An experiment was conducted on guava trees Psidium guajava L. (cv. Paluma) grown in the Experimental Citrus Culture Station of Bebedouro, SP, on dystrophic, acid Typical Hapludox in order to assess the effects of application of increasing lime doses to the soil on the quality of guava fruits on the basis of the physicochemical changes observed in the fruits after harvesting. The treatments consisted of increasing lime doses applied before planting, considering 0, 1.85, 3.79, 5.56 and 7.41 t ha(-1), applied in August 1999. Leaf calcium content was assessed at flowering time. After fruit harvesting, calcium content in the pulp, total weight, transverse diameter, length, pulp weight, % pulp, Brix degrees (degrees Brix), titratable acidity, and fruit ratio were determined. Loss of fruit fresh mass, firmness and color were determined daily during a period of 8 days of storage. Lime application to an acid Red Latosol before guava tree planting did not affect the physical characteristics of the fruits but provided a lower loss of fresh matter and greater fruit firmness when the fruits presented Ca levels close to 0.99 g kg(-1). It is important to conduct new studies of the effects of liming on guava fruit quality under different edaphic-climatic conditions and on different guava tree genotypes. (c) 2005 Elsevier B.V. Os critérios para recomendação de adubação nitrogenada e potássica em pomares cítricos carecem de experimentação regional. O objetivo deste experimento foi avaliar os efeitos de doses combinadas de N e de K2O para a laranjeira-Valência cultivada em solo representativo do município de Adolfo, Norte do Estado de São Paulo, de citricultura desenvolvida. em delineamento tipo fatorial 3 x 3, com 3 repetições, foram combinadas as doses de 94; 188 e 376 kg ha-1 de N, como nitrato de amônio e 38; 75 e 150 kg ha-1 de K2O, como cloreto de potássio, durante três safras (1997 a 1999). Anualmente, foram feitas avaliações de diagnose foliar para nitrogênio e potássio, de produção e de análise de suco para acidez titulável e teor total de sólidos solúveis. Os dados obtidos mostraram que os pomares mantiveram a produtividade com as doses mínimas de N e de K2O durante os três anos, não havendo resposta em produção às doses crescentes desses nutrientes. Os teores foliares de N e de K mantiveram-se dentro das faixas consideradas adequadas, nos tratamentos com doses mínimas de N e de K2O, nas três safras. Apenas no segundo ano, em que a produção foi diminuída por fatores climáticos, foram observados efeitos significativos de combinações de doses de N e de K2O sobre a acidez e o teor de sólidos solúveis do suco.

A produção de biomassa e de carotenoides por Rhodotorula rubra foi estudada em meios à base de caldo, melaço e xarope de cana. Avaliou-se o efeito da suplementação dos meios com nitrogênio na forma de ureia ou do nutriente comercial Nitrofos KL. O delineamento experimental utilizado foi o inteiramente casualizado, no esquema fatorial 3 × 3, sendo um dos fatores o substrato (caldo, melaço e xarope) e o outro a suplementação (controle, ureia e Nitrofos KL). Os resultados foram submetidos à análise de variância e teste de Tukey a 5% de probabilidade. As maiores produções de massa seca de levedura foram obtidas no meio à base de melaço suplementado com ureia ou Nitrofos KL (15,09 e 14,87 g/L, respectivamente). A produção de carotenoides intracelular foi elevada em todos os meios estudados sem suplementação (0,329 mg/g). Para a produção volumétrica, o melhor meio foi o melaço (2,74 mg/L), enquanto a suplementação com ureia e com Nitrofos KL produziu 2,55 e 2,32 mg/L, respectivamente. Os principais carotenoides produzidos foram toruleno, torularrodina e β-caroteno. No meio à base de caldo de cana sem suplementação, houve o menor consumo de carboidratos, enquanto que o meio com suplementação à base de ureia obteve o maior consumo.

Foram avaliadas as variações genéticas através de marcadores moleculares RAPD, as seguintes espécies de maracujá: Passiflora amethystina, P. caerulea, P. cincinnata, P. coccinea, P. serrato digitata, P. foetida, P. maliformis, P. alata, P. giberti, P. laurifolia, P. macrocarpa, P. nitida, P. setacea, P. suberosa, P. ligularis, P. capsularis, P. edulis Sims e sua variedade botânica P. edulis Sims f. flavicarpa Deg. Neste estudo, a análise dos produtos da amplificação ao acaso do DNA polimórfico (RAPD) foi usada para estimar a diversidade genética e as relações taxonômicas entre as espécies. Foram utilizados 21 primers, que produziram um total de 270 bandas polimórficas. Verificou-se que as espécies de Passiflora apresentaram uma média de similaridade de 17,3%, e entre Passiflora edulis Sims e Passiflora edulis Sims f. flavicarpa, de 34,35%. Pode-se perceber que o valor de similaridade dentro da espécie edulis é baixo, ilustrando a grande variação entre a forma amarela e a roxa de Passiflora edulis.

O bacuri (Platonia insignis, Mart.) é um dos mais importantes entre os frutos da Amazônia. Todavia, pouco se sabe sobre sua fisiologia pós-colheita, bem como, estádio de maturação, mudanças durante o armazenamento sob condições ambientais e padrão respiratório. Os frutos foram colhidos em três estádios de maturação baseados na coloração do epicarpo: verde-escuro, verde-claro e de vez (50% amarelo), com o objetivo de se determinar as modificações de coloração e padrão respiratório durante armazenamento sob condições de ambiente (25,2 ºC, 75,1 % UR). Os frutos de todos os estádios de maturação apresentaram, a partir do terceiro dia de colheita, comportamento respiratório não climatérico, com os frutos de vez apresentando maior taxa de produção de CO2 até o quarto dia de armazenamento (177,63 mg CO2.kg-1.h-1). O amarelecimento aumentou durante o armazenamento e foi relacionado com a diminuição da luminosidade (L), cromaticidade e ângulo hue. Os frutos de vez podem ser armazenados sob condições de ambiente por até 10 dias sem nenhuma perda da qualidade comercial.

Dietary modifications may significantly reduce cardiovascular disease (CVD) risk factors, including cholesterol and atherosclerosis. The present study addressed the effects of the crude extract from the pulp fruit of Tamarindus indica L. on lipid serum levels and early atherosclerotic lesions in hypercholesterolemic hamsters in vivo, and the extract's antioxidant action, in vitro. Animals were fed on either chow or atherogenic diet during 10 weeks and concomitantly received either water or T indica L. extract for drinking. Treatment of hypercholesterolemic hamsters with the T. indica pulp fruit extract (5%) led to a decrease in the levels of serum total cholesterol (50%), non-HDL cholesterol (73%) and triglyceride (60%), and to an increase of high-density lipoprotein (HDL) cholesterol levels (61%). In vitro, the extract presented radical scavenging ability, as assessed by the 2,2-diphenyl-1-picrylhydrazyl (DPPH) and superoxide radicals assays, and led to decreased lipid peroxidation in serum, as assessed by the thiobarbituric acid reactive substances (TBARS) assay. In vivo, the extract improved the efficiency of the antioxidant defense system, as assessed by the superoxide dismutase, catalase and glutathione peroxidase activities. Together these results indicate the potential of tamarind extracts in diminishing the risk of atherosclerosis development in humans. (c) 2005 Elsevier Ltd. All rights reserved.

O trabalho avaliou os efeitos de auxinas e giberelina, combinadas e aplicadas em pré-colheita no desenvolvimento e na porcentagem de queda natural dos frutos de laranjeira-'Hamlin' (Citrus sinensis Osbeck). Foram realizadas 3 aplicações a intervalos de 45 dias dos seguintes tratamentos, via foliar: GA3 + NAA a 12,5mg.L-1 de cada; GA3 + NAA a 25mg.L-1; GA3 + 2,4-D a 12,5mg.L-1; GA3 + 2,4-D a 25mg.L-1; NAA + 2,4-D a 12,5mg.L-1; NAA + 2,4-D a 25mg.L-1; testemunha (água). As variáveis avaliadas foram: porcentagem de queda natural dos frutos (%), massa fresca de frutos (g) e teor de suco no fruto (%). Os resultados obtidos mostram que a utilização de reguladores vegetais atrasa a queda natural de frutos de laranjeira-'Hamlin', podendo-se prolongar o período de colheita, destacando-se o tratamento com GA3 25mg.L-1 +2,4-D 25mg.L-1 e também não influenciaram no aumento da massa fresca e no teor de suco dos frutos.

O trabalho objetivou avaliar os efeitos de auxinas e giberelinas, combinados e aplicados em pré-colheita no desenvolvimento e na taxa de queda natural de frutos de laranjeira 'Pêra'. Foram utilizadas árvores de laranjeira (Citrus sinensis Osbeck) cultivar Pêra com 5 anos de idade. Os tratamentos foram: GA3 + 2,4-D 12,5mg L-1 de cada; GA3 + 2,4-D 25mg L-1; GA3 + 2,4-D 37,5mg L-1; GA3 + NAA 12,5mg L-1; GA3 + NAA 25mg L-1; GA3 + NAA 37,5mg L-1; NAA + 2,4-D 12,5mg L-1; NAA + 2,4-D 25mg L-1; NAA + 2,4-D 37,5mg L-1 e testemunha (água). Durante todo o período experimental foram realizadas três aplicações a intervalos de 45 dias. As variáveis avaliadas foram: Taxa de queda natural dos frutos (%), comprimento (mm), diâmetro (mm) e massa fresca dos frutos (g). Nenhum dos tratamentos proporcionaram alterações no desenvolvimento final dos frutos, mas reduziram a taxa de queda natural em comparação com a testemunha em até 78,05%, inibindo a abscisão dos frutos em até três meses.

Grafting is an alternative technique often recommended for cucumber culture in protected environments. This study aimed to study yield of cucumber grafted on different rootstocks compared to non-grafted plants in non-infected soil. Five treatments (Japanese cucumber hybrid 'Tsuyataro' without grafting, grafted on squash hybrids 'Shelper', 'Excitte Ikki', 'Daiguy' and 'Keiji') were evaluated in a completely randomized blocks design, with four repetitions and six plants per plot. Lesser fruit yield was obtained in cucumber grafted on 'Keiji', while cucumber grafted on other rootstocks did not differ from non-grafted plants. So, in the absence of soil borne diseases, grafting did not increase cucumber fruit yield, and, depending on rootstock, grafting can decrease production compared with non grafted plants.

The cashew, a fruit from Brazilian Northeast is used to produce juice due to its flavor and vitamin C richness. However, its acceptance is limited due to its astringency. Cajuína is a derivate product appreciated by its characteristic flavor, freshness and lack of astringency, due to tannin removal. Cajuína is a light yellow beverage made from clarified cashew juice and sterilized after bottling. It differs from the integral and concentrated juice by the clarification and thermal treatment steps. Many problems such as haze and excessive browning could appear if these steps are not controlled. The objective of this work was divided into two stages with the aim to supply process information in order to obtain a good quality product with uniform characteristics (sensory and nutritional). Polyphenol-protein interaction was studied at the clarification step, which is an empirical process, to provide values on the amount of clarifying solution (gelatin) that must be added to achieve a complete juice clarification. Clarification essays were performed with juice dilutions of 1:2 and 1:10 and the effect of metabissulfite and tannic acid addition was evaluated. It was not possible to establish a clarification point. Metabissulfite did not influenced the clarification process however tannic acid addition displaced the clarification point, showing the difficulty visual monitoring of the process. Thermal treatment of clarified juice was studied at 88, 100, 111 e 121 °C. To evaluate the non-enzymatic browning, vitamin C, 5-hidroximetilfurfural (5-HMF) and sugar variation were correlated with color parameters (reflectance spectra, color difference and CIELAB). Kinetic models were obtained for reflectance spectra, ascorbic acid and 5-HMF. It was observed that 5-HMF introduction followed a first order kinetic rate at the beginning of the thermal treatment and a zero order kinetic at later process stages. An inverse correlation was observed between absorbance at 420 nm and ascorbic acid degradation, which indicates that ascorbic acid might be the principal factor on cajuína non-enzymatic browning. Constant sugar concentration showed that this parameter did not contribute directly to the nonenzymatic browning. Optimization techniques showed showed that to obtain a high vitamin C and a low 5-HMF content, the process must be done at 120 ºC. With the water-bath thermal treatment, the 90 °C temperature promoted a lower ascorbic acid degradation at the expense of a higher 5-HMF level

The Brazilian caatinga is characterized by low annual rainfall and arid soils. Several cactaceae, either native or adapted species, grow in this semi-arid region, including the prickly pear (Opuntia fícus indica) and facheiro ((Philosocereus pachycladus Ritter) which produce underexploited edible fruits. In addition to these species, the algaroba is a leguminous with little studied technological applications and bioactive potential so far. Therefore, this research aims to investigate the physicochemical, bioactive and functional attributes of the prickly pear and facheiro fruit pulps and the algaroba flour. Specifically, this study approaches the physicochemical characterization, total phenolic compounds (TPC) and the betalain identification and quantification by HPLC-DAD-ESI-MS. It is also investigated the DPPH antioxidant capacity and the antienzymatic activities against alpha-amylase and alphaglucosidase of water and ethanolic extracts of these food material. In order to address their potential to be used as food ingredients, juice blends prepared with mixtures of cajá and prickly pear, biofilms with facheiro and cereal bars with algaroba flour were elaborated and analyzed. The prickly pear fruits presented low acidity and high sugar content when compared to facheiro. The Philosocereus pachycladus Ritter fruits had higher protein and ash content, but the algaroba flour was the species with higher protein and sugar content among all. The algaroba flour also presented outstanding food fiber content, which reveals its potentiality to be used as a natural intestinal regulator. The TPC of water and ethanol extracts ranged from 3.87 to 16.21 mg GAE/100g for algaroba flour, 79.24 to 110.20 GAE/ 100g for prickly pear and 412.23 to 539.14 mg GAE/100g for facheiro. The 70% (w/v) ethanol extract reached the highest DPPH antioxidant activity, which was linearly correlated to its high TPC content. In regard to the enzymatic inhibitory activities, the best performance was observed for the prickly pear extracts which presented a moderate inhibition for both investigated enzymes, but interestingly, no alpha-glucosidase inhibition was observed for facheiro extracts. This work shows, for the first time in the literature, the functional attributes of facheiro fruits, as well as the presence of betacianins and isobetanin in the pulp of this exotic fruit. When it comes to the food products developed here, the sensory attributes that better described the juice blend cajá-prickly pear were sweetness, acidity, color yellow-orange, body, turbidity and cajá flavor. The discriminative test applied for cereal bars produced with and without algaroba revealed that the texture was the only sensory attribute that differed (p<0.05) between these two samples. It was also observed that the addition of facheiro extracts did not influence the visual characteristics of the biofilms. Overall, this work unveils the physicochemical and bioactive attributes of these commercial and technologically underexploited species widely found in the Brazilian caatinga and presents alternatives for their rational use
