The sexual precocity and fertility of bovines have great impact on the economic success of commercial cattle herds, where some reproductive traits have been adopted as selection criteria. However, the majority of these traits depend on reproductive events of the females and, with exception of the scrotal circumference, few studies approach others andrological traits. The estimation of heritabilities and genetic correlations of testicular and seminal traits and also sexual behaviour, will allow to provide alternatives for the design of more appropriate selection strategies for fertility, together with other economic traits.

The determination of the chemical composition of body and carcass is important in nutritional and growth regulation studies. The purpose of this study was to develop equations to predict the chemical composition of body and carcass using chemical composition of body components. Twenty 3/4Boer x 1/4Saanen crossbred male kids, weighing from 20 to 35 kg, were used in this study. The empty body chemical composition was measured by grinding all body components and sampling for chemical analyses. The body components used to estimate body and carcass composition were: neck, fore leg, ribs, loin, hind leg, 9-11 th rib section, non-carcass components (head plus feet, organs plus blood, and hide), visceral fat, and kidney fat. The chemical composition of organs plus blood and 9-11 th rib section had the highest precision to estimate percentage of fat, protein, and water in the body (r(2) of 0.94, 0.82, and 0.90, respectively). For carcass composition, the chemical composition of ribs was the best component to predict all carcass chemical components; however, the equations to estimate the percentages of protein and ash showed a low precision (r(2) = 0.48, 0.44, respectively). The 9-11 th rib section was accurate and precise to estimate carcass fat percentage. We concluded the chemical composition of the body of 3/4Boer x 1/4Saanen crossbred male kids was highly correlated with the composition of body parts, specifically organs plus blood and 9-11 th rib section. Further studies should focus on evaluating these body parts for different breeds and genders under different production scenarios. (C) 2007 Elsevier B.V. All rights reserved.

Carcass and meat quality traits of thirty-six feedlot beef heifers from different genetic groups (GG) fed at two concentrate levels (CL) were evaluated using 12- Nellore (NE), 12 - 1/2Angus x 1/2Nellore (AN) and 12 - 1/2Simmental x 1/2Nellore (SN) animals. Six heifers of each GG were randomly assigned into one of two treatments: concentrate at 0.8% or 1.2% of body weight (BW). Heifers fed concentrate at 0.8% of BW had greater (P<0.05) dressing percentage. None of the proximate analysis components of the beef were affected (P>0.05) by either CL or GG. Heifers from the AN group had higher (P<0.05) carcass weights, 12th rib fat thickness and lower dressing percentage (P<0.05) compared to the other groups. NE heifers had greater WBSF values (P<0.05) than the other genetic groups. Data suggest that the concentrate level can be reduced without compromising meat quality traits. (C) 2011 Elsevier Ltd. Several initiatives, including research and development, increasing stakeholders' awareness and application of legislation and recommendation, have been carried out in Latin America to promote animal welfare and meat quality. Most activities focused on the impact of pre-slaughter conditions (facilities, equipment and handling procedures) on animal welfare and meat quality. The results are encouraging; data from Brazil, Chile and Uruguay showed that the application of the improved pre-slaughter handling practices reduced aggressive handling and the incidence of bruised carcasses at slaughter in cattle and pigs. These outcomes stimulated some to apply animal welfare concepts in livestock handling within the meat production chain as shown by the increasing demand for personnel training on the best. To attend this demand is important to expand local studies on farm animal welfare and to set up (or maintain) an efficient system for knowledge transfer to all stakeholders in the Latin America meat production chains. However, it is clear that to promote the long-term progress in this field is important to deliver practical solutions, assuring that they match the technical and financial conditions of those who are the target of training programs. Foi conduzido um experimento para avaliar a utilização de subprodutos de origem animal em rações para frangos de corte, formuladas com base nas proteínas bruta e ideal no período de 43 a 49 dias de idade. Foram utilizados 600 frangos machos distribuídos em arranjo fatorial 2x2+1, com duas fontes de proteína de origem animal (farinha de vísceras de aves e farinha de sangue bovino), dois conceitos de formulação (proteínas bruta e ideal) e uma ração testemunha à base de milho e de farelo de soja, com quatro repetições cada. As características avaliadas foram ganho de peso, consumo de ração, conversão alimentar, rendimento de carcaça, peito e porcentagem de gordura abdominal. Os melhores ganho em peso e conversão alimentar foram obtidos quando a dieta à base de milho e farelo de soja foi utilizada. As farinhas de vísceras e de sangue e os conceitos de formulação não exerceram influência sobre as características avaliadas.

Foi conduzido um experimento para avaliar a utilização de subprodutos de origem animal em dietas para frangos de corte de 22 a 42 dias de idade, formuladas com base nos conceitos de proteína bruta e proteína ideal. O delineamento foi inteiramente casualizado em esquema fatorial 2x2+1, ou seja, duas fontes de proteína de origem animal (farinha de vísceras de aves e farinha de sangue bovino), dois conceitos de formulação (proteína bruta e proteína ideal) e uma dieta controle à base de milho e farelo de soja, com quatro repetições. As características avaliadas foram ganho de peso, consumo de ração, conversão alimentar, rendimentos de carcaça e de peito e gordura abdominal. O ganho de peso, consumo de ração e conversão alimentar não foram afetados pelas fontes de proteína e conceitos de formulação, no entanto, o teor de gordura abdominal foi menor nas aves alimentadas com farinha de vísceras que naquelas alimentadas com dieta contendo farinha de sangue.

The objective of this investigation was to evaluate the weight and percentage of the non-carcass components and the mineral content (macro minerals and trace minerals), crude protein, ether extract, moisture and vitamin E of the heart, liver, tongue, lungs, reticulum, kidneys and meat from the longissimus dorsi of lambs in feedlot finishing. Thirty-two non-castrated Ile de France male lambs, fed diets containing sunflower seeds and vitamin E from 15 to 32 kg of body weight were allotted in a completely randomized design in a 2 × 2 factorial arrangement. The weight of the gastrointestinal tract was higher in the lambs fed diets containing vitamin E (10%). No difference was observed in the liver as to the mineral matter, crude protein, ether extract, moisture (2.01; 20.03; 2.39 and 74.78 g/100 g, respectively), the macro minerals and trace minerals, except iron. In the tongue, lungs, reticulum, kidneys and meat there was no in fluence of diets in the studied variables. The liver and the meat presented different values of crude protein (20.01 and 18.34 g/100 g, respectively), and the heart (1.03 mg/100 g) showed a higher content of vitamin E. High contents of manganese, zinc and copper were observed in the liver. The evaluated non-carcass components were nutritionally equal to the sheep meat, once, in addition to their high yield in relation to the body weight at slaughter, the non-carcass components are sources of nutrients.

The objective of this study was to evaluate animal performance and carcass characteristics of 64 Nellore young bulls at 22 months of age finished in a feedlot and slaughtered at five body weights (350; 455; 485; 555 and 580 kg) fed diets containing coated or uncoated urea. The experimental design adopted was completely randomized, set in a 4 × 2 factorial arrangement, and for the variables assessed in the control animals, it was 5 × 2. No effect of interaction between slaughter weights and diets were observed, so the variables were analyzed separately, compared by polynomial contrasts and by the F test, respectively. The time animals remained in the feedlot to reach slaughter weights was 66, 88, 145 and 194 days. Average daily gain (ADG) showed quadratic behavior, with a maximum of 1.44 kg/day with animals of 491.7 kg. Dry matter intake (DMI) (kg/day) was similar in all the treatments, but it decreased linearly as body weight increased. The bionutritional efficiency worsened linearly as body weight rose. The elevation in slaughter weight resulted in linear decrease in the percentage of beef round and increase in forequarter. Backfat thickness and rib eye area of the longissimus increased linearly and the percentages of muscle and protein in the carcass reduced and those of fat and ether extract increased linearly as body weight increased. Average daily gain, DMI, feed efficiency and carcass characteristics were not affected by diets containing coated or uncoated urea. However, animals fed coated urea presenter better crude fiber and neutral detergent fiber intake.

An investigation is made of the influence from small amounts of the protein bovine serum albumin (BSA) on the lateral organization of low molecular weight surfactant sodium bis-2-ethylhexyl sulfosuccinate (AOT) at the air-water interface. Surface pressure (pi - A), surface potential (DeltaV - A) and Brewster angle microscopy (BAM) experiments were carried out, with particular emphasis on the monolayer stability under successive compression-expansion cycles. AOT monolayer is not stable at the air-water interface, which means that the majority of AOT molecules go into the aqueous subphase as monomers and/or normal micelles. When a waiting time elapses between spreading and compression, the surfactant monolayer tends to reorganize partially at the air-water interface, with a monolayer expansion being observed for waiting times as large as 12 h. The incorporation of very small amount of BSA (10(-9) M) at the interface, also inferred from BAM, increases the monolayer stability as revealed by pi - A and DeltaV - A results. For a waiting time of circa 3 h, the mixed monolayer reaches its maximum stability. This must be related to protein (and/or protein-surfactant complexes) adsorbed onto the AOT monolayer, thus altering the BSA conformation to accommodate its hydrophobic/hydrophilic residues. Furthermore, the effects from such small amounts of BSA in the monolayer formation and stabilization mean that the AOT monolayer responds cooperatively to BSA. (C) 2004 Elsevier B.V. The influence of small amounts of bovine serum albumin (BSA) (nM concentration) on the lateral organization of phospholipid monolayers at the air-water interface and transferred onto solid substrates as one-layer Langmuir-Blodgett (LB) films was investigated. The kinetics of adsorption of BSA onto the phospholipid monolayers was monitored with surface pressure isotherms in a Langmuir trough, for the zwitterionic dipalmitoylphosphatidyl ethanolamine (N,N-dimethyl-PE) and the anionic dimyristoylphosphatidic acid (DMPA). A monolayer of N,N-dimethyl-PE or DMPA incorporating BSA was transferred onto a solid substrate using the Langmuir-Blodgett technique. Atomic force microscopy (AFM) images of one-layer LB films displayed protein-phospholipid domains, whose morphology was characterized using dynamic scaling theories to calculate roughness exponents. For DMPA-BSA films the surface is characteristic of self-affine fractals, which may be described with the Kardar-Parisi-Zhang (KPZ) equation. on the other hand, for N,N-dimethyl-PE-BSA films, the results indicate a relatively flat surface within the globule. The height profile and the number and size of globules varied with the type of phospholipid. The overall results, from kinetics of adsorption on Langmuir monolayers and surface morphology in LB films, could be interpreted in terms of the higher affinity of BSA to the anionic DMPA than to the zwitterionic N,N-dimethyl-PE. Furthermore, the effects from such small amounts of BSA in the monolayer point to a cooperative response of DMPA and N,N-dimethyl-PE monolayers to the protein. (c) 2005 Elsevier B.V.
