In recent years, a number of South American freshwater fish have gained increasing attention for their potential in aquaculture, not only because of their excellent performance in farming systems but also to meet the high consumer demand for these species due to declining fishery resources. Many South American freshwater species are migratory and produce altricial larvae, with a small amount of yolk reserves. Unlike precocial freshwater species and altricial coldwater marine fish, these freshwater fish investigated have rapid yolk depletion and metamorphosis. Specific studies on the initial development of South American fish are scarce and fragmented. One of the most widely studied species is the pacu (Piaractus mesopotamicus), farmed in warm continental waters. In the present review we compile new and published data on the initial development of pacu, including morphogenesis of the skeletal, muscle, digestive and sensory systems; compare it to other Neotropical species; and discuss the importance of this information to develop larviculture protocols. When pacu larvae exhaust yolk reserves, they initiate a new form of interaction with the environment, becoming exclusively exotrophic. This type of interaction is made possible by the rapid development of sensory, skeletal, locomotor and digestive structures. In addition to understanding fish ontogeny, studies on larval development are necessary to improve farming systems and larviculture techniques aimed at producing high-quality juveniles in aquaculture. The genus Salmonella was characterized in 1885. It is divided into two species and six subspecies or subgenera. Belonging to the family Enterobacteriaceae is composed of Gram-negative rods, usually producing mobile gas from glucose, except in those serovars S. gallinarum and S. Pullorum. Salmonela is one of the biggest problems in public health for its wide occurrence in humans and in animals, where they occupy the center of the epidemiology of enteric salmonelosis. These are responsible for significant rates of morbidity and mortality. Several outbreaks of food transmitted diseases are described involving meat birds. Sources of salmonela in broiler chicks infected stem, feed and farm environment. Currently, S. enteritidis and S. typhimurium are the two most prevalent serovars. In this context, the sum is increased resistance to antimicrobial drugs is including the latest generation of its indiscriminate use in veterinary medicine. This fact represents risk to human and animal health. New strategies have been adopted by the Brazilian poultry industry to control salmonela in broilers, but the contamination by this pathogen is still present in slaughterhouses putting public health at risk

In the process of artificial incubation of fertile eggs of chicken (Gallus gallus domesticus) there are procedures that, they are not hindered the birth, they cause embryonic mortality. Handlings before incubation as disinfection and storage are capable to reduce the embryonic if accomplished of inadequate way viability. Already in the incubation process properly says, irregularities in variables as temperature, turning, humidity and ventilation in the incubator reduce the hatchability, what means that, of the total of fertile eggs there is reduction in the number of born chicks, there is like this the reduction of profit of the incubator, being necessary an analysis of which they interfered in the birth
