AbstractThis study aimed to evaluate the effect of the distillation time and the sample mass on the total SO2 content in integral passion fruit juice (Passiflora sp). For the SO2 analysis, a modified version of the Monier-Williams method was used. In this experiment, the distillation time and the sample mass were reduced to half of the values proposed in the original method. The analyses were performed in triplicate for each distilling time x sample mass binomial, making a total of 12 tests, which were performed on the same day. The significance of the effects of the different distillation times and sample mass were evaluated by applying one-factor analysis of variance (ANOVA). For a 95% confidence limit, it was found that the proposed amendments to the distillation time, sample mass, and the interaction between distilling time x sample mass were not significant (p > 0.05) in determining the SO2 content in passion fruit juice. In view of the results that were obtained it was concluded that for integral passion fruit juice it was possible to reduce the distillation time and the sample mass in determining the SO2 content by the Monier-Williams method without affecting the result.

Abstract A novel trypsin inhibitor of protease (CqTI) was purified from Chenopodium quinoa seeds. The optimal extracting solvent was 0.1M NaCl pH 6.8 (p < 0.05). The extraction time of 5h and 90 °C was optimum for the recovery of the trypsin inhibitor from C. quinoa seeds. The purification occurred in gel-filtration and reverse phase chromatography. CqTI presented active against commercial bovine trypsin and chymotrypsin and had a specific activity of 5,033.00 (TIU/mg), which was purified to 333.5-fold. The extent of purification was determined by SDS-PAGE. CqTI had an apparent molecular weight of approximately 12KDa and two bands in reduced conditions as determined by Tricine-SDS-PAGE. MALDI-TOF showed two peaks in 4,246.5 and 7,908.18m/z. CqTI presented high levels of essential amino acids. N-terminal amino acid sequence of this protein did not show similarity to any known protease inhibitor. Its activity was stable over a pH range (2-12), temperatures range (20-100 °C) and reducing agents.

Abstract Grape pomace, which is derived from the skin and seeds, is the residue from the production of grape juice and wine. It corresponds to up to 20% of the total volume and it contains a high level of dietary fibers and bioactive compounds. In the Brazilian market, there is no product containing grape pomace as a replacement for conventional wheat flour. Thus, this study aimed to assess the effects of whole-wheat flour and organic Bordeaux grape pomace (Vitis labrusca L.) on the sensory, physicochemical and functional properties of cookies using response surface methodology (RSM). The regression models indicated that the addition of whole-wheat and organic grape pomace decreased (p < 0.0001) the water activity and significantly increased the content of fibers, hardness, brittleness, antioxidant activity and total phenolic content of the cookies. The RSM models presented suitable R2 and R2adj values (> 65% of explained data variability), except for brittleness. The sensory evaluation results revealed that no significant differences (p > 0.05) were observed for the cookie samples, implying that the addition of grape pomace and whole-wheat flour did not negatively affect the preference of cookies.

INTRODUÇÃO: A consolidação da especialidade nefrologia é relativamente recente e sua denominação não remete intuitivamente à sua área de abrangência. OBJETIVO: Avaliar o grau de conhecimento de uma amostra populacional sobre o termo "nefrologia". MÉTODOS: Foi realizado um estudo transversal em Niterói, RJ, com transeuntes adultos respondendo "Você sabe o que é nefrologia?". As variáveis anotadas incluíram: sexo, idade, cor, residência, renda, nível de escolaridade e doença renal na família. Valores de p < 0,05 foram considerados significativos. RESULTADOS: De 564 pessoas abordadas, 504 dispuseram-se a responder. Dos que se recusaram, 64% eram homens, 58%, brancos, entre os quais 85% tinham idade > 30 anos. Entre os participantes, a idade média foi 39 (22-56) anos; 49% eram homens e 56% brancos. Conheciam o termo "nefrologia" 28% dos entrevistados. A origem do conhecimento foi predominantemente escolar (39%) e familiar (30%). Aqueles que conheciam nefrologia tinham maior idade (42 ± 17 vs. 39 ± 17 anos, p < 0,05), maior renda (R$ 4.522 vs. R$ 2.934, p < 0,05), maior escolaridade (27% vs. 12% com superior completo, p < 0,001), eram predominantemente brancos (64% vs. 53%, p = 0,001), com maior frequência de doença renal na família (55% vs. 36%, p < 0,001). Na análise multivariada, associações foram mantidas para idade (OR 1,02, IC 95% 1,00-1,03, p = 0,004), nível de escolaridade superior (OR 10,60, IC 95% 4,20-26,86, p < 0,001) e doença renal na família (OR 2,2, IC 95% 1,40-3,41, p < 0,001). CONCLUSÕES: Apenas 28% conheciam o termo "nefrologia", ilustrando a baixa penetração da especialidade. Esforços devem ser empreendidos para popularizar essa área da medicina visando melhor orientação acerca da prevenção e cuidado das enfermidades renais.
