In this work, the volatile chromatographic profiles of roasted Arabica coffees, previously analyzed for their sensorial attributes, were explored by principal component analysis. The volatile extraction technique used was the solid phase microextraction. The correlation optimized warping algorithm was used to align the gas chromatographic profiles. Fifty four compounds were found to be related to the sensorial attributes investigated. The volatiles pyrrole, 1-methyl-pyrrole, cyclopentanone, dihydro-2-methyl-3-furanone, furfural, 2-ethyl-5-methyl-pyrazine, 2-etenyl-n-methyl-pyrazine, 5-methyl-2-propionyl-furan compounds were important for the differentiation of coffee beverage according to the flavour, cleanliness and overall quality. Two figures of merit, sensitivity and specificity (or selectivity), were used to interpret the sensory attributes studied.

The objective in this work was to validate a chromatography method for the determination of total carbohydrates in soluble coffee, using a HPLC-UV-VIS with postcolumn derivatization system, in order to verify adulterant additions. The validated method was accurate and robust. Adulteration could be observed by increasing xylose and glucose levels in samples with addition of coffee husks and starchy products while decreasing of galactose and mannose characteristic carbohydrates presenting in high concentration in soluble coffees produced by arabica and robusta coffee beans.

A fruit chemical composition reflects its maturation stage. For coffee, it is also the reflex of the post-harvesting processing type, dry, semi-wet and wet. The object of this work was to verify if headspace solid phase microextraction coupled to gas chromatography (HS-SPME-GC) could be used to discriminate between samples harvested in different maturation stages and treated by different processes. With application of principal component analysis to the area of 117 compounds extracted by SPME, using divinylbenzene/Carboxen/polydimethylsiloxane fiber, it was possible to discriminate, in the roasted and ground coffee, the maturity stage and processing type used .

The influence of pre-processing of arabica coffee beans on the composition of volatile precursors including sugars, chlorogenic acids, phenolics, proteins, aminoacids, trigonelline and fatty acids was assessed and correlated with volatiles formed during roasting. Reducing sugars and free aminoacids were highest for natural coffees whereas total sugars, chlorogenic acids and trigonelline were highest for washed coffees. The highest correlation was observed for total phenolics and volatile phenolics (R= 0.999). Experimental data were evaluated by Principal Components Analysis and results showed that washed coffees formed a distinct group in relation to semi-washed and natural coffees.

Objetivou-se neste trabalho avaliar produtos orgânicos quanto ao efeito protetor e indutor de resistência à ferrugem do cafeeiro (Hemileia vastatrix), comparando-se com fungicidas sistêmicos. O trabalho foi desenvolvido em casa-de-vegetação, utilizando-se mudas de cafeeiro cv. Catuaí Vermelho 144. Foram avalidados como indutores de resistência extratos foliares, suspensões de conídios fúngicos e de células bacterianas, fertilizantes foliares, hipocloritos e acibenzolar-S-methyl (ASM). O delineamento experimental utilizado foi em blocos casualizados com três repetições, sendo que cada parcela experimental foi constituída de cinco mudas de café perfazendo um total de 15 mudas por tratamento. Os experimentos foram repetidos duas vezes com resultados semelhantes. Quando avaliado o efeito protetor, a maioria dos compostos reduziu o número de pústulas e a área foliar com ferrugem em comparação à testemunha 1 (água). Extratos de folhas de café, obtidos pelo processo aquoso e extratos de sementes de Azadirachta indica ('neem") obtidos pelo processo de extração com metanol apresentaram proteção similar, mas nunca superior a epoxiconazole + piraclostrobin. Extratos aquosos de folhas de café, ASM, Bacillus subtilis e Pseudomonas putida reduziram a infecção causada por H. vastatrix em mais de 77 %.

Procurou-se conhecer a flora de importância polinífera para Apis mellifera (L.) na região de Viçosa, MG, em período de entressafra de mel, entre agosto e dezembro de 2005. O experimento foi realizado em dois apiários distintos, cada um com cinco colmeias. As cargas retidas nos coletores de pólen instalados nas colmeias foram analisadas quanto à origem botânica. As plantas em floração no entorno dos apiários foram coletadas e identificadas. A maioria das plantas de importância polinífera para abelhas na região de Viçosa era nativa, localizada em jardins e com hábito arbóreo. Pela análise palinológica, verificou-se que espécies como Anadenanthera colubrina, Arecaceae sp., Baccharis dracunculifolia, B. melastomaefolia, Coffea spp., Emilia sagittata, Eugenia uniflora, Mikania cordifolia, M. hirsutissima, Myrcia fallax, Psidium guajava, Vernonia condensata, V. diffusa, V. lanuginosa e V. mariana são potenciais recursos poliníferos a serem utilizados no período de entressafra do mel. Os resultados indicaram a importância de plantas localizadas em áreas abertas para o forrageamento de pólen por A. mellifera e confirmaram o potencial polinífero da região estudada, durante o período de entressafra do mel.

O objetivo deste trabalho foi avaliar as alterações químicas de solos tratados com água residuária de café (ARC). O experimento foi conduzido em colunas de PVC, onde foram avaliadas quatro doses de ARC (0; 174; 522 e 870 t ha-1), em dois Argissolos Amarelos subdivididos em quatro camadas, para dois períodos de incubação (30 e 60 dias). O delineamento experimental foi o inteiramente casualizado, em arranjo fatorial, e as variáveis analisadas foram cálcio, magnésio, potássio, sódio, pH e condutividade elétrica do extrato da pasta saturada. As doses de ARC alteraram as propriedades químicas dos solos nos dois períodos de incubação estudados, aumentando os teores de Ca++, Na+ e, principalmente, K+ nos dois solos. A dose de aplicação de 174 t ha-1 de ARC elevou a concentração de K+ no solo para a faixa ideal, de acordo com as exigências nutricionais da cultura. A camada superficial apresentou maior concentração de K+, Na+, Ca++ e, consequentemente, maior CEes.

The production of high-quality seedlings is a critical factor for successful implementation of a determined crop in the field. In order to evaluate the production of coffee seedlings, experiments were conducted with different substrates and in different protected environments. Treatments consisted of evaluation of the following substrates: 50% cattle manure + 50% commercial substrate, 50% cattle manure + 50% vermiculite, 50% commercial substrate + 50% vermiculite, 1/3 cattle manure + 1/3 commercial substrate + 1/3 vermiculite, 50% cattle manure + 50% sand, 1/3 sand + 1/3 cattle manure + 1/3 commercial substrate and 50% commercial substrate + 50% sand. These substrates were tested in different protected environments: agricultural greenhouse, mesh screen with 50% shading, aluminized screen with 50% shading, black screen with 30% shading, black screen with 70% shading, nursery with a buriti straw roof and full sunlight. In each environment, the experiments were conducted in a completely randomized design with five replicates of four plants each followed by joint analysis. The substrates containing 50% cattle manure associated with vermiculite or the commercial substrate may be indicated for production of coffee seedlings. Screened environments with 30, 50 and 70% shading resulted in the highest quality seedlings.

The interaction between ghrelin and adiponectin is still controversial. We investigated the effect of cafeteria diet and pioglitazone on body weight, insulin resistance, and adiponectin/ghrelin levels in an experimental study on male Wistar rats. The animals were divided into four groups of 6 rats each, and received balanced chow with saline (CHOW-O) or pioglitazone (CHOW-P), or a cafeteria diet with saline (CAFE-O) or pioglitazone (CAFE-P). The chow/cafeteria diets were administered for 35 days, and saline/pioglitazone (10 mg·kg body weight-1·day-1) was added in the last 14 days prior to euthanasia. CAFE-O animals had a higher mean final weight (372.5 ± 21.01 g) than CHOW-O (317.66 ± 25.11 g, P = 0.017) and CHOW-P (322.66 ± 28.42 g, P = 0.035) animals. Serum adiponectin levels were significantly higher in CHOW-P (55.91 ± 20.62 ng/mL) than in CHOW-O (30.52 ± 6.97 ng/mL, P = 0.014) and CAFE-O (32.54 ± 9.03 ng/mL, P = 0.027) but not in CAFE-P. Higher total serum ghrelin levels were observed in CAFE-P compared to CHOW-P animals (1.65 ± 0.69 vs 0.65 ± 0.36 ng/mL, P = 0.006). Likewise, acylated ghrelin levels were higher in CAFE-P (471.52 ± 195.09 pg/mL) than in CHOW-P (193.01 ± 87.61 pg/mL, P = 0.009) and CAFE-O (259.44 ± 86.36 pg/mL, P = 0.047) animals. In conclusion, a cafeteria diet can lead to a significant weight gain. Although CAFE-P animals exhibited higher ghrelin levels, this was probably related to food deprivation rather than to a direct pharmacological effect, possibly attenuating the increase in adiponectin levels.

Fast and non-destructive indicators were evaluated as tools to measure the technological quality of Arabica and Robusta coffee. Accordingly, considering the roasting intensity in highly valuable commercial samples, volume, mass, apparent density, moisture, total ash, ash insoluble in hydrochloric acid, and ether extract were characterized. The chromatic parameters L*, C*, Hº were measured using illuminants D65 and C. It was found that in roasted coffee beans, the parameters L*, C*, Hº, and coordinate b* had an antagonist interaction due to an increase in the roasting intensity, whereas after milling, only L* and Hº decreased progressively. Considering that the parameters L* and Hº followed similar patterns using both illuminants, D65 and C, it can be concluded that they are appropriate to evaluate coffee colour changes during roasting, enabling a relationship with coffee quality.

Este trabalho foi desenvolvido com objetivo de avaliar o efeito do hipoclorito de sódio na remoção do pergaminho e na aceleração da germinação de sementes de café conilon. As sementes, cultivar Vitória, foram obtidas de frutos colhidos no estádio cereja e despolpados manualmente. As sementes foram secadas em estufa de ventilação forçada até atingirem os graus de umidade de 35, 30 e 25% em base úmida. Em seguida, as sementes com pergaminho foram submetidas à solução de hipoclorito de sódio nas concentrações de 4, 5, 6 e 7% de cloro ativo por períodos de 3 e 6 horas. Para cada grau de umidade foram acrescentados três tratamentos adicionais, constituídos por sementes intactas com pergaminho e sementes cujo pergaminho foi removido mecânica e manualmente. As sementes foram avaliadas pelas seguintes determinações: grau de umidade, germinação, primeira contagem do teste de germinação e índice de velocidade de germinação. O delineamento experimental foi o inteiramente ao acaso, em esquema fatorial 3 (graus de umidade inicial) x 4 (concentrações de hipoclorito de sódio) x 2 (tempos de imersão) + 9 (tratamentos adicionais), com quatro repetições. O hipoclorito de sódio na concentração de 6% por 3 horas proporciona germinação e índice de velocidade de germinação estatisticamente igual ao método de remoção manual do pergaminho, o qual é usado em laboratório. A remoção mecânica do pergaminho danifica as sementes de café, prejudicando a germinação.

Through the justice principles –equality, time, status, need, efficiency and worth– developed by Jon Elster, we show in this article how fair trade certification for producers is legitimatised by stakeholders. Based on a field investigation with coffee growers in Peru, Ecuador and Bolivia and with fair trade organisations in the North (Max Havelaar/FLO, Andines and Artisans du Monde), the analysis firstly reviews just certification according to the impersonal criteria of “mechanical” justice, such as equality, time and efficiency. The second section looks at more individualised criteria such as the status, need and worth of the beneficiaries. Finally, it determines in what way fair trade is really a mixed bag, one which calls upon different principles of justice to justify what it is out to accomplish. The main result of the analysis is that fair certification granted to producer organisations is not being distributed according to a unique system of justice based on just one criterion. On the contrary, fair trade is a complex and hybrid bag that uses different components from each distribution procedure.

El objeto de esta investigación es proponer la implementación del mecanismo de denominaciones de origen para el banano y el café colombianos, como estrategia para mejorar su competitividad en los mercados internacionales, determinando cuáles son los beneficios que otorga la implementación de dicho mecanismo en Colombia y cuáles serían las medidas y reglamentos legales necesarios para su aplicación a nivel interno con el fin de lograr aumentar el posicionamiento de nuestros productos en los mercados internacionales.
