Organic acids are important constituents of fruit juices. They render tartness, flavour and specific taste to fruit juices. Shelf life and stability of fruit juices are important factors, which determine their nutritional quality and freshness. In this view, the effect of storage on the concentration of organic acids in commercially packed fruit juices is studied by reverse phase high performance liquid chromatography (RP-HPLC). Ten packed fruit juices from two different brands are stored at 30 C for 24, 48 and 72 hours. A reverse phase high performance liquid chromatographic method is used to determine the concentration of oxalic, tartaric, malic, ascorbic and citric acid in the fruit juices during storage. The chromatographic analysis of organic acids is carried out using mobile phase 0.5% (w/v) ammonium dihydrogen orthophosphate buffer (pH 2.8) on C18 column with UV-Vis detector. The results show that the concentration of organic acids generally decreases in juices under study with the increase in storage time. All the fruit juices belonging to tropicana brand underwent less organic acid degradation in comparison to juices of real brand. Orange fruit juice is found to be least stable among the juices under study, after the span of 72 hours. Amongst all the organic acids under investigation minimum stability is shown by ascorbic acid followed by malic and citric acid.

The present work reports the compositional analysis of thirteen different packed fruit juices using high performance liquid chromatography (HPLC). Vitamin C, organic acids (citric and malic) and sugars (fructose, glucose and sucrose) were separated, analyzed and quantified using different reverse phase methods. A new rapid reverse phase HPLC method was developed for routine analysis of vitamin C in fruit juices. The precision results of the methods showed that the relative standard deviations of the repeatability and reproducibility were < 0.05 and < 0.1 respectively. Correlation coefficient of the calibration models developed was found to be higher than 0.99 in each case. It has been found that the content of Vitamin C was less variable amongst different varieties involved in the study. It is also observed that in comparison to fresh juices, the packed juices contain lesser amounts of vitamin C. Citric acid was found as the major organic acids present in packed juices while maximum portion of sugars was of sucrose. Comparison of the amount of vitamin C, organic acids and sugars in same fruit juice of different commercial brands is also reported.

Saccharomyces boulardii was encapsulated by layer-by-layer technique (LbL) using oppositely charged polyelectrolytes, chitosan and dextran sulfate to protect from degradation during its gastrointestinal transit. The protective effect of the coating was evaluated by checking viability after subjecting the coated cells to lyophilisation and simulated gastrointestinal conditions. During lyophilization, coated S. boulardii was found to have an enhanced viability of 7.74 +/- 2.00 log CFU/100 mg (5.62 x 10(6) +/- 2.12 CFU/100 mg) and 5.53 +/- 1.85 log CFU/100 mg (3.46 x 10(5) 1.73 CFU/100 mg) for uncoated cells. On sequential treatment with simulated gastric and intestinal juice, the coated cells had a viability of 4.59 +/- 1.52 log CFU/100 mg (3.8 x 104 +/- 1.52 CFU/100 mg) while only 1.90 +/- 0.80 log CFU/100 mg (0.79 x 102 +/- 0.81 CFU/100 mg) of uncoated cells survived. Confocal studies displayed the selective permeability of the coated cells which plays a significant role in maintaining the integrity and viability of the yeast cells. This clearly indicates that LbL is an efficient protective encapsulation technique and it could be potentially used for improving therapeutic applications of yeast. (C) 2014 Elsevier Ltd. Within the next few pages, I will try to give a wide description of the project that I have been doing for IK4-Ikerlan. For the last six months, I have been working in developing a socket-based application for Apple devices. These devices work under the iOS operative system, which is programmed in Objective-C, a language similar to C. Although I did not have the chance to develop this application for Apple TV, I was able to create an application for iPhone and another one for iPad. The only difference between both applications was the screen resolution, but we decided to make them separately, as it would be really hard to combine both resolutions, and wallpapers, everything in the same workspace. Finally, it is necessary to add that the main goal was not to create a new application for iOS, but to translate an Android application into iOS. To achieve this, it is required to translate Java code into Objective- C, which is the language used to develop applications for all kinds of Apple devices. Fortunately, there is a tool created by Google, which helped us with this exercise. This tool is called j2ObjC, and it is still being developed.

Investigation were carried out on the effect of some locally available species in the enhancement of the organoleptic quality and the storage periods of smoked Heterotis niloticus using Pprosopis africana as common smoke sources. Samples of fresh H. niloticus were bought, cut into chunks while extract juice from pepper, ginger rhizomes, garlic, onion bulb were used as sources of spices. Samples of fish were divided randomly into five (5) batches dipped into spice extract juices for 10 minutes drained and smoked with common firewood. Treatment without spice extract juice served as control. Each batch of fish was smoked for 7 hours on a drum-made smoking kiln products were individually packaged in polythene bag stored at room temperature and used for sensory evaluation and microbial analysis. Results of the sensory evaluation indicated that there was significant difference (P<0.005) for taste, appearance, colour and overall acceptance for the treatments. Ginger juice extract had the best overall acceptance. Similarly there was significant difference (P>0.05) in the microbial analysis. The garlic juice extract had the longest storage period with minimum total plate and mould count after 8 weeks

Este trabalho de pesquisa descreve dois estudos de caso de métodos quimiométricos empregados para a quantificação de hidrocarbonetos policíclicos aromáticos HPAs (naftaleno, fluoreno, fenantreno e fluoranteno) em água potável usando espectroscopia de fluorescência molecular e a classificação e caracterização de sucos de uva e seus parâmetros de qualidade através de espectroscopia de infravermelho próximo. O objetivo do primeiro estudo é a aplicação combinada de métodos quimiométricos de segunda ordem (N-PLS, U-PLS, U-PLS/RBL e PARAFAC) e espectrofluorimetria para determinação direta de HPAs em água potável, visando contribuir para o conhecimento do potencial destas metodologias como alternativa viável para a determinação tradicional por cromatografia univariada. O segundo estudo de caso destinado à classificação e determinação de parâmetros de qualidade de sucos de uva, densidade relativa e teor de sólidos solúveis totais, foi medida por espectroscopia de infravermelho próximo e métodos quimiométricos. Diversos métodos quimiométricos, tais como HCA, PLS-DA, SVM-DA e SIMCA foram investigados para a classificação amostras de sucos de uva ao mesmo tempo que métodos de calibração multivariada de primeira ordem, tais como PLS, iPLS e SVM-LS foram usadas para a predição dos parâmetros de qualidade. O princípio orientador para o desenvolvimento dos estudos aqui descritos foi a necessidade de metodologias analíticas com custo, tempo de execução e facilidade de operação melhores e menor produção de resíduos do que os métodos atualmente utilizados para a quantificação de HPAs, em água de torneira, e classificação e caracterização das amostras de suco de uva e seus parâmetros de qualidade

Este Trabajo Fin de Grado trata sobre el desarrollo de una aplicación para iPhone de guías de turismo de nombre “Follow”. La aplicación se caracteriza por la descarga de la información de manera segmentada y por la posibilidad de consultarla cuando se desee sin necesidad de tener acceso a Internet. Así mismo, el usuario que se registre en la aplicación, tendrá la opción de compartir sus propias guías con el resto de personas que se la descarguen. Las guías están conformadas por texto, fotos y vídeos, dividiéndose en varios apartados. De la misma manera, los usuarios podrán contactar entre ellos mediante el envío de mensajes o consultando sus perfiles. En esta memoria se explicará detalladamente las diferentes fases del proceso en la creación de la aplicación con el fin de entender el desarrollo llevado a cabo hasta el resultado final.

El objetivo de este proyecto ha sido la realización de una aplicación para tablets con sistema operativo iOS de Apple. La aplicación la puede utilizar cualquier persona con inquietudes sobre el mundo del fútbol, pero está pensada básicamente para entrenadores que busquen almacenar datos relacionados con sus equipos, jugadores, partidos, estadísticas de los equipos y los jugadores, etc. La información introducida quedará almacenada hasta que el usuario decida lo contrario eliminando los datos que ya no desee tener en su dispositivo de manera fácil e intuitiva. Aparte de eso, se ha desarrollado una pizarra táctil donde el usuario podrá realizar sus tácticas previas al partido y enseñársela a sus jugadores. Dispondrá de dos colores para diferenciar los diferentes jugadores que se dibujen. Además, se pueden realizar ligas online para que varios usuarios simultáneamente accedan a su contenido o lo modifiquen. Las ligas podrán ser reales a nivel profesional, de amigos o incluso ligas de videojuegos. Se ha realizado un apartado de mensajería donde los usuarios se podrán comunicar entre ellos sin salir de la aplicación. Bastará con buscar al usuario en el sistema, seleccionarlo y mandarle un mensaje. Si un usuario decide eliminar todos sus datos del sistema, podrá hacerlo y se eliminará cualquier información relacionada con él.

En esta memoria se presenta el proyecto de fin de carrera “Centro de gestión de notificaciones Push para dispositivos móviles basados en IOS y Android”, cuyo objetivo es crear una herramienta web, de libre distribución, que permita gestionar, programar y realizar envíos de notificaciones Push para aplicaciones móviles que funcionen bajo entornos IOS (Apple) y Android.

A atividade física intensa está associada com as adaptações biológicas que envolvem a melhora da homeostase da glicose, da capacidade antioxidante e da microcirculação cutânea. A ingestão insuficiente de antioxidantes na dieta pode levar ao estresse oxidativo e disfunção endotelial que afetam a microcirculação. Suco de uva tinto orgânico, uma importante fonte de polifenóis, com reconhecida função antioxidante e, portanto, o seu consumo pode melhorar o estado antioxidante, e assim, o metabolismo da glicose e a função endotelial. O objetivo deste estudo foi avaliar o efeito do consumo diário de suco de uva tinto orgânico, sobre a concentração plasmática de ácido úrico, atividade da superóxido dismutase eritrocitária (E-SOD), concentração sérica da insulina, glicemia e HOMA IR-2, além de suas relações com os parâmetros da microcirculação em triatletas. Participaram do estudo 10 triatletas do gênero masculino (28 15 anos). As amostras de sangue foram coletadas antes (basal) e após 20 dias de ingestão de suco de uva tinto orgânico (300mL/dia). Em relação ao valor basal, a insulina sérica (p = 0,02) e o ácido úrico (p = 0,04) aumentaram, enquanto a glicose plasmática (p <0,001) e a E-SOD diminuíram (p = 0,04) após os 20 dias de intervenção. Os parâmetros da microcirculação também foram influenciados pela ingestão de suco de uva tinto orgânico, foi observado redução no tempo necessário para o retorno dos eritrócitos à velocidade de basal após isquemia (TRBCmax) (p = 0,04), aumento da densidade capilar funcional (DCF, p = 0,003) e da velocidade dos eritrócitos após a isquemia (VELmax p <0,001). A redução da glicemia foi determinante direta do aumento da DCF (p = 0,04), enquanto níveis séricos de insulina (p = 0,04) e a redução na atividade da SOD-E (p = 0,04) foram negativamente associados com a redução do TRBCmax. Os resultados do presente estudo sugerem que a ingestão de suco de uva melhora a capacidade antioxidante, a homesostase glicêmica e a microcirculação de triatletas.

Seeds of 14 plant species extracted from food products proposed for field trips in Galapagos were tested for viability. Strawberry Fragaria ananasa and Blackberry Rubus glaucus jams (Snob and Gustadina brands) contained no viable seeds. Schullo brand granola contained inviable Sesame Sesamum indicum seed, but Sesame in granolas prepared in Galapagos was viable. Sesame seed in bread was viable but Flax Linum usitatissimum seed in bread was not. Brown Rice Oryza sativa and Sunflower seeds Helianthus annuus were both viable. Fresh Apple Malus domestica, Naranjilla Solanum quitoense, Cucumber Cucumis sativus, Pineapple Ananas comosus, Pear Pyrus communis, Bell Pepper Capsicum annuum, Tomato Solanum lycopersicum, Grape Vinis vinifera all contained viable seeds. We recommend prohibiting any product with viable seeds from field trips to uninhabited areas. CDF Contribution Number 1009.

The distribution of phenolases in certain species of Penaeid prawns has been studied. Attempts were made to locate the regions of maximum enzyme activity in the prawns. The relative dopase activity has been examined in extracts from head, tail, shell with cuticles and muscle. The head juice and tail extracts were found to register very high order of enzyme activity. Metapenaeus affinis, Metapenaeus monoceros and Penaeus indicus record comparatively higher enzyme activity than Parapenaeopsis stylifera and Metapenaeus dobsoni, no definite relationship has been found between the relative activity of the enzyme and size grade at least in one species examined. Experiments were done to determine the pH optima of the enzyme and the influence of pH on its deactivation. Exposure to higher temperatures up to 55°c was shown to activate the crude enzyme considerably. The possible implications of the observations have been discussed.
