Avaliaram-se os efeitos da suplementação de dois tipos de probióticos para cães filhotes, que receberam dois tipos de dieta - de alta e de baixa qualidade -, sobre a digestibilidade dos nutrientes, escore fecal e parâmetros sanguíneos. Foram utilizados 18 animais, distribuídos em três tratamentos. No tratamento 1, controle, os cães receberam somente a ração; no tratamento 2, ração com probiótico 1 (Bifidobacterium) e, no tratamento 3, ração com probiótico 2 (Lactobacillus). O experimento foi dividido em duas fases. Verificaram-se que os valores médios do coeficiente de metabolizabilidade da energia bruta (CMEB) na fase 1, caracterizada pela troca da dieta Super Premium para a dieta Standard, apresentaram resultados significativos (P<0,05), sendo os melhores resultados obtidos nos animais que receberam o probiótico 2. Não houve diferenças significativas (P>0,05) para o escore fecal e para as análises hematológicas.

Avaliaram-se os efeitos da suplementação de dois tipos de probióticos para cães filhotes da raça Beagle, que receberam dois tipos de dieta de alta e baixa qualidade, sobre os achados em exames de diagnóstico por imagem. Foram utilizados 18 cães filhotes da raça Beagle, distribuídos em três tratamentos inteiramente ao acaso: tratamento 1, controle (ração); tratamento 2, ração com probiótico 1 (Bifidobacterium); e tratamento 3, ração com probiótico 2 (Lactobacillus). O experimento foi dividido em duas fases, cada uma caracterizada pela mudança da dieta de qualidades diferentes. Ao exame ultrassonográfico, foi avaliada a espessura da parede gastrintestinal, e ao radiográfico, a presença de gás em alças intestinais e o espessamento da parede. Observou-se aumento da espessura da parede das alças intestinais (P<0,05), nos animais dos grupos tratados com probiótico 1 e 2 (5,74mm e 6,01mm, respectivamente) em relação aos do grupo-controle (5,03mm). O uso de probióticos não influenciou a produção de gás intestinal. Não houve diferença (P>0,05) entre os tratamentos quanto ao escore de gás intestinal. A avaliação quantitativa permitiu a determinação de um escore de gás intestinal, de forma não invasiva, por meio do software Image J®. Concluiu-se que o diagnóstico por imagem sustenta a recomendação dessa metodologia como ferramenta auxiliar na avaliação nutricional de dietas para cães.

Objetivou-se avaliar o padrão de fermentação e a composição química de silagens de grãos úmidos de milho e de sorgo confeccionadas com ou sem o uso de inoculante microbiano. Avaliou-se, no experimento 1, a silagem de grãos úmidos de milho e, no experimento 2, a silagem de grãos úmidos de sorgo. O material foi ensilado em silos experimentais de PVC (50 cm de comprimento e 100 mm de diâmetro), três por tratamento (tempo de armazenagem, com ou sem inoculante) para cada grão. Amostras foram tomadas antes (0) e aos 1, 2, 3, 4, 8, 16, 32 e 64 dias após a ensilagem, totalizando 48 silos experimentais para cada grão. Os tratamentos foram arranjados em delineamento inteiramente casualizado, em esquema fatorial 2 x 9 (com e sem inoculante microbiano, nove tempos de armazenagem), com três repetições para cada grão. Não houve efeito da inoculação e do tempo pós-ensilagem sobre o teor de MS dos grãos úmidos de milho e de sorgo, com médias de 64,13 e 64,03% e de 67,66 e 67,48% para silagens controle e inoculadas, respectivamente. Não houve efeito da inoculação sobre o pH dos grãos úmidos de milho e de sorgo aos 64 dias após ensilagem, com médias de 3,97 e 3,92 e de 3,94 e 3,95 unidades para silagens controle e inoculadas, respectivamente. O inoculante microbiano não promoveu alterações na composição química nem redução de perdas da MS nas silagens de grãos úmidos de milho e de sorgo. Nas condições estudadas, não é necessária inoculação para melhoria nos padrões fermentativos de silagens de grãos úmidos de milho e de sorgo.

Objetivou-se estudar a ação do tempo após a queima do canavial e o uso de aditivos sobre as características fermentativas, as perdas e a composição química de silagens de cana-de-açúcar. A cultivar utilizada foi a IAC 86-2480 colhida em cinco tempos (1, 4, 7, 10 e 14 dias) pós-queima. Os aditivos utilizados foram controle, sem aditivos, Lactobacillus buchneri, cal virgem micropulverizada e Lactobacillus buchneri + cal virgem micropulverizada. Antes da ensilagem em cada tempo, foram determinadas as populações de leveduras presentes na cana-de-açúcar. Decorridos 56 dias após a ensilagem, os silos experimentais foram abertos. O delineamento experimental utilizado foi o inteiramente casualizado em esquema fatorial, considerando os fatores aditivos e tempo pós-queima. Houve recontaminação da cana-de-açúcar pelas leveduras, elevando a população de 5,04 para 6,48 log ufc/g de forragem. Os teores de matéria seca (MS) após a abertura do silo reduziram em média 7,6 unidades percentuais em comparação aos observados na ensilagem. As silagens controle e com Lactobacillus buchneri tiveram menores recuperações da matéria seca (613 e 631 g/kg, respectivamente), em comparação às observadas nas silagens com cal e com a combinação Lactobacillus buchneri + cal (807 g/kg e 832 g/kg, respectivamente), fato que pode ser justificado pelo controle de levedura pela cal. Após a queima, as maiores variações foram na produção de gás e na recuperação de matéria seca: a produção de gás foi maior nos primeiros dias e diminuiu com o tempo após a queima, consequentemente, a recuperação de MS foi menor nos primeiros dias e aumentou com o tempo após a queima. O tempo após a queima altera o valor nutritivo da cana-de-açúcar fresca e das suas silagens, assim como a magnitude das perdas no processo de ensilagem.

Gelatin microparticles containing propolis ethanolic extractive solution were prepared by spray-drying technique. Particle,, with regular morphology, mean diameter ranging of 2.27 mu m to 2.48 mu m, and good entrapment efficiency for propolis were obtained. The in vitro antimicrobial activity of microparticles was evaluated against microorganisms of oral importance (Enterococcus faecalis, Streptococcus salivarius, Streptococcus sanguinis, Streptococcus mitis, Streptococcus mutans, Streptococcus sobrinus, Candida albicans, and Lactobacillus casei). The utilized techniques were diffusion in agar and determination of minimum inhibitory concentration. The choice of the method to evaluate the antimicrobial activity of microparticles showed be very important. The microparticles displayed activity against all tested strains of similar way to the propolis, showing greater activity against the strains of E. salivarius, S. sanguinis, S. mitis, and C albicans.

Ingestion of transgalactosylated oligosaccharides (TOS) and other non-digestible oligosaccharides (NDOs) induces a significant increase in Bifidobacterium, Lactobacillus and some desirable species of Streptococcus populations in the gut of human and other animals (prebiotic effect). This change in the intestinal flora is responsible for several beneficial physiological effects such as a decrease of putrefactive products in the feces, lower blood cholesterol content, higher Ca2+ absorption, a smaller loss of bone tissue in ovariotomized female rats and a lower incidence of colon cancer. beta-Galactosidase from Penicillium simplicissimum, a strain isolated from soil, showed high galactosyltransferase activity when incubated with a highly concentrated lactose solution. Optimum pH and temperature ranges for hydrolytic activity were 4.0-4.6 and 55-60 degrees C, respectively, for a lactose concentration of 5.0% (w/v). Maximal galactosyltransferase activity was obtained at pH 6.5 and 50 degrees C and TOS synthesis was positively associated with lactose concentration in the reaction medium. Thus, when 50 ml of a 60% (w/v) lactose solution was incubated with 26.6 U of beta-galactosidase under the best pH and temperature conditions for transferase activity, a final product with 30.5% TOS (183 mg ml(-1)), 27.5% residual lactose and 42.0% monosaccharides was obtained. 3,4,4'-trichlorocarbanilide (TCC) was rested as a new method of bacterial growth control for S. cerevisiae alcoholic fermentations of diluted high test molasses (HTM). Minimal inhibitory concentration (MIC) was tested to determine the necessary concentration of TCC to control bacterial growth. The fed-batch alcoholic fermentation process was used with cell recycle similar to industrial conditions and Lactobacillus fermentum CCT 1407 was mixed in the first inoculum to grow with the yeast. Yeast extract was added into the must to stimulate bacterial growth. The best results of TCC's MIC to bacterial growth of Lactobacillus fermentum and Leuconostoc mesenteroides (< 0.125-1.0 mu g/ml) and Saccharomyces cerevisiae (16 mu g/ml) occurred when it was combined with sodium dodecylsulphate (SDS) in a 1: 4 TCC/SDS ratio (wt/wt) in distilled water solution. 1.8 g/l TCC entrapped in calcium alginate added to the must with yeast extract inhibited the growth of Lactobacillus fermentum CCT 1407 maintaining a controlled acidity, higher yeast viability and up to 20.8% of improvement in the average of alcoholic efficiency. Addition of 0.075 g/l TCC entrapped in calcium alginate and 1.67 mg/l SDS in the wort with yeast extract (0-5.0 g/l), inhibited and controlled the extensive bacterial contamination for 19 cycles of fermentation. The ethanol production in Brazil is carried out by fed-batch or continuous process with cell recycle, in such way that bacterial contaminants are also recycled and may be troublesome due to the substrate competition. Addition of sulphuric acid when inoculum cells are washed can control the bacterial growth or alternatively biocides are used. This work aimed to verify the effect of chlorine dioxide, a well-known biocide for bacterial decontamination of water and equipments, against contaminant bacteria ( Bacillus subtilis, Lactobacillus plantarum, Lactobacillus fermentum and Leuconostoc mesenteroides) from alcoholic fermentation, through the method of minimum inhibitory concentration ( MIC), as well as its effect on the industrial yeast inoculum. Lower MIC was found for B. subtilis ( 10 ppm) and Leuconostoc mesenteroides ( 50 ppm) than for Lactobacillus fermentum ( 75 ppm) and Lactobacillus plantarum ( 125 ppm). Additionally, these concentrations of chlorine dioxide had similar effects on bacteria as 3 ppm of Kamoran (R) ( recommended dosage for fermentation tanks), exception for B. subtilis, which could not be controlled at this Kamoran (R) dosage. The growth of industrial yeasts was affected when the concentration of chlorine dioxide was higher than 50 ppm, but the effect was slightly dependent on the type of yeast strain. Smooth yeast colonies ( dispersed cells) seemed to be more sensitive than wrinkled yeast colonies ( clustered cells/pseudohyphal growth), both isolated from an alcohol-producing unit during the 2006/2007 sugar cane harvest. The main advantage in the usage of chlorine dioxide that it can replace antibiotics, avoiding the selection of resistant populations of microorganisms.

This experiment was carried out in the Microbiology Laboratory of UNESP-Jaboticabal, to evaluate the different species of microorganisms in high-moisture corn grain silage. The treatments were five percentages of corn cob in the silage (0, 5, 10, 15 and 20% DM) and four sampling periods after the opening of the silos (0, 2, 4 and 6 days), using a factorial arrangement in randomized block design with three replications. The growth of Lactobacillus was higher (P<0.01) in the silage prepared only with grains in relation to the other treatments. The presence of Clostridium differed (P<0.01) among the treatments, with values ranging from 1.30 and 3.32 log CFU/g of silage. It was concluded that the population of Lactobacillus was satisfactory to obtain a good fermentation of the silages, and the presence of corn cob facilitated the development of Clostridium and also of yeast and Enterobacteriaceae after the silos were opened.

Three types of raw materials including commercial waste from saltwater (SW), freshwater fish (FW) and tilapia fillet residue (FR) were used to produce fish silage by either acid digestion (2% formic acid and 2% sulfuric acid) or anaerobic fermentation (5% of Lactobacillus plantarum and 15% sugar cane molasses). Six test diets were used in digestibility trials prepared with 70% reference diet and 30% of each experimental silage. These diets were fed to juvenile pacu Piaractus mesopotamicus (146 g average weight) in triplicate. Fish were kept in 500-L tanks and feces collected by manual extrusion. It was observed for both processes that SW waste always had the highest moisture content and lowest fat and ash. Highest crude protein levels were found in silages from commercial fish waste (SW and FW) made from whole fish unfit for human consumption. However, apparent digestibility coefficients did not vary among diets (P > 0.05). Although values did not differ statistically, fermented silage consistently displayed higher digestibility coefficients compared to acid silage. The silages exhibited relatively high protein digestibility (72.5-80.0%), thus suggesting the feasibility of using fish industry by-products in aquaculture feeds.

This study was undertaken to verify the effect of a daily intake of a new fermented soy milk produced with Enterococcus faecium and Lactobacillus jugurti on the serum lipid levels in normocholesterolemic middle-aged men. The study was randomized, double-blind and placebo-controlled and was performed for a period of 6 weeks. Forty-four normocholesterolemic healthy, male volunteers, aged 40-55 years old were randomly separated in two groups: The F-group received 200 ml of the fermented product daily and the P-group received 200 ml of placebo (chemically fermented). The blood samples were drawn initially and after 3 and 6 weeks and serum values for total cholesterol, HDL-cholesterol and triglyceride were determined. The LDL-cholesterol value was estimated. No significant changes in the fermented group (F) were observed for total cholesterol, LDL-cholesterol or triglyceride levels, while the HDL-cholesterol level was significantly higher (p≤ 0,05) after 6 weeks. The total cholesterol and LDL-cholesterol levels were significantly higer (p≤ 0,05) in the placebo group (P), but no changes were found for the HDL-cholestrol and triglyceride levels during the experimental period. In conclusion, the intake of 200 ml/day of the fermented soy milk, produced with E.faecium and L. jugurti, for 6 weeks, did not affect the serum total cholesterol and LDL-cholesterol, and led an increase of 10% in the HDL-cholesterol level.

A general screening for the expression of antibacterial activity and non-flocculating type of yeast strains from must and fermented broth of alcohol distilleries was performed. From 60 strains only Saccharomyces sp. M26 presented a inhibitory halo in Lactobacillus fermentum culture and significant reduction in the culture turbidity (71%) and specific growth rate (56%) when compared to the control. Freezing did not affect the antibacterial activity of the Saccharomyces sp. M26 extract and heating at 90°C for 20 min completely destroyed this activity. It is expected the decrease of lactic acid bacteria growth in the S. cerevisiae alcoholic fermentation should allow for better control of these bacteria in the process. © 2003 Elsevier Ltd.
