Inulin and oligofructose are fructans that can change important characteristics in original products when added in food. Two formulations of orange cakes (one containing 77.7g of inulin and another one 77.7g of oligofructose/inulin) and two formulations of breads (one containing 130g of inulin and another one 175g of oligofructose/inulin) were compared to the respective standard formulations (with no fructans) in relation to chemical composition, texture, volume, color and sensory acceptability with a nine-point hedonic scale. The cakes and breads with inulin and oligofructose/inulin showed greater amount of total dietary fiber in relation to standard products. The orange cake with inulin had lower cohesiveness and yellower dough when compared to the standard cake, but the addition of inulin and oligofructose/inulin reduced the acceptability for appearance, texture and flavor and the overall acceptability, although the acceptability for aroma was the same for the three products. The breads with inulin and oligofructose/inulin were harder and less cohesive than the standard bread, and bread with inulin showed minor volume in relation to the standard. The bread with inulin also presented crust with lower luminosity, dough with higher intensity of redness and yellowness and higher intensity of color in relation to standard, besides different hue. In relation to sensory acceptability, the bread with oligofructose/inulin had higher overall acceptability and flavor when compared to standard bread.

Snakes from Bothrops genus are responsible for more than 90% of the ophidian accidents in Brazil. One of the main complications from this kind of accident is muscular necrosis, which is related to the action of phospholipases A2 and metalloproteases, two groups of enzymes found in the venom of these animals. Although this complication cannot be solved by serum therapy administration, a great number of studies have been performed with the attempt to know the pharmacological sites of these toxins aiming, in the future, the development of complementary treatments to serum therapy. This work proposes structural studies of bothropic phospholipases A2 (PLA2s) in the presence of ions relevant to their activity, using the X-ray crystallography technique. Recently, it was demonstrated ions, as manganese, calcium and others, interfere in the biological activity of the PLA2s. Particularly, Lys49-PLA2s in the presence of manganese ions have miotoxicity reduced. Asp49-PLA2s show catalytic activity dependent of calcium, although structural studies with a miotoxic Asp49-PLA2, BthTX-II, suggest a possible catalytic mechanism independent of calcium. Therefore, co-crystallization of BthTX-II in the presence of calcium ions and of PrTX-I in the presence of manganese ions were performed. Comparative structural studies among obtained results and others already published in the literature were performed aiming a better understanding of the structure-function relationship of these toxins. The BthTX-II with the presence of calcium do not show this ion in the loop of coordination of calcium, presence necessary to develop the catalyses. After comparison of this model with the native one, only one distortion was found, but no apparent relationship with the residues responsible for its activity. Cucumber (Cucumis sativus L.) is a plant of the Cucurbitaceae family of great commercial importance and their culture is widespread throughout the country. The production of vegetables, high-quality care begins with training ranging from seedlings and shading techniques have an important role in creating environments more conducive to the production of seedlings and many researchers and producers of seedlings have opted for the use of color shading screens, making this way, the wavelength and the amount of incident energy are changed in favor of the plants. Work will be performed at the Department of Forest Sciences, Faculty of Agricultural Sciences, Universidade Estadual Paulista (UNESP), Botucatu campus. The statistical design will be in three blocks, each containing 100 plots of each treatment (seedlings covered with blue screen, red and black). Evaluations of dry mass and height will be made at 7, 14, 21 and 28 days after emergence, and 5 will be selected seedlings of each treatment. At 14 and 28 DAE was measured, and SPAD chlorophyll content at 30 DAE, was evaluated by measuring gas exchange in the second pair of leaves, fully expanded for each plant, which was put in a chamber controlled with infrared gas analyzer (IRGA LI 6400, Licor) to perform measurements of photosynthesis. Treatment with black shading showed statistically better results for total dry matter, plant height, SPAD chlorophyll content and net assimilation of CO2, showing a better quality seedlings and its use is recommended in the cultivation of cucumber Taiko
