Sixty Piaractus mesopotamicus Holmberg, 1887 (pacu) fry fed a diet containing 0, 50, 100 and 200 mg ascorbic acid/kg dry feed were studied to evaluate the effect on parasitic infestation by the monogenean Anacanthorus penilabiatus Boeger, Husak and Martins, 1995 (Monogenea: Dactylogyridae) for a period of 24 weeks. The temperature of the aquaria was measured daily and remained between 28 and 31oC. At the beginning of the experiment, fish showed 6.15 ± 0.33 cm standard length and 8.64 ± 1.62 g average body weight. A sample of fish was examined and showed 43 ± 17 monogeneans per fish. At the end of the experiment, the gills of control and vitamin C-treated fish were collected for parasite counts. Control fish had 42.5 parasites per fish, a significantly higher number (P<0.05) when compared with fish fed vitamin C, that showed 16.5 parasites per fish. Ascorbic acid fortification in the food promoted an increase in fish resistance to parasites. It is suggested that an optimum level of 139 mg/kg vitamin C supplementation either elicited better nutritional conditions by stimulating the appetite of the fish or improved the immune response.

O objetivo deste trabalho foi introduzir a técnica de microfiltração tangencial (MFT) na produção de suco de laranja. O suco microfiltrado (SMFT) foi comparado química e sensorialmente com um suco pasteurizado (testemunha). Utilizou-se um piloto de MFT munido de quatro membranas (0,1, 0,2, 0,8 e 1,4mm) cerâmicas monotubulares dispostas em série, cada uma delas com superfície de 0,005m². Suco de laranja comercial flash pasteurizado foi usado como produto inicial. O trabalho experimental foi dividido em três fases: a) caracterização do piloto de MFT; b) otimização das condições operacionais; c) produção do SMFT. Na fase de otimização, a membrana de 0,8mm apresentou os melhores fluxos de permeado, seguidas pelas de 1,4, 0,1 e 0,2mm. Para garantir a esterilidade do permeado, a membrana de 0,1mm foi escolhida para a terceira fase do trabalho. Na produção do SMFT, o suco de laranja foi peneirado para separar uma parte de sua polpa, sendo em seguida microfiltrado. Depois, a polpa foi misturada ao retentato e a mistura pasteurizada. O SMFT foi obtido adicionando a mistura pasteurizada ao permeado. O SMFT apresentou teor de sólidos solúveis (°Brix), polpa, pH e acidez titulável semelhante ao suco inicial pasteurizado (testemunha); embora, tenha perdido maior quantidade (28%) de vitamina C. de acordo com os provadores do painel, o suco testemunha apresentou melhores características sensoriais em relação ao SMFT, por apresentar maior intensidade de odor e sabor frutoso.

OBJETIVO: O excesso de peso é um grande problema de saúde pública em todo o mundo, atingindo crianças e adolescentes. O presente estudo teve por objetivo verificar se a condição de portador de sobrepeso se associa à presença de fatores de risco à saúde. MÉTODOS: Foram estudados 84 sujeitos entre seis e 17 anos, constituindo-se um grupo de 34 pacientes portadores de sobrepeso e outro de 50 obesos, atendidos em ambulatório de Nutrologia Pediátrica da Universidade de Ribeirão Preto (Unaerp), durante o período de outubro de 2004 a outubro de 2005. Foram obtidas as variáveis: pressão arterial, circunferência abdominal, glicemia de jejum, glicemia de segunda hora, colesterol total, HDL-c, LDL-c e triglicérides. Comparam-se os dois grupos por meio de duas abordagens estatísticas: comparação entre as distribuições dos valores absolutos (teste de Mann-Whitney) e entre as frequências de valores considerados alterados (teste exato de Fisher). RESULTADOS: Quanto à primeira abordagem, verificou-se diferença estatística apenas para o HDL-c, com maiores valores para o subgrupo de portadores de sobrepeso de seis a dez anos. Quanto à segunda comparação, verificou-se diferença estatística para a circunferência abdominal (segundo os critérios de Freedman), HDL-c e glicemia de jejum, com maiores frequências de valores alterados entre os obesos. CONCLUSÕES: Os portadores de sobrepeso apresentaram alterações indicativas de prejuízos à sua saúde, semelhantemente aos obesos, sendo necessário também incluí-los nos programas de prevenção e tratamento.

Frutos de manga (Mangifera indica L.) variedade Keitt, colhidos em estádio pré-climatérico, receberam tratamento com 500 e 1.000 ppm de Ethrel (com exceção da testemunha), sendo submetidos a determinações de carboidratos solúveis, vitamina C, proteínas e umidade, de acordo com amostragens realizadas 3, 6, 9 e 16 dias pós-colheita. Os resultados obtidos, revelaram que o Ethrel não excerceu nenhuma influência nas características químicas dos frutos e que, somente em termos de carboidratos solúveis e vitamina C, os frutos mostraram alterações durante a maturação.

The family Myrtaceae is one of the most important related to fruit species. In Brazil it encloses more than 100 species of native fruit from North to South of the country (Giacometti, 1992; Donadio, 1992; Mattos, 1992). The genus Eugenia, Campomanesia, Psidium and Myrciaria are the most important, grouping most of the species of some importance. The germplasm bank of the Universidade Estadual Paulista includes some of the major species. Some characteristics are typical for most of the Myrtaceae fruit species. The most relevant are the long juvenile period presented by the trees, taking long time to produce, when propagated by seed; the slow growing tree behavior; difficult to propagated by vegetative means; large variability in trees obtained by seed propagation. The cited characteristics are commented for some species as well as the fruit quality, from data obtained in trees at the same ecological conditions.The species evaluated are: 1) Eugenia stipitata Mc Vaugh; 2) Eugenia tomentosa Cambes; 3) Eugenia brasiliensis Lam.; 4) Eugenia uniflora L.; 5) Eugenia luchsnathiana Berg.; 6) Eugenia uvalha Cambess; 7) Camponesia spp; 8) Plinia edulis (Veil. Sobral); 9) Eugenia involucrata D.C.; 10) Psidium acutangulum Mart.; 11) Myrciaria dubia Mc Vaugh; 12) Engenia guabiju Berg. The main conclusions based on the data analysed are: the fruits of some species present good general characteristics, mainly for fresh consumption, as high Vitamin C, sugars, pulp and other characteristics; 'Araca-boi' presents some good fruit characteristics, but is more adapted for processing, by its high acidity; Some species present low % of edible portion and need to be improved to gain commercial acceptance. mainly the 'cabeludinha' and 'cambuca'.

In order to know which clone of acerola is better for acerola industrialization, we studied the pectin methylesterase (PME) specific activity, pectin content and vitamin C content in five different clones of acerola. The pectin yield varied from 1.37 to 2.99% and the highest content of pectin occurred in clones 3 and 5. Ascorbic acid varied significantly from 1157.5 to 1735.5 mg/100 g of pulp in the five clones. The highest content of vitamin C occurred in clone 4. The PME specific activity varied from 0.79 to 2.92 units g(-1)/g of pulp and the highest values occurred in clone 2. We also studied the optimum temperature and the optimum pH of this enzyme. Clones 1, 2, 4 and 5 showed optimum temperature at 90C. Clone 3 showed practically the same specific activity at all temperatures studied. Clones 1 and 4 showed an optimum pH of 9.0 and clone numbers 2, 3 and 5 showed a pH optimum at 8.5.

The binding and availability of metals (Al, Ca, Cd, Co, Cr, Cu, Fe, Mg, Mn, Ni, Pb, Zn) in therapeutically applied peat (GroBes Gifhorner Moor, Sassenburg/North Germany) was characterized by means of a versatile extraction approach. Aqueous extracts of peat were obtained by a standardized batch equilibrium procedure using high-purity water (pH 4.5 and 5.0), 0.01 mol l(-1) calcium chloride solution, 0.0 1 mol l(-1) ethylenediaminetetraacetic acid (EDTA) and 0.01 mol l(-1) diethylenetriarnine pentaacetic acid (DTPA) solution as metal extractants. In addition, the availability of peat-bound metal species was kinetically studied by collecting aliquots of extracts after different periods of extraction time (5, 10, 15, 30, 60 and 120 min). Metal determinations were performed by atomic spectrometry methods (AAS, ICP-OES) and dissolved organic matter (DOM) was characterized by UV/Vis measurements at 254 and 436 nm, respectively. of the extractants studied Ca, Mg and Mn were the most available metals, in contrast to peat-bound Fe and Al. The relative standard deviation s(r) of the developed extraction procedures was mostly in the range of 4 to 20%, depending on the metal and its concentration in peat. A pH increase favored the extraction of metals and DOM from peat revealing complex extraction kinetics. Moreover, a competitive exchange between peat-bound metal species and added Cu(II) ions showed that > 100 mg of Cu(II) per 50 g wet peat was necessary to exchange the maximum of bound metals (e.g. 21.8% of Al, 3.9% of Fe, 79.0% of Mn, 81.9% of Sr, related to their total content). Degradation kinetics of food constituents may be related to the matrix molecular mobility by glass transition temperature. Our objective was to test this approach to describe ascorbic acid degradation during drying of persimmons in an automatically controlled tray dryer with temperatures (40 to 70 degrees C) and air velocities (0.8 to 2.0 m/s) varying according a second order central composite design. The Williams-Landel-Ferry model was satisfactorily adjusted to degradation curves for both control strategies adopted-constant air temperature and temperature fixed inside the fruit. Degradation rates were higher at higher drying temperatures, independent of the necessary time to attain the desired moisture content.

OBJECTIVE: To study whether antioxidant supplementation will reduce the incidence of preeclampsia among patients at increased risk.METHODS: A randomized, placebo-controlled, double-blind clinical trial was conducted at four Brazilian sites. Women between 12 0/7 weeks and 19 6/7 weeks of gestation and diagnosed to have chronic hypertension or a prior history of preeclampsia were randomly assigned to daily treatment with both vitamin C (1,000 mg) and vitamin E (400 International Units) or placebo. Analyses were adjusted for clinical site and risk group (prior preeclampsia, chronic hypertension, or both). A sample size of 734 would provide 80% power to detect a 40% reduction in the risk of preeclampsia, assuming a placebo group rate of 21% and alpha=.05. The a level for the final analysis, adjusted for interim looks, was 0.0458.RESULTS: Outcome data for 707 of 739 randomly assigned patients revealed no significant reduction in the rate of preeclampsia (study drug, 13.8% [49 of 355] compared with placebo, 15.6% [55 of 352], adjusted risk ratio 0.87 [95.42% confidence interval 0.61-1.25]). There were no differences in mean gestational age at delivery or rates of perinatal mortality, abruptio placentae, pre-term delivery, and small for gestational age or low birth weight infants. Among patients without chronic hypertension, there was a slightly higher rate of severe preeclampsia in the study group (study drug, 6.5% [11 of 170] compared with placebo, 2.4% [4 of 168], exact P=.11, odds ratio 2.78, 95% confidence interval 0.79-12.62).CONCLUSION: This trial failed to demonstrate a benefit of antioxidant supplementation in reducing the rate of preeclampsia among'patients with chronic hypertension and/or prior preeclampsia.
