A procedure for the standardization of ensembles of gold nanodisk electrodes (NEE) of 30 nm diameter is presented, which is based on the analytical comparison between experimental cyclic voltammograms (CV) obtained at the NEEs in diluted solutions of redox probes and CV patterns obtained by digital simulation. Possible origins of defects sometimes found in NEEs are discussed. Selected NEEs are then employed for the study of the electrochemical oxidation of iodide in acidic solutions. CV patterns display typical quasi-reversible behavior which involves associated chemical reactions between adsorbed and solution species. The main CV characteristics at the NEE compare with those observed at millimeter sized gold disk electrodes (Au-macro), apart a slight shift in E1/2 values and slightly higher peak to peak separation at the NEE. The detection limit (DC) at NEEs is 0.3 mu M, which is more than one order of magnitude lower than DL at the Au-macro (4 RM). The mechanism of the electrochemical oxidation of iodide at NEEs is discussed. Finally, NEEs are applied to the direct determination of iodide at micromolar concentration levels in real samples, namely in some ophthalmic drugs and iodized table salt. (c) 2006 Elsevier B.V. One of the overall goals of industries is to use packages that do not cause environmental problems at disposal time, but that have the same properties as the conventional ones. The goal of this study is to synthesize edible films based on hydroxypropyl methylcellulose (HPMC) with guava puree and chitosan (CS) nanoparticles. This was divided into two stages, the first is the synthesis of chitosan nanoparticles and the second is the production of the films. For the nanoparticles, average size and zeta potential measurements were performed. The characterizations of mechanical and thermal properties, solubility and water vapor permeability tests were conducted in the films. It was observed that when the nanoparticles were added to HPMC and guava puree films, they improved their mechanical and thermal properties, as well as decreased the films solubility and permeability. The potential application of the films prepared would be in edible films with flavor and odor to extend the shelf life of products.
MINERAL COMPOSITION of RAW MATERIAL, SUBSTRATE and FRUITING BODIES of Pleurotus ostreatus IN CULTURE

In a culture of a Pleurotus ostreatus (oyster mushroom) strain, macro and micronutrients of the raw material and the initial and spent substrates were evaluated. Substrates were formulated with sawdust from Simarouba amara Aubl. and Ochroma piramidale Cav. ex. Lam., crushed Bactris gasipaes Kunth and crushed Saccharum officinarum (sugar cane). Samples were solubilized by means of acid digestion (nitric-peridrol). Ca, Mg, Fe, Cu, Zn and Mn were determined by atomic absorption spectrophotometry, Na and K by atomic emission, and P by colorimetry. The mineral composition of the fruiting body varied with the substrates, which made possible the production of a fruiting body rich in K, P Mg and Fe. Potassium was the mineral with the highest content in the fruiting body in all substrates tested (36.83-42.18g.kg(-1)). There was an increase of protein and mineral content in the spent substrate in relation to the initial one.

The family Myrtaceae is one of the most important related to fruit species. In Brazil it encloses more than 100 species of native fruit from North to South of the country (Giacometti, 1992; Donadio, 1992; Mattos, 1992). The genus Eugenia, Campomanesia, Psidium and Myrciaria are the most important, grouping most of the species of some importance. The germplasm bank of the Universidade Estadual Paulista includes some of the major species. Some characteristics are typical for most of the Myrtaceae fruit species. The most relevant are the long juvenile period presented by the trees, taking long time to produce, when propagated by seed; the slow growing tree behavior; difficult to propagated by vegetative means; large variability in trees obtained by seed propagation. The cited characteristics are commented for some species as well as the fruit quality, from data obtained in trees at the same ecological conditions. The species evaluated are: 1) Eugenia stipitata Me Vaugh; 2) Eugenia tomentosa Cambes; 3) Eugenia brasiliensis Lam.; 4) Eugenia uniflora L.; 5) Eugenia luchsnathiana Berg.; 6) Eugenia uvalha Cambess; 7) Camponesia spp; 8) Plinia edulis (Veil. Sobral); 9) Eugenia involucrata D.C.; 10) Psidium acutangulum Mart.; 11) Myrciaria dubia Me Vaugh; 12) Eugenia guabiju Berg. The main conclusions based on the data analysed are: The fruits of some species present good general characteristics, mainly for fresh consumption, as high Vitamin C, sugars, pulp and other characteristics; 'Araca-boi' presents some good fruit characteristics, but is more adapted for processing, by its high acidity; Some species present low % of edible portion and need to be improved to gain commercial acceptance, mainly the 'cabeludinha' and 'cambuca'.

Brazilian Myrtaceae comprises several genera of trees and shrubs used for ornamental and fruit production. In addition to the well known Guava, Pitanga and Jaboticaba, other species could be used for fruitculture, due the value and quality of their fruits and adaptation to some climate conditions mainly the subtropical one. Nine species of Eugenia were evaluated at Jaboticabal, located at 48° W and 21° S in São Paulo state in a germplasm bank. The average rain by year is 1431 mm and the temperature 22,2° C at an altitude of 575 m. The species are Eugenia klozschiana Berg. (Pero-do-campo), E. stipitata Mc Vaugh (Araça-boi), E. tomentosa Camb. (Cabeludinha), E. dysentherica DC. (Cagaita), E. brasiliensis Berg. (Grumixama), E.pitanga (Pitanga-anã), E. luchsnathiana Berg. (Pitomba), E. uvalha Camb. (Uvaia) and E. involucrata DC. (Cereja-do-rio-grande). The evaluations comprised tree development, fruit quality and leaf and flower morphological studies. The main results are: the trees of Pera-do-campo and Pitanga-anã are small shrubs of 1 to 2 m height, Araça-boi and Cabeludinha are small trees, 3 to 5 m high, and the other species are tall trees, with 5 to 10 m height. The species adapted well to the subtropical conditions, except for Araça-boi, which is native to the Amazonian region and exhibited a severe fungus disease infection. In relation to fruit quality, all the species had edible fruit, some were sweet and juicy, Cabeludinha, Grumixama, Pitomba, Cereja-do-rio grande and Pitanga-anã, while others had high acidity (Araça-boi, Pera-do-campo, Cagaita and Uvaia and were more suitable for processing. Simple, single leaves were characteristic of all species, but with different sizes and shapes., With the addition of color, smell and other characteristics, leaf size and shape were useful for comparative classification. Flower components and structure are described also.

Agaricus blazei Murrill, popularly known as the sun mushroom, is a native mushroom in SP, Brazil, that has been widely used in the treatment of cancer and many other pathologies in different parts of the world. A water-soluble protein-polysaccharide complex (1 → 6)β-D-glucan has been isolated from its fruiting body that showed immune-modulation activity. From organic extracts, linoleic acid has been isolated and determined to be the main substance with antimutagenic activity. Using both the micronucleus (MN) and comet (single cell microgel electrophoresis) assays, this study determined the genotoxic and antigenotoxic potential of A. blazei (AB) obtained from commercial sources or the following strains: a) strains AB 97/29 (young and sporulated phases); b) a mixture taken from AB 96/07, AB 96/09 and AB 97/ 11 strains; and c) commercial mushrooms from Londrina, PR and Piedade, SP, designated as AB PR and AB SP, respectively. The extracts from these mushrooms were isolated in chloroform:methanol (3:1) and used in vitro at three different concentrations. V79 cells (Chinese hamster lung cells) were exposed to the extracts under pre-, simultaneous and post-treatment conditions, combined with methyl methanesulfonate (MMS). Under the circumstances of this study, these organic extracts did not show any genotoxic or mutagenic effects, but did protect cells against the induction of micronuclei by MMS. Brazil has a wide diversity of food sources of carotenoids. The updated Brazilian database consists of more than 270 items of fruits, vegetables and their prepared and processed products. The database demonstrates variations due to variety, maturity, production technique, climate and processing. Many of these foods are not found in the US and European databases. Good to rich sources (>20 μg/g) of β-carotene are: acerola, bocaiúva, mango 'Extreme' and tucumã. Sources of both α-carotene and β-carotene are buriti, carrot, Cucurbita moschata 'Menina Brasileira', 'Baianinha' and 'Goianinha', and red palm oil. Commercially produced and uncultivated or semi-cultivated leafy vegetables, C. maxima 'Jerimum Caboclo' and the hybrid Tetsukabuto, cooked broccoli are sources of lutein and β-carotene. The edible Tropaeolum majus flower is especially rich in lutein. Although many fruits have β-cryptoxanthin as principal carotenoid (e.g. caja, nectarine, peach, orange-fleshed papaya, tree tomato), the levels are below 20 μg/g. Good to rich sources of lycopene are guava and guava products, papaya, pitanga and pitanga juice, tomato and tomato products, and watermelon. Sources of zeaxanthin are rare; although the principal carotenoid of piqui, the amount is low, lower than that found in buriti.

Numerous natural compounds found in fruits, grains and vegetables have antioxidant activity. This work aimed to characterize jabuticaba seeds (Myrciaria cauliflora Berg) by proximate composition, antioxidant activity and fatty acids profile of their extracted oil. To obtain the extract, the dehydrated and triturated seeds were extracted with ethyl alcohol for 30 min, at a proportion of 1:3 of seeds:ethyl alcohol, under continuous agitation, at room temperature. Afterwards, the mixture was filtered and the supernatant dehydrated at 40 °C aiming to determine, by direct weighing, the extract's dry matter yield. According to the results, the jabuticaba seeds are an important source of total carbohydrates, and also presented relevant antioxidant activity. In the jabuticaba seeds oil, a significant percentage of polyunsaturated fatty acids stood out, with linoleic and α-linolenic being the main component, essentials fatty acids.

Extracellular β-1,3-glucanase was produced by Trichoderma harzianum Rifai cultivated in the Agaricus blazei (Agaricus brasiliensis) extract as a substrate in submerged fermentation. A 22-central composite factorial design was developed using the time of culture (x1/day) and Agaricus blazei extract concentration (x2/(g/L)) as variables, and the results were analyzed using response surface methodology (RSM). The results showed that the Agaricus blazei extract concentration was the most important variable in the production of β-1,3-glucanase, and the maximum β-1,3-glucanase activity (0.77 U/mL) was obtained in one day of cultivation. The β-glucan present in the cell wall of Agaricus blazei mushroom proved to be a good substrate for inducing the production of specific β-1,3-glucanase by Trichoderma harzianum Rifai.

Ganoderma lucidum is an edible medicinal mushroom with immunomodulatory and antitumor properties, which are mainly attributed to polysaccharides and triterpenes that can be isolated from mycelia, fruiting bodies and spores. G. lucidum has been us d in a powdered form, as a medicinal beverage and a nutraceutical food (usually dried). In the present review we report some historical facts and the experimental evidence that polysaccharides and triterpenes obtained from this mushroom present potential antitumor activity. Direct effects on tumor cells include induction of apoptosis and interference in the cell cycle, whereas indirect effects are based on the modulation of immune response, usually impaired by cancer cells. Data indicate that G. lucidum can be used as a complementary tool for treatment of cancer patients. © by São Paulo State University.

Several mushroom species have been pointed out as sources of antioxidant compounds, in addition to their important nutritional value. Agaricus blazei and Lentinus edodes are among the most studied species all over the world, but those studies focused on their fruiting bodies instead of other presentations, such as powdered preparations, used as supplements. In the present work the chemical composition (nutrients and bioactive compounds) and antioxidant activity (free radical scavenging activity, reducing power and lipid peroxidation inhibition) of dried powder formulations of the mentioned mushroom species (APF and LPF, respectively) were evaluated. Powder formulations of both species revealed the presence of essential nutrients, such as proteins, carbohydrates and unsaturated fatty acids. Furthermore, they present a low fat content (<2 g/100 g) and can be used in low-calorie diets, just like the mushrooms fruiting bodies. APF showed higher antioxidant activity and higher content of tocopherols and phenolic compounds (124 and 770 μg/100 g, respectively) than LPF (32 and 690 μg/100 g). Both formulations could be used as antioxidant sources to prevent diseases related to oxidative stress. © 2012 Elsevier Ltd. All rights reserved.

Physico-chemical characteristics, fatty acid and tocopherol compositions, total phenolic content and antioxidant activity of crude oil extracted from guava (Psidium guajava var. pomifera) seeds were investigated. Oil yield from the seeds was 14.0%. Data obtained for the analytical indexes compared well with those of others edible oils. The oil showed high levels of unsaturated fatty acids (88.1%), mainly linoleic acid (78.4%). The tocopherol and total phenolic contents in the oil amounted to 29.2 and 92.3 mg/100 g, respectively. The guava seed oil exhibited a great DPPH · scavenging activity showing EC50 of 12.9 g oil/g [DPPH · ] -1 and antiradical efficiency of 7.9×10 -2 . Therefore, the potential utilization of the guava seed oil as a raw material of food, chemical and pharmaceutical industries appears to be favourable and provides the use of a renewable resource, adding value to agricultural products.
