Com o objetivo de obter uma farinha pré-cozida de trigo e soja (90:10) com boas características tecnológicas para uso em croquete de carne, foram estudados efeitos de parâmetros da extrusão na capacidade emulsificante (CE) e na estabilidade de emulsão (EE) das farinhas obtidas, e nas características sensoriais do produto elaborado. A mistura foi extrusada em diferentes umidades (23, 26 e 29%), temperaturas de barril (TB: 100, 110, 120 e 130 °C) e velocidades de rotação de parafuso (VRP: nº 4; 120, 150, 180 e 210 rpm). Os resultados indicam que o aumento de VRP e TB aumentou CE e EE até certo ponto, que, ao ser ultrapassado, as fez diminuir. O croquete de carne elaborado com farinha mista com 26% de umidade e extrusada em 150 rpm a 130 °C mostrou melhores sabor e textura, sendo o preferido pela equipe massal de provadores não treinados ao compará-lo com aqueles da farinha de trigo crua e da farinha mista crua. As características sensoriais dos croquetes estudados foram relacionadas com CE e EE das farinhas usadas, sendo que a EE mostrou um efeito mais acentuado do que a CE.

A mistura de trigo e soja representa uma importante fonte calórico-protéica com proteínas de boa qualidade. Apesar disso, a utilização da soja como ingrediente tem sido limitada pelo seu sabor de feijão cru (beany flavor), o qual é melhorado pelo processo de extrusão. Foram estudados os efeitos de umidade da mistura, Temperatura de Barril (TB) e Velocidade de Rotação de Parafuso (VRP, Nº 5) do extrusor no Índice de Expansão (IE), no Índice de Solubilidade em Água (ISA) e nas características sensoriais de pellets produzidos com mistura de trigo e soja (90:10), objetivando a otimização deste processo para a obtenção de pellets fritos com melhores qualidades sensoriais. A farinha mista crua foi extrusada em 2 umidades (32 e 35%), 4 TB (60 a 90 °C) e 4 VRP (60 a 150 rpm), totalizando 32 tratamentos. O pellet frito, preparado com a farinha mista com 32% de umidade e extrusada em 60 rpm a 80 °C, apresentou o maior IE e as melhores qualidades sensoriais (aparência, sabor e textura), sendo preferido pela equipe de provadores não treinados, tanto com sabor de bacon como com sabor de queijo.

The aim of this study was to evaluate the effects of pH, dextrose and yeast extract on the cadmium toxicity on Saccharomyces cerevisiae PE-2. In the first assay, the YED mediums with different pH (2, 3, 4, 5, 6, 7, and 8) containing 0.0 and 0.05 mmol Cd L-1 were inoculated with yeast suspension and incubated at 30 °C for 18 hours. During the anaerobic growth, the biomass concentration was determined. The yeast trehalose content, cell viability, and the growth rate were assessed at the beginning and at the end of the growth stages. In the second assay the YED mediums were diluted to the total, ½, and ¼ content of dextrose and yeast and 0.0 and 0.05 mmol Cd L-1 were added. The pH of the mediums was adjusted to 5. The culture mediums were inoculated and incubated at 30 °C for 18 hours. The yeast growth was not affected by cadmium at high pH, but at low pH the yeast becomes more sensitive to the toxic effect. The yeast susceptibility to cadmium was enhanced by the decrease of yeast extract strength and the increase of dextrose strength.

In order to assure that the use of cerrado fruits occur in a sustainable way, studies to investigate their characteristics are extremely relevant. In this context, the present study aims to describe some chemical parameters of pequi fruits picked in three municipalities in southwestern Goiás State (Jataí, Rio Verde, and Serranópolis). In each city, two populations of pequi trees - pequizeiros, denominated areas, were selected. In each area, eight trees were selected for the fruit to be picked. The contents of phosphorus, potassium, calcium, magnesium, nitrogen, zinc, and ether extract were determined in the samples. The results demonstrate differences between the chemical characteristics studied for the fruits picked in different areas, which does not seem to vary in a significant way. Comparing the contents obtained in the present study with those required as human daily supply, further studies are recommended aiming at using the pequi fruit as a complementary alternative source of magnesium, manganese, and copper.

O Brasil gera toneladas de resíduos de cascas e sementes de maracujá amarelo que podem ser aproveitados na alimentação humana. Os objetivos deste trabalho foram determinar os efeitos dos parâmetros do processo (volume do suco de maracujá empregado e tempo de cozimento dos albedos) sobre as propriedades físico-químicas (pH, sólidos solúveis, acidez titulável e açúcares totais) de doces em calda elaborados com a casca do maracujá, bem como sua aceitação sensorial pelos consumidores, visando o reaproveitamento dos resíduos gerados na indústria de alimentos. Utilizou-se um planejamento fatorial 2² completo para avaliação dos parâmetros e respostas. Avaliou-se a aceitação sensorial dos doces, utilizando-se escala hedônica de 9 pontos, e intenção de compra, usando-se escala de 5 pontos. Valores mais baixos de pH foram alcançados em volumes de suco e tempo de cozimento mais altos, tanto para o albedo como para a calda do doce. Maiores valores de sólidos solúveis no albedo foram encontrados em tempos de cozimento altos e em menores volumes de suco empregado. Resultados globais indicaram como condições adequadas, ao processamento do albedo de maracujá em calda, tempo de cozimento superior a 10 minutos e concentração mais elevada de suco de maracujá.

Foi avaliada a atividade antioxidante pelo Sistema β-caroteno/Ácido Linoleico, ensaio do radical DPPH (2,2-difenil-1-picrilhidrazila), do extrato bruto (EB) e frações hexânica (FH), clorofórmica (FC) e acetato de etila (FA) das pimentas malagueta (C. frutescens), cambuci (C. baccatum var. pendulum), cumari (C. baccatum var praetermissum) e pimentão magali (C. annuum var. annuum). As concentrações de capsaicinoides e de fenólicos totais presentes nas pimentas também foram determinadas. Os resultados obtidos demonstraram que as FC e FA das pimentas apresentaram maior concentração de fenólicos totais e capsaicinoides, sendo que a pimenta cumari foi a espécie com maior concentração destes compostos. A melhor atividade antioxidante pelo Sistema β-caroteno/Ácido Linoleico, foi obtida para o EB e FA da pimenta cambuci, seguida do EB da pimenta malagueta. Pelo método DPPH a FC e FA apresentaram menores valores de EC50, sendo a pimenta cumari e cambuci as mais efetivas. Estes resultados demonstram que as pimentas cumari, cambuci e malagueta podem ser utilizadas como agentes antioxidantes naturais em alimentos.

A utilização da casca de maracujá como matéria-prima para elaboração de doce em massa representa uma boa alternativa econômica para o aproveitamento desse subproduto. Este trabalho teve como objetivos selecionar o melhor método de maceração da casca e verificar influência das variáveis: concentração de suco e concentração de sólidos solúveis sobre as características físico-químicas, físicas e sensoriais de diferentes formulações. Resultados indicaram que a melhor formulação foi a obtida do albedo sem película macerado por 24 horas e adicionado de 150 mL de suco de maracujá e concentrado a 68 °Brix, devido à cor mais amarela e textura mais firme.

This study sought to evaluate the acceptance of "dulce de leche" with coffee and whey. The results were analyzed through response surface, ANOVA, test of averages, histograms, and preference map correlating the global impression data with results of physical, physiochemical and sensory analysis. The response surface methodology, by itself, was not enough to find the best formulation. For ANOVA, test of averages, and preference map it was observed that the consumers' favorite "dulce de leche" were those of formulation 1 (10% whey and 1% coffee) and 2 (30% whey and 1% coffee), followed by formulation 9 (20% whey and 1.25% coffee). The acceptance of samples 1 and 2 was influenced by the higher acceptability in relation to the flavor and for presenting higher pH, L*, and b* values. It was observed that samples 1 and 2 presented higher purchase approval score and higher percentages of responses for the 'ideal' category in terms of sweetness and coffee flavor. It was found that consumers preferred the samples with low concentrations of coffee independent of the concentration of whey thus enabling the use of whey and coffee in the manufacture of dulce de leche, obtaining a new product.

Fruits are important sources of nutrients in human diet, and Barbados Cherry (Malpighia glabra L.) is of particular interest due to its high content of antioxidants. Diets rich in fruits and vegetables protect individuals against diseases and cancer, but excessive intake of vitamins may act as pro-oxidant and generate changes in DNA. To evaluate the effect of different in natura (BAN) and frozen (BAF) Barbados Cherry pulp concentrations and synthetic vitamin C in liquid form (VC) on the chromosome level and the cell cycle division, root meristeme cells of Allium cepa L. and bone marrow cells of Wistar rats Rattus norvegicus, were used as test system. In Allium cepa L., BAN, at the highest concentration (0.4 mg.mL-1) and BAF, at the lowest concentration (0.2 mg.mL-1), inhibited cell division, and there was recovery of cell division after the recovery period in water only for BAN. In the Wistar rats, all treatments with Barbados Cherry, either acute or subchronic, were not cytotoxic or mutagenic; only the highest concentration of VC increased significantly the rate of chromosomal abnormalities. The data obtained are important to reinforce the use of Barbados Cherry fruit in the diet.

The industrialization of passion fruit in the form of juice produces considerable amounts of residue that could be used as food. The objective of the present study was to determine the effects of the volume of passion fruit juice added to the syrup and the cooking time on the color and texture of passion fruit albedo preserved in syrup. Multi-linear models were well fit to describe the value for a* (for the albedo) the values for b* (for the albedo and syrup), which exhibited high correlation coefficients of 98%, 84%, and 88%, respectively. The volume of passion fruit juice added and the cooking time of the albedos in the syrup, involved in the processing of passion fruit albedo preserves in syrup, significantly affected color analyses. The texture was not affected by the parameters studied. Therefore, the use of larger volumes of passion fruit juice and longer cooking time is recommended for the production of passion fruit albedo preserves in syrup to achieve the characteristic yellow color of the fruit.
Cytotoxicity and mutagenicity of cola and grape flavored soft drinks in bone marrow cells of rodents

Due to the large consumption of soft drinks in Brazil and worldwide in recent years and considering that some of the components present in their composition pose potential risks to human health, the aim of this study was to evaluate the cytotoxic and mutagenic potential of specific cola and grape-flavored soft drink brands. Bone marrow cells of Wistar rats were initially treated by gavage with one single dose of Cola or Grape soft drink, which was next offered ad libitum (instead of water) for 24 hours. A negative control treatment was performed by administering one single dose of water and a positive control administering cyclophosphamide intraperitoneally. Statistical analysis showed that the Cola and Grape soft drinks studied were not cytotoxic. However, the Cola soft drink proved mutagenic in this experiment treatment time. Therefore, this study serves as a warning about the consumption of Cola-flavored soft drink and for the need for further subchronic and chronic studies on soft drinks in order to evaluate the long term mutagenic and cytotoxic effects of these substances.

Jaboticaba is a Brazilian fruit, native to the Atlantic forest, which belongs to the Myrtaceae family. In this work we describe the effect of the thinning of "flower", "fruit" and "flower & fruit" compared to non-thinned fruit (control) and of edible coatings with respect on nutritional composition, overall acceptability and shelf-life of jaboticaba ‘Sabara’, grown in an irrigated commercial orchard. "Flower and fruit" thinning allows fruit with higher quality as diameter, volume and mass. Non-thinned fruit shows higher yield, however fruit have lower quality. As a result of the improving quality at harvest, the shelf life was twice (~8 days) for thinned fruit. The lack of change in concentration of soluble sugar and absence of formation of volatile compounds during storage indicate that there was no natural fermentation of the jaboticaba pulp after harvest. Treatments with wax and calcium did not improve the jaboticaba shelf life.

Dentro de um programa de controle de qualidade, a avaliação do vigor de sementes é fundamental e necessária para o sucesso da produção. O trabalho teve por objetivo comparar diferentes métodos para avaliação do potencial fisiológico de sementes de pepino. Para tanto, cinco lotes de sementes do híbrido Safira foram submetidos aos seguintes testes: germinação, primeira contagem de germinação, condutividade elétrica (4x50 sementes; 25ºC; 50 e 75mL; 12, 18 e 24h), germinação a baixa temperatura (4x50 sementes; 18ºC; contagens aos quatro e oito dias após a semeadura); envelhecimento acelerado tradicional (41ºC; 48, 72 e 96h) e com solução saturada de NaCl (41ºC; 72 e 96h). Pelos resultados obtidos, pode-se concluir que os testes de condutividade elétrica (50 e 75mL; 12, 18 e 24h) e de envelhecimento acelerado com o uso de solução salina (41ºC, por 72h), possibilitam a melhor identificação de lotes com diferentes níveis de qualidade fisiológica.

Xylopia aromatica is a native species from Brazil's "Cerrado", recommended for restoration ecology and also as a medicine. Its seeds have embryos with morphophysiological dormancy, making nursery propagation difficult. The objective of this study was to verify the efficiency of X-ray and tetrazolium tests for evaluating the viability of three seed lots, stored for different periods. All seeds were X-rayed (13 kV, 350 seconds) and samples used for tetrazolium and germination tests. In the tetrazolium test, seeds were submitted to six treatments at two temperatures (25 and 30 °C) with imbibition in distilled water and immersion in three concentrations of tetrazolium solution (0.5, 0.75 and 1%) at the two imbibition temperatures. Seeds for the germination test were placed for imbibition in distilled water and a 500 ppm Promalin® (6-Benzyladenine + GA4 + GA7) solution and later sown in sterilized sand. The embryo could not be observed with the X-ray test. However, those seeds observed with an undamaged endosperm did not differ in the percentages of seeds with firm and stained endosperms observed in the tetrazolium test for all the lots. The tetrazolium test is efficient for evaluating seed viability, principally if imbibed at 30 °C and immersed in a 0.5% solution at 30 °C.
