ABSTRACT This thesis aims to demonstrate that the underground cellars represent a model of efficient construction and environmentally sustainable for aging and storing wines. During the production, aging and storing wine, temperature and relative humidity are crucial to the final product quality. The appearance of defects in wine as a result of high temperatures during the aging process is something known since the last century, so that winemakers seek to achieve the parameters considered suitable for proper production and aging of wine using the most wineries to artificial air conditioning. The underground cellars are historical buildings in La Rioja and all the peoples of the Designation of Origin Rioja and the aim of this thesis is to demonstrate that naturally meet the conditions for aging wine due to its construction design and without the use of other energy to get it. Furthermore, the presence of these buildings in the Rioja Denomination of Origin represents the origin of the fame of its wines and is a cultural heritage today untapped. To demonstrate the importance of these areas of underground cellars, germ of the Designation of Origin Rioja, they have been inventoried all the districts of municipalities benefiting from this. This will have visited all municipalities and have photographed their cellars. In visits made during cataloging it has been observed that constitute today a forgotten heritage that has evolved to picnic or homes, sometimes even abandoned or demolished. The conservation of the buildings has been more careful in the subzone of Rioja Alta, where you can still find wine cellars where a particular way, something exceptional to find in La Rioja Baja is made. It has also been observed that the building materials used in the drafts La Rioja Alta usually carved stone or masonry, while in La Rioja Baja is most uses of river stone or masonry. This work is reflected in 2159 cataloging records located underground cellars. In order to demonstrate that they meet the conditions suitable for breeding they were installed sensors that recorded the temperature and relative humidity in the underground cellars and commercial wineries which differ both in the building design and the solutions adopted by sought to gather these parameters. The results obtained in the underground cellars show that these traditional buildings have fewer annual fluctuations of temperature and relative humidity of the aging rooms commercial wineries, which implies a more constructive solution suitable for the breeding and conservation of wine. To corroborate the results obtained on domestic conditions, has made a sensory analysis of wines stored and raised underground cellars compared with stored without being subjected to control these parameters, as can occur in domestic conditions, once marketed as winemaker loses control over them. The results show that the wines stored in private homes have differences with those stored in underground cellars. These results are consistent with data obtained from sensors placed in these underground cellars, where the maximum annual temperature is below 20 ° C, considered as maximum allowable threshold for raising by various authors.

Abstract This thesis studies the representation, modeling and comparison of collections in the Semantic Web using ontologies. Collections, understood as groups of objects or elements with their own identities, are constructions that appear frequently in almost all areas of the real world. Therefore, it is essential to have conceptualizations of these abstract structures and representations of these conceptualizations in computer systems, that define their semantic properly. While in many areas of Computer Science and Artificial Intelligence, such as Programming, Databases or Information Retrieval, the collections have been extensively studied and there are representations that match many conceptualizations, in the field Semantic Web, however, their study has been quite limited. In fact, there are few representations of collections using ontologies so far, and they only cover some types of collections and have important limitations. This hinders a proper representation of collections and other common tasks like comparing collections, something critical in usual operations such as semantic search or linking data on the Semantic Web. To solve this problem this thesis makes a proposal for modelling collections based on a new classification of collections according to their structural characteristics (homogeneity, uniqueness, order and cardinality). This classification allows to define a taxonomy with up to 16 different types of collections. Among other advantages, this new classification can leverage the semantics of the structural properties of each type of collection to make comparisons using the most appropriate (dis)similarity functions. Thus, the thesis also develops a new catalog of similarity functions for the different types of collections. This catalog contains the most common (dis)similarity functions as well as new ones. This proposal is implemented through two parallel ontologies, the E-Collections ontology that represents the different types of collections in the taxonomy and their axiomatic, and the SIMEON ontology (Similarity Measures Ontology) that represents the types of (dis)similarity functions for each type of collection. Thanks to these ontologies, to compare two collections, once represented as instances of the appropriate class of E-Collections ontology, we can know automatically which (dis)similarity functions of the SIMEON ontology are suitable for the comparison. Finally, the feasibility and usefulness of this modeling and comparison of collections proposal is proved in the field of oenology, applying both E-Collections and SIMEON ontologies to the representation and comparison of wines with the E-Baco ontology.

This work examines the physiology of a new commercial strain of Torulaspora delbrueckii in the production of red wine following different combined fermentation strategies. For a detailed comparison, several yeast metabolites and the strains implantation were measured over the entire fermentation period. In all fermentations in which T. delbrueckii was involved, the ethanol concentration was reduced; some malic acid was consumed; more pyruvic acid was released, and fewer amounts of higher alcohols were produced. The sensorial properties of final wines varied widely, emphasising the structure of wine in sequential fermentations with T. delbrueckii. These wines presented the maximum overall impression and were preferred by tasters. Semi-industrial assays were carried out confirming these differences at a higher scale. No important differences were observed in volatile aroma composition between fermentations. However, differences in mouthfeel properties were observed in semi-industrial fermentations, which were correlated with an increase in the mannoprotein content of red wines fermented sequentially with T. delbrueckii.

Natural anthocyanin pigments/dyes and phenolic copigments/co-dyes form noncovalent complexes, which stabilize and modulate (in particular blue, violet, and red) colors in flowers, berries, and food products derived from them (including wines, jams, purees, and syrups). This noncovalent association and their electronic and optical implications constitute the copigmentation phenomenon. Over the past decade, experimental and theoretical studies have enabled a molecular understanding of copigmentation. This review revisits this phenomenon to provide a comprehensive description of the nature of binding (the dispersion and electrostatic components of π–π stacking, the hydrophobic effect, and possible hydrogen-bonding between pigment and copigment) and of spectral modifications occurring in copigmentation complexes, in which charge transfer plays an important role. Particular attention is paid to applications of copigmentation in food chemistry.
