Antecedentes/Objetivos: La Salud Pública (SP) solamente puede abordar los cambiantes retos a los que se enfrenta con unos profesionales altamente cualificados. Para mejorar la formación de los profesionales en SP es necesario conocer en términos de ocupación laboral (OL) y empleabilidad (E) los accesos que proporciona la formación en SP. Objetivo: explorar la OL y E de los egresados del Máster en Salud Pública de las Universidades Miguel Hernández y Alicante (MSP). Métodos: Estudio transversal-2013. Encuesta semiestructurada anónima en Google Docs a los titulados del MSP de los cursos 2007 a 2012. Tasa de participación: 33% (n = 45 procedentes de España, Colombia, Chile, Cuba y Bruselas) de las 135 solicitudes enviadas. Variables: Profesión, formación Doctorado, ocupación en SP (antes, durante/después (DD) MSP). Cálculo tasa de empleabilidad por sexo, edad, y formación. Estudio descriptivo de las OL en SP y nichos de empleo DD MSP. Resultados: Tasa de empleo (TE): 82% (mujeres: 85%, hombres: 78%), que se reduce en > 44 años: 57%. Con Doctorado: 16% (TE: 100%). Expectativas laborales: mejorar 47%, mantenimiento 33%, empeorar 7%. Dedicación profesión de base: 53%, y el 47% (n = 21) con ocupaciones en SP: 43% (9) con ocupación antes del MSP y 57% (12) conseguida DD. Los 9 empleados antes-MSP trabajan como MIR Preventiva y SP, profesorado asociado Universidad, Técnico investigación. Dietista-Nutricionista. Inspección veterinaria y Técnico SP. Los 12 empleados DD MSP (27% del total entrevistados) consiguieron empleo de: Técnicos: investigación, evaluador fármaco-vigilancia, e higiene de los alimentos. Becario predoctoral, investigadora postdoctoral, gerente hospital, director calidad, coordinador administrativo ONG, cooperación médica y prevención enfermedades evitables, farmacéutico SP. Situación geográfica y centros de trabajo antes-MSP son: Comunidad Valenciana (CC.VV): Hospitales (H), Universidad (U) nacionales, CIBERESP, Centros Salud Pública (CSP). Y empleados DD MSP: CC.VV, Madrid, Latinoamérica y África: U nacionales/internacionales, CIBERESP, H, ONG, CSP, Agencia Española Medicamento y OPS. Tareas realizadas antes-MSP: Epidemiología clínica y SP, docencia (D), investigación (I), y control salud alimentaria/ambiental/laboral (SAAL); y las tareas DD MSP: además de I y SAAL, gestión hospitalaria, farmacovigilancia y cooperación. Conclusiones: La tasa de empleabilidad del MSP es similar a los datos de la Encuesta de Población Activa respecto a formación de postgrado. Se incrementa la variedad de empleos y tareas, e instituciones empleadoras DD MSP nacionales e internacionales. El grupo vulnerable de los sin empleo > 44 años y las expectativas de mejora en el empleo de los titulados MSP son nichos de formación de postgrado.

This thesis proposes the adoption of a practical and philosophic approach to the discussion about what should be a healthy food, in view of the actual problems concerning this subject (from famine to obesity), which affect food and nutritional security and constitute target of many official policies. In order to handle this task, this work resorts to ethic, pedagogical and anthropological concepts inherent to Immanuel Kant’s philosophy, as valuable contributions to the practice of the professional nutritionist committed to the support and accomplishment of the human right to adequate nutrition (DHAA). Under this assumption, it intends to surpass the prevailing idea inside the social programs and policies favoring the utilitarian argument. It considers rather that a healthy food is also a duty of virtue, according to the Kantian duties to one-self. The liberation of transgenic seeds in Brazil comes up as an example of the violation of the right to food security and affects it negatively, resulting from the conflict between politics and moral faced by the Brazilian government. This paper concludes that DHAA realization requires not only a committed state, but also committed citizens and suggests that Kant’s philosophy should offer important contributions to supporting the practice of the professional nutritionist, awarding him the necessary information about this matter.

A importância em obter o perfil antropométrico vai além de apenas comparaçoes do grupo de atletas, pois o desempenho e o efeito do treinamento está relacionado. Foram avaliados 14 atletas, com idade média de 22,26 ± 3,43. Mediu-se 7 dobras para composiçao corporal e utilizou-se a Equaçao Jackson e Pollock (1978). Os valores médios obtidos foram: massa corporal 82,28 ± 7,24; estatura 181,9 ± 6,1; percentual de gordura 18,86 ± 3,82; e índica de massa corporal 24,94 ± 2,24. Na literatura, o valor da porcentagem de gordura em atletas de voleibol é de 9,8 ± 2,9 . No presente estudo, os valores encontram-se acima da faixa relatada, havendo uma necessidade da intervençao da nutricionista no controle dietético para a reduçao de gordura corporal e associado o treinamento específico para este fim

Objective: To evaluate the nutritional counseling offered to children and adolescents with disabilities in the municipality of Santa Cruz, RN, Brazil. Methods: Observational, crosssectional, population-based study, developed from May to December 2013, with 102 children and adolescents attending a Children’s Rehabilitation Center. We conducted socioeconomic, demographic, health and lifestyle assessments, and evaluated the received nutritional assistance (whether they had received nutritional counseling from any health professional in relation to food and nutrition, how often it occurred and which professional conducted such counseling). Results: Only 37% (n=37) of parents had received some nutritional guidance. Regarding the frequency of counseling, only 11.8% (n=4) of the youngsters received it 7 or more times/year; 23.5% (n=8) received it 2 to 6 times/year; and most (64.7 %, n=22) received it 1 time/year or less. The length of the nutritional counseling was short: the majority (64.7%, n=22) received only one guidance session throughout the whole period attending the institution, and less than 15% (n=5) received counseling for more than six consecutive months. For the majority (73.5%, n=25), the amount of time receiving nutritional guidance has not reached half of the monitoring period. Nutritional counseling was carried out mainly by nutritionists (89.2%, n=33). Conclusion: There was a low frequency of nutritional counseling directed specifically to the disabilities presented by the participants. When such activity was conducted, it occurred irregularly during the participant´s follow-up, only during a short period of time, and lacking connection with the monitoring by the multidisciplinary team.
