by the fungus P. sanguineus.

Cassava leaves can be considered an important nutritional source when compared to other commonly consumed vegetables leaves. Cassava leaves have high levels of protein, fiber and minerals, and arestill underexplored due to the lack of information regarding the use of them as afood product, as well as, their use as an industrial raw material. The consumption of cassava leaves in fresh form is impractical due to the presence of cyanide, thereby it is required a pretreatment to be performed to reduce this component. The objective of this study was to produce and characterize the four made with cassava leaves as its chemical composition, color, indices of absorption and water solubility, and pasting properties, aiming to provide information of interest for possible application as an ingredient in the food industry. Cassava leaf flour showed low moisture content (6.6 %)and significant amounts of fiber (30.68 %), protein (23.00 %), and total carbohydrate (22.27%). Drying and milling processes allowed to obtain a flour with a low content of total cyanide (0.3 mg 100g-1 ), and the presence of vitamin C (56.6 mg 100g-1 ) and β –carotene (38 mg 100g- 1 ). The color analysis of cassava leaf flour showed low lightness with, predominantly, green and yellow pigments. The cassava leaf flour presented good solubility (14.85 %) and water absorption (6.87 g gel. g-1 ). Pasting properties showed a low peak of viscosity and a higher final viscosity with a retrogradation tendency, indicating a low capacity of this flour to form gel. The flour of cassava leaves can be a good source of nutrition when used as a food ingredient in soups and pasta. However, it is not indicated to products that require high gel formation.

The application of extrusion technology in the food industry has enabled the development of new commercial products of fast preparation, and maintaining the nutritional characteristics after the process. During this process there are changes in raw material due to the action of temperature, humidity and mechanical friction resulting in a modified product which can be used in various industrial applications. This work aimed to evaluate the effect of the composition of the raw material and operating conditions of the extrusion process on the properties of paste and thermal properties in the development of a functional instant flour of cassava and soybean. The results showed significant effects of all operating parameters on the rheological properties studied. The extruded flours showed no residual gelatinization enthalpy, suggesting that the starch in the samples was gelatinized. The experimental conditions of the smallest percentages of cassava residue (10%) and high soybean flour (25%) mixed with cassava starch, extrusion temperature of 75ºC and low screw speed (170rpm) leads to obtain instant flour with desirable characteristics.

The work Translational aspects in Ma vie ne sait pas nager by Élaine Turgeon approaches the entire translation process of this francophone children's work. The theme choice was due to the interest in deepening the translational knowledge, in addition to performing an analysis of the own translation work done. Thus, the theoretical aspects related to the translation are reported throughout the work, a succinct exhibition of the history of translation, a brief view of the children's editorial market (in the world and more specifically in Brazil), the book theme and author style, and finally, the drawbacks overcome during the realization of the work - based upon the theoretical body of work consulted - and the solution encountered for this. At the end of this same work, some considerations are drawn, as well as some reflections upon the translation realized (with the studied texts attached in the body of work); accompanied by some findings observed concerning the theory

This work evaluates the existing potential in the state of Sao Paulo for the generation of electrical energy using the sugar cane bagasse as fuel. As the bagasse is a by-product of the sugarcane and alcohol industry and it is produced in large scale in the country, mainly in the state of Sao Paulo, it is important to develop researches that aim the best utilization of this input. In order to determine its potential, at first, a study was conducted considering the utilization of the cogeneration, which is a common practice in the plants of the sector. However, it was concluded that the cogeneration could provide a higher quantity of energy if more modern technologies and more efficient processes were used. Another study to estimate the potential considered a system of gasification of the sugar cane bagasse integrated with the combined cycle (BIG/GTCC). It was concluded that this technology can provide a considerable increase in the electrical supply. In this work it was also developed an energetic study based on real data from a plant located in the state of Sao Paulo. A thermodynamic analysis was done in the existing equipment of the cogeneration section of the plant. And another analysis was done considering the implementation of the BIG/GTCC technology to the cogeneration system. Comparing the results of both settings, it was concluded that the utilization of the sugar cane bagasse integrated to a combined cycle increased considerably the efficiency in the generation of electricity of the plant, increasing more than six times its production capacity of electrical energy
