This study was carried out to evaluate the morphometric characteristics, the yield and the centesimal composition of different cuts of the Barbado's (Pinirampus pirinampu) flesh, captured in the Itaipu Reservoir. Were used 55 animals randomly distributed into three classes of body weight [less than 620 g (n = 15), between 620 and 1.120 g (n = 16) and greater than de 1.120 g (n = 24)]. Were measured the standard length (SL), the total length (TL), the head length (HL), the head height (HH), the trunk length (TRL), the trunk height (TH) and width of the trunk (WT). Then were established the morphometric relationships: (HL/SL), (HL/HH), (SL/TL), (WT/TRL), (WT/TH) (TH/TRL). Afterwards were measured the flesh's cut yield and the residue waste yield called: trunk (TC), fillet (FILLET), abdominal fillet (AF), head (HEAD), viscera (VISC), fin, spine and skin (SKSF). The levels of moisture, ash, fat and crude protein from FILLET and AF were determined. The body weight affected (P<0.05) the WT/TRL, WT/TH, TH/TRL, TR, FILLET, HEAD and SKSF, however didn't affected the centesimal parameters. In conclusion, the Barbado (Pinirampus pirinampu) has allometric growth and the flesh processing from fishes with more than 620 g provides better yields of edible parts. In addition, the chemical composition of meat suggests its potential for use in the manufacture of artisanal or industrial products.

The effect of irradiation doses (0, 125, 250 and 500 Gy) on the nutritional quality of A. bisporus mushrooms (strains ABI-07/06, ABI-05/03 and PB-1) cultivated in composts based on oat straw (Avena sativa) and brachiaria (Brachiaria sp.) was evaluated. The experimental design was 4 x 3 x 2 factorial scheme (irradiation doses x strains x composts), with 24 treatments, consisting of two repetitions each, totaling 48 experimental units (samples of mushrooms). The samples were irradiated in Cobalt-60 irradiator, model Gammacell 220 kGy, with dose rate of 0.740 kGy h(-1), according to the treatments proposed. Subsequently, the control (unirradiated) and the other treatments were maintained at 4 +/- 1 degrees C and 90% RH in a climatic chamber for carrying out the chemical analysis of the mushrooms on the 1st and 14th day of storage. It was found that all A. bisporus strains evaluated were food with excellent nutritional value, because they presented high protein and fiber contents and low ethereal extract content; the chemical characterization of the mushrooms was influenced by the compost type in which they were cultivated; gamma irradiation influenced the chemical composition of mushrooms.

Starch isolated from non-edible Aesculus hippocastanum seeds was characterized and used for preparing starch-based materials. The apparent amylose content of the isolated starch was 33.1%. The size of starch granules ranged from 0.7 to 35 pm, and correlated with the shape of granules (spherical, oval and irregular). The chain length distribution profile of amylopectin showed two peaks, at polymerization degree (DP) of 12 and 41-43. Around 53% of branch unit chains had DP in the range of 11-20. A. hippocastanum starch displayed a typical C-type pattern and the maximum decomposition temperature was 317 degrees C.Thermoplastic starch (TPS) prepared from A. hippocastanum with glycerol and processed by melt blending exhibited adequate mechanical and thermal properties. In contrast, plasticized TPS with glycerol:malic acid (1:1) showed lower thermal stability and a pasty and sticky behavior, indicating that malic acid accelerates degradation of starch during processing. Prophylactic or therapeutic treatments administered with medicinal plants and natural products are used in popular medicine of diverse people since prehistoric times to the present days. Species with medicinal properties are increasingly studied in an attempt to understand their possible effects on organisms and their functioning. This study aimed to analyze the effect of the mushroom Agaricus blazei (aqueous extract) in rabbits subjected to experimental hypercholesterolemia. The animals were divided into two groups (control and treated with the mushroom) whose experimental protocol was divided into three phases: Phase 1, the animals were fed a normal diet to evaluate the physiological level of cholesterol; phase 2, the animals were fed a supplemented diet to induce hypercholesterolemia and in phase 3, the animals of control group continued to take high-cholesterol diet and the animals of treated group high-cholesterol diet including treatment with the mushroom. Weekly, after fasting of 14 hours, blood samples were collected from the animals and its plasma was stored for later measurement of plasmatic cholesterol. In the first phase, the cholesterol level was, on average, 31,30 7,34 mgdL-1. In the second phase, there was a significant increase (p<0,05) in cholesterol level of both groups. During the last phase of the experiment, the mushrooms didn’t cause reduction in plasmatic cholesterol of treated rabbits, however, prevent disease progression, maintaining the cholesterol level established at the beginning of treatment, whereas, in the control group, total serum cholesterol increased significantly at this stage

This study presents a literature review which shows the nutritional, medicinal and antioxidant importance of mushrooms. In this research, the main antioxidant compounds of mushrooms, such as phenolic acids, flavonoids and tocopherols, as well as their mechanisms of action were described. The main in vitro methods used for evaluation of the antioxidant activity of these compounds were approached. The influences from the solvent polarity and the kind of extraction in the acquisition of the antioxidant compounds were also discussed. It was possible to conclude that mushrooms are a source of carbohydrates, proteins and minerals, thus presenting nutritional properties. The functional and medicinal properties are attributed to glucans, besides being excellent sources of natural antioxidants. Regarding the extraction process, it was noticed that the solvent polarity used in the extraction process is determinant in the obtainment of antioxidant compounds.

Oils extracted from Cucurbitaceae seeds were characterised for their fatty acid and tocopherol compositions. In addition, some physicochemical characteristics, total phenolic contents and the radical-scavenging activities were determined. Oil content amounted to 23.9% and 27.1% in melon and watermelon seeds, respectively. Physicochemical characteristics were similar to those of other edible oils and the oils showed significant antioxidant activities. Fatty acid composition showed total unsaturated fatty acid content of 85.2–83.5%, with linoleic acid being the dominant fatty acid (62.4–72.5%), followed by oleic acid (10.8–22.7%) and palmitic acid (9.2–9.8%). The oils, especially watermelon seed oil, showed high total tocopherol and phenolic contents. The γ-tocopherol was the predominant tocopherol in both oils representing 90.9 and 95.6% of the total tocopherols in melon and watermelon seed oils, respectively. The potential utilisation of melon and watermelon seed oils as a raw material for food, chemical and pharmaceutical industries appears to be favourable.

The body shape, body yields and morphometric ratios is important for species characterization and evaluation of their productive potential. The aim of this study was to determine the morphometric reasons, the body yields and correlations for male and female suruvi, Steindachneridion scriptum. Was analyzed 30 males and 30 females, and length and weight measurements were made. Was calculated carcass yields and morphometric relationships. The design was complete randomized. Data were subjected to analysis of normality; variance and means were compared by t test and Mann Whitney test. The average total weight of males was 1,583.50 +/- 263.79 g, while the total weight of females was 1,606.66 +/- 185.34 g. The total lengths were 53.42 +/- 2.64 cm for males and 53.35 +/- 1.98 cm for females. Average total weight and total lengths was similar between the sexes (P>0.05). Dress out yields of 65.54 +/- 1.36% (males) and 65.71 +/- 1.20% (females) and edible portions of 41.99 +/- 1.66% (males) and 41.93 +/- 2.05% (females) did not differ significantly between the sexes (P>0.05). The percentage of head relative to the total weight was significantly higher in males (17.67 +/- 1.24%) than in females (16.90 +/- 0.85%). The weight of the viscera such as the percentage relative to the total weight was significantly higher in females. The species has no body yields and morphometric characteristics limitations for commercial production.
