El consumidor actual, cada vez más concienciado de la estrecha relación entre la alimentación y la salud, busca alimentos mínimamente procesados, apetecibles, de fácil consumo y con propiedades funcionales. En este sentido, las bebidas refrescantes mixtas y los smoothies suponen una opción para satisfacer estas necesidades. Además, la aplicación de tecnologías de conservación alternativas a la pasteurización tradicional, entre las que destacan las altas presiones hidrostáticas, constituye una revolución en la industria alimentaria, al obtenerse productos seguros que conservan las características funcionales, nutricionales y sensoriales de los alimentos frescos. El objetivo principal de esta Tesis Doctoral consiste en la evaluación del efecto de las altas presiones hidrostáticas aplicadas a smoothies elaborados con leche de vaca y leche de soja así como su modificación durante la vida comercial, bajo la premisa de tratarse de una tecnología más idónea que la tradicional pasteurización con que se procesan los zumos y las bebidas refrescantes mixtas. El fin último es alcanzar un mayor grado de conocimiento en relación a estos nuevos productos y procesos con objeto de establecer futuras guías de normalización, ya que en la actualidad el reconocimiento legal no es claro ni preciso. Previamente se lleva a cabo un estudio de mercado y caracterización de veinticuatro bebidas refrescantes mixtas comerciales a base de fruta y leche o soja como base sobre la que desarrollar las formulaciones de smoothies. Para evaluar el efecto de las altas presiones se desarrollaron dos prototipos de smoothies mixtos con productos vegetales (naranja, papaya, melón y zanahoria) por su aporte de compuestos bioactivos con elevado potencial saludable, a los que se les añadió leche de vaca o leche de soja. Las bebidas elaboradas con leche de vaca fueron sometidas a dos intensidades de presión: 450 y 600 MPa, y las formuladas con leche de soja a 550 y 650 MPa. En todos los casos el tiempo y temperatura se mantuvieron constantes: 3 minutos y 20 ºC. Para comparar el impacto del tratamiento y del almacenamiento sobre las características evaluadas, los smoothies se sometieron paralelamente a un proceso convencional de pasteurización térmica a 80 ºC durante 3 minutos. También se ha considerado el efecto del almacenamiento en refrigeración a 4 ºC a lo largo de 45 días...

This study analyzes the process of semantic change by which the Old Catalan verb sentir developed from a meaning based on general perception to one implying auditory perception. In particular, the article shows that by the end of the 13th century the verb sentir had only semanticized the perception of non-linguistic auditory stimuli and had not fused completely with the meaning of the verb oir, as was the case with the evolution of SĔNTĪRE in other Romance languages (such as Peninsular Spanish). Our study has been based on data analysis of an electronic linguistic corpus using the concepts of E. C. Traugott’s Invited Inferencing Theory of Semantic Change (IITSC) (2012) and the concept of evidentiality.

Somos rodeados por arquitetura mas nem sempre a vivemos da melhor forma, nem sempre sabemos tirar o melhor partido do que nos rodeia e nem sempre o que nos rodeia é o melhor para nós nem o que nos faz mais felizes. Esta realidade é ainda maior para indivíduos portadores de deficiência. Nota-se, hoje em dia, uma crescente preocupação para que as casas, e não só os espaços comerciais e públicos, sejam acessíveis a todas as pessoas. Pensando nisto, muitos profissionais da área da Arquitectura, Engenharia e Design de Interiores, desenvolvem os seus projetos levando em conta o design universal ou inclusivo. Os princípios deste design não são exclusivos às pessoas portadoras de deficiência, a aplicação dos mesmos pode garantir, por exemplo, que uma mesma pessoa resida na mesma casa dos 0 aos 80 anos. As necessidades mudam ao longo da nossa vida. Uma casa inclusiva é por isso uma casa para toda a vida.

Opuntia fícus - indica (L.) Mill is a cactacea presents in the Caatinga ecosystem and shows in its chemical c omposition flavonoids, galacturonic acid and sugars. Different hydroglicolic (EHG001 and EHG002) and hydroethanolic subsequently lyophilized (EHE001 and EHE002) extracts were developed. The EHE002 had his preliminary phytochemical composition investigated by thin layer chromatography (TLC) and we observed the predominance of flavonoids. Different formulations were prepared as emulsions with Sodium Polyacrylate (and) Hydrogenated Polydecene (and) Trideceth - 6 (Rapithix® A60), and Polyacrylamide (and) C13 - 14 I soparaffin (and) Laureth - 7 (Sepigel® 305), and gel with Sodium Polyacrylate (Rapithix® A100). The sensorial evaluation was conducted by check - all - that - apply method. There were no significant differences between the scores assigned to the formulations, howe ver, we noted a preference for those formulated with 1,5% of Rapithix® A100 and 3,0% of Sepigel® 305. These and the formulation with 3% Rapithix® A60 were tested for preliminary and accelerated stability. In accelerated stability study, samples were stored at different temperatures for 90 days. Organoleptic characteristics, the pH values and rheological behavior were assessed. T he emulsions formulated with 3,0% of Sepigel® 305 and 1,5% of Rapithix® A60 w ere stable with pseudoplastic and thixotropic behavior . The moisturizing clinical efficacy of the emulsions containing 3,0% of Sepigel® 305 containing 1 and 3% of EHG001 was performed using the capacitance method (Corneometer®) and transepidermal water lost – TEWL evaluation ( Tewameter®). The results showed t hat the formulation with 3% of EHG001 increased the skin moisturizing against the vehicle and the extractor solvent formulation after five hours. The formulations containing 1 and 3% of EHG001 increased skin barrier effect by reducing transepidermal water loss up to four hours after application.

This study reports recommendations for a tactile and graphic wayfinding system aiming to offer more orientability and mobility for visually impaired people (blindness and low vision) at Instituto Federal de Educação, Ciência e Tecnologia do Rio Grande do Norte (IFRN), Parnamirim Campus. It was necessary to focus on visual impaired people and approach concepts like orientation and accessibility at the built environment. In order to provide the comprehension of a complex social phenomenon and preserve the meaningful characteristics of the events, this research has developed a single case study in which elements of Post Occupation Evaluation have been used. Its purpose was to allow not only a technical analysis, but also the user perception about the space in use. The chosen tool to collect the user’s opinions and considerations was the Walk Together Method. The collected and analyzed information has demonstrated that, although Parnamirim Campus has implemented some interventions in relation to the spatial accessibility, they are still not enough to create an environment which arranges safety and autonomy for the visual impaired people and the other ones who attend there. This study suggests that it happened because the engineering interventions at the Campus have been based on Brazilian technical standards NBR 9050:2004, which is proper for the physical impaired people, but it does not offer enough information to respond to all the specific needs demanded by all the classifications of visual impairment.
