This study aimed to determine the optimal intake of lysine and threonine for broiler breeder hens. Two experiments were conducted to evaluate the responses of birds to digestible lysine (Lys) and threonine (Thr). Eight treatments were assessed in both experiments, with six replicates of eight birds in the Lys experiment and ten birds in the Thr experiment. The dietary levels of Lys and Thr were obtained by a dilution technique. The experimental period was ten weeks for each amino acid studied, which included six weeks of adaptation and four weeks of data collection. The amino acid intake, egg mass and body weight were adjusted using a Reading model. Based on the model coefficients, the cost of the synthetic amino acids sources and the price of fertile eggs determined the intake of each amino acid to maximize. The minimum intake of Lys and Thr reduced egg production by 40 and 30%, respectively, the weight of the eggs decreased by 12 and 9% with the same intake of Lys and Thr, respectively. The models generated by predicting Lys and Thr intake were as follows: Lys=11 x E+31 x W and Thr=9.5 x E+32 x W, where E=egg mass, g/bird per day, and W=body weight, kg/bird. Based on the models, 3 kg birds with an egg mass production of 50 g/day require 643 mg/bird per day of Lys and 569 mg/bird per day of Thr. The optimum economic intake was calculated at 954 and 834 mg/bird per day for Lys and Thr, respectively, reflecting a dietary concentration of 0.636% Lys and 0.556% Thr for a feed intake of 150 g/bird per day. Our goal was to trace the inclusion of poultry offal meal (OM) in diets by using carbon (13C/12C) and nitrogen (15N/14N) isotopic ratios of different tissues in order to contribute for the development of an independent technology for the certification of the feeding of broilers reared on diets with no addition of animal ingredients. Eighty one-day-old chicks were randomly distributed into five experimental treatments, that is, diets containing increasing levels of OM inclusion (0, 2, 4, 8 and 16% OM), with four replicates of four birds each. At 42 days of age, four birds per treatment (n=4) were randomly selected, weighed, and sacrificed to collect breast muscle (Pectoralis major), keel and tibia samples to determine their isotopic ratios (13C/12C e 15N/14N). It was observed that 13C and 15N enrichment increased as a function of increasing OM inclusion in all diets. The analyses of the Pectoralis major showed that that only treatments with 8 and 16% OM dietary inclusion were different form those in the control group (0% OM). on the other hand, when the keel and tibia were analyzed, in addition to 8 and 16% OM), the treatment with 4% OM inclusion was also different from the control group. The use of isotopic ratios of stable carbon and nitrogen isotopes is an alternative to trace OM inclusion in broiler diets as it is capable of tracing OM levels below those usually practiced by the poultry industry in Brazil.

Salmonella enterica subsp. enterica serovar Gallinarum biovar Pullorum is a bird-restricted pathogen which causes pullorum disease. The strain FCAV198 was isolated from a pool of chicken ovaries in Brazil, and its genome may be helpful for studies involving molecular mechanisms related to pathogenesis and other related applications.

Intense selection among broilers, especially for performance and carcass traits, currently favors locomotion problems and bone resistance. Conducting studies relating to development and growth of bone tissue in broilers is necessary to minimize losses. Thus, genetic parameters were estimated for a broiler population's phenotypic traits such as BW at 42 d of age (BW42), chilled femur weight (CFW) and its yield (CFY), and femur measurements: calcium, DM, magnesium, phosphorus, and zinc content; breaking strength; rigidity; length; and thickness. Variance components were estimated through multitrait analyses using the restricted maximum likelihood method. The model included a fixed group effect (sex and hatch) and additive and residual genetic random effects. The heritability estimates we obtained ranged from 0.10 ± 0.05 to 0.50 ± 0.08 for chilled femur yield and BW42, respectively, and indicated that the traits can respond to the selection process, except for CFY, which presented low-magnitude heritability coefficients. Genetic correlation estimates between breaking strength, rigidity, and traits related to mineral content indicated that selection that aims to improve the breaking strength resistance of the femur is highly correlated with mineral content. Given the genetic correlation estimates between BW42 and minerals, it is suggested that in this population, selection for BW42 can be performed with greater intensity without affecting femoral integrity.
Incubation temperature manipulation during fetal development reduces adiposity of broiler hatchlings

Broilers are known as an efficient source of lean meat. Genetic selection resulted in broiler strains with large body size and fast growth, but a concomitant increase in fat deposition also occurred. Other than reducing nutrient intake, there is a lack of alternative methods to control body fat composition of broilers. The present study assessed whether incubation temperature (machine temperatures: 36ºC, 37.5ºC, and 39ºC; eggshell temperatures: 37.4 ± 0.08°C, 37.8 ± 0.15ºC, and 38.8 ± 0.33°C, respectively.) from d 13 affects broiler hatchling fat deposition. We analyzed adipocyte hypertrophy and proliferation in 3 body regions; weight and chemical composition of yolk-free chicks and yolk sacs; and serum lipid profile. Increased incubation temperature reduced abdominal and cervical adipocyte size. Independently of temperature, cervical adipocytes were smaller and showed higher proliferation than adipocytes in the abdominal and thigh regions. Smaller cervical adipocytes were observed in birds from eggs incubated at 36ºC and 39ºC. With regard to weight and composition of chicks, ash content as a percentage of dry matter was the only variable affected by temperature; it was higher in chicks from eggs incubated at 36ºC than at 39ºC and showed no significant difference between chicks incubated at 39ºC and 37.5ºC. Absolute and relative weights of yolk sacs were higher from eggs incubated at 39ºC than at 36ºC, and these two treatments did not differ from the 37.5ºC control. Absolute measures of yolk sac lipids, moisture, dry matter, and crude protein content were lower in chicks from eggs incubated at 36ºC, and no significant differences were found for these variables between chicks from eggs incubated at 37.5ºC and 39ºC. Hatchlings from eggs incubated at 36°C had significantly higher cholesterol levels than chicks incubated at the other 2 temperatures, but no additional effects on blood lipids were detected. Incubation temperature manipulation during fetal development altered cervical and abdominal adipocyte size in broiler hatchlings and could become a tool in hatcheries to manipulate chick quality, although further studies are needed to evaluate its long-term effects.

This study was conducted to determine the effect of the air temperature variation on the mean surface temperature (MST) of 7-to 35-day-old broiler chickens using infrared thermometry to estimate MST, and to study surface temperature variation of the wings, head, legs, back and comb as affected by air temperature and broiler age. One hundred Cobb(R) broilers were used in the experiment. Starting on day 7, 10 birds were weekly selected at random, housed in an environmental chamber and reared under three distinct temperatures (18, 25 and 32 degrees C) to record their thermal profile using an infrared thermal camera. The recorded images were processed to estimate MST by selecting the whole area of the bird within the picture and comparing it with the values obtained using selected equations in literature, and to record the surface temperatures of the body parts. The MST estimated by infrared images were not statistically different (p > 0.05) from the values obtained by the equations. MST values significantly increased (p < 0.05) when the air temperature increased, but were not affected by bird age. However, age influenced the difference between MST and air temperature, which was highest on day 14. The technique of infrared thermal image analysis was useful to estimate the mean surface temperature of broiler chickens.

The literature reports dealing with the dietary electrolyte ratio (K+Cl)/ Na are rare, although the concept has been proposed by Mongin in 1981. Thus, its application appears to be limited as a nutritional strategy in feed formulation, which usually meets only the minimum nutritional recommendations in Na, K and Cl. The objective of this study was to evaluate the performance of broilers submitted to different dietary electrolyte balances (DEB) Na+K-Cl and dietary electrolyte ratio (DER) from 1 to 21 d of age. A total of 1575 male 1-d old broiler chicks were randomly assigned to 5 treatments with 9 replicates of 35 chicks each. The treatments consisted of diets with 5 relation of electrolytes, arising from combinations DEB/DER 150/3, 250/2, 250/3, 250/4 and 350/3, with use of NaCl, NaHCO3, KCl, K2SO4 and CaCl2. All diets were corn-soybean meal based and formulated to meet or exceed the NRC (1994) requirements. Chicks had ad libitum access to feed and water in floor pens with wood shavings as litter. Body weight, feed intake and feed conversion ratio were measured at 21 d of age. It was found that only the feed conversion was significantly affected (P = 0.0142) by the combinations of relation of electrolytes (DEB and DER). The supplementation levels in DEB and DER were made to fit the data into a surface analysis to allow increasing levels of DEB (150–350 mEq/kg) and narrow and broad ratio of DER (2–4). For the canonical analysis of response surface was obtained the stationary point for body weight (DEB = 255.77 mEq/kg, and DER = 2.73:1) the value was 942.02 g; for feed intake (DEB = 251.69 mEq / kg and DER = 3.51:1), the value was 1200.02 g; and for feed conversion (DEB = 254.62 mEq/kg and DER = 3.06:1) the value was 1.35. The results of this experiment indicated that the best performance was obtained with combinations of relation of electrolytes for DEB between 251 and 255 mEq/kg and DER between 2.73:1 and 3.5:1.

Quality is a variable concept, which involves many factors, depending on the consumer market. In meat production, the concern with environmental aspects, animal welfare and the health and safety of workers is increasing. This work studied the effect of controlled atmosphere stunning of broilers on meat features and biochemical parameters for stress. Cobb broilers were stunned by electrical stunning and by controlled atmosphere with 70% CO2 and 70% CO2 + 30% Argon. After stunning, serum levels of glucose, lactate and corticosterone were compared with those of broilers at rest, immediately before transportation and slaughter and after 12 h of feed withdrawal (control group). At slaughter, blood volume drained during bleeding was not different for the stunning methods tested, ranging from 3.3 to 3.4% birds weight. This finding was important to demonstrate that gas stunning was not responsible for the animals′ death. Final pH in breast (6.1 to 6.2) and thigh (6.3 to 6.5) also did not vary among the different stunning methods (P > 0.05). Lightness (L = 60.55) and redness (a = +8.94) values found for breasts from electrical stunning showed that they were darker and redder (P < 0.05), probably due to changes in blood pressure. Glucose and corticosterone levels were not different between gas stunned birds (302.45 to 315.7 mg/dl and 55.71 to 72.49 ng/ml respectively) and birds at rest (305.95 mg/dl and 50.65 ng/ml) (P > 0.05). These stress indicators were higher (337.65 mg/dl for glucose and 104.13 ng/ml for costicosterone) when electrical stunning was used (P < 0.05). Lactate concentrations were lower (5.4 mmol/l) for birds at rest (P < 0.05) but not different for all stunning methods tested (7.3 to 8.1 mmol/l; P > 0.05). These results show that serum glucose may be used as a stress indicator in birds, with the advantage of being a quick and cheap biochemical test. Gas stunning favored birds′ management during slaughter and so reduced workers′ effort and injury hazard and the amount of feces and dust in the room. To make this method available for a large scale process, adjustments in equipments will be necessary to avoid delays in the processing line.
