Farinhas de trigo e soja pré-cozidas por extrusão para massas de pizza

A mistura de trigo e soja representa uma importante fonte calórico-protéica com proteínas de boa qualidade. O objetivo do presente trabalho foi avaliar as propriedades de pasta e absorção de água das farinhas de trigo e soja (90:10), pré-cozidas por extrusão em diferentes umidades (23%, 26% e 29%) e temperaturas de barril (60°C, 70°C, 80°C, 90°C), para uso em massa de pizza semi-pronta com características sensoriais desejáveis. Usou-se extrusor Brabender, de rosca única, com velocidade de alimentação constante de 3,6 kg h-1, velocidade de rotação de parafuso de 90 rpm e matriz de lâmina com 1 mm de espessura. As propriedades de pasta das farinhas mistas pré-cozidas aumentaram com o incremento da temperatura de barril; os maiores valores foram obtidos em 26% de umidade. A absorção de água aumentou à medida que se aumentava a umidade. A pizza preparada com a farinha mista extrusada em 23% de umidade e 80°C de temperatura de barril, apresentou as melhores características sensoriais.

Videojuegos como un entorno de aprendizaje: el caso de "Monturiol el joc"

Video games in a learning environ-ment and their application to the educational world has become a common study between researchers because the use of videogames in the classroom is coherent with a compe-tence-based education theory. A social science approach to video-games allows an exhaustive under-standing of the video games and of the game experience in the classroom. When a video game gives to the user a high level of immersion, all his interest and energy is focused in the game, this fact together with the motivation in the video game is the basis of interest for educators and researchers in the potentiality of the video games as learning environ-ments. In this presentation, we will show and analyze the importance of the video games in an educational context, using a case study: the video game "Monturiol el joc". In the paper, we describe the video game structure, the instructional function, the practice application and the future work. Also, we discuss the impor-tance of the video games as a learning immersive environment, and we conclude our report with a brief analysis of the importance of the study of video games.

Creation and Validation of Chronojump-Boscosystem: A Free Tool to Measure Vertical Jumps

Measuring the height of the vertical jump is an indicator of the strength and power of the lower body. The technological tools available to measure the vertical jump are black boxes and are not open to third-party verification or adaptation. We propose the creation of a measurement system called Chronojump-Boscosystem, consisting of open hardware and free software. Methods: A microcontroller was created and validated using a square wave generator and an oscilloscope. Two types of contact platforms were developed using different materials. These platforms were validated by the minimum pressure required for activation at different points by a strain gauge, together with the on/off time of our platforms in respect of the Ergojump-Boscosystem platform by a sample of 8 subjects performing submaximal jumps with one foot on each platform. Agile methodologies were used to develop and validate the software. Results: All the tools fall under the free software / open hardware guidelines and are, in that sense, free. The microcontroller margin of error is 0.1%. The validity of the fiberglass platform is 0.95 (ICC). The management software contains nearly 113.000 lines of code and is available in 7 languages.

Contenidos de aprendizaje para estudiantes de diseño en podcast

La Universitat Politècnica de Catalunya, a través del Graduado Superior de Diseño, ha realizado una experiencia en donde los contenidos de aprendizaje se han distribuido mediante podcast. Es el primer curso de diseño en esta universidad que distribuye materiales de formación con estas características, persiguiendo el objetivo de proporcionar a los estudiantes un acceso a contenidos educativos mediante un dispositivo móvil. Para evaluar esta experiencia, hemos analizado las respuestas obtenidas de los estudiantes, mediante un cuestionario. Nos encontramos con que dan un valor al Podcast como vehículo de revisión de contenidos, pero se valora más como una alternativa al aprendizaje. Los podcast crecen en cuanto a popularidad, y se han puesto a disposición de los alumnos esta tecnología considerando este reclamo y no la tecnología en sí. Con este artículo, planteamos que el podcasting ofrece a las Universidades nuevas posibilidades educacionales para llegar a más estudiantes y ofrecer otro medio de aprendizaje. Además, no solo se planteo recopilar estadísticas sobre las descargas a través de este experimento, si no también conocer las reflexiones de los estudiantes sobre la tecnología utilizada.

The Effect of a Physical Activity Program on the Total Number of Primary Care Visits in Inactive Patients: A 15-Month Randomized Controlled Trial

Abstract Background: Effective promotion of exercise could result in substantial savings in healthcare cost expenses in terms of direct medical costs, such as the number of medical appointments. However, this is hampered by our limited knowledge of how to achieve sustained increases in physical activity. Objectives: To assess the effectiveness of a Primary Health Care (PHC) based physical activity program in reducing the total number of visits to the healthcare center among inactive patients, over a 15-month period. Research Design: Randomized controlled trial. Subjects: Three hundred and sixty-two (n = 362) inactive patients suffering from at least one chronic condition were included. One hundred and eighty-three patients (n = 183; mean (SD); 68.3 (8.8) years; 118 women) were randomly allocated to the physical activity program (IG). One hundred and seventy-nine patients (n = 179; 67.2 (9.1) years; 106 women) were allocated to the control group (CG). The IG went through a three-month standardized physical activity program led by physical activity specialists and linked to community resources. Measures: The total number of medical appointments to the PHC, during twelve months before and after the program, was registered. Self-reported health status (SF-12 version 2) was assessed at baseline (month 0), at the end of the intervention (month 3), and at 12 months follow-up after the end of the intervention (month 15). Results: The IG had a significantly reduced number of visits during the 12 months after the intervention: 14.8 (8.5). The CG remained about the same: 18.2 (11.1) (P = .002). Conclusions: Our findings indicate that a 3-month physical activity program linked to community resources is a shortduration, effective and sustainable intervention in inactive patients to decrease rates of PHC visits. Carbon and nitrogen partitioning during post-anthesis is conditioned by N fertilization and sink strength in three cereals

Further knowledge of the processes conditioning nitrogen use efficiency (NUE) is of great relevance to crop productivity. The aim of this paper was characterise C and N partitioning during grain filling and their implications for NUE. Cereals such as bread wheat (Triticum aestivum L. cv Califa sur), triticale (× Triticosecale Wittmack cv. Imperioso) and tritordeum (× Tritordeum Asch. & Graebn line HT 621) were grown under low (LN, 5 mm NH4NO3) and high (HN, 15 mm NH4NO3) N conditions. We conducted simultaneous double labelling (12CO2 and 15NH415NO3) in order to characterise C and N partitioning during grain filling. Although triticale plants showed the largest total and ear dry matter values in HN conditions, the large investment in shoot and root biomass negatively affected ear NUE. Tritordeum was the only genotype that increased NUE in both N treatments (NUEtotal), whereas in wheat, no significant effect was detected. N labelling revealed that N fertilisation during post-anthesis was more relevant for wheat and tritordeum grain filling than for triticale. The study also revealed that the investments of C and N in flag leaves and shoots, together with the"waste" of photoassimilates in respiration, conditioned the NUE of plants, and especially under LN. These results suggest that C and N use by these plants needs to be improved in order to increase ear C and N sinks, especially under LN. It is also remarkable that even though tritordeum shows the largest increase in NUE, the low yield of this cereal limits its agronomic value.

Amazon AWS es líder de servicios IaaS y todos pretenden imitarles con éxito. OpenStack es una de las soluciones OpenSource con más apoyo de la comunidad y de sponsors de renombre. El presente proyecto introduce la arquitectura OpenStack y desarrolla un proyecto real de explotación IaaS basado en ésta.

El Diseño: 7 visiones transversales

El diseño ha evolucionado de manera sorprendente en las últimos años gracias a la tecnología, potenciando diferentes disciplinas y especializaciones en las que influyen aspectos técnicos y de percepción de la imagen. El trabajo de los diseñadores demanda por tanto unos conocimientos de dominio de códigos y contexto. Este volumen centra sus capítulos en siete áreas convergentes tratadas con voluntad didáctica: la gestión del diseño, el diseño de productos, el diseño para la imprenta, la estética en el diseño, el diseño para la web, el diseño publicitario y finalmente la identidad visual corporativa. El diseño, 7 visiones transversales, se dirige a estudiantes y personas que se inician en el mundo del diseño, por lo que se trata de una publicación básica y fundamental que toca no solo aspectos teóricos del diseño, si no también aspectos prácticos de una temática que se aplica día a día a nuevos campos y nuevas tecnologías.

Microstructure and magnetic properties of Ni50 Mn37 Sn13 Heusler alloy ribbons

The Heusler alloy Ni50 Mn37 Sn13 was successfully produced as ribbon flakes of thickness around 7-10 μm melt spinning. Fracture cross section micrographs in the ribbon show the formation of a microcrystalline columnarlike microstructure, with their longer axes perpendicular to the ribbon plane. Phase transition temperatures of the martensite-austenite transformation were found to be MS =218 K, Mf =207 K, AS =224 K, and Af =232 K; the thermal hysteresis of the transformation is 15 K. Ferromagnetic L 21 bcc austenite phase shows a Curie point of 313 K, with cell parameter a=0.5971 (5) nm at 298 K, transforming into a modulated 7M orthorhombic martensite with a=0.6121 (7) nm, b=0.6058 (8) nm, and c=0.5660 (2) nm, at 150 K

Therapeutic targeting of tumor growth and angiogenesis with a novel anti-S100A4 monoclonal antibody

S100A4, a member of the S100 calcium-binding protein family secreted by tumor and stromal cells, supports tumorigenesis by stimulating angiogenesis. We demonstrated that S100A4 synergizes with vascular endothelial growth factor (VEGF), via the RAGE receptor, in promoting endothelial cell migration by increasing KDR expression and MMP-9 activity. In vivo overexpression of S100A4 led to a significant increase in tumor growth and vascularization in a human melanoma xenograft M21 model. Conversely, when silencing S100A4 by shRNA technology, a dramatic decrease in tumor development of the pancreatic MiaPACA-2 cell line was observed. Based on these results we developed 5C3, a neutralizing monoclonal antibody against S100A4. This antibody abolished endothelial cell migration, tumor growth and angiogenesis in immunodeficient mouse xenograft models of MiaPACA-2 and M21-S100A4 cells. It is concluded that extracellular S100A4 inhibition is an attractive approach for the treatment of human cancer.

El portafolios digital como herramienta para el desarrollo de competencias transversales en el alumnado.

Partiendo de un enfoque sobre las relaciones entre las tecnologías digitales como herramientas de mediación, se analiza el papel de un caso concreto, los portafolios electrónicos, para la mejora de competencias transversales en el ámbito universitario. Los resultados indican que se obtienen mejoras, como mínimo desde la percepción de los propios estudiantes, en algunas dimensiones ligadas a la capacidad para seleccionar y organizar información, así como a la planificación del aprendizaje.

Visión global y práctica de los delitos contra la propiedad intelectual

Cuatro grandes aspectos a tener en cuenta: herramientas de las que disponemos en el plano jurídico-procesal; Redes organizadas de piratería física y actividad delictiva en el ámbito digital; Mecanismos para homogeneizar y simplificar las actuaciones policiales; Nuevas tipologías delictivas: presente y futuro.
