As vitaminas são substâncias orgânicas presentes em muitos alimentos, em pequenas quantidades e indispensáveis ao funcionamento do organismo. A ausência sistemática destas resulta, quase sempre, em crescimento e desenvolvimento deficientes e em casos extremos pode conduzir a doenças graves, como por exemplo, a demência (vitaminas do complexo B), o raquitismo (vitamina D), o escorbuto (vitamina C). Em 1968 a American Food and Nutrition Board reconheceu oficialmente a vitamina E como um nutriente essencial para os seres humanos, pois possui uma importante função no organismo, como antioxidante, ao inibir a oxidação de lípidos insaturados e ao prevenir o dano oxidativo celular pela inativação de radicais livres e espécies reativas de oxigênio. O interesse nesta vitamina é cada vez maior, devido às funções que desempenha no organismo como agente antioxidante, envolvido no retardamento do envelhecimento e na proteção de doenças crônicas não transmissíveis, como Parkinson, Alzheimer, cancro e doenças cardiovasculares. O presente trabalho tem como objetivo a implementação e validação de um método de pesquisa e quantificação da vitamina E na manteiga por cromatografia líquida de alta eficiência, no laboratório de Química da empresa SGS, expandindo desta forma, as capacidades da empresa nesta área. Para tal foram avaliados parâmetros como linearidade, limites de deteção e quantificação, repetibilidade, precisão intermédia e exatidão. Os resultados mostram que o método é linear para uma gama de trabalho entre 5,00 e 50,00 mg/L com um limite de deteção e quantificação de 1,27 mg/L e 3,84 mg/L, respetivamente. O método apresentou repetibilidade e precisão intermédia aceitáveis, com coeficientes de variação inferiores a 5%, limite de repetibilidade de 1,37 mg/kg e variabilidade de resultados associados ao método de 0,19 mg/L. A exatidão do método foi aferida recorrendo a ensaios de recuperação, tendo-se obtido percentagens de recuperação médias superiores a 80%.

Estudi elaborat a partir d’una estada al National Research Institute for Food and Nutrition, Itàlia, des de novembre del 2006 fins a febrer del 2007. La capacitat antioxidant total (TAC) en plasma pot ser un bon biomarcador del estat antioxidant dels humans. Prenent les mostres de dos projectes diferents de recerca s’ha mesurat la TAC mitjançant el FRAP (ferric reductant antioxidant potencial) i el TRAP (total radical-trapping antioxidant parameter ). D’una banda el PREDIMED, és un estudi prospectiu aleatoritzat i controlat, amb una cohort d’ individus sense patología vascular coneguda, però amb un alt risc de patir-la. En aquest es valora la utilitat d’una intervenció dietética del tipus mediterrània en la prevenció primària de la malaltia cardiovascular. L’altre és el de biodisponibilitat en humans dels metabòlits dels polifenols presents en els solubles de cacau, un estudi crònic (28 dies) on es vol mesurar la influència de la llet en l’absorció dels polifenols del cacau, en voluntaris amb elevat risc de sofrir patologia cardiovascular.

WALK operate a Community Garden in Dublin 12 which promotes the growing of fresh fruit, vegetable, salad leaves and flowers which change seasonally. The garden helps create a sense of community and advocates the benefits of growing healthy food, environmental awareness and sustainability. It offers an opportunities for people to take part in hand-on, activity based learning with some formal training offered to local groups and individuals with varying levels of skill and ability. This outdoor space fosters an interest in growing and guides people in learning new skills which can be transferred to their own gardens or allotments. In the summer of 2009 a local Men’s group that met in St Helena’s thought that it might be a good idea to sow a wild garden on the site.  Then came the raised beds – 2 were placed in the garden area opposite the front door of the house and as it was winter there was not much happening and they were quickly renamed the ‘coffins’.  This was the start of ‘Daisy Roots’. Dublin City Council provided top soil and water butts.  An Taisce funded the start up phase of the project and now continue to provide funds for insurance and some development work.  At the right hand side of St Helena’s there is, what was the old stable yard of the ‘big house’.  This had been used to house a large ‘lock up container and a porta-cabin.  These have been now removed and this is where the main part of the garden is. Following a conference of Business in the Community Ireland, DX Ltd expressed an interest in getting involved in a local project.  Together DX staff and the volunteers reclaimed the old stables and gave them new roofs and new doors.  Paths were put in between the raised vegetable beds and new raised beds were built.  A seating area was developed.  The garden is now wheelchair accessible and there are wheelchair accessible flowerbeds in the garden also.  The newest projects in the garden are a memorial flowerbed and a propagator. Our Project provides a Meals on Wheels delivery Service and a Drop in Centre five days per week.  We provide a three course meal which is made from only fresh local produce.  All soup, breads, desserts etc. are homemade. North Tipperary Food Partnership aims to improve access to healthy food and build community and skills through food growing initiatives. `The Garden to Plate` project was set up as part of Nenagh Community Allotments, a voluntary group who lease a site privately containing up to 20 allotments and a communal green house. The North Tipperary VEC Community Education and Back to Education Initiative Projects rent two allotments from NCA offering a certified learning opportunity and generating a space for the wider benefits of learning. The adults engaged are mainly men both recently and long term unemployed with a range of skills and experiences. A small study has been conducted with participants to identify feedback on skills and knowledge gained including those related to health and nutrition. A report is available. Gortin Community Seasonal Eating is based within Owenkillew Development Company in the rural village of Gortin. They are establishing a community garden which will help to develop sustainable living through encouraging growing their own food, developing healthy options which are available locally and educating both providers and consumers in healthy food options. Their aims are to improve access to and availability of healthy food options through community growing and harvesting of fruit and vegetables and eating locally produced and procured ingredients. They will educate parents through targeting both the children and parents of local schools and play/toddler groups. The Rise ‘n’ Shine club was set up in January 2013. The main aims of the club are to improve attendance, increase participation in class, and reinforce healthy eating policy in pupils. The club is run each morning by a group of volunteers which includes teachers, parents and 6th class children. The Home School Community Liaison Officer co-ordinates the club. On average, 20 – 25 girls attend each morning. A selection of cereals is served each morning along with toast and fruit juice. Different foods are served for special occasions, such as pancakes on Pancake Tuesday. This club is part of the Pilot Programme of Breakfast Clubs which is funded through Kellogg's Corporate Citizenship Fund. Footprints is developing a Transition Community Initiative which will be another distinct area of work within the Healthy Living Project, as part of the group's ongoing endeavours to influence change within the Colin community, tackling health inequalities. The Building a Transition Community Initiative oversees the development of the grounds at Footprints Women's Centre and offers food growing training to local residents who will be encouraged to volunteer in the garden. A local gardener has been hired and oversees the development and training of the volunteers. The project will grow fruit and vegetables within the grounds of Footprints Women's Centre and this produce will be used within the Footprints Catering Services. Any supplies surplus to requirements will be used in schools in the neighbourhood. Skills learned by the volunteers will also be transferred to their gardens at home throughout the Colin neighbourhood. The aim is also to demonstrate how participation in this project will increase and improve the physical activity levels and mental wellbeing of residents.
