The objective this study was to evaluate the fatty acids profile of samples of chips potato marketed in the city of São Jose do Rio Preto-SP. We collected samples of 10 brands of chips potato, obtained from 3 different batches. The fatty acids profile was obtained by gas chromatography, with peak identified by retention times with standards of methyl esters and the results calculated and expressed as g/100g of the sample. The fatty acids profile in chips potatoes from different brands were on average 39.22% for saturated fatty acids, 39.64% for monounsaturated, 18.60% for polyunsaturated and 2.43% for trans fatty acids.

Introduction: Aortic insufficiency (AoI), a volume overload, is characterized by the diastolic reflux of blood from the regurgitating aorta to the left ventricle. This effect results from malfunctioning aortic cusps. The main cause of AoI in developing countries is rheumatic fever, including Brazil, and valvar degeneration in developed countries. There is a strong association between cardiovascular diseases and depression. Selective serotonin reuptake inhibitors (SSRI) are one of the most prescribed antidepressants in the world. Previous studies of our laboratory showed that the utilization of a SSRI, paroxetine, improved cardiac function in rats with sub-chronic AoI and reduced the daily ingestion of hypertonic sodium (NaCl 0,3M). Cardiovascular diseases can determine behavior changes like increase of anxiety, and it is yet unknown if AoI would determine anxiety or anhedonia, incapacity of obtaining pleasure through physical or sensorial experiences. A possible target for SSRI action could be a change in the expression of enzyme isoforms that collaborate in the contractile function of the heart muscle, like the heavy chains of myosine, the sarcoplasmatic reticulum Ca2+/ATPase (SERCA) and its regulator protein, phospholamban (PLB). Objectives: Evaluation of behavior parameters for anxiety and anhedonia state and genic expression of a-myosine, b-myosine, SERCA2a and PLB in the heart tissue of rats with subchronic AoI that received treatment with an SSRI (paroxetine) for 4 weeks. Methods: Surgery to induce AoI was performed on male Wistar rats, anxiety was evaluated by the elevated plus-maze (EPM) and state of anhedonia was tested by ingestion of 2% sucrose solution. After euthanasia the heart tissue was collected and total RNA was extracted to be analyzed by the RT-qPCR method. A cachaça é uma bebida exclusivamente brasileira que vem conquistando espaço no mercado dentre as bebidas alcoólicas destiladas. Porém, o Brasil é responsável pelo consumo de 99% do total produzido por ano e apenas 1% é exportado. Isso se deve à falta de padronização na produção e de conhecimento por parte dos produtores, que levam a contaminação por compostos indesejáveis produzindo uma bebida de baixa qualidade, tanto físico-química quanto sensorialmente. Os métodos de redestilação e filtração em carvão ativado vêm sendo alternativas para melhoria da qualidade. Amostras de cachaças foram submetidas a esses métodos e avaliadas quanto à composição química e a qualidade sensorial. As análises químicas de acidez volátil, aldeídos, ésteres, metanol, álcoois superiores e carbamato de etila foram realizadas em triplicatas utilizando cromatografia gasosa. Para a análise sensorial, as amostras foram submetidas ao Teste de Aceitação utilizando escala hedônica híbrida de nove pontos e avaliadas pelo Teste de Kruskal-Wallis. Foi aplicado também o Teste de Ordenação para avaliar a preferência entre as amostras e a Intenção de Compra foi avaliada utilizando-se uma escala de cinco pontos, de certamente não compraria a certamente compraria. A redestilação reduziu os níveis de acidez volátil, cobre e carbamato de etila enquanto a filtração diminuiu as concentrações de aldeídos e ésteres. Os processos de redestilação e filtração em carvão ativado não alteraram a aceitação da bebida, mantendo seu perfil sensorial e melhoraram a composição química.

The substitution of diesel by biodiesel meets the current scenario to increase the consumption of alternative energy sources promoting sustainable development of a country. However, the production of biodiesel concurrently generates the formation of glycerine in the process is a by-product. The main application of glycerine is in the food industry, cosmetics, soaps, pharmaceuticals, among others, but these segments are not capable of absorbing the generated volume of glycerine, whereas the total volume of the biodiesel produced about 10% correspond to glycerine. Glycerine obtained from the transesterification reaction (necessary for production of biodiesel) triglycerides and alcohol contains certain impurities such as water, salts, esters, alcohol, and residual oil, which decrease the value. Thus, the purification process or the direct use of glycerine become essential to make it competitive biodiesel production process. This work aims to evaluate the different processes of purification and the use of glycerine obtained as by-product in the production of biodiesel. The research was theoretical, based on technical articles and theses published on this subject, and from these databases was established a summary of the most important processes

This work aims to present through a literature review, the main features and employability of the natural sweetener xylitol. This sweetener has low calorie, can be used by people with diabetes and is an excellent substitute for sucrose and other sweeteners. Xylitol can be separated from many fruits and vegetables through the reduction of xylose, which can occur by chemical or biotechnological synthesis. In addition to their use in the food industry, xylitol also has great value beneficial to human health by acting as anticariogenic, preventing and treating diseases such as acute otitis media and hemolytic anemia, as well as being growth inhibitor of various bacteria
