The purpose of this study was to evaluate the commercial cuts, loin tissues and composition proportions in meant from five racial groups: Alpine, ½ Boer + ½ Alpine (½ BA), ½ Anglo Nubian + ½ Alpine (½ ANA), ¾ Boer + ¼ Alpine (¾ BA), ¼ Boer + ¼ Alpine + ½ Anglo Nubian (Tricross), submitted to three slaughter weights (25, 30 and 35kg) in feedlot, using a complete diet. The crossing of Boer and Anglo Nubian with Alpine females only improved, in kids, the yield of cuts considered third category such as neck and rib. Slaughter body weights between 30 and 35kg should be preferred due to increase in the proportion of the loin, reduction in the proportion of the neck in Alpine and increase in the leg in Alpine and ¾ Boer, beyond the appropriate amounts of intermuscular fat and muscle.

This study was developed with the aim of evaluating recombinant bovine somatotropin (rbST) on non-carcass components of goat kids of three genotypes. It was used 23 male goat kids of three genotypes, being 8 Alpine, 4 ½ Boer + ½ Alpine (½ BA) and 11 ¾ Boer + ¼Alpine (¾ BA), from which 12 received rbST e 11 control. The growth hormone used was the recombinant bovine somatotropin (rbST) and animals of treatment 1 received the hormone in the amount of 0.3 mg/kg live weight, from 45 days, adjusted in intervals of 14 days. Animals of treatment 2 (control) received saline solution in the same dosage and interval. The ½ BA goats presented a higher proportion of external non-carcass components (head, feet and skin) in relation to Alpine goats. Regarding the vital organs, such as lungs, kidneys and spleen, and the non-carcass components blood, internal fat and perinephric fat, Alpine goats presented higher values than ¾ BA goats. The administration of recombinant bovine somatotropin (rbST) did not produce effect on proportions and weight of non-carcass components. Proportions and weight of non-carcass components varied in function of genotypes, although animals were slaughtered at similar live weight.

This study was carried out to evaluate the morphometric characteristics, the yield and the centesimal composition of different cuts of the Barbado's (Pinirampus pirinampu) flesh, captured in the Itaipu Reservoir. Were used 55 animals randomly distributed into three classes of body weight [less than 620 g (n = 15), between 620 and 1.120 g (n = 16) and greater than de 1.120 g (n = 24)]. Were measured the standard length (SL), the total length (TL), the head length (HL), the head height (HH), the trunk length (TRL), the trunk height (TH) and width of the trunk (WT). Then were established the morphometric relationships: (HL/SL), (HL/HH), (SL/TL), (WT/TRL), (WT/TH) (TH/TRL). Afterwards were measured the flesh's cut yield and the residue waste yield called: trunk (TC), fillet (FILLET), abdominal fillet (AF), head (HEAD), viscera (VISC), fin, spine and skin (SKSF). The levels of moisture, ash, fat and crude protein from FILLET and AF were determined. The body weight affected (P<0.05) the WT/TRL, WT/TH, TH/TRL, TR, FILLET, HEAD and SKSF, however didn't affected the centesimal parameters. In conclusion, the Barbado (Pinirampus pirinampu) has allometric growth and the flesh processing from fishes with more than 620 g provides better yields of edible parts. In addition, the chemical composition of meat suggests its potential for use in the manufacture of artisanal or industrial products.
