To bring out the relative efficiency of various types of fishing gears, in the analysis of catch data, a combination of Tukey's test, consequent transformation and graphical analysis for outlier elimination has been introduced, which can be advantageously used for applying ANOVA techniques, Application of these procedures to actual sets of data showed that nonadditivity in the data was caused by either the presence of outliers, or the absence of a suitable transformation or both. As a corollary, the concurrent model: X sub(ij) = µ + α sub(i) + β sub(j) + λ α sub(i) β sub(j) + E sub(ij) adequately fits the data.

Assessment of quality of fish and shrimps landed at the fish harbour, Cochin, was made over the period January, 1980 to December, 1982. A total of 201 samples were analysed. Nearly 75% of the samples scored between 6-10 in a 10 point hedonic scale and the percentage unacceptability based on sensory assessment was 5. 5%. In 10.1% of the samples, total volatile nitrogen was >30 mg% and in 8.3% of the samples trimethylamine- nitrogen was >10 mg%. Both, the gr Torrymeter and Intellectron Fish Tester VI readings marked significant correlation with sensory scores and chemical indices; but failed to bear any significant correlation with bacterial counts. Of the 5-1 total samples 66.7% had total plate count (TPC) ≥10 super(5) g super(-1) and 8.5% were considered unacceptable based on TPC >5x10 super(5) g super(-1); 63.2% of the samples were free from Escherichia coli; 26.4% had >20 E. coli g super(-1) and 20.4% of the samples contained faecal streptococci >10 super(3) g super(-1). Seven percent of the samples showed coagulase positive staphylococci >100 g super(-1). Salmonella could not be detected in any of the samples examined. Crushed ice samples and the platform of the harbour had high bacterial loads.

The paper reports results of a study on the effect of oxidised fish oil in the diet on the quality of dietary fish proteins. With increased oxidation of oil, digestibility and utilization of the protein registered a decrease. Oxidation of fish oil beyond a stage was found to affect the intake of diet itself and rats lost weight rapidly.

A comparative ice storage study of milk fish (Chanos chanos) in direct contact and out of contact (in 200 gauge polyethylene bag) with ice was taken up to assess the effect of leaching on quality of ice-stored fish. It was observed that the leaching effect was more significant on TVN and NPN than that on cc amino nitrogen components while there was very little effect on bacterial load. It is concluded that under similar conditions of icing, fish out of contact with ice will have longer shelf life and more acceptability than the fish preserved in contact with ice.

The effect of washing minced catfish in water, sodium chloride solution (1%) and ascorbic acid solution (0.1%) in improving the quality and frozen shelf-life has been studied. Washing improved the colour and reduced the non-protein nitrogen contents and extractable nitrogen. Denaturation was more in samples washed in salt and ascorbic acid solutions. Rancidity as measured by PV and organoleptic studies showed significant reduction in washed samples. The frozen storage life was significantly enhanced by washing.

The results of the study carried out on the quality of fish preparations served in catering establishments of Bombay revealed that there is no serious potential health hazard to the consumer. Pathogens like Salmonella and Clostridium per were found to be absent. Based on organoleptic, biochemical and bacteriological parameters the quality of fish curry was better than that of fish fry. Overall quality of samples from grade I establishments was better in comparison with grade II and III. However, a few samples of poor quality were also observed in grade I. Extraneous matter like hair and dead housefly were observed in a few samples from grade III indicating poor handling practices. The importance of good hygiene and sanitary practices in catering establishments is discussed.

Results of studies of chemical, bacteriological and organoleptic quality of cured fish collected from four major curing centres along the Tamil Nadu coast are reported. Only 32.43% of the samples had moisture level below 35%, 0.9% had salt 25% and above. None of the samples showed acid insoluble ash below 1.5%. The main defects were unhygienic processing, inadequate salting, use of poor quality salt and incomplete drying. Recommendations for improvement of quality are given.

Quality of 181 samples of ready-to-eat fish products comprising fried fish, fish curry and fish/prawn pickles collected from Cochin and Calicut were studied. Salmonella was absent in all the samples. V. cholerae was tested in the samples collected at Cochin and was absent in all the cases. Coliforms, E. coli, faecal streptococci and coagulase-positive staphylococci were present in some of the samples studied. The study indicated the necessity to improve the sanitary and hygienic conditions of the hotels engaged in the preparation of these products. The study further indicated that fried fish and fish curry shall not be served after 6 hours of their preparation. Added care is to be exercised in the selection of shrimps and fish for the preparation of pickles.

Study carried out on the quality of fresh fish in retail markets of Bombay revealed that only 75% of the samples were of acceptable quality. Incidence of faecal streptococci was generally high, indicating poor sanitary and hygienic practices in handling of fresh fish. Total bacterial counts higher than Indian standard specified limits were observed in more than one third of the samples analysed. 7.5% of the samples were found to be contaminated either with Salmonella or Clostridium perfringens, thus posing a serious potential health hazard to the consumer. The quality of fish in different markets is also discussed. The urgent need for formulation and implementation of quality standards for fresh fish in domestic trade is highlighted.

A method has been standardised for the production of smoke cured mackerel by dry salting in the ratio of 1:8 salt to fish followed by smoking in a traditional smoke chamber at 70±5°C for 5h. The smoke was generated by burning moist coconut husk and saw dust. The product obtained by this method had shelf-lives of 105, 95 and 6 days in chilled storage (0 to 2°C) refrigerated storage (10±2°C) and at room temperature (29±2°C) respectively.

The bacterial quality and sand content of commercial frozen boiled clam meat are discussed. In general the commercial frozen boiled clam meat belonging to the Villorita cyprinoides sp. collected from Cochin are highly contaminated with faecal indicator and pathogenic organisms than that belonging to the Katelysia opima sp. collected from Quilon. The studies also show that the bacterial quality of frozen boiled clam meat can be improved by enforcing better hygienic and sanitary practices.

Findings are presented of a study conducted to determine the bacteriological quality of Labeo rohita and L. calbasu from Krishnarajendra Sagar Reservoir. In general, a low incidence of pathogenic bacteria was observed; it is concluded that the microbiological hazard potential of the freshwater fish is low.

Chemical, bacteriological and organoleptic characteristics of sun dried/dry salted fish collected from five major centres of coastal Maharastra [sic] are reported. Wide variations are seen in the quality of the different samples. In dry salted products, moisture ranged from 16.17 to 46.58%; salt from 5.18 to 22.75%; acid insoluble ash from 1.0 to 6.8%. In sun dried samples moisture varied from 16.15 to 39.51% and acid insoluble ash from 0.42 to 2.82%. The sun dried samples, though no salt was used in the process, showed fairly good amount of salt.

Eggs of P. monodon are classified into 5 different types on the basis of morphological criteria and hatching rates: A sub(1) eggs, which undergo normal development with 58% hatching rate; A sub(2) eggs, which show delayed and/or abnormal development with 32% hatching rate; B eggs, which are unfertilized and characterized by irregular cytoplasmic formation; C eggs, which are unfertilized and show no change in appearance; and D eggs, which are unfertilized and show extensive bacterial presence. The establishment of a highly linear relationship between percent A sub(1) eggs and hatching rate provides a useful tool to aid the hatchery technician in determining which spawnings to reject outright and which to rear through the larval and post-larval stages.
