Underpotential deposition(UPD) of copper at polycrystal gold surface under different concentrations has been studied, and its reversibility and stability in high concentration (0.2M CuSO4+0.IM H2SO4) have been demonstrated by cyclic voltermmetry and EQCM. A Valid approach to determine the gold electrode area in presence of adsorbed species has been provided by using Cu UPD method. Further, the growth kinetics of decane thiol on gold has also been investigated based on such a Cu UPD technique.

Distyryl benzene derivatives (DSB-1 and DSB-2) were deposited on a KBr (001) surface. DSB-1 molecules took two kinds of orientations depending on the substrate temperature. On the other hand, DSB-2 grew epitaxially. The longitudinal axes of DSB-2 molecules were oriented parallel to the substrate surface.

Experimental electron diffraction patterns and high resolution images were used to determine the space group and unit cell dimensions of 2,3,6,7,10,11-hexakispentyloxytriphenylene. Subsequently the molecular conformation was calculated by energy minimized package in Cerius2. Using this method, we got the HPT crystal structure: space group: P6/mmm; lattice type: hexogonal; the lattice parameters are a = b = 20.3 angstrom, c = 3.52 angstrom, = = 90 degrees, = 120 degrees. The core of HPT is not perpendicular to the column. The angle between a axis and HPT core plane is 9 degrees which cannot be seen in b-c projection. The simulated ED patterns and HREM images are good agreement with the experimental ED patterns and HREM images.

Mixed liquid crystal formation has been studied in a new binary system comprising paranitroazobenzene derivatives, in which one component was a mesogen and the other was a non-mesogen. The mixtures were found to exhibit a monotropic nematic phase which was converted to an enantiotropic phase in specific ranges of temperature and concentration. The latent liquid crystal-isotropic transition temperature (LTP) of the non-mesogen was obtained by using the extrapolation method of the transition temperature-composition curve and the equal-G analysis method. The LTPs of the non-mesogen obtained by the above two methods showed good agreement with each other. The low-temperature transition of the mixtures detected by DSC was attributed to a change of the crystallite size.

The multilayer Langmuir-Blodgett (LB) films of pr,ly 3-(2-(5-chlorobenzotriazole)ethyl) thiophene (PCBET) blended with amphibious arachidic acid (AA) were prepared and characterized. The photoluminescence intensity of the blend film was enhanced as the AA increased by a certain amount. The PCBET excimers were not formed in the blend LB films.

The aggregate structure of the discotic compound 2,3,6,7,10,11-hexakispentyloxytriphenylene (HPT) was studied both for the crystalline state and the liquid crystalline state by using electron crystallography and a molecular simulation approach. In the crystalline state, HPT was found to adopt an orthorhombic P-2212 space group with cell parameters a = 36.73 Angstrom, b = 27.99 Angstrom and c = 4.91 Angstrom. Molecular packing calculations were conducted to elucidate the molecular conformation and mutual orientational characteristics in the different states. Phase transitions and relationships are discussed from a structural point of view.

The collapse process of porphyrin monolayers at the air-water interface was studied by Brewster angle microscopy and by compression-recompression isotherms. It was found that the start of collapse observed by BAM is accordant with that measured by compression-recompression isotherms. The behavior of mixed monolayers was studied also and the results showed that porphyrin islands were excluded from mixed monolayers at 35mN/m.

A preliminary study on the chemistry of 6-phenoxy-5,12-naphthacenesuinone derivatives was reported, It was found that the main product was 6-(N,N-dimethylamino)-5,12-naphthacenequinone when a reaction of 6-chloro-5,12-naphthacenequinone with 4-hydroxyazobenzenes in DMF was carried out under certain reaction conditions. When the reaction of 6-[4-(4-hydroxyphenyl)isopropyl)phenoxy]-5, 12-naphthacenequinone and epichlorohydrin was carried out in an acetone/DMF(V/V=2/1) mixed solvent and in the presence of K2CO3 and KI, a new phenoxynaphthacenequinone derivative,6,6'-[1-methylethylidenebis(4,1-phenyleneoxy)]bis(5,12-naphthacenequinone), was obtained.

Like 6-phenoxy-5,12-naphthacenequinone (1), 6-[4-(2-( 8-hydroxyphenyl) isopropyl)phenoxy]-5, 12-naphthacenequinone (2) and 6-naphthyloxynaphthacenequinone (6) showed normal photochromism, The relative initial rates of trans to ana photoconversion were in the order: 1, 100; 2, 37; 6, 21, 6-[4-(Phenylazo)phenoxyl-5,12-naphthacenequinone (3), 6-[4-(p-ethoxyphenylazo) phenoxy]-5,12-naphthacenequinone (4), 6-[4-(p-nitrophenylazo)phenoxy]-5,12-naph cenequinone (5) had only slight W-induced photochromism for the phenoxynaphthacenequinone photochrome. 6-(2-Nitrosonaphthyloxy)-5,12-naphthacenequinone (7) exhibited no photochromism and underwent irreversible photoreaction.

In this paper, the electric dichroism of cetylpyridinium bromide (CPB) has been found and studied by spectroelectrochemistry with a long optical path length thin-layer cell (LOPTLC) for the first time. The CPB molecule with a long carbon chain and a polar pyridinium ring is anisotropic in molecular configuration or in polarizability. In the electric field of a thin-layer cell, the CPB molecule reorientates along the direction of the electric field and exhibits electric dichroism, which results in the increase of absorbance of CPB in the UV-vis range. By use of in situ measurement of spectroelectrochemistry, the order parameters of long molecular axis (S = 0.845) and short molecular axis (D = 0.155) and the angle between the long axis direction of the CPB molecule and the direction normal to the electrode surface (theta = 18-degrees 44') have been determined. These data were used to describe the state of arrangement of the molecules in the solution. The reorientation of CPB molecules is the result of the interaction between the anisotropic molecules and electric field. The effects of the concentration of CPB and of the applied electric field on the electric dichroism have been investigated.

The work described in this thesis reports the structural changes induced on micelles under a variety of conditions. The micelles of a liquid crystal film and dilute solutions of micelles were subjected to high pressure CO2 and selected hydrocarbon environments. Using small angle neutron scattering (SANS) techniques the spacing between liquid crystal micelles was measured in-situ. The liquid crystals studied were templated from different surfactants with varying structural characteristics. Micelles of a dilute surfactant solution were also subjected to elevated pressures of varying gas atmospheres. Detailed modelling of the in-situ SANS experiments revealed information of the size and shape of the micelles at a number of different pressures. Also reported in this thesis is the characterisation of mesoporous materials in the confined channels of larger porous materials. Periodic mesoporous organosilicas (PMOs) were synthesised within the channels of anodic alumina membranes (AAM) under different conditions, including drying rates and precursor concentrations. In-situ small angle x-ray scattering (SAXS) and transmission electron microscopy (TEM) was used to determine the pore morphology of the PMO within the AAM channels. PMO materials were also used as templates in the deposition of gold nanoparticles and subsequently used in the synthesis of germanium nanostructures. Polymer thin films were also employed as templates for the directed deposition of gold nanoparticles which were again used as seeds for the production of germanium nanostructures. A supercritical CO2 (sc-CO2) technique was successfully used during the production of the germanium nanostructures.

Flavour release from food is determined by the binding of flavours to other food ingredients and the partition of flavour molecules among different phases. Food emulsions are used as delivery systems for food flavours, and tailored structuring in emulsions provides novel means to better control flavour release. The current study investigated four structured oil-in-water emulsions with structuring in the oil phase, oil-water interface, and water phase. Oil phase structuring was achieved by the formation of monoglyceride (MG) liquid crystals in the oil droplets (MG structured emulsions). Structured interface was created by the adsorption of a whey protein isolate (WPI)-pectin double layer at the interface (multilayer emulsion). Water phase structured emulsions referred to emulsion filled protein gels (EFP gels), where emulsion droplets were embedded in WPI gel network, and emulsions with maltodextrins (MDs) of different dextrose-equivalent (DE) values. Flavour compounds with different physicochemical properties were added into the emulsions, and flavour release (release rate, headspace concentration and air-emulsion partition coefficient) was described by GC headspace analysis. Emulsion structures, including crystalline structure, particle size, emulsion stability, rheology, texture, and microstructures, were characterized using differential scanning calorimetry and X-ray diffraction, light scattering, multisample analytical centrifuge, rheometry, texture analysis, and confocal laser scanning microscopy, respectively. In MG structured emulsions, MG self-assembled into liquid crystalline structures and stable β-form crystals were formed after 3 days of storage at 25 °C. The inclusion of MG crystals allowed tween 20 stabilized emulsions to present viscoelastic properties, and it made WPI stabilized emulsions more sensitive to the change of pH and NaCl concentrations. Flavour compounds in MG structured emulsions had lower initial headspace concentration and air-emulsion partition coefficients than those in unstructured emulsions. Flavour release can be modulated by changing MG content, oil content and oil type. WPI-pectin multilayer emulsions were stable at pH 5.0, 4.0, and 3.0, but they presented extensive creaming when subjected to salt solutions with NaCl ≥ 150 mM and mixed with artificial salivas. Increase of pH from 5.0 to 7.0 resulted in higher headspace concentration but unchanged release rate, and increase of NaCl concentration led to increased headspace concentration and release rate. The study also showed that salivas could trigger higher release of hydrophobic flavours and lower release of hydrophilic flavours. In EFP gels, increases in protein content and oil content contributed to gels with higher storage modulus and force at breaking. Flavour compounds had significantly reduced release rates and air-emulsion partition coefficients in the gels than the corresponding ungelled emulsions, and the reduction was in line with the increase of protein content. Gels with stronger gel network but lower oil content were prepared, and lower or unaffected release rates of the flavours were observed. In emulsions containing maltodextrins, water was frozen at a much lower temperature, and emulsion stability was greatly improved when subjected to freeze-thawing. Among different MDs, MD DE 6 offered the emulsion the highest stability. Flavours had lower air-emulsion partition coefficients in the emulsions with MDs than those in the emulsion without MD. Moreover, the involvement of MDs in the emulsions allowed most flavours had similar release profiles before and after freeze-thaw treatment. The present study provided information about different structured emulsions as delivery systems for flavour compounds, and on how food structure can be designed to modulate flavour release, which could be helpful in the development of functional foods with improved flavour profile.

2-Aryl-substituted imidazo[4,5-f]-1,10-phenanthrolines were used as building blocks for metal-containing liquid crystals (metallomesogens). Imidazo[4,5-f]-1,10-phenanthrolines are versatile ligands because they can form stable complexes with various d-block transition metals, including platinum(II) and rhenium(I), as well as with lanthanide(III) and uranyl ions and they can easily be structurally modified by a judicious choice of benzaldehyde precursor. None of the ligands designed for this study were liquid-crystalline. However, mesomorphism could be induced by their coordination to various metallic fragments. The thermal behavior of the metal complexes depended on the metal-to-ligand ratio and the substitution pattern of the coordinating ligands. Complexes with a metal-to-ligand ratio of 1:1 [ML, with M = Pt(II), Re(I)] were not liquid-crystal line. The lanthanide(III) complexes with a metal-to-ligand ratio of 1:2 [ML2 with M = Ln(III)] formed an enantiotropic cubic mesophase or were not liquid-crystalline, depending on the nature of the lanthanide(III) ion and the substitution pattern of the ligands. A 1:3 uranyl complex of the type [ML3](2+) exhibited a hexagonal columnar mesophase over a broad temperature range. Self-assembled monolayers of a europium(III) complex were investigated by scanning tunneling microscopy, which revealed that the complex formed well-ordered structures over long distances at the 1-octanoic acid-graphite interface. The rhenium(I) complexes and the europium(III) complexes with 2-thenoyl-trifluoroacetonate or dibenzoylmethanate and imidazo[4,5-f]-1,10-phenanthroline showed good luminescence properties.

Anionic and cationic alkyl-chain effects on the self-aggregation of both neat and aqueous solutions of 1-alkyl-3-methylimidazolium alkylsulfonate salts ([C(n)H(2n+ 1)mim][CmH2m+1SO3]; n = 8, 10 or 12; m = 1 and n = 4 or 8; m = 4 or 8) have been investigated. Some of these salts constitute a novel family of pure catanionic surfactants in aqueous solution. Examples of this class of materials are rare; they are distinct from both mixed cationic-anionic surfactants (obtained by mixing two salts) and gemini surfactants (with two or more amphiphilic groups bound by a covalent linker). Fluorescence spectroscopy and interfacial tension measurements have been used to determine critical micelle concentrations (CMCs), surface activity, and to compare the effects of the alkyl-substitution patterns in both the cation and anion on the surfactant properties of these salts. With relatively small methylsulfonate anions (n = 8, 10 and 12, m = 1), the salts behave as conventional single chain cationic surfactants, showing a decrease of the CMC upon increase of the alkyl chain length (n) in the cation. When the amphiphilic character is present in both the cation and anion (n = 4 and 8, m = 4 and 8), novel catanionic surfactants with CMC values lower than those of the corresponding cationic analogues, and which exhibited an unanticipated enhanced reduction of surface tension, were obtained. In addition, the thermotropic phase behaviour of [C(8)H(18)mim][C8H18SO3] (n = m = 8) was investigated using variable temperature X-ray scattering, polarising optical microscopy and differential scanning calorimetry; formation of a smectic liquid crystalline phase with a broad temperature range was observed.
