Este trabalho objetivou a elaboração e caracterização físico-química, microbiológica e sensorial do “Queijo Marajó”, tipo creme, processado com leite de búfala, além de avaliar sua vida de prateleira, durante 28 dias, e rendimento econômico. Foram produzidos derivados em dois locais (Local A - Universidade do Estado do Pará e Local B - Laticínio, de Soure, Pará). Foram determinados no leite e no queijo, os níveis de umidade, lipídeo, proteína, carboidrato, valor calórico, acidez, pH, bactérias mesófilas, coliformes a 35°C e 45°C, bolores e leveduras, Staphylococus aureus e Salmonella. Apenas no queijo foram realizadas análises de colesterol e minerais. A análise sensorial constou de perfil de características e teste de aceitação. A similaridade das médias das variáveis físico-químicas do leite de búfala indicou que ele foi adequado para a elaboração de derivado padrão. Nenhuma amostra de leite apresentou contaminação por coliformes, Staphylococcus aureus e Salmonella. A maior contaminação foi constatada para bactérias aeróbias mesófilas e bolores e leveduras. Os teores de gordura no extrato seco e de umidade classificaram o derivado como gordo e de média umidade. O “Queijo Marajó” apresentou-se dentro dos padrões estabelecidos para alimento de qualidade, até o 21º de armazenamento. Os atributos sensoriais mais perceptíveis e que caracterizaram o perfil sensorial do derivado foram cor branca, aromas lácteo e ácido, gostos ácido e salgado e maciez. O Teste de Aceitação indicou que o queijo foi muito apreciado pelos provadores. Para elaborar adequadamente o “Queijo Marajó” há necessidade de Boas Práticas de Fabricação, dentro as quais se destacam o controle da acidez e da gordura do leite e da massa usada para o derivado, padronização da quantidade de creme, de cloreto de sódio e sorbato de potássio adicionados, além da higiene na obtenção do leite e processamento.

Este artigo analisa experiências protagonizadas por comunidades cujos modos de vida geram e se sustentam em conhecimentos tradicionais em face de tentativas de implementação de um regime global de propriedade intelectual. Estudos de caso sobre quebradeiras de coco babaçu, no estado do Maranhão, e produtores de queijo serrano, no Estado do Rio Grande do Sul, revelam significados da tradição implícita no conhecimento que se pretende proteger. Dados empíricos, analisados jurídica e antropologicamente, evidenciam, apesar de aparente progresso na legislação, ameaças a múltiplas dimensões de modos de vida fundados em territórios tradicionais. Argumenta-se que, sem a imediata e integral aplicação da Convenção OIT 169, invertem-se os efeitos da incorporação de convenções internacionais no ordenamento jurídico nacional, a exemplo da Convenção da Diversidade Biológica. Conclui-se que as comunidades tradicionais resistem à ilegal apropriação de seus conhecimentos, enquanto setores privados neles interessados utilizam-se do estado de direito para legalizar sua pilhagem.

We studied the molecular epidemiology of Staphylococcus aureus strains potentially toxigenic, isolated from the production process of Minas frescal cheese in a small dairy plant in the state of São Paulo. For this, samples were taken during the period from June 2008 to July 2009. Samples were collected from the surface of the receiving and storage tanks of raw milk, the surface of the balance tank of pasteurized milk, the water supply system, the pipes and equipments, the hands of the handler and from the packaged cheese, totaling 140 samples. The colonies isolated on Baird-Parker Agar confirmed as Gram positive and positive for catalase, coagulase and acetoin production, were submitted to extraction of bacterial DNA using the Invitek - Uniscience® kit. Confirmation of the isolated species and enterotoxins SEA, SEB, SEC, SED and TSST-1 toxin was carried out through the amplification of specific fragments of chromosomal DNA. Among the 74 strains of isolated coagulase-positive staphylococci, only 41 (55.4%) strains were confirmed as Staphylococcus aureus, of which 25 (61.0%) were positive to the presence of staphylococcal toxins. The most frequently identified enterotoxin was SEA. The toxigenic strains of Staphylococcus aureus were more frequently isolated from hands of the handler (16.0%), raw milk receiving tank (12.0%), pasteurized milk for cheese making (12.0%) and fresh white cheese ready for consumption (12.0%).

The food industry looks for new ways and strategies to standardize the marketing products in the customer market. The modification of the cornflour that are produced in the manufacturing of the cheese bread has been one of the these ways, since some raw materials that are used to make the cornflour present different features in each supplyed allotment. The present research had as a main purpose to analyse such features looking forward to improving the quality of the final product. Thus, some tests were done to verify the pH, humidity and acidity; it was checked the percentage of carbonyl and carboxylic groups and the power of expansion to five different allotments and to farina, for example: pre-gel, natural, expandex farina as the combination of the three cited kinds. After diversifying the allotments, different results were acquired, even to an unique kind of farina and it was not possible to correlate the results of acidity, the percentage of carbonyl and carboxylic groups and the power of expansion. The pH and humidity are proper for each kind of farina. This way, the raw materials that are used for each cheese bread manufacturing must be analysed in each allotment

Fresh cheeses such as Minas frescal and ricotta are excellent means for undesirable microorganisms to thrive, damaging quality and wholesomeness of these products. In this context, this study aimed at evaluating the contaminating microorganisms in the processing line of fresh cheese, namely Minas frescal and ricotta, of a dairy plant nestled in the city of São José do Rio Preto-SP. The analyses were carried out with the following steps: water, pasteurized milk, curd, mass, whey, palmar surface and coagulation tank, and cheeses with zero and five days of shelf life. Such steps were monitored by determining the MLN of total coliforms and thermotolerants; counting of coagulase-positive Staphylococcus and mesophilic aerobic bacteria; search of Escherichia coli, Salmonella spp. and Listeria monocytogenes. Twelve samples were evaluated in each step. Among the water samples, three are provided with higher values than the ones recommended in terms of mesophilic aerobic bacteria. Three milk samples did not comply with thermotolerant coliforms. The mass samples, curd and whey showed a decrease in the counting for all microorganisms. Both palm surface and coagulation tank showed low counting for all bioindicators. All milk samples showed compliance regarding phosphatase/peroxidase.

The Prato cheese is the second most consumed cheese in Brazil. It is produced by milk enzymatic coagulation, and maturated for at least 25 days; it is classified as fatty cheese and of medium moisture. Due to the concern to health, the cheeses consumers have been seeking for products with low fat contents; however fat is essential for providing desirable sensory and physiologic characteristics, such as flavor, softness and texture to cheeses. Alterations on the technological processing of low fat cheeses have been made seeking for improved products, and the use of proteolytic enzymes has been a significant strategy. The meltability, color and sensory characteristics are fundamental quality indicators of the final products. This study reports the findings from the analyses on the physical and sensory characteristics of low fat Prato cheese with addition of proteolytic enzyme – fastuosain, that is extracted from unripe gravata fruit. The addition of fastuosain improved the quality of the product, as this additive neither affected the meltability, nor produced bitterness, which is a common unpleasant taste in low fat cheeses.

Chemical composition, proteolysis and functional properties of commercial Mozzarella cheese with reduced fat content found in the market of Londrina – PR were evaluated. The cheeses were analyzed for chemical composition, meltability, free oil formation, and the indexes of extension and depth of proteolysis during 30, 45 and 60 days of storage at 5°C. The samples showed no significant difference in chemical composition. The fat content of all samples complied with current legislation regarding the minimum percentage (25%) of fat reduction. Among the three brands tested, the cheeses of brand C showed the highest depth index of proteolysis. In all chesses, the meltability has increased during storage period. The, the brand C had significantly higher (p <0.05) free oil content when compared to other brands tested.

This study presents an analysis of the discomfort in the use of a cheese grater. Data was collected using a protocol of perceived discomfort and the results show that the subjects with no experience in cooking reported more experiences of discomfort and higher intensity than the subjects with experience in cooking.
