Se realizó un estudio en la finca Santa Rosa propiedad de la Universidad Nacional Agraria ubicada en Managua-Nicaragua. El objetivo de este estudio fue realizar un análisis descriptivo de la composición química de la harina de piscidium de Moringa oleifera [Materia seca (MS), Proteína Bruta (PB), Fibra Cruda (FC), Extracto etéreo (EE) y Ceniza (CE)] así como la degradación ruminal in situ de la MS (DMS), PB (DPB) y FC (DFC) de la misma. Se utilizó la técnica de degradación in situ para evaluar la cinética de la degradabilidad de piscidium de Moringa en el rumen. Los tiempos de incubación evaluados fueron 3, 6, 9, 12, 24, 48, 72h. Los resultados obtenidos mostraron que la composición química de piscidium de Moringa presentó valores de 97.16% MS, 5.27% PB, 59.7% FC, 1.08% EE y CE de 8.18%. La DMS fue de 36.12% a las 72 h de incubación. La DPB tuvo una rápida degradabilidad en las primeras 6 h (29.75%) con un máximo de degradación potencial a las 72 h de 45.71%, sin embargo la DFC fue lenta durante las primeras 12 h, (6.77%), posterior a las mismas se incrementó la degradabilidad de la FC alcanzando un máximo potencial de degradabilidad de 19.38% a las 72 h de incubación. Los resultados indican que la harina de piscidium de Moringa es un alimento de mayor valor nutritivo que muchos alimentos toscos o lignificados, sin embargo para mejorar su aprovechamiento en la alimentación animal debe ser acompañado con una fuente nitrogenada o ser incluido como material de relleno en alimentos concentrados, bloques multinutricionales o amonificado.

Con el objetivo de determinar la tasa de degradación ruminal de la harina de granos de Canavalia con y sin tratamiento térmico. Se utilizó una vaca fistulada criolla Reyna con un peso corporal de 380 kg y 11 años de edad; Los tiempos de incubación evaluados fueron 3, 6, 9, 12, 24, 48 y 72 horas utilizándose un diseño completamente al azar con arreglo factorial, con 3 repeticiones por tratamiento, donde se consideró el tiempo como factor A y los tratamientos como factor B. La degradabilidad de las harinas de granos de Canavalia se estimó mediante el modelo de Orskov y McDonald (1979); para conocer el efecto del tratamiento térmico sobre la tasa de degradabilidad, se realizó análisis de varianza y la prueba honesta de Tukey para conocer las diferencias entre los tiempos de incubación. En los resultados de la degradación ruminal, se observó diferencias altamente significativas (p <0.01) para las variables de DRMS con 70.67% y 80.4% y DRMO con 71.02% y 80.44%. Mientras que no se encontró diferencia signifi cativa (p>0.01) para la DRPB de 74.47% y 90.65% a las 72 h de incubación respectivamente. Estos resultados sugieren que las harinas de granos de canavalia ensiformis tanto con y sin tratamiento térmico son de fácil degradación en el rumen, tanto para la MS, MO como para la PB, y que representan una alternativa de alimentación sostenible para la ganadería en el trópico

Abstract Fish sauce belongs to the most important condiments in Southeast Asian cuisine. It is a clear, amber to reddish liquid with an intensive smell. Fish sauce is used instead of salt for nearly each meal. Asian fish sauce is made from anchovies and other small fish. For the traditional process whole fresh fish are mixed with salt in the ratio 1:1 to 6:1 in wooden, clay or concrete tanks at tropical temperatures for 6 to 18 months. The liquefaction of the fish tissue is due to the action of endogenous enzymes in fish and exogenous enzymes from bacteria. During the fermentation amino acids, peptides and a lot of other substances are built, which are responsible for the characteristic aroma and flavour of these sauces. You can buy pure fish sauce, diluted fish sauce and fish sauce made from other types of animals like mussels, prawns and squids. In single Asian countries there are different national standards for the quality of fish sauces. In order to get a general idea of these products we have bought 16 fish and two oyster sauces from the retail trade in Hamburg and analyzed them with physical, chemical, sensory and microbiological methods. Kurzfassung Fischsauce gehört zu den wichtigsten Würzsaucen in der südostasiatischen Küche. Es ist eine klare, bernsteinfarbene bis rötlichbraune, sehr intensiv riechende Flüssigkeit. Sie wird anstelle von Salz verwendet und daher fast zu jedem Essen gereicht. Zur Herstellung von Fischsaucen werden hauptsächlich Anchovis und ähnliche kleine Fische verwendet. Bei der traditionellen Herstellung werden die ganzen Fische mit Meersalz in einem Holzfass, Tongefäß oder Betontank im Verhältnis 1:1 bis 6:1 gemischt. Während der anschließenden 6 – 18 Monate dauernden Lagerung bei tropischen Temperaturen bauen sich die Gewebeproteine durch fischeigene Enzyme und Mikroorganismen ab. Bei diesem mehrmonatigen Fermentationsprozess entstehen die für den Geschmack wichtigen Aminosäuren, Peptide und Aromastoffe. Es gibt neben reiner Fischsauce, auch verdünnte Fischsauce und Fischsaucen aus anderen Tieren wie Muscheln, Garnelen und Tintenfische. In den einzelnen asiatischen Ländern gibt es unterschiedliche nationale Qualitätsstandards. Um diese Produktgruppe näher kennen zu lernen, haben wir 16 Fisch- und 2 Austernsaucen aus dem Einzelhandel (Hamburg) mit physikalischen, chemischen, sensorischen und mikrobiologischen Verfahren untersucht.

The paper examines the pattern of utilization of freshwater fish species in Nigeria. It was observed that although fishermen have a preference for fresh fish sales only 30% of fresh fish captured actually get to the consumers. The rest are preserved by smoke curing (60-65%), salting and sundrying (less than 5%), deep frying and fermentation (about 1%). Constraints to fish utilization were identified which include poor infrastructure, losses of fish and fish products as a result of traditional post harvest technology and socio economic factors. The need for the development of appropriate research to solve the problems of traditional post harvest technology was emphasised

A matriz energética mundial é baseada em fontes fósseis e renováveis. No Brasil, o bioetanol é gerado principalmente a partir da cana-de-açúcar. Resíduos agroindustriais (fontes celulósicas ou amiláceas) despontam como biomassas alternativas à cana-de-açúcar, para aumentar a competitividade deste combustível renovável frente aos de origem fóssil e também favorecer a sustentabilidade e a segurança alimentar e energética, pois são ricos em polissacarídeos não diretamente fermentescíveis, abundantes (problema ambiental) e apresentam baixo valor comercial. O farelo de mandioca é um exemplo de resíduo sólido gerado na produção de fécula (amido) e farinha de mandioca que ainda contém, em média, 75% de amido. Consequentemente, deve ser previamente hidrolisado e posteriormente fermentado por leveduras do gênero Saccharomyces para gerar etanol. O objetivo deste estudo foi produzir bioetanol a partir de hidrolisados enzimáticos de farelo de mandioca, usando levedura álcool resistente (AR). Primeiramente, a concentração de açúcares obtida a partir da hidrólise enzimática foi verificada através de um planejamento fatorial completo (24), com triplicata no ponto central, a fim de investigar a influência dos seguintes fatores na hidrólise: concentração de α-amilase (Termamyl 2X), tempo de liquefação, concentração de glucoamilase (AMG 300L) e o tempo sacarificação. A condição de hidrólise mais favorável foi a do ensaio com 0,517 mL de AMG/g amido, 0,270 mL de Termamyl/g amido, 1h de tempo de liquefação e 2h de tempo de sacarificação. O caldo resultante da condição escolhida alcançou altas concentrações de glicose (160 g/L). Os ensaios de fermentação alcoólica foram realizados em duplicata em biorreator de 3L, em regime de batelada, a 30C, 100 rpm e pH 5,5. Cerca de 3 g/L (massa seca) de uma linhagem de levedura álcool tolerante, Saccharomyces cerevisiae Hansen BY4741, crescida por 12h em meio YEDP (2% de glicose) foram usados como inóculo. O mosto consistiu de um litro de hidrolisado (160 g/L de glicose) fortificado com extrato de levedura (1%) e peptona de carne (1%), além da adição de um antiespumante (Tween 80) na concentração de 0,05% (m/v). Em 30 horas de fermentação, a média da concentração de etanol obtida foi de 65 g/L. A eficiência foi de 87,6% e o rendimento e a produtividade foram 0,448 e 2,16 g/L.h, respectivamente. [ES] Acinetobacter baumannii es una bacteria Gram negativa, patógena y multirresistente. Su alta capacidad de supervivencia en hospitales y su resistencia a químicos puede deberse a la producción de lacasas. Estas enzimas son capaces de oxidar un sinfín de compuestos como los fenoles utilizados en hospitales para la desinfección de superficies. En este estudio se ha realizado un análisis de actividad lacasa en aislamientos altamente virulentos de los clones internaciones I y II, observando que estas cepas presentan actividad lacasa. Paralelamente, se ha realizado un análisis bioinformático con el que se ha determinado la similitud de los genes de estas lacasas con las ya descritas de la familia “YfiH” y con otras enzimas procedentes de otras especies, demostrando su similitud de secuencia con la lacasa RL5, procedente de una muestra de rumen bovino. Estos hechos suponen un avance en el estudio de lacasas bacterianas en Acinetobacter baumannii cuya caracterización podría desembocar en nuevas líneas de lucha contra dicho patógeno.

'Lona ilish', is a traditional salt fermented fish product, widely consumed and very popular in north-east part of India and Bangladesh. It is prepared exclusively from a high fat fish, Hilsa (Tenualosa) ilisha. 'Lona ilish' was prepared in the laboratory following traditional process. After 150 days of fermentation, a better quality 'lona ilish' was obtained. Biochemical characteristics of market sample was estimated and compared with the laboratory prepared one. A variation in biochemical composition was observed. Sensory quality of the final product of laboratory prepared 'lona ilish' was compared with the market sample and found that the laboratory prepared product scored better than the market sample. The moisture (49.89%) and salt (15.48%) of the final product was found to be satisfactory for stability of the 'lona ilish' at ambient temperature. Analysis of volatile compounds of 'lona ilish' was done using GC-MS. It was concluded that, aldehydes, ketones and esters may possibly contribute characteristic aromas to the overall flavour of the salt fermented hilsa.

This study was conducted using 150 fish of Clarias gariepinus to investigate the growth performance and nutrient utilization of Clarias gariepinus fed five treatment diets containing varying inclusion level of fermented unsieved maize. The diets were grouped into CT, T1, T2, T3, and T4 with inclusion levels of 25%, 50%, 75%, and 100% of fermented unsieved maize respectively. Highest weight gain was recorded in T4 with value of 10.24 and lowest weight was recorded in CT with 9.17. High FCR were observed in T2 with value of 0.70 and lower value was observed in T4 with value of 0.62. While, T2, T3, and T4 have highest survival rates with values of 90% in each treatment CT and T1 recorded 80% and 70% respectively. There was a significant (p< 0.05) difference between the food conversion ratios treatment T4 with the best value and other treatments. There was a significant (p< 0.05) difference between the levels of fermented unsieved maize inclusion and the specific growth rate of the experimental fish. The highest value of protein level and feed efficiency were observed in T4 at significant difference level (p< 0.05) than other treatments. It was concluded that fermentation of maize in fish feed has positive effects on the nutritional value of the feed. It is recommend that fermented maize can replace raw maize in fish feed diet for growth performance. KEYWORDS: Fermentation, yellow maize, Clarias gariepinus, Fish, Feed.

Shidal is a salt-free fermented fish product prepared from Puntius ss. caught in late monsoon period. Shidal is very popular amongst the inhabitants of Northeast India. The fermentation process of this product takes four to six months in anaerobic condition till the product gains a characteristic flavour and colour. Detailed studies on the biochemical and nutritive qualities of this product are very few. Therefore, in this paper we report the results of the proximate analysis, amino acid and fatty acid compositions. The results suggest that Shidal is a rich source of amino acids as well as of essential fatty acids like linoleic and linolenic acids. The n- 3/n-6 ratio was found 0.51.

This communication describes the design aspect and functions of individual pieces of equipment of a pilot plant for the production of fish ensilage based on lactic acid fermentation process. Details about the equipment, process flow sheet and equipment layout of the pilot plant have been given. An attempt has been made to prepare an estimate of the cost of production of liquid ensilage and solid feed mix.

Adaptation is one of the most fundamental issues in the studies of organismal evolution. Pancreatic ribonuclease is a very important digestive enzyme and secreted by the pancreas. Numerous studies have suggested that RNASE1 gene duplication is closely related to the functional adaptation of the digestive system in the intestinal fermentation herbivores. RNASE1 gene thus becomes one of the most important candidate genetic markers to study the molecular mechanism of adaptation of organisms to the feeding habit. Interestingly, RNASE1 gene duplication has also been found in some non-intestinal fermentation mammals, suggesting that RNASE1 gene may have produced novel tissue specificity or functions in these species. In this review, RNASE1 gene and its implications in adaptive evolution, especially in association with the feeding habit of organisms, are summarized.

Two species of unexploited deep sea fish Peristedion adeni and Peristedion weberi caught from the Exclusive Economic Zone of India were subjected to fermentation at ambient temperature (30 ± 2°C) in the presence of salt in 4:1 ratio. Periodical analysis of the fermented product was carried out up to one year. The sauces had brownish yellow colour and conformed to special grade of the standards prescribed by the Food and Drug Administration. Further solubilization of protein after 9 month's maturation was not appreciable.
