O objetivo deste trabalho foi selecionar o pré-tratamento químico mais apropriado para a secagem de uvas cv. Rubi para a produção de passas. Foram obtidas curvas de secagem convectiva com ar a 50ºC, em um secador de bandejas, para uvas submetidas a pré-tratamentos químicos com diferentes concentrações de carbonato de potássio e azeite de oliva, e diferentes tempos de imersão, de acordo com planejamentos fatoriais. Também foram obtidas curvas de secagem convectiva, para uvas pré-tratadas em suspensões aquosas de lecitina de soja, em várias concentrações de lecitina e diferentes tempos de imersão. O modelo de Page foi ajustado às curvas de secagem experimental, e os tempos de secagem calculados mostraram que o melhor pré-tratamento consistiu na imersão das uvas por 2 minutos, em uma emulsão de 5% de azeite de oliva e 6% de K2CO3, a 50ºC, o que resultou em tempos de secagem próximos aos do pré-tratamento com 2,5% de azeite de oliva, mas com um menor consumo dessa substância. Além disso, a imersão das uvas em uma suspensão aquosa de 2% de lecitina de soja, a 50ºC, por 5 minutos, resultou em um tempo de secagem total apenas levemente superior ao do pré-tratamento mais efetivo.

Elephant grass (Pennisetum purpureum Schum.), was cut after nine weeks of regrowth and mixed with 10, 20, 30 and 40% of sugar cane bagasse (SCB) with the objective of reducing the moisture content of the ensiled mass. Willing of the grass for eight and twelve hours was used as a comparative treatment. Initial dry matter of the grass (13%) increased in the forage mass to 17, 23, 24 and 27% by the addition of 10, 20, 30 and 40% of the SCB respectively. Wilting for eight and twelve hours increased initial dry matter to 18 and 24% respectively. Buffering capacity of elephant grass was reduced by the addition of 40% of SCB. Clostridium spores in the ensiled mass tended to be lower due to the effect of the two pre-treatments. Initial dry matter and number of spores of Clostridium were negatively correlated although without statistic significance. The addition of SCB reduced (P < 0.0.5) soluble carbohydrates and crude protein percentages in the ensiled mass. It was concluded that wilting is more effective than the addition of SCB in the practice of ensiling elephant grass.

Natural fibers have been highlighted as a renewable material that can replace materials from oil and its derivatives. In this context, Brazil becomes the perfect setting because of the diversity of fibers found in its territory, such as sugarcane, sisal, rice, cotton, coconut, pineapple, among others. The paineiras (Chorisia speciosa St. Hil) are typically Brazilian trees, which produce paina as fruit. These fruits are still little studied as a source of lignocellulose by research groups. This project aimed obtaining and characterization of cellulose nanofibers from the fibers from the paina fibers. Obtaining nanocellulose is practically made through simplified chemical processes. First, was performed out pre-treatments to removal of waxes, lignin and hemicellulose. The first stage of pre-treatment was carried out by alkaline aqueous solution of sodium hydroxide (NaOH) at 5wt%, where the fibers were under constant agitation for 1h at 70°C. Through alkali treatment it was possible to remove most of the lignin, hemicellulose, waxes and extractives. After the alkaline treatment was done bleaching with an aqueous solution of sodium hydroxide (NaOH) to 4wt% and hydrogen peroxide (H2O2) to 24wt% 1:1 during 2h with constant stirring to 50 °C. Through bleaching was possibe to remove residual lignin, and got cellulose with 72% of crystallinity. Nanocellulose of paina fibers was extracted using different conditions of acid hydrolysis with sulfuric acid (H2SO4) to 50wt%. After acid hydrolysis, the suspensions were centrifuged during 30 min and dialyzed in water to remove excess acid until neutral pH (6-7). Then the suspensions were passed by ultrasonification in an ultrasound 20 kHz during 1h in an ice bath. Untreated, alkalinized and bleached fibers as well as cellulose nanoparticles were characterized by the techniques of thermogravimetry ... (Complete abastract click electronic access below)

Quantificação de açúcares com uma língua eletrónica: calibração multivariada com seleção de sensores

Este trabalho incide na análise dos açúcares majoritários nos alimentos (glucose, frutose e sacarose) com uma língua eletrónica potenciométrica através de calibração multivariada com seleção de sensores. A análise destes compostos permite contribuir para a avaliação do impacto dos açúcares na saúde e seu efeito fisiológico, além de permitir relacionar atributos sensoriais e atuar no controlo de qualidade e autenticidade dos alimentos. Embora existam diversas metodologias analíticas usadas rotineiramente na identificação e quantificação dos açúcares nos alimentos, em geral, estes métodos apresentam diversas desvantagens, tais como lentidão das análises, consumo elevado de reagentes químicos e necessidade de pré-tratamentos destrutivos das amostras. Por isso se decidiu aplicar uma língua eletrónica potenciométrica, construída com sensores poliméricos selecionados considerando as sensibilidades aos açucares obtidas em trabalhos anteriores, na análise dos açúcares nos alimentos, visando estabelecer uma metodologia analítica e procedimentos matemáticos para quantificação destes compostos. Para este propósito foram realizadas análises em soluções padrão de misturas ternárias dos açúcares em diferentes níveis de concentração e em soluções de dissoluções de amostras de mel, que foram previamente analisadas em HPLC para se determinar as concentrações de referência dos açúcares. Foi então feita uma análise exploratória dos dados visando-se remover sensores ou observações discordantes através da realização de uma análise de componentes principais. Em seguida, foram construídos modelos de regressão linear múltipla com seleção de variáveis usando o algoritmo stepwise e foi verificado que embora fosse possível estabelecer uma boa relação entre as respostas dos sensores e as concentrações dos açúcares, os modelos não apresentavam desempenho de previsão satisfatório em dados de grupo de teste. Dessa forma, visando contornar este problema, novas abordagens foram testadas através da construção e otimização dos parâmetros de um algoritmo genético para seleção de variáveis que pudesse ser aplicado às diversas ferramentas de regressão, entre elas a regressão pelo método dos mínimos quadrados parciais. Foram obtidos bons resultados de previsão para os modelos obtidos com o método dos mínimos quadrados parciais aliado ao algoritmo genético, tanto para as soluções padrão quanto para as soluções de mel, com R²ajustado acima de 0,99 e RMSE inferior a 0,5 obtidos da relação linear entre os valores previstos e experimentais usando dados dos grupos de teste. O sistema de multi-sensores construído se mostrou uma ferramenta adequada para a análise dos iii açúcares, quando presentes em concentrações maioritárias, e alternativa a métodos instrumentais de referência, como o HPLC, por reduzir o tempo da análise e o valor monetário da análise, bem como, ter um preparo mínimo das amostras e eliminar produtos finais poluentes.

The natural raw materials acquired special importance beside the mineral raw materials with the need for using alternative sources to oil, because they can be used to produce biopolymers. Gelatin, produced from the denaturation of collagen, and starch, an abundant polysaccharide in various plants, are examples of biopolymers which have several technological applications, especially in films. The objective of this work is to produce polymeric bioblends with gelatin and corn starch using two types of gelatin: commercial bovine gelatin and gelatin produced from mechanically separated flesh of tilapia (Oreochromis niloticus). For the extraction of tilapia gelatin 3 distinct pretreatments, followed by extraction in distilled water under heating were performed. The properties of gelatin extracted were similar to bovine gelatin, and the differences can be explained by the difference in extraction processes and sources. Blends of commercial gelatin and starch were produced in an internal mixer from a Haake torque rheometer, to study the behavior of the gelatin mixture with starch, thus, the same compositions were processed by twin screw extrusion, to define the mixing parameters. Subsequently, the extrusion of blends of tilapia gelatin and corn starch was carried out in the same twin screw extruder. The physico-chemical, rheological and morphological properties of the blends with thermoplastic starch and gelatin were studied. It was found that various properties vary linearly with increasing concentration of the components. The blends produced are immiscible, and among the two gelatins, tilapia gelatin showed a better interfacial adhesion with the corn starch. Regarding the morphology, gelatins formed the dispersed phase in all compositions studied, even in compositions rich in starch. Can be concluded that the procedure for tilapia gelatin extraction is feasible and advantageous, and the increasing in its scale to a reactor of 30 liters is possible, with a satisfactory yield. The bioblends of bovine gelatin/corn starch and tilapia gelatin/corn starch were successfully produced, and the processing conditions were appropriate

Freeze drying technology can give good quality attributes of vegetables and fruits in terms of color, nutrition, volume, rehydration kinetics, stability during storage, among others, when compared with solely air dried ones. However, published scientific works showed that treatments applied before and after air dehydration are effective in food attributes, improving its quality. Therefore, the hypothesis of the present thesis was focus in a vast research of scientific work that showed the possibility to apply a pre-treatment and a post-treatment to food products combined with conventional air drying aiming being close, or even better, to the quality that a freeze dried product can give. Such attributes are the enzymatic inactivation, stability during storage, drying and rehydration kinetics, color, nutrition, volume and texture/structure. With regard to pre-treatments, the ones studied along the present work were: water blanching, steam blanching, ultrasound, freezing, high pressure and osmotic dehydration. High electric pulsed field was also studied but the food attributes were not explained on detailed. Basically, water and steam blanching showed to be adequate to inactivate enzymes in order to prevent enzymatic browning and preserve the product quality during long storage periods. With regard to ultrasound pre-treatment the published results pointed that ultrasound is an effective pre-treatment to reduce further drying times, improve rehydration kinetics and color retention. On the other hand, studies showed that ultrasound allow sugars losses and, in some cases, can lead to cell disruption. For freezing pre-treatment an overall conclusion was difficult to draw for some food attributes, since, each fruit or vegetable is unique and freezing comprises a lot of variables. However, for the studied cases, freezing showed to be a pre-treatment able to enhance rehydration kinetics and color attributes. High pressure pre-treatment showed to inactivate enzymes improving storage stability of food and showed to have a positive performance in terms of rehydration. For other attributes, when high pressure technology was applied, the literature showed divergent results according with the crops used. Finally, osmotic dehydration has been widely used in food processing to incorporate a desired salt or sugar present in aqueous solution into the cellular structure of food matrix (improvement of nutrition attribute). Moreover, osmotic dehydration lead to shorter drying times and the impregnation of solutes during osmose allow cellular strengthens of food. In case of post-treatments, puffing and a new technology denominated as instant controlled pressure drop (DIC) were reported in the literature as treatments able to improve diverse Abstract Effect of Pre-treatments and Post-treatments on Drying Products x food attributes. Basically, both technologies are similar where the product is submitted to a high pressure step and the process can make use of different heating mediums such as CO2, steam, air and N2. However, there exist a significant difference related with the final stage of both which can comprise the quality of the final product. On the other hand, puffing and DIC are used to expand cellular tissues improving the volume of food samples, helping in rehydration kinetics as posterior procedure, among others. The effectiveness of such pre and/or post-treatments is dependent on the state of the vegetables and fruits used which are also dependent of its cellular structure, variety, origin, state (fresh, ripe, raw), harvesting conditions, etc. In conclusion, as it was seen in the open literature, the application of pre-treatments and post-treatments coupled with a conventional air dehydration aim to give dehydrated food products with similar quality of freeze dried ones. The physic nut can be propagated asexually or sexually. Using cuttings have been earlier yield and more fidelity characteristics of the parent plant. However, there is less initial vegetative growth. The seeds from the plants have increased genetic variability, are more vigorous and begin production later. To get quality changes, the substrate is an important factor. With that the objective was to taste pre-germinated treatments and different substrate on seeds emergence and quality physic nut seedlings. The experimental design was completely randomized, in factorial scheme 6 x 3 (pre-germinated treatments x substrate), 18 treatments and 4 repetition, 8 seeds to each repetition. It was evaluated six pre-germination treatments: T1: witness (without treatments); T2: water immersion for 12 hours; T3: water immersion for 24 hours; T4: mechanical scarification; T5: mechanical scarification + water immersion for 12 hours; T6: mechanical scarification + water immersion for 24 hours, using as substrate: commercial, expanded vermiculite and sand washed. The mechanical scarification was realized opposite the micropyle using sandpaper n. 60. After the pre-germination treatments, the seeds were emergence in plastic cups (200mL) with substrates. We evaluated the characteristics: percentage, beginning and emergence speed index, mean length of plant, diameter of plant stem, SPAD index, fresh and dry shoot and root. The results showed that in seeds of Jatropha do not need pre-germinative treatments; and the use of commercial substrate showed seedling development.
