This communication describes the design aspect and functions of individual pieces of equipment of a pilot plant for the production of fish ensilage based on lactic acid fermentation process. Details about the equipment, process flow sheet and equipment layout of the pilot plant have been given. An attempt has been made to prepare an estimate of the cost of production of liquid ensilage and solid feed mix.

Changes occurring in carotenoid pigments of prawns during different types of processing and storage has been a matter calling for a scientific solution for which knowledge of their fundamental nature is essential. A detailed account of the methods employed in isolating the individual pigments and the results achieved in their identification are presented in this paper.

This paper deals with the results of fishing operations conducted with conventional trawls of size 22.3 - 25.6 m and gear of 32 m long wing and bulged belly designed and developed at the Central Institute of Fishery Technology, from four medium size trawlers of Orissa Fisheries Department during 1970-71 and 1971-72 fishing seasons. By employing suitable and standard size gear there was proper utilisation of the engine power with resultant increase in the total landings of shrimps and bottom and off bottom fishes.

This paper deals with an extensive study conducted to estimate the extent of weight loss in frozen prawns. The weight Joss varied from 7 to 12% in peeled and deveined (PD), 5 to 7% in headless (HL) and about 7% in cooked and peeled (CP) prawns from the date of processing to the date of inspection, normally within two weeks. To compensate the weight loss nearly 11% of excess material is being added with every frozen block resulting in an average annual loss of Rs. 2.68 crores in foreign exchange. The relevant data pertain to the period 1971 to 1973 and the annual average loss was estimated for the ten years ending 1973.

Quantitative and qualitative studies on the bacterial flora of fresh Indian mackerel (Rastrelliger kanagurta) have been made. The total native flora as well as 5 ppm CTC insensitive flora of the fish showed variations with season. About 90% of the fresh fish flora was sensitive to 5 ppm CTC. The natural flora of the fresh fish consisted of Vibrios, Pseudomonas, Achromobacter, Flavobacterium, Corynebacteria, Micrococci, Bacillus and yeasts. In the CTC insensitive flora, Vibrios predominated followed by yeasts. The selection of bacterial genera during storage of the fish in ice and in 5 ppm CTC incorporated ice has also been investigated. At the time of spoilage, Pseudomonas was found to be the dominant flora of the fish stored in both types of ice.

A method of preparation of smoke cured fillets of oil sardine is described. Various procedural steps like brining, smoking, packaging etc. have been described and the shelf life assessed. Sodium propionate treatment is recommended to enhance storage life; BHA to control rancidity; and thermal treatment to overcome the insect infestation. The product has good consumer appeal.

Miscellaneous fish from the catches of shrimp trawlers constitute a major portion of the marine fish catch in India, its quantity in annual landing being of the order of 50,000 tons. At present it is often not brought to the shore since it fetches only very low price. It consists of several species and is a cheap source of animal protein. Attempts are made in India in various centres (Anon. 1972-73) to utilise them effectively by formulating various speciality products acceptable to consumers.

Large quantities of self-brine accumulating in curing tanks during the process of commercial fish salting is mostly wasted at present. This liquor exuded from the fish during the process of salting contains considerable amounts of soluble proteins and minerals. Due to the presence of organic matter the self-brine quickly putrefies causing nauseating smell. This renders the whole surroundings insanitary and often leads to health hazards to neighboring localities. Any economic method of utilising this waste brine and converting it into some useful product will be a tangible help to the fish curing industry. Hence, a method is given for converting this waste self-brine into a cheap and efficient fertilizer.

Though not a sizable fishery on national level, landings of lactarius (Lactarius lactarius) is considerable in the states of Kerala and Tamil Nadu. Apart from a note (Anon, 1965) no published work is available on its preservation by canning. Fish processed by this method on storage loses its flavour and the lustrous skin is peeled off. The present note describes a method in which these factors also are taken care of.

Phosphorylase from muscle of tilapia (Tilapia mosambica) was extracted by water and purified by ammonium sulphate precipitation, centrifugation and repeated recrystallisation. Electro-phorogram of the enzyme preparation showed a single band near origin. The enzyme showed optimum pH and temperature at 6.1 and 37°C respectively. Glucose and glucose-6-phosphate were found to be competitive inhibitors of the enzyme. Maltose and starch acted as primers for the phosphorylase reaction like glycogen.

Fishing experiments with gill nets were carried out at different centres of Gobindsagar reservoir through the years 1964-70. The seasonal abundance of main species of fishes and their zone of distribution were studied. Labeo diplostoma, Labeo bata, Barbus tor and Mystus seenghala are the main fish species of the reservoir. The abundance of the above species were observed to be the highest towards the Lunkhar arm of the reservoir.

The iced and frozen storage characteristics of squid (Loligo sp.) are discussed. Squid can be kept in ice in an acceptable condition for a maximum period of 2 days. Frozen squid can be stored for a maximum period of 15 weeks at -l8°C, which can be extended up to 19 weeks by suitable treatment.

Results of comparative fishing operations conducted with three nets of identical design made of nylon, twisted polyethylene monofilament and high density polyethylene (HDPE) tape twines are presented in this communication. Since the tape net recorded the highest prawn and fish catch, monofilament and nylon following in order, it can be recommended to the fishing industry as one of the cheapest and effective fishing materials evolved for trawl fabrication.

The paper deals with the proximate composition of Crassostrea graphoides, C. cucullata, Placenta placenta, Pinna vexillum, P. bicolor, P. atropurpurea, Solen truncatus and Pitar erycina. Seasonal variations in water, protein, salt and ash in the meat of C. graphoides, C. cucullata and P. placenta are reported. Percentage of meat is high in S. truncatus and low in C. graphoides, C. cucullata and P. erycina. Most of these species contain higher moisture than gastropods
