The aim of this study was to understand the current and historic market situation for inland fish and it’s substitutes in order to identify which of the various production opportunities presented by the seasonal tank resource might have greatest relevance for marginal communities in the Dry-zone. The visit highlighted the vital contribution of the inland fisheries sector to provision of basic food security within the uncleared area (farmers report very low consumption frequencies for all other fish or meat protein substitutes). A 30-mile system of Brackish water lagoons which demarcates the cleared and uncleared areas is the main source of retailed fish in the uncleared area. Second in importance is the inland tank fishery, where the bulk of production emanates from 17 major irrigation reservoirs. [PDF contains 29 pages]

Smelt (Osmerus eperlanus L.) from the river Elbe has a long tradition as local food speciality. It is offered baked or fried every year during spring in many restaurants along the river. Information about the composition of the edible part and its changes during fishing season are scarce. In earlier days the fish was mostly sold by local fisherman directly after catch. Today the fish is also offered as ungutted fresh fish in ice on the whole sale market. The freshness of this fish has not been studied. Smelt from the river Elbe is known to contain nematode larvae (Pseudoterranova decipiens) in the muscle meat. Actual quantitative data on the abundance and prevalence in the commercially offered ice stored fish are missing.

The reduction of discards will only be achieved, if more effective methods of catch selection will be developed and used. In principle, the unavoidable by catch of commercial fish should be used for human consumption, independent of the requirements for minimum length and existing catch quotas. The amount of such bycatch should be charged to the total catch quota and preferably be used for processing of fish portions with skin (carcasses with skin), because this kind of processing results in higher yields and nutrional advantages compared to fillet processing. Unfortunately, nowadays, in the German fishery and fish trade this traditional form of supply is only of minor importance because of the predominance of fillets and fillet products. However, cooperation between fishing industry and fish trade and a good advertising of processed fish portions with skin could overcome this problem. In the pelagic fishery of herring, mackerel and other similar pelagic species the bycatch of small sized specimen of these species can be a problem. These small sized fish can principally be processed to traditional fish products, but the processing costs for them are much higher. The prospects for processing of the bycatch into minced fish meat, fish protein concentrate or fish protein hydrolysate are very poor under the existing regime in the German fishing industry. A further way for processing of the bycatch, which can not be used for human consumption, is the production of fishmeal. However, only three German factory ships dispose of fish meal plants. Under the current economic conditions, i.e. because of limited storage capacity, the Ger-man trawler and cutter fleet is not able to transport the bycatch for fish meal production ashore.

Shellfish are a major but cheap protein source for human consumption as well as source of income for coastal towns and villages of the Niger Delta in Rivers State, Cross River, and Lagos States. A research into the nutritive value of some of these marine shellfish viz: bivalves (oyster - Crassostrea gasar and cockle - Anadara senilis); gastropods (periwinkle - Tympanotonus fuscatus, obtuse periwinkle - Semifusus morio and the giant whelk - Thais callifera) and mangrove crabs (green crab - Goniopsis pelli, ghost crab - Cardisoma ormatum, and common blue crab - Callinectes latimanus) was carried out to compare their quality and cost with beef, chicken meat, pork and egg in order to identify those most suitable for commercial culture. Results show that all shellfish had at least 16% crude protein except blue crab (13.38%). All shellfish had higher protein content than egg (13.36%). Cockle with protein content 25.47% compared favourably with beef, (29.60%). Beef, chicken meat and pork cost 11.50, 9.00 and 8.00 per kilo respectively while oyster, periwinkle and the common blue crab cost 3.50, 3.00, and 1.50 per kilo respectively. Oysters and Cockles are recommended for commercial culture based on the findings of this research

Fish products from the Chad Basin Lake play important role in meeting fish protein needs of Nigeria: they contribute not less than 25% of the total domestic fish supply and are significant in determining the availability of processed products and reduction of post-harvest losses. Processors, marketers and consumers are the major actors in appraising a marketing system. The results show that most sellers (4-7.5%) are within the age range of 30-39 years. Desires for more earnings led the markets to diversify their business activities to food stuff trading (37.5%), dried meat/livestock sales (37.5%), farming (12.5%), and transportation (12.5%). 65% of traders dispose off their products mostly in the mornings and evenings, 70% of the products are sold smoked while 50% of products are sold to individual consumers. Lake Chad fish products have a long distribution chain. There is also a high degree of buyers and sellers concentration in the primary fish markets and secondary (urban) markets. The products have a vertical regional movement with southern traders (82.5%) dominating the business, thus making the products popular all over Nigeria. Product differentiation with imperfect pricing policy is common occurrence. Lake Chad fish marketing system has distortions that impede its efficiency, recommendations are made on how to ensure a better efficiency of the system

Nutrient digestibility and amino acid availability were assessed in sharp-toothed catfish, Clarias gariepinus, fingerlings fed diets containing soyabean flour (SF) - Poultry meat meal (PMM) blends (25:75. 50:50, and 75:25) and 0.5 of 1.0%, Cr sub(2)0 sub(3). There was agreement between the pattern of overall protein digestibility and average amino acid availability despite the variability in individual amino acid availability the best dry matter, lipid and protein digestibility coefficients, and amino acid availability values were obtained with diets containing 0.5% Cr sub(2)0 sub(3). Chromic Oxide inclusion level appeared to affect nutrient availability. Increased marker level resulted into decreased nutrient digestibility coefficients. Similarly, these diets generated lower fecal crude protein than those with 1.0% Cr sub(2)0 sub(3). However, the latter group recorded higher protein retention efficiency. Dry mailer and lipid of diets containing more soyabean flour seemed to be more digestible than those of poultry meat meal. Similar trend was observed for the apparent availability of the amino acids. This investigation has indicated that low level of marker was better in digestibility study. Utilization of more SF than PMM in the diets of this catfish was more beneficial and should be encouraged in the feed industries producing catfish diets towards a better feed and waste management strategies in this aquaculture operation

The common hippopotamus (Hippopotamus amphibious Linn. 1758) contributes to the productivity of aquatic systems where it lives. This paper reviews ecological roles of the hippo in this regard. Desk review of available literature information complemented with field observations were employed in the data collection. The ecological roles of the common hippopotamus being presented draw examples from East, West, Central and South African sub regions. The nutritional importance of the amphibious hippopotamus to rural communities was highlighted. In Southern Ethiopia, the Bodi, Bacha and Mura tribes eat hippo meat and this has led to severe hunting consequences on the wild populations of the animal. The important relationships between the hippopotamus and fish were presented. Hippopotamuses usually defecate in water and their excrements enrich the nutrients in the water resulting in favourable conditions for large fish populations. Some fish, including Labeo spp. were observed to feed on the micro-organisms and algae that grow on the skin of the hippotamus. A strong case was made for hippo-cum-fish integrated farm development in Nigeria based on ecological relationships so observed between the amphibious mammals and fish. This is one of the meeting points of fisheries and wildlife management that should be exploited for the benefits of the teeming Nigerian population

Sierra Leone is a tropical country where water temperatures are high throughout the year. Consequently the local oysters tend to spawn the year round, with one or two spawning peaks. The condition of such tropical oysters may not be as high as those oyesters in temperate countries since the stored glycogen is regularly utilized to form gonads. A high condition factor value indicates that the oysters have accumulated glycogen and or gonads, whereas a low condition factor value indicates that the oysters have spawned and are in the process of accumulating glycogen, which may later be utilized for gonad development. In oyster culture, condition factor studies may be supported by plankton and oyster spat settlement studies in the culture area. These studies give an indication of when oyster larvae and spat settlement are at their peak values. In Sierra Leone studies of the plankton and spat settlement are undertaken every week throughout the year. Conditions factor is obtained from the ratio weight of dry (oyster) meat x 1000/internal volume. Detailed condition factor values are shown in relation to salinity at two stations. Condition factor declines with reducing salinity, which principally occurs during the rainy season. The best times to collect spat are May to June and September to October

A presente tese engloba dois manuscritos que abordam o tema Consumo alimentar em mulheres, desenvolvidos através da análise de duas pesquisas realizadas no Município do Rio de Janeiro, em 1995 e 2005. Trata-se do primeiro estudo brasileiro de base populacional que avalia a tendência de consumo utilizando dados individuais de consumo alimentar. O grupo específico analisado: mulheres com 35 anos ou mais de idade, apresenta as maiores prevalências de obesidade. O primeiro manuscrito intitulado Ten-year increase in the prevalence of obesity among Brazilian women was associated to reduction of fat intake mainly among the less educated aborda a prevalência da obesidade e consumo de energia e macronutrientes. Os resultados indicam importante aumento da prevalência de obesidade (16% para 24%) acompanhada de aumento significativo do consumo calórico e redução da ingestão de lipídios e colesterol. Na pesquisa mais recente a associação negativa entre educação e obesidade foi de maior magnitude e a renda deixou de associar-se a prevalência de obesidade. O segundo manuscrito intitulado Mudanças no consumo de alimentos entre mulheres do Município do Rio de Janeiro, de 1995 a 2005 avaliou o consumo de alimentos, incluindo os de alta densidade energética, e grupos de alimentos nos dois momentos, incluindo a avaliação das diferenças de consumo segundo escolaridade. A análise do consumo mostrou aumento do consumo de alimentos calóricos como doces, biscoitos e lingüiça e redução de importantes grupos de alimentos como frutas, leite, feijão, raízes e tubérculos e carnes no período de dez anos. As mulheres com maior escolaridade apresentaram maior redução de consumo de carnes e frutas e não apresentaram redução de peixes e derivados do leite. Adicionalmente, participei como co-autora em um artigo, também baseado na pesquisa mais recente, que avaliou a associação entre o uso de remédios/chás para emagrecer e a concentração sérica do hormônio estimulador da tireóide (TSH), intitulado TSH levels associated with slimming pill use in a population based study of Brazilian women. Essa análise mostrou alta prevalência de uso dessas substâncias e revelaram que os teores séricos de TSH foram significativamente menores entre as usuárias de remédios/chás para emagrecer.

O objetivo desse trabalho foi determinar a prevalência, extensão e severidade da periodontite crônica em pacientes com câncer de boca e/ou orofaringe e verificar se essa forma de doença periodontal é indicadora de risco para essas neoplasias. Trinta e cinco pacientes com câncer de boca e/ou orofaringe, atendidos no Instituto Nacional de Câncer (INCA) e 40 pacientes e/ou acompanhantes do ambulatório do Instituto Nacional de Traumatologia e Ortopedia (INTO), não portadores de neoplasias de boca e/ou orofaringe, foram avaliados por meio de anamnese, exame periodontal e índice de dentes cariados perdidos e obturados (CPOD). A população estudada foi formada predominante por indivíduos do sexo masculino, da raça branca, casados, que cursaram até o ensino fundamental e possuíam renda familiar de até 6 salários mínimos. Não houve diferença estatística significante para esses parâmetros entre os grupos. No grupo caso havia significativamente mais pacientes fumantes e que ingeriam mais bebidas alcoólicas. Pacientes do grupo controle praticavam mais exercícios físicos e tinham o índice de massa corporal (IMC) significantemente mais elevado. O consumo de frutas, legumes e vegetais foi maior para o grupo controle (p>0,05), enquanto o consumo de carne vermelha foi maior no grupo caso (p>0,05). O histórico de casos de câncer na família era baixo em ambos os grupos. O grupo caso apresentou mais sítios com placa e sangramento a sondagem e menos sítios com sangramento gengival. Somente o índice de placa teve diferença estatisticamente significante. O número de dentes presentes era significantemente menor no grupo caso embora não houvesse diferença estatística significante entre os grupos para o índice CPOD. As médias de profundidade de bolsa a sondagem (PBS) e nível de inserção clínica (NIC) foram significantemente maiores para o grupo caso. A prevalência da periodontite crônica generalizada foi de 100% nos pacientes com câncer de boca e ou orofaringe. Oitenta e nove por cento dos pacientes do grupo caso apresentaram periodontite crônica severa. A extensão ou a severidade da periodontite crônica permaneceram indicadores de risco para o câncer de boca e/ou orofaringe independentes mesmo após os ajustes para fatores de confusão, álcool e fumo.

Esta tese trata da construção de sentidos e significados no estilo natural de alimentação. Parte do princípio que simbolizar é uma forma de organizar a vida, que funde as dimensões do singular e do coletivo, em um corpo socialmente informado. Explora a conceituação e a desnaturalização, nos termos de Luz e de Bourdieu, como estratégias metodológicas, para fundamentar um trabalho de campo com naturistas, veganos e adeptos da alimentação do vivo, todos agrupados na categoria de análise de práticas de alimentação urbana natural. Explora a prática de bricolagem como estratégia de construção simbólica na prática e discute seu efeito ora favorável, ora não, no enfrentamento da crise acirrada pela desigualdade social. Chegamos a três grupos de sentidos na análise interpretativa: o de Natureza re-sacralizada, o de impureza atribuído à carne vermelha e ao de liberdade expresso na reprodução do movimento social urbano denominado contracultura. Todos se apresentam entrelaçados em um sistema de símbolos construídos em um campo específico, segundo regras de um jogo construído também no campo, que confere forças aos agentes, e seguem interesses diversos. Concluímos que uma análise interpretativa contribui na organização das trocas simbólicas, que diferentemente das trocas monetárias, demanda um conhecimento do campo específico e das relações sociais em que são (re)produzidos os sentidos e significados no estilo natural. Consideramos que assim contribuímos para a inserção das ciências sociais no campo da nutrição.

The purpose of the present work was both to analyze composition of Spanish celiac women and to study the food habits and gluten-free diet of these celiac patients, in order to determine whether they achieve a balanced and healthy diet as well as to highlight nutritional qualitative and/or quantitative differences. 54 adult celiac women (34 +/- 13 years) took part in the six-month study. Height, weight and body composition were measured. An analysis of energy consumption and of the macronutrient distribution of their diet was carried out. Their fulfillment of micronutrient intake recommendations was verified. Participants showed a Body Mass Index of 21.6 +/- 2.4 kg/m(2). Energy Intake was slightly lower than the Dietary Reference Intakes. Excessive protein apart from over-consumption of fat was observed. More than three quarters of participants consumed meat in excess. Carbohydrate consumption along with that of fiber was below recommended levels. Vitamin D, iron, and iodine had a low percentage of recommendation compliance. In general, participants followed the recommendations of dairy products and fruit intake whereas vegetable consumption was not enough for the vast majority. We conclude that although the diet of celiac women does not differ much from the diet of general population, some considerations, such as reducing fat and protein consumption and increasing fiber intake, must be taken into account.

A indústria de frangos brasileira, representa um importante gerador de divisas e empregos, e tem-se destacado no cenário internacional altamente competitivo, e com fortes barreiras de entrada, sejam elas de natureza econômica, sanitárias, ou econômicas disfarçadas por uma justificativa sanitária. O excelente desempenho do setor, justifica-se pelos diversos fatores, sejam eles de natureza econômica, geográfica, e pela competência das principais empresas do setor. Neste sentido, é que o presente estudo teve como objetivo analisar as principais estratégias adotadas pelas duas maiores empresas brasileiras exportadoras de carne de frango, líderes no setor. Após análise de diversos relatórios setoriais, materiais institucionais das próprias empresas, e consultas à diversos artigos sobre o setor, realizou-se um breve questionário com o objetivo de identificar as principais estratégias destas empresas, além de possíveis ferramentas de análise estratégica utilizadas. Verificou-se que as estratégias gerais das empresas baseiam-se na diversificação de produtos para atender a novos mercados. Para isso torna-se necessário o investimento em inovação, como objetivo de desenvolvimento de produtos de maior valor agregado. Além disso somente uma das empresas analisadas utiliza-se de ferramentas formais de análise estratégica, mais conhecidas pela literatura acadêmica.
