Escherichia coli O157:H7 is a foodborne pathogen associated with enteritis in humans, ranging from a mild to bloody diarrhea to hemolytic uremic syndrome, thrombotic thrombocytopenic purpura and even death. Large E. coli O157:H7 outbreaks have been reported worldwide and are frequently associated with consumption of undercooked beef. Cattle are a major reservoir of the pathogen, which is found in the intestinal tract of the animal. The carcasses can be contaminated with feces during the slaughter and production process. Ground beef remains the most common vehicle. The purpose of this study was to determine the E. coli O157:H7 importance associated to human illness and productivity losses to the meat industry, as well as identifying mechanisms of contamination related to beef and strategies to improve the safety of beef products

The organic wastes need to be adequately managed, in order to avoid the environmental pollution and damage to the public health. So, this work aimed to study the composting process using two methods: manual and mechanized, for the treatment of bovine ruminal waste. This residue is generated in large proportions during the bovine slaughter process, and it can lead environmental degradation and contamination, or even damage to the public health, when not treated. For the initial adjustment of the composting parameters, it was incorporated the residue of coffee husks. The manual composting system was done by the manually aerated piles, while the mechanized composting system was done in a reactor coupled to a compressor that enabled the aeration of the system. The proportions used in both systems were: 90% bovine rumen (R) and 10% coffe husks (CC); 85% bovine rumen and 15% coffe husks; 80% bovine rumen and 20% coffe husks. The parameters determined during the monitoring of the composting process were: temperature, pH, moisture, organic matter, ash, organic carbon, Kjeldahl nitrogen and C/N ratio. The results obtained during the monitoring of the piles and reactors presented similar behavior, except for the parameters Kjeldahl nitrogen and C/N ratio. When compared to the “Instrução Normativa no 25 de 23/07/2009 do Ministério da Agricultura, Pecuária e Abastecimento”, the organic produced composts with the best results were: pile 2 (85% R; 15% CC) and reactors 1 (90% R; 10% CC) e 2 (85% R; 15% CC)

The meat quality is evaluated by consumers according to their physical characteristics, such as color, texture, juiciness, tenderness and odor. The stress during the life of the animal and at the moment before the slaughter may be responsible for changes in the transformation of muscle into meat. Such changes may lead to the appearance of DFD (Dark, Firm and Dry) and PSE (Pale, Soft and Exudative) meats, which are poorly accepted in the market – because of their unusual aspect – and inadequate to industrial processing. Factors related to the handling, loading, transport, unloading, resting period and stunning are singled out as critical, since that, in these phases the animals are subjected to adverse situations to which they are accustomed. The aim of this study is to identify the process of ante-mortem and the slaughter itself in which the animals are subjected to stressful situations, as well as the consequences of stress on meat quality

The pre-slaughter moment begins with the animal´s loading on the farm and ends up in its drain. It is a period in which the animal is under physical stress caused by hunger, thirst, fatigue, injuries, and extremes of temperature and psychological stress, due to restraint, handling, innovation and fear. Stress and inappropriate handling bring bad consequences for the final product´s quality, requiring better handling conditions, facilities and equipment. Examples of consequences of mishandling: meat with abnormal color, DFD meat (dark, firm and dry), reduced product´s shelf life, bruises and broken bones in carcasses. The operators should be trained and oriented on the basic principles of biology, behavior and management of cattle. At every step of the pre-slaughter moment, the animals should be handled calmly and quietly to avoid excitement and stress. Operators should avoid shouting, whistling or any noise since cattle have very sensitive ears and can become stressed. If the animals refuse to move, the cause of the problem should be determined

The ractopamine is a β-adrenergic agonist used as a divider of energy in diets for finishing pigs. However, research shows that this additive may effect on welfare and meat quality. In this context, the aim was to evaluate the influence in three levels of inclusion of ractopamine (0, 5 and 10ppm) in commercial pigs diet (castrated, males and females, n = 340) for 28 days pre-slaughter on the welfare and meat quality. The wellbeing was assessed by the behavior of animals, number of skin damages, carcass damages and physiological stress (lactate, cortisol and creatinine phosphokinase). The evaluation of meat quality was performed by analyzing pH, color, drip and cooking loss, shear force and marbling of the longissimus dorsi muscle of 90 selected pigs. There was no influence of treatments on the behavior, the total number of skin damages and carcass damages or concentration of cortisol and lactate. However, levels of the enzyme creatine phosphokinase (CPK) increased in pigs supplemented with ractopamine. This shows that, somehow, this additive led to physiological changes in animals that consumed it. PH and drip loss did not change by the addition of ractopamine in the diet. In contrast, the Longissimus dorsi of pigs that received ractopamine presented less intense red color and no difference was found in L* and b*. The inclusion of ractopamine in the diet reduced the degree of marbling, cooking loss and tenderness of the muscle. Supplementation did not lead to behavioral change, increased incidence of injury, plasma cortisol and lactate and minimal impact on meat quality. However, there was evidence that the animals fed the additive suffered physiological changes

Proteins of animal origin are among the most consumed foods in the world, this scenario highlights the pig production, providing much of the daily protein intake worldwide. Brazil has significant numbers in the production and export of pork to stand among the first in the world marker. Several diseases such as brucellosis, can configure a threat to this sector. Brucellosis in pigs is an important disease and zoonosis once it is the cause of great economic losses by making the species vulnerable to sanitary barriers as well as putting at risk the health of attendants of farms, slaughterhouses employees and consumers. Pigs slaughtered in slaughterhouses approved by competent organs guarentee the safety of employees, in the flowchart of slaughter, and consumers, but illegal slaughterhouses pose risk to public health

Brazil has one of the largest cattle herds in the world, so the cattle slaughter is one of the most important economic activities in the Brazilian market. But this activity requires a high demand of water, resulting in serious problems about the correct disposal of wastewater generated in the process. This effluent has a high pollution load, becoming its receiving bodies (streams and rivers) unfit for various activities such as public water supply, recreation, fisheries. To minimize the environmental impacts of its industrial wastewater and fallow the local environmental legislation, refrigerators must make the treatment of these effluents. This study aimed to verify the efficiency of a enzymatic reactor, when occur hydrolysis of lipids present in the effluent industrial of an cattle slaughter industry. The treatment system used was composed of two separate reactors: one being the anaerobic fluidized bed reactor (AFBR), inoculated with immobilized enzymes on the matrix support, and the other by sequential batch reactor (SBR) inoculated with activated sludge. Whereas, the reactors have been developed and installed at the Wastewater Treatment Laboratory, Faculdade de Ciências e Tecnologia, UNESP, campus Presidente Prudente. The procedure operating occurred differently for each reactor: preparation and inoculation of enzyme granules, filling the reactor, hydrolysis, and AFBR emptying, filling, aerobic reaction, sedimentation, and emptying the SBR. In the pre-slaughter management of pigs there are stressors, which depending on the duration or severity, are able to alter the quality of meat. One of the factors considered critical to the welfare is the fasting period in the farm. This practice is fundamental and proven relevance in the production chain. Besides the effects on meat quality and welfare of pigs, fasting is among the main factors responsible for the incidence of skin lesions, can significantly influence the incidence of esophagogastric ulcers and is also important to avoid any contamination of carcasses by gastrointestinal contents. When fasting is done right, it has a positive impact on welfare, meat quality and conditions of welfare during the pre-slaughter management of pigs
