The first objective of this study was to identify appropriate sensory descriptors to assess the astringent sub-qualities of red wine. The influence of pH and ethanol on the sensation of astringency in red wine was evaluated, using a de-alcoholized red wine. A portion of the wine was adjusted to the pH values of 3.2, 3.4, 3.6 and 3.8, and another portion was adjusted to ethanol concentrations of 0%, 6%, 12%, and 15%. In addition, the pH 3.4 and 3.6 treatments were adjusted to an ethanol concentration of 12% and 15% all wines were then assessed sensorially and seventeen terms were identified, through panel discussion, to describe the mouth-feel and taste qualities: velvet, aggressive, silk/satin, dry, fleshy, unripe, pucker viscosity, abrasive, heat, chewy, acidity, grippy/adhesive, bitter, balance, overall astringency, and mouth-coat. Descriptive analysis profiling techniques were used to train the panel and measure the intensity of these attributes. It was found that decreasing pH values (averaged across all ethanol concentrations) showed an increase in the overall astringency of the wine. The combined treatments of ethanol and pH, real wine parameters (pH 3.4 and 3.6; 12% and 15% ethanol) did not have an effect on the perception of the astringent sub-qualities of the wine. A time intensity study was also included using the pH and ethanol adjusted wines, which showed that as the ethanol level of the wines increased so did the time to maximum intensity. The second objective was to identify appropriate sensory descriptors to evaluate the influence of grape maturity and maceration technique (grape skin contact) on the astringency sub-qualities of red vinifera wines from Niagara. The grapes were harvested across two dates, representing an early harvest and a late harvest. A portion of the Cabernet Sauvignon grapes wine was divided into three maceration treatments of oneweek maceration, standard two-week maceration, three-week maceration, and MCM. Another portion of both the early and late harvest Cabernet Sauvignon grapes were chaptalized to yield a final ethanol concentration of 14.5%. The wines were assessed sensorially and thirteen terms were identified, through panel discussion, to describe the mouth-feel and taste qualities: carbon dioxide, pucker, acidity, silk/chamois, dusty/chalky/powdery, sandpaper, numbing, grippy/adhesive, dry, mouthcoat, bitter, balance and, overall astringency. Descriptive analysis techniques were used to train the panel and measure the intensity of these attributes. The data revealed few significant differences in the mouth-feel of the wines with respect to maturity; which included differences in overall astringency and balance. There were varietal differences between Cabernet Sauvignon, Cabernet Franc, and Pinot Noir and differences for Cabernet Sauvignon wines due to the length and manner of maceration and as a result of chaptalization. Statistical analysis revealed a more complex mouth-feel for the Pinot Noir wines; and an increase in the intensity of the astringent sub-qualities as a result of the addition of sugar to the wines. These findings have implications for how processing decisions, such as optimum grape maturity and vinification methods may affect red wine quality.

The relationships between vine water status, soil texture, and vine size were observed in four Niagara, Ontario Pinot noir vineyards in 2008 and 2009. The vineyards were divided into water status zones using geographic information systems (GIS) software to map the seasonal mean midday leaf water potential (,P), and dormant pruning shoot weights following the 2008 season. Fruit was harvested from all sentinel vines, bulked by water status zones and made into wine. Sensory analysis included a multidimensional sorting (MDS) task and descriptive analysis (DA) of the 2008 wines. Airborne multispectral images, with a spatial resolution of 38 cm, were captured four times in 2008 and three times in 2009, with the final flights around veraison. A semi-automatic process was developed to extract NDVI from the images, and a masking procedure was identified to create a vine-only NDVI image. 2008 and 2009 were cooler and wetter than mean years, and the range of water status zones was narrow. Yield per vine, vine size, anthocyanins and phenols were the least consistent variables. Divided by water status or vine size, there were no variables with differences between zones in all four vineyards in either year. Wines were not different between water status zones in any chemical analysis, and HPLC revealed that there were no differences in individual anthocyanins or phenolic compounds between water status zones within the vineyard sites. There were some notable correlations between vineyard and grape composition variables, and spatial trends were observed to be qualitatively related for many of the variables. The MDS task revealed that wines from each vineyard were more affected by random fermentation effects than water status effects. This was confirmed by the DA; there were no differences between wines from the water status zones within vineyard sites for any attribute. Remotely sensed NDVI (normalized difference vegetation index) correlated reasonably well with a number of grape composition variables, as well as soil type. Resampling to a lower spatial resolution did not appreciably affect the strength of correlations, and corresponded to the information contained in the masked images, while maintaining the range of values of NDVI. This study showed that in cool climates, there is the potential for using precision viticulture techniques to understand the variability in vineyards, but the variable weather presents a challenge for understanding the driving forces of that variability.

The current study sought to investigate the nature of empathic responding and emotion processing in persons who have experienced Mild Head Injury (MHI) and how this relationship between empathetic responding and head injury status may differ in those with higher psychopathic characteristics (i.e., subclinical psychopathy). One-hundred university students (36% reporting having a previous MHI) completed an Emotional Processing Task (EPT) using images of neutral and negative valence (IAPS, 2008) designed to evoke empathy; physiological responses were recorded. Additionally, participants completed measures of cognitive competence and various individual differences (empathy - QCAE; Reniers, 2011; Psychopathy - SRP-III, Williams, Paulhus & Hare, 2007) and demographics questionnaires. MHI was found to be associated with lower affective empathy and physiological reactivity (pulse rate) while viewing images irrespective of valence, reflecting a pattern of generalized underarousal. The empathic deficits observed correlated with the individual’s severity of injury such that the greater number of injury characteristics and symptoms endorsed by a subject, the more dampened the affective and cognitive empathy reactions to stimuli and the lower his/her physiological reactivity. Importantly, psychopathy interacted with head injury status such that the effects of psychopathy were significant only for individuals indicating a MHI. This group, i.e., MHI subjects who scored higher on psychopathy, displayed the greatest compromise in empathic responding. Interestingly, the Callous Affect component of psychopathy was found to account for the empathic and emotion processing deficits observed for individuals who report a MHI; in contrast, the Interpersonal Manipulation component emerged as a better predictor of empathic and emotion deficits observed in the No MHI group. These different patterns may indicate the involvement of different underlying processes in the manifestation of empathic deficits associated with head injury or subclinical psychopathy. It also highlights the importance of assessing for prior head injury in populations with higher psychopathic characteristics due to the possible combined/enhanced influences. The results of this study have important social implications for persons who have experienced a concussion or limited neural trauma since even subtle injury to the head may be sufficient to produce dampened emotion processing, thereby impacting one’s social interactions and engagement (i.e., at risk for social isolation or altered interpersonal success). Individuals who experience MHI in conjunction with certain personality profiles (e.g., higher psychopathic characteristics) may be particularly at risk for being less capable of empathic compassion and socially-acceptable pragmatics and, as a result, may not be responsive to another person’s emotional well-being.

On s’accorde à dire que les adolescents constituent l’avenir quel que soit le temps et l’espace considéré. Il est également reconnu que le développement de leur capital humain et social, nécessaire pour une vie adulte de qualité, dépend des conditions dans lesquelles ils vivent et de l’environnement dans lequel s’opérera la transition vers cette vie adulte. Plus que dans toute autre partie du monde, ce constat est encore plus d’actualité en Afrique sub-Saharienne où, à la situation socio-économique déjà précaire, s’ajoutent d’importants problèmes de santé sexuelle et reproductive auxquels font face les adolescents en particulier le VIH. Conscients de l’enjeu majeur que représente la santé des adolescents, les gouvernements en Afrique sub-Saharienne, aidés en cela par les organismes non-gouvernementaux et toute la communauté internationale, ont inscrit la promotion de stratégies efficientes en santé sexuelle et reproductive des adolescents comme haute priorité dans leurs agendas. Mais force est de constater que l’élaboration et la mise en œuvre de telles stratégies supposent la production de connaissances sans cesse actualisées ainsi que la formulation de politiques innovatrices basées sur des données probantes et éprouvées en matière de santé sexuelle et reproductive, ce qui n’est pas toujours le cas. De plus, le fait que ce segment particulier de la population ne constitue pas un groupe homogène pose un défi supplémentaire quant à l’élaboration de stratégies généralisables. Fort de ce qui précède, le présent travail, qui porte sur le Burkina Faso, le Ghana, le Malawi et l’Ouganda, fait d’abord le point sur les problèmes majeurs de santé sexuelle et reproductive auxquels fait face cette frange spécifique de la population, tout en jetant un regard critique sur les efforts déployés par les sciences sociales pour les analyser. Il apporte ensuite des réponses à des questions spécifiques de recherche que nous nous sommes posées à travers les trois articles qui constituent l’ossature de cette thèse et dont l’essentiel de l’analyse empirique peut être résumé comme suit : Dans le premier article, nous sommes partis du constat suivant : dans les quatre pays étudiés, une importante proportion des adolescents qui se déclarent non encore sexuellement actifs pensent paradoxalement que leurs chances de contracter le VIH sont très grandes. Face à un tel constat, la question que l’on est en droit de se poser est celle de savoir pourquoi sont-ils si préoccupés? Quels sont les facteurs qui déterminent cette perception du risque? Les résultats confirment ce que certaines études ont déjà démontré à savoir que les individus élaborent leur propre définition du risque qui peut ne pas se résumer nécessairement à une opposition binaire «risque/aucun risque», mais est plutôt fonction des caractéristiques individuelles mais aussi du contexte social et épidémiologique dans lesquels ils vivent. Le deuxième article de la thèse analyse le contexte dans lequel s’opère la transition vers le premier rapport sexuel chez les adolescentes des quatre pays étudiés. Il part du constat selon lequel les recherches ont très souvent abordé les comportements sexuels des adolescents sous un angle marqué par la dichotomie entre les «sexuellement actifs» et les «non encore sexuellement actifs». Or le calendrier de l’entrée en sexualité et le contexte dans lequel elle a lieu (dans l’union ou hors union) sont non seulement des marqueurs des comportements sexuels à risque vis-à-vis du VIH, mais ils conditionnent aussi et surtout la qualité de la transition vers l’entrée dans la vie adulte. Les résultats montrent ici également que le contrôle parental est significativement associé à une faible probabilité pour les adolescents d’initier la sexualité hors de l’union. Quant au troisième article, il se penche sur un cas précis de comportement à risques chez les adolescents: le multipartenariat sexuel aggravé par la non utilisation systématique du condom, pourtant le seul moyen pour l’instant (en dehors de l’abstinence) de se protéger contre les infections sexuellement transmissibles et le VIH/SIDA. Les résultats montrent entre autres que le contrôle parental est significativement associé à une faible probabilité de comportement sexuel à risque, défini ici comme étant la co-occurrence de plusieurs partenaires sexuels au cours de 12 derniers mois et la non-utilisation systématique du condom avec chacun des partenaires. Sur un plan programmatique, ce résultat est plutôt encourageant car il prouve que l’autorité parentale jadis considérée comme érodée, demeure une pierre angulaire dans les stratégies de prévention du VIH chez les adolescents.
