Óleos de milho de diferentes marcas, produzidos e comercializados no Brasil, foram analisados quanto à presença de benzo(a)pireno (B(a)P). A metodologia utilizada envolveu extração com ciclohexano, purificação em coluna de silica gel e determinação por cromatografia líquida de alta eficiência com detector de fluorescência. Todas amostras analisadas mostraram-se contaminadas por B(a)P e os níveis determinados variaram entre as diferentes marcas analisadas e entre diferentes lotes de mesma marca, dentro da faixa de 0,85 a 25,17 µg/kg. Entre 49 amostras analisadas no período de dois anos, apenas uma apresentou nível de contaminação por B(a)P abaixo do limite referencial de 1 µg/kg.

Realizou-se a modelagem da degradação de vitamina C em ameixas desidratadas e submetidas a diferentes condições de temperatura e umidade relativa, com o auxílio da equação de Bigelow. As ameixas in natura foram liofilizadas e acondicionadas em dessecadores contendo diferentes soluções salinas saturadas na temperatura de 4ºC. Após atingir o equilíbrio, os dessecadores foram submetidos a temperaturas na faixa que variou entre 40 e 80ºC. A degradação de vitamina C foi analisada ao longo de 5 dias, aplicando-se o método de titulação com solução padronizada de 2,6-diclorofenolindofenol 0,01%. As amostras apresentaram os seguintes conteúdos de umidade: 0,05; 0,11; 0,18; 0,38 e 1,40g água/g sólido seco. A partir dos parâmetros da equação de Bigelow, tempo de redução decimal (D T) e valor z, os resultados indicaram que as amostras submetidas à faixa de temperatura entre 40 - 60ºC apresentaram uma perda mais lenta de vitamina C (D T no conteúdo de umidade de 0,05 apresentou valores na faixa de 1672 - 275h). Por outro lado, em altas temperaturas a degradação do ácido ascórbico ocorreu mais rapidamente (D T para X = 0,05 forneceu valores entre 110 e 47h). Os parâmetros z e D T apresentaram uma dependência linear e quadrática com o conteúdo de umidade das amostras, respectivamente. De modo geral, em altos teores de umidade, houve uma maior perda de vitamina C, devido a sua alta solubilidade.

Muchos trabajos demuestran que los productos vegetales no solamente son fuentes de energía y nutrientes sino también fuentes de compuestos conocidos como fitoquímicos, que juegan un importante papel en la prevención de enfermedades como el cáncer, afecciones cardiovasculares y neurodegenerativas. Por otro lado, el aumento en la producción de manzana, determina también un aumento de la producción destinada al procesamiento industrial. En este sentido el conocer el contenido de de ciertas sustancias como polifenoles, antocianinas permiten conocer su potencial de uso industrial, como por ejemplo para la elaboración de jugos. En base a esto los objetivos del presente trabajo fueron realizar una caracterización físico-química de tres variedades de manzana; una de ellas de cultivo tradicional y muy extendido en Brasil y las otras dos mutaciones de esta última, de reciente explotación comercial. Fueron medidos al momento de cosecha la firmeza de la pulpa, acidez titulable (AT), los sólidos solubles totales (SST), el índice de yodo-almidón, los parámetros CIE "L*", "a*" y "b*" del color, polifenoles, antocianinas y azúcares reductores totales y vitamina C. Según los resultados, la variedad Fuji Kiku presentó una mayor firmeza de pulpa, AT, SST y vitamina C. En relación al color, la variedad Fuji Suprema mostró una coloración roja más intensa y mayor contenido de antocianinas. No fueron encontradas diferencias en los polifenoles y azúcares reductores totales.

Os amidos são amplamente utilizados em alimentos como molhos para salada, molhos e pratos prontos. Entretanto, as propriedades funcionais de amidos nativos não resistem aos processos estressantes tais como tratamento térmico, acidez e alto cisalhamento. Os amidos podem ser modificados quimicamente neste sentido, mas não atribuem ao alimento o rótulo de "natural". Uma outra opção é obter amidos naturais resistentes às condições de estresse. O objetivo do presente trabalho foi a avaliação de dois amidos que se comercializam rotulados como nativos e orgânicos frente ao tratamento térmico e à acidez. Suspensões dos amidos nativos funcionais orgânicos (9460 e 9560, National Starch and Chemical Industrial) preparadas numa concentração de 5% (peso/volume), foram acidificadas com ácido cítrico 1M ou autoclavadas a 121 °C por 30 minutos. O resultado dos tratamentos foi avaliado por microscopia óptica, pelas curvas de escoamento e pelos espectros mecânicos, obtidos por reologia estacionária e dinâmica. A acidez e o tratamento térmico aumentaram a estruturação dos géis dos amidos, que resistiram aos processos estressantes. Os géis apresentaram comportamento não newtoniano, (pseudoplástico) e tixotrópico. O comportamento pode ser modelado pela equação Lei da Potência ou Herschel-Bukley. Todos os géis apresentaram comportamento viscoelástico de gel fraco que foi preservado nos diversos tratamentos.

Brazil is the third largest producer of pineapple (Ananas comosus) and the market for fresh pineapple is sustained by the Hawaii and Perola cultivars. In this work the Perola cultivar was divided into three main parts, shell, core and pulp, for characterization. Moisture in the pulp was higher (between 10 and 15%) than in the shell and core. The amount of protein was higher in the core (35%) than in the pulp and shell. Perola contained relatively low concentrations of total ascorbic acid in the edible parts, although higher levels of ascorbic acid in the shell. Citric acid corresponded to almost 60% of the total organic acids. The total soluble sugars [~7-12% (FW)] were predominantly sucrose, fructose and glucose. The core had almost twice as much total sugar (12%) than the pulp (6.8%). The amount of insoluble dietary fiber was around 1%, and the soluble fiber was less than 0.1%. The pulp showed the highest concentration of polyphenols (0.49%) and antioxidant activity (33 µmol.g-1) out of the parts. The consumption of the pineapple pulp or core produced a high glycemic index (~93%), but considering the glycemic load, this fruit can be considered as low dietary.

Docosahexaenoic acid is an essential polyunsaturated fatty acid with important metabolic activities. Its conjugated double bonds make it susceptible to decomposition. Its stability may be improved through fatty acid entrapment with a spray-drying technique; however, the many parameters involved in this technique must be considered to avoid affecting the final product quality. Therefore, this study aimed to evaluate the entrapment conditions and yields of fish oil enriched with docosahexaenoic acid ethyl ester. Microcapsules were obtained from Acacia gum using a spray-drying technique. The experimental samples were analyzed by chromatography and delineated by Statistica software, which found the following optimum entrapment conditions: an inlet temperature of 188 °C; 30% core material; an N2 flow rate of 55 mm; and a pump flow rate of 12.5 mL/minute. These conditions provided a 66% yield of docosahexaenoic acid ethyl ester in the oil, corresponding to 19.8% of entrapped docosahexaenoic acid ethyl ester (w/w). This result was considered significant since 30% corresponded to wall material.

The purpose of this study was to evaluate the acceptability and the microbiological safety of uncured fresh chicken sausages with reduced fat content, considering the scientific evidence that correlated cancer and cardiovascular diseases to this diet. Two formulations of uncured fresh chicken sausage were processed using different concentrations of cochineal carmine pigment, rosemary extracts and synthetic antioxidants, which are used to give color, appearance and pleasant flavor to the products. Then, instrumental color (L*, a*, b*, C* and h*), microbial contamination and sensory tests (ranking and acceptance) were used to evaluate the quality of the uncured chicken sausages. The instrumental color (chroma and hue) and the sensory properties of the A and B uncured sausages were similar to the commercial cured sausage (C). However, the sensory color and appearance of samples A and B were statistically higher than those of the commercial uncured sausages D, which are prepared without the addition of nitrite or pigments. The results showed that it is possible to produce safe and high-quality uncured fresh chicken sausage with reduced fat content, using natural pigments and antioxidants.

Okara is a by-product generated during the manufacture of soymilk and tofu. Wet okara was added to beef burgers at 0%, 20%, and 25%. The effects of okara on certain physicochemical, textural, and sensory properties of reduced fat beef burgers were investigated. The beef burgers formulated with okara (104.0-106.0 kcal/100 g) had 60% less calories than commercial beef burgers (268.8 kcal/100 g). The texture profile analysis showed that the addition of wet okara led to a significant increase in hardness (p < 0.05) and a concomitant reduction in the values of chewiness, springiness, and cohesiveness. Lower sensory scores (p < 0.05) of flavour were observed in the beef burgers containing 25% wet okara. However, the sensory evaluation results showed that juiciness, appearance, tenderness, and overall acceptability of beef burgers formulated with okara did not differ statistically from that of the control (0% okara). Wet okara (20%) can be used as a non-meat protein source in the production of reduced-fat beef burgers without changing their sensory quality.

In this study, the morphological characteristics of cocoa beverage powder granules under minimal, average, and maximal process conditions of a steam agglomerator were studied. a stereoscopic microscope coupled to a digital camera was used for the morphological analysis. The images were analyzed to obtain shape and size descriptors. aiming to evaluate the descriptors, 150 particles were analyzed. The results showed that there was no difference between the shape descriptors - compacity, circularity, roughness, and aspect ratio - in the operating conditions evaluated. It was observed that the cocoa beverage powder granules are elongated in shape. The size descriptors, area, perimeter, perimeter of convex bounding polygon, minimal and maximal Feret diameter, were different in the process conditions for the granules of size above 600 μm. as for the minimal process conditions, especially due to low solid feed rates, there is an increase in the size descriptor values. In addition, under the minimum process conditions, in which there is low solid feed rate (400g/min) for a steam pressure of 1.0 bar, it was obtained a good granular condition with retention of 81.1% of granules on sieves with aperture size between 300 and 1190 μm.

Abstract Fish consumption has increased in recent years. However, fish meat is highly perishable, which demonstrates the need for technologies to preserve its quality. Edible coatings (EC) might provide an alternative to extend the shelf life of fish. The goal of this study was to evaluate the effect of EC of chitosan (C) in combination with carvacrol (CAR) on the physical and microbiological changes of tilapia fillets. Fillets were submerged for two minutes in different treatments (T1: control; T2: C 2%; T3: C 2% + 0.125% CAR; T 4: C 2% + 0.25% CAR). At the end of storage, T1 and T2 showed the lowest values of total volatile bases (TVB). The color parameters L*, a* and b* varied from each treatment. The texture decreased and the different treatments reduced the microbial population in relation to the control; T3 and T4 were the most effective. These results show that the use of C with CAR might be an alternative method to preserve the quality and safety of tilapia fillets.

Ibn Gabirol apresenta, em sua obra Fons Vitae, um modelo metafísico baseado no hilemorfismo universal, ou seja, na presença de matéria e de forma em todos os seres, tanto corpóreos quanto espirituais. Embora considerado um autor neoplatônico, Ibn Gabirol não explicita propriamente uma henologia, mas parte das realidades sensíveis e corpóreas em direção às mais sutis. Este artigo pretende inverter essa apresentação do autor, buscando redesenhar sua metafísica a partir da Essência Primeira até o fim da criação. Para tanto, o ponto específico analisado, ainda que de modo incipiente, é a questão da unidade e seu qualificativo uno/una, tanto na atribuição que ele faz em seu modelo ontológico, quanto nos seus aspectos lógicos.

This study focuses on teacher practices in publicly funded music schools in Finland. As views on the aims of music education change and broaden, music schools across Europe share the challenge of developing their activities in response. In public and scholarly debate, there have been calls for increased diversity of contents and concepts of teaching. In Finland, the official national curriculum for state-funded music schools builds on the ideal that teaching and learning should create conditions which promote ‘a good relationship to music’. The meaning of this concept has been deliberately left open in order to leave room for dialogue, flexibility, and teacher autonomy. Since what is meant by ‘good’ is not defined in advance, the notion of ‘improving’ practices is also open to discussion. The purpose of the study is to examine these issues from teachers’ point of view by asking what music school teachers aim to accomplish as they develop their practices. Methodologically, the study introduces a suggestion for building empirical research on Alperson’s ‘robust’ praxial approach to music education, a philosophical theory which is strongly committed to practitioner perspectives and musical diversity. A systematic method for analysing music education practices, interpretive practice analysis, is elaborated with support from interpretive research methods originally used in policy analysis. In addition, the research design shows how reflecting conversations (a collaborative approach well-known in Nordic social work) can be fruitfully applied in interpretive research and combined with teacher inquiry. Data have been generated in a collaborative project involving five experienced music school teachers and the researcher. The empirical material includes transcripts from group conversations, data from teacher inquiry conducted within the project, and transcripts from follow-up interviews. The teachers’ aspirations can be understood as strivings to reinforce the connection between musical practices and various forms of human flourishing such that music and flourishing can sustain each other. Examples from their practices show how the word ‘good’ receives its meaning in context. Central among the teachers’ concerns is their hope that students develop a free and sustainable interest in music, often described as inspiration. I propose that ‘good relationships to music’ and ‘inspiration’ can be understood as philosophical mediators which support the transition from an indeterminate ‘interest in music’ towards specific ways in which music can become a (co-)constitutive part of living well in each person’s particular circumstances. Different musical practices emphasise different aspects of what is considered important in music and in human life. Music school teachers consciously balance between a variety of such values. They also make efforts to resist pressure which might threaten the goods they think are most important. Such goods include joy, participation, perseverance, solid musical skills related to specific practices, and a strong sense of vitality. The insights from this study suggest that when teachers are able to create inspiration, they seem to do so by performing complex work which combines musical and educational aims and makes general positive contributions to their students’ lives. Ensuring that teaching and learning in music schools remain as constructive and meaningful as possible for both students and teachers is a demanding task. The study indicates that collaborative, reflective and interdisciplinary work may be helpful as support for development processes on both individual and collective levels of music school teacher practices.
