Noroviruses (Norwalk-like viruses) are an important cause of gastroenteritis worldwide. They are the most common cause of outbreaks of gastroenteritis in the adult population and occur in nursing homes for the elderly, geriatric wards, medical wards, and in hotel and restaurant settings. Food-borne outbreaks have also occurred following consumption of contaminated oysters. This study describes the application of a reverse transcription-polymerase chain reaction (RT-PCR) assay using random primers (PdN6) and specific Ni and E3 primers, directed at a small region of the RNA-dependent RNA polymerase-coding region of the norovirus genome, and DNA sequencing for the detection and preliminary characterisation of noroviruses in outbreaks of gastroenteritis in children in Brazil. The outbreak samples were collected from children <5 years of age at the Bertha Lutz children's day care facility at Oswaldo Cruz Foundation (Fiocruz), Rio de Janeiro, that occurred between 1996 and 1998, where no pathogen had been identified. At the Bertha Lutz day care center facility, only Fiocruz's employee children are provided for, and they come from different social, economic and cultural backgrounds. Three distinct genogroup II strains were detected in three outbreaks in 1997/98 and were most closely related to genotypes GII-3 (Mexico virus) and GII-4 (Grimsby virus), both of which have been detected in paediatric and adult outbreaks of gastroenteritis worldwide.

De acordo com a tonalidade as amostras de mel foram divididas em grupos, armazenadas em diferentes condições e analisadas segundo os métodos adotados pelo Instituto Adolfo Lutz, Laboratório Nacional de Referência Animal e Association of Official Analytical Chemists. As amostras foram acondicionadas em recipientes de vidro e de polipropileno e armazenadas à temperatura ambiente. Um grupo de amostras foi armazenada em luminosidade ambiente enquanto o outro grupo ao abrigo da luz. As determinações de umidade, pH, acidez, cor, açúcares redutores e não-redutores, hidroximetilfurfural e índices de Lugol, Lund, Fiehe e diastase foram efetuadas por um período de um ano de armazenamento. Os resultados obtidos indicam que as amostras analisadas mantiveram suas características dentre os padrões aceitáveis e que os produtores devem ser orientados para o uso de técnicas de acondicionamento e armazenamento dos méis, para garantir a qualidade dos seus produtos.

Atualmente 17 mini usinas fazem parte do Programa do Leite no estado de Alagoas, e através de um convênio firmado entre o Laboratório de Microbiologia de Alimentos da Universidade Federal de Alagoas e a Cooperativa de Laticínio de Alagoas - CPLA para monitorar a qualidade microbiológica e físico-química de leite pasteurizado tipo C, foram analisadas 348 amostras deste produto e avaliadas quanto à contagem de coliformes a 35 e 45 °C, quanto a bactérias aeróbias mesófilas, bactérias psicrotróficas e pesquisa de Salmonella sp., segundo metodologia convencional proposta pela Instrução Normativa nº 62/2003 do MAPA. Os parâmetros físico-químicos (acidez titulável em graus Dornic, estabilidade ao álcool, densidade a 15 °C, índice crioscópico, teor de gordura, extrato seco desengordurado e teor de proteína) foram avaliados segundo metodologia convencional recomendada pelo Instituto Adolfo Lutz. As análises de gordura, proteína e extrato seco desengordurado foram realizadas utilizando o aparelho Ekomilk, conforme recomendação do fabricante. De acordo com os resultados obtidos, 134 (38,5%) e 159 (45,7%) amostras apresentaram-se dentro dos padrões microbiológicos e físico-químicos, respectivamente, segundo a legislação em vigor. Salmonella sp. não foi detectada nas amostras analisadas. Recomenda-se a implantação de programas de boas práticas de fabricação e análise de perigos e pontos críticos de controle para assegurar a inocuidade deste produto.

A semente de linhaça apresenta cerca de 60% de ácidos graxos ômega-3, os quais auxiliam na prevenção de células malignas, enquanto que os ácidos graxos trans podem levar a implicações nutricionais negativas. Foi objetivo do trabalho elaborar uma nova formulação de pão de linhaça com a substituição da gordura hidrogenada por óleo de soja. Foi verificada a aceitação e realizada a quantificação dos ácidos graxos trans e ácidos graxos ômega-3 e ômega-6 nos produtos padrão e modificado. Foram, ainda, avaliados parâmetros instrumentais de cor e textura. As análises físico-químicas e de composição centesimal seguiram as metodologias do Instituto Adolf Lutz e AOAC. Para determinação de ácidos graxos utilizou-se cromatografia gasosa. A nova formulação apresentou maiores teores de ácidos graxos ômega-6 e ômega-3 e de poliinsaturados em relação ao padrão. Inversamente, a quantidade de ácidos graxos trans foi significativamente maior no pão padrão. Não foi observada diferença na cor de casca, mas a formulação com óleo de soja apresentou miolo mais amarelado e maior maciez que o padrão. O pão formulado com óleo de soja apresentou boa aceitação sensorial.

Se realizó la evaluación de las propiedades fisicoquímicas y funcionales de almidones de tubérculos: makal (Xanthosoma yucatanensis), camote (Ipomea batata), yuca (Manihot esculenta Crantz) y sagú (Marantha arundinacea). El tamaño promedio de los gránulos de almidón varió de 10,6 a 16,5 µm. La amilosa fue de 23,6, 19,6, 17,0 y 22,7%, para el makal, camote, yuca y sagú. Las temperaturas de gelatinización fueron de 78,4, 61,3, 65,2 y 74,9 °C, respectivamente. El almidón de yuca fue el que presentó mayor poder de hinchamiento y solubilidad. La viscosidad máxima fue para el almidón de yuca. El almidón de camote presentó la mayor claridad de gel (51,8%) y el de makal, la menor (10,9%). El almidón de yuca fue el más elástico (36,2%). Los almidones de makal y de sagú pueden ser utilizados en productos que requieren altas temperaturas de procesamiento. Los almidones de camote y de yuca pueden ser incluidos en sistemas alimenticios como espesantes, estabilizantes y gelificantes en alimentos refrigerados y congelados.

Objetivou-se utilizar Farinhas de Talos (FT) na confecção de cookies. As farinhas foram obtidas a partir de talos de couve manteiga e espinafre desidratados. Confeccionaram-se 3 tipos de cookies por modificação da formulação padrão de sugar-sanap cookie, método 10-50D (AMERICAN..., 1995): cookie controle, cookie com 15% de FTC e com 15% de FTE. Realizou-se a composição centesimal nas FT segundo as metodologias descritas da AOAC (ASSOCIATION..., 1995), sendo as fibras alimentares analisadas pelo método de van Soest (1963). Nos cookies, procedeu-se às seguintes análises: peso, espessura, diâmetro, volume e densidade aparente segundo método 10-50D da AACC (AMERICAN..., 1995), acidez titulável e pH através da técnica do Instituto Adolfo Lutz (SÃO PAULO, 1985), rendimento e fator térmico. A composição centesimal dos cookies seguiu normas da AOAC (ASSOCIATION..., 1995) e, para aceitação dos experimentais, utilizou-se escala hedônica de 9 pontos. Constatou-se que as FT possuem baixa densidade energética e alto teor de fibra alimentar e cinzas. Os cookies experimentais apresentaram maior (p < 0,05) espessura, maior valor (p < 0,05) para a acidez titulável e menor (p < 0,05) valor para o pH, quando comparados ao controle. A composição centesimal revelou menor teor de gordura e densidade calórica e maior teor de umidade e fibra nos cookies experimentais. A aceitação dos cookies foi considerada satisfatória, destacando-se o cookie contendo FTE.

The potential of functional foods to decrease the risks of chronic non-communicable diseases has motivated the development of products with beneficial effects on fat and carbohydrate metabolism. The present study aimed at analyzing the physicochemical, microbiological, and sensory properties of a bioactive food blend developed to help the nutritional therapy provided to hypolipidemic and hyperglycemic patients with HIV/AIDS treated with antiretroviral therapy. The food blend was evaluated for moisture, protein, carbohydrate, fats, fixed mineral residue, total fiber content, and fatty acid composition, according to the standards established by the Instituto Adolfo Lutz. Food safety was assessed by microbiological analyses for Bacillus cereus, Salmonella spp, and coliforms. Sensory acceptance and intention to purchase were also evaluated. The food blend showed good nutritional potential, with low atherogenicity and thrombogenicity indexes, good macronutrient balance, and high energy value. The adoption of Good Manufacturing Practices (GMP) resulted in a product suitable for consumption. With respect to sensory aspects, the food blend showed satisfactory indexes of acceptability and promising marketing potential.

The relationship between the child's cogni tive development and neurological maturation has been of theoretical interest for many year s. Due to diff iculties such as the lack of sophisticated techniques for measur ing neurolog ical changes and a paucity of normative data, few studies exist that have attempted to correlate the two factors. Recent theory on intellectual development has proposed that neurological maturation may be a factor in the increase of short-term memory storage space. Improved technology has allowed reliable recordings of neurolog ical maturation.. In an attempt to correlate cogni tive development and neurological maturation, this study tested 3-and II-year old children. Fine motor and gross motor short-term memory tests were used to index cogni tive development. Somatosensory evoked potentials elici ted by median nerve stimulation were used to measure the time required for the sensation to pass along the nerve to specific points on the somatosensory pathway. Times were recorded for N14, N20, and P22 interpeak latencies. Maturation of the central nervous system (brain and spinal cord) and the peripheral nervous system (outside the brain and spinal cord) was indi~ated by the recorded times. Signif icant developmental di fferences occurred between 3-and ll-year-olds in memory levels, per ipheral conduction velocity and central conduction times. Linear regression analyses showed that as age increased, memory levels increased and central conduction times decreased. Between the ll-year-old groups, there were no significant differences in central or peripheral nervous system maturation between subjects who achieved a 12 plus score on the digit span test of the WISC-R and those who scored 7 or lower on the same test. Levels achieved on the experimental gross and fine motor short-term memory tests differed significantly within the ll-year-old group.

This study addressed the problem of the quality of life in the Brock Master of Education program. Survey and interview data were used to gain an understanding of satisfaction with the learning achieved and student life experienced. Eighty-seven percent of the study sample reported satisfaction with the program overall. Results suggested the higher the overall satisfaction with a program, the greater the likelihood learning and student life satisfaction were also more positive. Student reflections suggested satisfaction with the quality of life in the program was associated with the program's focus on the student, the use of self-directed learning, and the support of professors to meet student needs. Comparison of the Brock Master of Education survey with the Brock Pre-Service Teacher Education program showed both student groups shared a similar satisfaction with student life in the Faculty. Comparison of Master of Education programs suggested the difference between two programs, a difference which may be influenced by time in the program. The results from the three programs suggested that students beyond the first undergraduate degree favored the school domains of learning acquisition. Supplementary data on the relationship between cognitive and affective opinions suggested the more positive the affective dimension of learning, the greater the likelihood the cognitive dimensions of student life were also more positive. It was concluded that time was a chief factor influencing part-time student satisfaction with both learning and student life in the program. Part-time students, as. the majority in the survey, expressed comments about the need for clarity of communication between the organization and student to promote the effective use of limited time.

This study explored motivations of mid-life women over 30 years old who had returned to school. It sought to fmd whether these women returned to solve a problem arising from life events, whether viewing a problem was related to internal or external motivation, whether this perception was related to having greater coping skills, and whether having greater coping was related to seeking support from internal or external sources. This study examined which emotions were most related to viewing a life event as a problem. Finally, it explored the results of previous research of mid-life women in their role as a student. Women (N==83) from three types of institutions volunteered for this study: a university (N==34), a college (N==28), and an adult education centre (N==21). Participants took home a questionnaire package - a I3-page questionnaire and consent form - that were completed and mailed back to the researcher in pre-paid envelopes. Results showed that women over 30 seek education as a solution to a life event problem. External motivation was related to a life event being a problem (p<.005). There was a significant difference in coping scores between institutions. Moods that were related to viewing a life event as problematic were: anger and depressive moods (p<. 001), fatigue and vigor (p<.O 1), and tension/anxiety (p<.05). Mid-life women students' satisfaction in this role was related to being externally motivated. These women sought support from both internal and external sources, rarely had social interactions with peers, and viewed this role as important, yet, temporary in that it will help them change their lives. Implications ofthe results suggest further exploration ofthe roles of anger and depression in motivating women over 30 to learn and finding ways of directing women to use their emotional intelligence to seek out learning.

Conditional heteroskedasticity is an important feature of many macroeconomic and financial time series. Standard residual-based bootstrap procedures for dynamic regression models treat the regression error as i.i.d. These procedures are invalid in the presence of conditional heteroskedasticity. We establish the asymptotic validity of three easy-to-implement alternative bootstrap proposals for stationary autoregressive processes with m.d.s. errors subject to possible conditional heteroskedasticity of unknown form. These proposals are the fixed-design wild bootstrap, the recursive-design wild bootstrap and the pairwise bootstrap. In a simulation study all three procedures tend to be more accurate in small samples than the conventional large-sample approximation based on robust standard errors. In contrast, standard residual-based bootstrap methods for models with i.i.d. errors may be very inaccurate if the i.i.d. assumption is violated. We conclude that in many empirical applications the proposed robust bootstrap procedures should routinely replace conventional bootstrap procedures for autoregressions based on the i.i.d. error assumption.

Le thème de cette thèse est le droit des femmes à la fin du dix-huitième siècle dans les romans de l’auteure britannique Jane Austen. L’abus psychologique (et parfois physique) entre femmes est omniprésent au moment où le sujet de l’égalité entre hommes et femmes est à son apogée. Depuis la publication du volume Jane Austen and the War of Ideas de Marilyn Butler, on ne limite plus nos interprétations aux significations littéraires des romans, au contraire, elles se multiplient dans les champs culturels, sociaux, économiques... Ceci permet de mieux comprendre l’époque reflétée dans ses oeuvres. Les interactions humaines se compliquent: les mères essayent à tout prix de « vendre » leurs filles à l’homme le plus riche. Pour ce faire, ces mères résistent aux normes patriarcales. De plus, les femmes veuves sont problématiques car leur statut social ne peut pas être défini. Austen peint et critique les veuves autonomes qui essayent vigoureusement d’exercer leurs pouvoirs à travers leur sexualité et en manipulant leur vocabulaire dans le but de monter dans l’échelon social. En fait, les femmes de tous âges et toutes classes essayent de manipuler les autres pour leurs gains personnels. L’obtention de pouvoir fait en sorte que ces femmes compétitives ne créent pas une société inclusive: elles se marginalisent encore plus. Ce combat interne permet d’autant plus aux hommes d’injurier les femmes. Finalement, avec la montée du cinéma de nos jours, les oeuvres d’Austen sont traduites pour atteindre un grand nombre de spectateurs. Parmi la panoplie de films, l’abus est traduit et interprété à différents degrés.
