In recent years, several studies have linked sodium intake to hypertension, and the consequent mortality risk due to vascular diseases. Several UE member states and the WHO recommend reducing the salt intake level to a maximum of 5 g per day. Salt is a useful ingredient for meat product processing. A reduction of added salt provokes a decrease in the quality of meat products. As a technological strategy, the reduction of the amount of added salt and the addition of potassium lactate, until a 30% molar substitution (taking into account the salt standard amount (30 g/kg)), have been proposed. This substitution could modify the product evolution during its processing. The knowledge of these effects could make the optimization of the process easier. In dry-cured meat products with a reduced salt content, it could be concluded that the proposed strategy reduces the processing period, as well as the anomalous texture risk; it increases the product safety and it does not modify the visual attributes.

La visió és probablement el nostre sentit més dominant a partir del qual derivem la majoria d'informació del món que ens envolta. A través de la visió podem percebre com són les coses, on són i com es mouen. En les imatges que percebem amb el nostre sistema de visió podem extreure'n característiques com el color, la textura i la forma, i gràcies a aquesta informació som capaços de reconèixer objectes fins i tot quan s'observen sota unes condicions totalment diferents. Per exemple, som capaços de distingir un mateix objecte si l'observem des de diferents punts de vista, distància, condicions d'il·luminació, etc. La Visió per Computador intenta emular el sistema de visió humà mitjançant un sistema de captura d'imatges, un ordinador, i un conjunt de programes. L'objectiu desitjat no és altre que desenvolupar un sistema que pugui entendre una imatge d'una manera similar com ho realitzaria una persona. Aquesta tesi es centra en l'anàlisi de la textura per tal de realitzar el reconeixement de superfícies. La motivació principal és resoldre el problema de la classificació de superfícies texturades quan han estat capturades sota diferents condicions, com ara distància de la càmera o direcció de la il·luminació. D'aquesta forma s'aconsegueix reduir els errors de classificació provocats per aquests canvis en les condicions de captura. En aquest treball es presenta detalladament un sistema de reconeixement de textures que ens permet classificar imatges de diferents superfícies capturades en diferents condicions. El sistema proposat es basa en un model 3D de la superfície (que inclou informació de color i forma) obtingut mitjançant la tècnica coneguda com a 4-Source Colour Photometric Stereo (CPS). Aquesta informació és utilitzada posteriorment per un mètode de predicció de textures amb l'objectiu de generar noves imatges 2D de les textures sota unes noves condicions. Aquestes imatges virtuals que es generen seran la base del nostre sistema de reconeixement, ja que seran utilitzades com a models de referència per al nostre classificador de textures. El sistema de reconeixement proposat combina les Matrius de Co-ocurrència per a l'extracció de característiques de textura, amb la utilització del Classificador del veí més proper. Aquest classificador ens permet al mateix temps aproximar la direcció d'il·luminació present en les imatges que s'utilitzen per testejar el sistema de reconeixement. És a dir, serem capaços de predir l'angle d'il·luminació sota el qual han estat capturades les imatges de test. Els resultats obtinguts en els diferents experiments que s'han realitzat demostren la viabilitat del sistema de predicció de textures, així com del sistema de reconeixement.

Version adaptée de la série française, préparée par Luisa Rogado, pour servir à deux projets (Musée de la forge, Casa museu de la misericorde), dans la Municipalité d’Alcoutin, en Algarve. Le projet avait, entre autres , pour but d’éviter les erreurs qui firent du Musée du Guadiana, à Guerreiro dos Rios, un semi échec, les contrôles du design et du programme d’animation ayant échappé à la muséologue, coordonnatrice du projet, qui servira néanmoins de leçon au projet pilote de Carrapateira (Musée de la Terre et de la Mer) tous deux devant être jumelés comme les premiers prototypes de musées locaux de la nouvelle génération. Le musée de Carapateira introduira dans sa toute dernière phase le récit donnant sa cohésion à l’ensemble de la segmentation thématique. Cet épisode est rapporté dans l´étude de cas de carapateira sur le rapport exposition-institution (tutelle) dans le texte d’une communication intitutée «L’exposition, la face déchaînée du musée» Pierre Mayrand, ACFAS, 2008.

A propósito de esta exposición de joyas y objetos ornamentales confeccionados a base de tagua y plata, el autor realiza un breve recorrido sobre la presencia y significaciones de estos dos materiales en la literatura y el folklore ecuatorianos. Indica que la muestra propone renovadas perspectivas en cuanto a colores, texturas y diseño, en una acertada amalgama de vegetal y mineral. Los diseños de plata recurren, al mismo tiempo, a motivos ancestrales, mágicos, sin olvidarse del impacto visual y táctil que pueden producir. La concepción de estas joyas de creación colectiva trasciende, entonces, los límites de lo folklórico, y las convierte en una propuesta estética novedosa.

Este artículo pone en perspectiva algunos enfoques novedosos para el estudio crítico de los conceptos de nación, imperio e historia. En primer lugar, se realiza una discusión alrededor de los conceptos clave para el estudio de la nación y el nacionalismo –por lo tanto, del Estado y la modernidad– surgidos de los estudios sobre la India. En segundo lugar, el artículo examina cómo dichos “desarrollos conceptuales” están vinculados, en las investigaciones académicas sobre la región, a consideraciones cruciales sobre el colonialismo y el imperio. En tercer lugar, se mira “hacia atrás” para enfocarse en los fascinantes atributos de las formaciones nacionalistas y explorar, con mayor detalle, los términos, texturas y transformaciones de los nacionalismos subalternos en el subcontinente. En cuarto lugar, el trabajo resalta las implicaciones más importantes de los enfoques antes revisados, para ofrecer una perspectiva novedosa en cuanto a la naturaleza de la escritura de la historia. Finalmente aparecen, en lugar de conclusiones, algunas consideraciones relacionadas a la manera en que se podría abordar, históricamente, la construcción de la descolonización y del nacionalismo, a futuro.

A set of lysimeter based experiments was carried out during 2000/01 to evaluate the impact of soil type and grassland management on potassium (K) leaching. The effects of (1) four soil textures (sand, loam, loam over chalk and clay), (2) grazing and cutting (with farmyard manure application), and (3) K applied as inorganic fertilizer, dairy slurry or a mixture of both sources were tested. Total K losses in the clay soil were more than twice those in the sand soil (13 and 6 kg K ha(-1), respectively) because of the development of preferential flow in the clay soil. They were also greater in the cut treatment than in the grazed treatment (82 and 51 kg K ha(-1), respectively; P less than or equal to0.01), associated with a 63% increase of K concentration in the leachates from the former (6.7 +/- 0.28 and 4.1 +/- 0.22 mg K L-1 for cut and grazed, respectively; P less than or equal to0.01) because of the K input from the farmyard manure. The source of fertilizer did not affect total K losses or the average K concentration in the leachates (P >0.05), but it changed the pattern of these over time.

A high-resolution textural study has been made of laminated and banded estuarine silts exposed intertidally at representative localities and horizons in the Holocene deposits of the Severn Estuary Levels. The laminae, on a submillimetre to millimetre scale, are sharp-based, graded couplets formed of a lower silty part overlain by a finer-textured clayey element. The centimetre- to decimetre-scale banding is formed of laminae in alternating, gradually intergrading sets of relatively coarse and relative fine-grained examples. At outcrop in the field, the banding is recognizable because the coarse sets prove to be recessive to varying degrees under the influence of weathering and current action. Independent evidence at two localities points toward an annual origin for the banding; at a third it arose during part of what appears to have been a relatively short period. Quantified physical arguments suggest that the textural banding is a response of suspended fine sediment to marked seasonal changes in sea temperature and windiness. The banded silts occur in four distinct stratigraphical contexts and record high deposition rates (order 0.01-0.1 m/yr). Because physical factors determine their textures, the silts potentially afford insights in all contexts into aspects of changing Holocene climatic conditions. In one context, the thickness of the bands points to high (order 0.01-0.1 m/yr) but comparatively short-lived (order 10s-100s yrs) rates of relative water-level rise. In the others, however, the banding has no implications for sea-level behaviour, and simply records gross environmental disequilibrium, for example, the recovery of mudflats/marshes after an erosional episode. Similarly, because on account of their rapid accumulation the banded silts preserve animal and human tracks and trackways especially well, they provide an archive of animal and human behaviour in the area during the Holocene.

Carbonate rocks are important hydrocarbon reservoir rocks with complex textures and petrophysical properties (porosity and permeability) mainly resulting from various diagenetic processes (compaction, dissolution, precipitation, cementation, etc.). These complexities make prediction of reservoir characteristics (e.g. porosity and permeability) from their seismic properties very difficult. To explore the relationship between the seismic, petrophysical and geological properties, ultrasonic compressional- and shear-wave velocity measurements were made under a simulated in situ condition of pressure (50 MPa hydrostatic effective pressure) at frequencies of approximately 0.85 MHz and 0.7 MHz, respectively, using a pulse-echo method. The measurements were made both in vacuum-dry and fully saturated conditions in oolitic limestones of the Great Oolite Formation of southern England. Some of the rocks were fully saturated with oil. The acoustic measurements were supplemented by porosity and permeability measurements, petrological and pore geometry studies of resin-impregnated polished thin sections, X-ray diffraction analyses and scanning electron microscope studies to investigate submicroscopic textures and micropores. It is shown that the compressional- and shear-wave velocities (V-p and V-s, respectively) decrease with increasing porosity and that V-p decreases approximately twice as fast as V-s. The systematic differences in pore structures (e.g. the aspect ratio) of the limestones produce large residuals in the velocity versus porosity relationship. It is demonstrated that the velocity versus porosity relationship can be improved by removing the pore-structure-dependent variations from the residuals. The introduction of water into the pore space decreases the shear moduli of the rocks by about 2 GPa, suggesting that there exists a fluid/matrix interaction at grain contacts, which reduces the rigidity. The predicted Biot-Gassmann velocity values are greater than the measured velocity values due to the rock-fluid interaction. This is not accounted for in the Biot-Gassmann velocity models and velocity dispersion due to a local flow mechanism. The velocities predicted by the Raymer and time-average relationships overestimated the measured velocities even more than the Biot model.

The Neolithic chambered tombs of Bohuslan on the west coast of Sweden were built out of locally occurring raw materials. These exhibit a wide variety of colours, textures and mineral inclusions, and all were used to contrive a series of striking visual effects. Certain of these would have been apparent to the casual observer but others would only have been apparent to someone inside the passage or the burial chamber. There is no evidence that the materials were organized according to a single scheme. Rather, they permitted a series of improvisations, so that no two monuments were exactly alike. The effects that they created are compared with those found in megalithic art where the design elements were painted or carved, but in Bohuslan all the designs were created using the natural properties of the rock.

Structure is an important physical feature of the soil that is associated with water movement, the soil atmosphere, microorganism activity and nutrient uptake. A soil without any obvious organisation of its components is known as apedal and this state can have marked effects on several soil processes. Accurate maps of topsoil and subsoil structure are desirable for a wide range of models that aim to predict erosion, solute transport, or flow of water through the soil. Also such maps would be useful to precision farmers when deciding how to apply nutrients and pesticides in a site-specific way, and to target subsoiling and soil structure stabilization procedures. Typically, soil structure is inferred from bulk density or penetrometer resistance measurements and more recently from soil resistivity and conductivity surveys. To measure the former is both time-consuming and costly, whereas observations made by the latter methods can be made automatically and swiftly using a vehicle-mounted penetrometer or resistivity and conductivity sensors. The results of each of these methods, however, are affected by other soil properties, in particular moisture content at the time of sampling, texture, and the presence of stones. Traditional methods of observing soil structure identify the type of ped and its degree of development. Methods of ranking such observations from good to poor for different soil textures have been developed. Indicator variograms can be computed for each category or rank of structure and these can be summed to give the sum of indicator variograms (SIV). Observations of the topsoil and subsoil structure were made at four field sites where the soil had developed on different parent materials. The observations were ranked by four methods and indicator and the sum of indicator variograms were computed and modelled for each method of ranking. The individual indicators were then kriged with the parameters of the appropriate indicator variogram model to map the probability of encountering soil with the structure represented by that indicator. The model parameters of the SIVs for each ranking system were used with the data to krige the soil structure classes, and the results are compared with those for the individual indicators. The relations between maps of soil structure and selected wavebands from aerial photographs are examined as basis for planning surveys of soil structure. (C) 2007 Elsevier B.V. All rights reserved.

"Yor" is a traditional sausage like product widely consumed in Thailand. Its textures are usually set by steaming, in this experiment ultra-high pressure was used to modify the product. Three types of hydrocolloid; carboxymethylcellulose (CMC), locust bean gum (LBG) and xanthan gum, were added to minced ostrich meat batter at concentration of 0-1% and subjected to high pressure 600 Mpa, 50 degrees C, 40 min. The treated samples were analysed for storage (G) and loss (G '') moduli by dynamic oscillatory testing as well as creep compliance for control stress measurement. Their microstructures using confocal microscopy were also examined. Hydrocolloid addition caused a significant (P < 0.05) decrease in both the G' and G '' moduli. However the loss tangent of all samples remained unchanged. Addition of hydrocolloids led to decreases in the gel network formation but appears to function as surfactant materials during the initial mixing stage as shown by the microstructure. Confocal microscopy suggested that the size of the fat droplets decreased with gum addition. The fat droplets were smallest on the addition of xanthan gum and increased in the order CMC, LBG and no added gum, respectively. Creep parameters of ostrich yors with four levels of xanthan gum addition (0.50%, 0.75%, 1.00% and 1.25%) showed an increase in the instantaneous compliance (J(0)), the retarded compliance (J(1)) and retardation time (lambda(1)) but a decrease in the viscosity (eta(0)) with increasing levels of addition. The results also suggested that the larger deformations used during creep testing might be more helpful in assessing the mechanical properties of the product than the small deformations used in oscillatory rheology. Previous work has presented the friction cone algorithm, a generalised method to resolve forces on a simulated haptic object when two or more fingers are in contact. Two extensions to the friction cone algorithm are presented: force shading and bump mapping. Force shading removes the discontinuities that are present when transitioning from one face to the next, whilst bump mapping provides a mechanism for rendering haptic textures on polygonal surfaces. Both these extensions can be combined whilst still maintaining the friction cone algorithm's intrinsic ability to simulate arbitrarily complex friction models.

Texture and small-scale surface details are widely recognised as playing an important role in the haptic identification of objects. In order to simulate realistic textures in haptic virtual environments, it has become increasingly necessary to identify a robust technique for modelling of surface profiles. This paper describes a method whereby Fourier series spectral analysis is employed in order to describe the measured surface profiles of several characteristic surfaces. The results presented suggest that a bandlimited Fourier series can be used to provide a realistic approximation to surface amplitude profiles.

Magmas in volcanic conduits commonly contain microlites in association with preexisting phenocrysts, as often indicated by volcanic rock textures. In this study, we present two different experiments that inves- tigate the flow behavior of these bidisperse systems. In the first experiments, rotational rheometric methods are used to determine the rheology of monodisperse and polydisperse suspensions consisting of smaller, prolate particles (microlites) and larger, equant particles (phenocrysts) in a bubble‐free Newtonian liquid (silicate melt). Our data show that increasing the relative proportion of prolate microlites to equant pheno- crysts in a magma at constant total particle content can increase the relative viscosity by up to three orders of magnitude. Consequently, the rheological effect of particles in magmas cannot be modeled by assuming a monodisperse population of particles. We propose a new model that uses interpolated parameters based on the relative proportions of small and large particles and produces a considerably improved fit to the data than earlier models. In a second series of experiments we investigate the textures produced by shearing bimodal suspensions in gradually solidifying epoxy resin in a concentric cylinder setup. The resulting textures show the prolate particles are aligned with the flow lines and spherical particles are found in well‐organized strings, with sphere‐depleted shear bands in high‐shear regions. These observations may explain the measured variation in the shear thinning and yield stress behavior with increasing solid fraction and particle aspect ratio. The implications for magma flow are discussed, and rheological results and tex- tural observations are compared with observations on natural samples.
