La intensificación de la producción porcina, sin duda es uno de los principales factores que han influido en la alta competitividad del sector. Dicha intensificación sin embargo debe enfrentarse a nuevos retos de acuerdo con la creciente preocupación de los estados europeos sobre problemas de bienestar animal y de contaminación medioambiental resultante de la producción animal intensiva. La excreción de nitrógeno en los purines (que es uno de los principales factores contaminantes), puede ser reducida substancialmente si se reduce el contenido proteico del pienso. Ello, sin embargo debe de hacerse de manera que la dieta aporte las cantidades mínimas de aminoácidos requeridas por los animales, y que por tanto los parámetros productivos no se vean afectados. Para asegurar un aporte mínimo adecuado de aminoácidos en el pienso, es esencial un conocimiento preciso del valor nutritivo de las materias primas utilizadas. En la actualidad se utilizan los valores de contenido en aminoácidos digestibles ileales presentes en tablas publicadas por diferentes fuentes de información. Dichas tablas, sin embargo, son valores medios que no contemplan la elevada variabilidad en el contenido de aminoácidos digestibles dentro de una misma materia prima. Debido a esta variabilidad, para asegurar que los requerimientos de aminoácidos queden cubiertos al menos en un 80% de los casos, se debe sobreformular a un 107-108% de los requerimientos. Se ha estimado que una rápida determinación del contenido de aminoácidos digestibles ileales en las materias primas mediante la utilización de espectroscopia del infrarojo cercano (NIRS), permitiría el conocimiento del valor nutritivo de cada partida de materia prima, y una reducción de la sobreformulación a un 103%, con el consiguiente beneficio medioambiental. El principal inconveniente, para la aplicación de dicha metodología NIRS, es que su calibración requiere un esfuerzo excepcional, que solamente puede conseguirse con el trabajo de varios años de determinaciones in vivo de digestibilidad ileal de aminoácidos de un elevadísimo número de muestras. El presente proyecto tenía como principal objetivo la puesta a punto de una técnica de digestibilidad ileal de nutrientes in vitro (validada con determinaciones in vivo), que nos permitiera un análisis más rápido de un número elevado de muestras para realizar la calibración del NIRS. Para ello se escogió la cebada como materia prima para realizar los estudios por su importancia económica en España.

A sample of about 70 young bulls of each of ten beef cattle breeds reared in their typical production systems has been characterised with respect to meat quality traits. Breeds included were Asturiana de los Valles, Asturiana de la Montaña, Avileña-Negra Ibérica, Bruna dels Pirineus, Morucha, Pirenaica and Retinta from Spain, and Aubrac, Gasconne and Salers from France. As was previously showed regarding carcass traits, there exist large differences both between and within breed – systems. In general, rustic breeds tended to present darker and redder meats with higher haematin contents, whereas less precocious and more specialised breeds showed brighter meats with bigger water losses. Protein content was similar, whereas intramuscular fat presented the larger variations both between and within breeds. ICDH content was higher in the more rustic breeds, showing the predominantly oxidative character of their fibres. Texture measurements showed in general large within breed-system variations, the differences between breeds being less evident. Within breed-system, daily gain weight was positively associated with brighter and tender meats. In the range studied, increasing slaughter weight within breed did not have influence on meat quality. Conformation was related to lower water holding capacity and less dry matter and intramuscular fat, as well as to a lower haematin content giving brighter meats. The increase in fatness scores was related to an augment of toughness in meat specialised breeds, although in Avileña-Negra Ibérica breed fatness carcasses were related to more tender meats. Redness parameter a* was positively related to fatter animals and opposed to conformation, the opposite being true for the L* (lightness) parameter. There was a small trend of fatter carcasses to be related to oxidative fibres, whereas the muscular fibres of the more conformed carcasses were more glycolytic. Texture measurements maximum load, maximum stress and toughness were very closely related. Shear force was opposed to tenderness. Losses at cooking were opposed to juiciness, but only in the Spanish breeds. No consistent trends regarding relationships between carcass characteristics and tenderness could be observed. Overall acceptability was primarily related with tenderness and flavour, and later on juiciness.

En el proyecto se plantearon una serie de objetivos de investigación encaminados a resolver los problemas que el cultivo larvario del dentón estaba planteando al sector industrial, teniendo en cuenta el interés que existe actualmente en España por la búsqueda de nuevas especies susceptibles de ser cultivadas a nivel industrial y el interés económico que existe en la zona mediterránea por el dentón, no sólo por la calidad de su carne sino por su rápido crecimiento en jaulas y su elevado valor comercial. Los objetivos que se plantearon en el proyecto tenían como finalidad establecer una secuencia alimentaria propia de la especie para la que los conocimientos derivados del cultivo de la dorada (con un crecimiento mucho menor) no son adecuados, tener una aproximación a los requerimientos nutricionales de la larva del dentón con el fin de diseñar dietas de enriquecimiento de presas vivas y/o microcápsulas adecuadas para suplir estos requerimientos, avanzar el periodo de destete en el tiempo con el fin de disminuir el aporte de Artemia que es uno de los productos que encarece el proceso de producción de juveniles, lograr la homogeneización de tallas durante este periodo de destete con el fin de reducir el canibalismo tan extremo que presenta el dentón y por último hacer una comparación entre las técnicas empeladas en el cultivo larvario, la intensiva aplicada fundamentalmente en España siguiendo el modelo de la dorada o el rodaballo y la semiextensiva utilizada habitualmente en Grecia. Los objetivos planteados en el proyecto se enumeran a continuación: Objetivo 1.- Efecto de la temperatura sobre el desarrollo embrionario y larvario - Manipulación de la temperatura de incubación y del cultivo larvario en los primeros estadios de desarrollo para permitir un mejor aprovechamiento de las reservas vitelinas y obtener larvas más grandes y con mayor cantidad de vitelo que puedan resistir posibles periodos de ayuno - Análisis del contenido lipídico del vitelo Objetivo 2.- Comportamiento trófico y secuencia alimentaria - Estudio de los contenidos digestivos de las larvas alimentadas con presas vivas a fin de establecer una secuencia alimentaria propia del dentón tanto en cuanto a tipo de preso como cantidad y numero de dosis diarias. Objetivo 3.- Destete avanzado - Preparación de microdietas de zeina para la alimentación de larvas de 20-25 días y poder reducir el aporte de nauplios de Artemia Objetivo 4.- Homogeneización de la talla de los peces para evitar el canibalismo - Sincronización de la metamorfosis del dentón mediante el suministro de hormonas tiroideas Objetivo 5.- Cultivo semiextensivo versus intensivo - Comparación de los resultados obtenidos en cuanto a crecimiento y supervivencia usando las técnicas de cultivo intensivo y semiextensivo

La nutrició animal a la Unió Europea (UE) ha estat afectada per vàries crisis, com la de les vaques boges (encefalopatia bovina espongiforme) (BSE), les hormones a la carn, la contaminació per les dioxines, els Organismes Genèticament Modificats (GMO) i l’ús d’antibiòtics com a promotors de creixement (AMGP). Des dels anys 70, la producció animal a la UE ha estat encaminada a buscar regulacions legals per a millorar la seva seguretat i eficàcia. Si més no, durant els últims cinc anys, casos com la BSE i d’altres han col·locat al sector en primera línia de les notícies, la qual cosa ha trencat la confiança dels consumidors en el consum de carn. Aquesta presentació intentarà explicar per què i com la UE està tractant aquests temes i què és el que el sector està fent per recobrar la confiança dels consumidors. La intenció és respondre a algunes qüestions que preocupen al sector, com per exemple: La producció animal europea, és menys segura que les altres? Per què les regulacions legals són més exigents per a nutrició animal que per als humans? El sector s’està preguntant si aquesta crisi pot produir un nou model europeu de producció animal. Finalment, l’actual sistema de ramaderia s’haurà de discutir: quantitat o qualitat.

Con la deforestación, los incendios y la utilización indebida de los agrotóxicos, las abejas nativas de Brasil corren un serio peligro de extinción. Ello se debe a que estas abejas construyen sus nidos en los huecos de los troncos de los árboles y también a que sus fuentes de alimentación son cada vez más escasas. Por ello cada vez son más los que se dedican a la meliponicultura, de esta manera se conservan las abejas y además, se obtiene una renta extra. Mediante el presente proyecto se capacitó en meliponicultura a una muestra de la población de Poço Redondo, para que de esta manera se empiece a recuperar su entorno y también su situación económica actual. Para poder conseguirlo se llevó a cabo el diseño del curso mediante la documentación previa, el trabajo de campo y el análisis de los datos. El resultado fue la capacitación, con la que se formó y concienció ambientalmente a personas para que se dedicaran a la meliponicultura de manera profesional.

Es va realitzar el II Workshop en Tomografia Computeritzada (TC) a Monells. El primer dia es va dedicar íntegrament a la utilització del TC en temes de classificació de canals porcines, i el segon dia es va obrir a altres aplicacions del TC, ja sigui en animals vius o en diferents aspectes de qualitat de la carn o els productes carnis. Al workshop hi van assistir 45 persones de 12 països de la UE. The II workshop on the use of Computed Tomography (CT) in pig carcass classification. Other CT applications: live animals and meat technology was held in Monells. The first day it was dedicated to the use of CT in pig carcass classification. The segond day it was open to otehr CT applications, in live animals or in meat and meat products quality. There were 45 assistants of 12 EU countries.

The experiment aimed to study approach and locomotive behaviour as indicators of fear in a novel object test carried out in pigs. Thirty post-weaning (30 kg) and 30 finishing (90 kg) pigs were exposed to visual, auditory and olfactory novel stimuli during 2 different experiments. The facilities consisted of a test pen in which a trough was located. The trough contained chopped apples. Once the animals were trained to enter the test pen individually they were subjected to 3 different fear stimuli. These stimuli were applied in the test pen and next to the trough. The variables studied were feeding behaviour, approach behaviour (the distance and position of the animal with respect to the trough) and locomotive behaviour (general activity, reluctance to move, turning back and retreat attempts). Two groups were studied: saline and midazolam treated group. Twenty minutes before the start of the sessions, 15 post-weaning and finishing pigs received an intramuscular injection of 0.20 and 0.15 mg/kg, respectively, midazolam (Dormicum1). The saline pigs (15 animals per group) were injected with saline. The administration of midazolam increased the feeding behaviour and approaching behaviour, and reduced the locomotive behaviour. In front of the visual and olfactory stimuli post-weaning pigs showed a higher general activity than finishing pigs, but the contrary was found when the auditory stimulus was applied. The olfactory stimulus was more related to the turning back behaviour, whereas the visual stimulus was more related to retreat attempts. Although it could be concluded that reluctant to move was the most common response to the different fear stimuli applied in our study regardless of the age of animals, the combination of reluctant to move and turning back would be a good criterion to assess fear in domestic pigs. The use of midazolam as anxiolytic for studies of fear in commercial conditions in pigs is recommended.

Ontogenetic changes in digestive capabilities were analyzed in larvae and first juveniles of the spider crab Maja brachydactyla. Activities of five proteinases (total proteases, trypsin, chymotrypsin, pepsin-like and aminopeptidase), three carbohydrases (amylase, maltase and chitinase), an esterase and an alkaline phosphatase were studied to evaluate digestive enzyme profiles of the species. Both quantitative (spectrophotometry and fluorometry) and qualitative (SDS-PAGE) approaches were used. All assayed enzymes were active from hatching (zoea I-ZI) throughout larval development and in first juveniles. Significant variations during ontogeny were found only in total activities likely as a consequence of digestive system development. Specific activity varied little over ontogeny, being significant only for chitinase. Total proteases, trypsin and pepsin-like activities showed a similar pattern of increase as larval ontogeny advanced, decreasing significantly in juveniles. Chymotrypsin continued to increase, showing maximum activity after metamorphosis. Proteinase zymograms confirmed strong proteolytic activity in first zoeas, with increasing bands over the course of ontogeny, decreasing after metamorphosis. A group of bands with high molecular mass was specific to larval stages. Amylase and maltase showed a parallel pattern of continuous increase of total activity as development advanced. Gel-SDS-PAGE showed unchanged patterns of amylase activity in first zoeas of different ages and the most complex set of bands during larval ontogeny in second zoea. Esterase total activity increased significantly as ZI's aged likely reflecting introduction of a lipid-enriched diet. The importance of lipid accumulation at the beginning of ontogeny was also confirmed by the protease/esterase and amylase/esterase activity ratios, which decreased from hatch to late ZI and might be explained as an adaptation, ensuring the next molt. The results suggest that larvae of M. brachydactyla are capable of digesting a variety of dietary substrates as soon as they hatch.

The blue swimmer crab is a commercially important species of the tropical Indo-Pacific regions that shows substantial potential as a candidate species for aquaculture. Optimization of larval rearing conditions, including photoperiod, is therefore important to establish a method for the intensive hatchery culture of this species. Newly hatched larvae of Portunuspelagicus in first zoeal stage (ZI) were reared under five photoperiod regimes 0L: 24D, 6L: 18D, 12L: 12D, 18L: 6D, and 24L: 0D (5 replicates per treatment) till they metamorphosed to megalopae (ranged from 8.5 ± 0.3 days (18L: 6D) to 10.8 ± 1.8 days (0L: 24D) at 29 ± 1 °C). Daily, larvae of each treatment were fed an identical diet of mixed rotifer and Artemia nauplii, and the survival and molt to successive stages was monitored. Newly hatched ZI larvae of P. pelagicus could successfully develop to the megalopal stage under all tested photoperiod conditions, but we detected significant differences in survival among treatments (p & 0.05). The constant darkness treatment (0L: 24D) had the lowest (19.2 ± 7.2%, mean ± S.E.) cumulative survival from ZI to the megalopal stage, while the 18L: 6D treatment achieved the highest survival (51.2 ± 23.6%). Similarly, the photoperiod significantly affected zoeal development. Constant darkness led to the longest cumulative zoeal duration (10.8 ± 1.8 days), whereas the 18L: 6D treatment rendered the shortest larval development (8.5 ± 0.3 days). In addition, larvae reared under constant darkness resulted in the smallest megalopae (carapace length = 1.44 ± 0.09 mm) and the lowest dry weight (0.536 ± 0.188 mg). In conclusion, photoperiod significantly affected the survival, development, and growth of P. pelagicus zoeal larvae. Constant darkness led to the lowest larval survival and developmental rate, while a photoperiod regime of 18L: 6D appeared to be the most suitable condition for the rearing of zoeal larvae of P. pelagicus.

The moulting cycles of all larval instars (zoea I, zoea II, and megalopa) of the spider crab Maja brachydactyla Balss 1922 were studied in laboratory rearing experiments. Morphological changes in the epidermis and cuticle were photographically documented in daily intervals and assigned to successive stages of the moulting cycle (based on Drach's classification system). Our moult-stage characterizations are based on microscopical examination of integumental modifications mainly in the telson, using epidermal condensation, the degree of epidermal retraction (apolysis), and morphogenesis (mainly setagenesis) as criteria. In the zoea II and megalopa, the formation of new setae was also observed in larval appendages including the antenna, maxillule, maxilla, second maxilliped, pleopods, and uropods. As principal stages within the zoea I moulting cycle, we describe postmoult (Drach's stages A–B combined), intermoult (C), and premoult (D), the latter with three substages (D0, D1, and D2). In the zoea II and megalopa, D0 and D1 had to be combined, because morphogenesis (the main characteristic of D1) was unclear in the telson and did not occur synchronically in different appendices. The knowledge of the course and time scale of successive moult-cycle events can be used as a tool for the evaluation of the developmental state within individual larval instars, providing a morphological reference system for physiological and biochemical studies related to crab aquaculture.

The purpose of this paper is to provide a comparative analysis of pork value chains in Catalonia, Spain and Manitoba, Canada. Intensive hog production models were implemented in Catalonia in the 1960s as a result of agriculture crises and fostered by feedstuffs factories. The expansion of the hog sector in Manitoba is more recent (in the 1990s) and brought about in large part by the opening of the Maple Leaf Meats processing plant in Brandon, Manitoba. This plant is capable of processing 90,000 hogs per week. Both hog production models ‐ the ‘older’ one in Catalonia (Spain) and the ‘newer’ in Manitoba‐ have been, until recently, examples of success. Inventories and production have been increasing substantially and both regions have proven to have great export potential. Recently, however, tensions have been developing with the hog production models of both regions, particularly as they relate to environmental concerns. The purpose of the paper is to compare the value chains with respect to their origins (e.g. supply a growing demand for pork, ensure farm profitability) and present states (e.g. environmental concerns, profitability). This article examines the governance structures for managing the location and operation of Intensive Livestock Farming Operations (ILFOs). The article focuses on the hog sector and compares two very different jurisdictions: the Province of Manitoba, Canada and the Autonomous Community of Catalonia, Spain. Both are regions that have witnessed recent increases in hog production, including increasing spatial concentration of ILFOs and increasing size of those ILFOs. Policy has both fostered and sought to manage the increased production. Following a brief background description of restructuring, the changing legislative framework for Manitoba and Catalonia are described.
