Salmonella is the etiological agent responsible for one of the most important Food Borne Disease (FBD), Salmonellosis, which generates significant economic consequences in several countries, including Brazil. Poultry meat is one of the most important disseminators of the pathogen. Accordingly, several countries have developed programs trying to reduce the prevalence of Salmonella in poultry meat. Such programs are based on the research of the pathogen in the carcasses, establishing a maximum limit of positive samples at each set of analysis. The Salmonella scans are usually made using the conventional microbiological methods, which tend to be expensive and time consuming. In recent years were developed rapid methods such as polymerase chain reaction (PCR), which can greatly shorten the results time, showing greater sensitivity and specificity than conventional methodology

O extraordinário desenvolvimento da produção avícola, particularmente no setor de frango de corte, tornou o Brasil um importante produtor e exportador de carne de frango. Esse fato aliado a proibição da utilização de cama de frango como ração para ruminantes pela Instrução Normativa nº15 de 17 de julho de 2001, fez com que este resíduo se tornasse um problema ecológico e de saúde pública de alta relevância, tanto pelo volume de resíduos gerado, quanto pela composição do mesmo, que pode conter diversos fármacos utilizados neste tipo de manejo, além de uréia, que após a oxidação natural no ambiente, resulta em nitrato que tem alto poder de contaminação de mananciais hídricos, principalmente subterrâneos. Dentre as substâncias que podem estar presentes na cama de frango, estão os antimicrobianos, utilizados como promotores de crescimento das aves. No Brasil, são pouquíssimos os trabalhos dedicados a investigar a ocorrência e o impacto ambiental de antimicrobianos. Desta maneira, este trabalho teve como objetivo otimizar e validar método para análise de três fluoroquinolonas (ciprofloxacina, norfloxacina e enrofloxacina) em cama de frango. O método estudado baseou-se em trabalhos da literatura em que moléculas similares foram analisadas em diversas matrizes, compreendendo a extração em ultrassom com acetonitrila acidificada com ácido acético (3% v/v) e análise por CLAE-FLU, modo isocrático com a fase móvel composta por 0,02 M H3PO4:ACN (83:17, v/v). Foram avaliados os parâmetros cromatográficos quanto à resolução, eficiência, linearidade e limites de detecção e quantif-1 para os três analitos. O tempo de análise do método cromatográfico otimizado é de 7,5 minutos. Avaliou-se também o efeito de matriz que foi significativo para norfloxacina e ciprofloxacina, correspondendo a 16 e 20%, respectivamente. Para a enrofloxacina a amostra...

The study aimed to evaluate performance, relative weight of the small intestine, digestibility and deposition of minerals in the bone of broilers supplemented with enzymatic complex (carbohydrases and phytase) in sorghum-based diets or sorghum and millet. In the experiments based of sorghum and sorghum and millet were used 912 day-old male and female Hubbard Flex chicks (50:50) were distributed in a completely randomized design in a 2x2 factorial arrangement (Feed Control base Sorghum (Contcs); FeedReducedbase Sorghum (RedS); Feed Control base sorghum + Enzymatic Complex (Contcs + Enz);. Feed reduced base sorghum + Enzymatic Complex (RedS + Enz) in the study of feed basis of sorghum and millet the design was similar (Feed Control base sorghum + millet ( ContSM); Reduced feed based on Millet + Sorghum (RedSM); Feed Control based Sorghum + Millet + EnzimaticComplex (ContSM + Enz); Reduced Feed base Sorghum+ Millet + Enzimatic Complex (RedSM + Enz). At 35 and 42 days of age were determined performance data: feed intake (CR), body weight (BW), feed conversion (FC), viability (VIAB), relative weight of the small intestine and deposition of minerals in the bone. The digestibility was evaluated sorghum grain size (crushed and whole) with and without exoenzimatico complex. They used 32 birds, eight birds per treatment, in periods from 17 to 21 (initial) and 31 to 35 days of age (fattening). The exoenzimático complex used in feed favored the weight gain results, feed conversion and bone mineralization when compared to a control diet not added to enzymes, demonstrating its effect on non-starch polysaccharides and phosphorus phytic present as anti-nutritional factors in these diets, increasing the digestibility and supply of metabolizable energy, essential amino acids, methionine and lysine and calcium and phosphorus for bone formation. It is concluded that a safe strategy for inclusion in feed is based on the reduction of energy levels, essential amino acids, methionine and lysine and calcium and phosphorus in the expected result of the constant activity of the enzymes of this exoenzimático complex.

In the food industry, Salmonella sp. and other pathogens represent a major threat as potential causes of foodborne diseases. The Salmonella enterica serovar Heidelberg (SH) has a great importance to public health, being currently the most frequent serotype in the official control analyzes carried out in Brazil’s Southern. In this region are concentrated the largest poultry flocks, contributing over 60 % of Brazilian production of chicken meat. To help prevent and minimize infections by pathogenic bacteria, in addition to attend the standards of biosecurity in the field and good hygiene and sanitizing programs in the industry, there is the possibility to control directly on the poultry breeding. Use of organic acids added in the diet of the fowls has an antibacterial action. In the other hand, the use of probiotics has been shown to prevent enteric diseases. This dissertation was divided into two chapters and aimed to evaluate the quantitative and qualitative reduction of SH in broiler chickens. In the first chapter the aim was to collect information on the prevalence rate of SH strain in broiler chickens. This coefficient was 100 %, being a suitable method for determining the frequency of salmonellosis in broiler chickens. In the second chapter five treatments were evaluated (a positive control and four tests), in order to reduce the colonization of SH in broilers, using organic acids and probiotic during production phase. In SH count related to the colonization of the cecum at 28 days of age differences were observed (p<0,05) among treatments. The Treatment 2 showed a count of 41 most probable number of bacterial cells per gram (MPN/g) with lower counts when compared to the positive control (5.106 MPN/g) and treatment 1 (1.354 MPN/g). The evaluation index of infected birds, there was a difference between treatments. In treatment 2, and treatment 4 reduced 58,34 % and 25 % respectively the number of fowls infected with SH. There was no effect of treatments on the performance. Administration of organic acids and probiotic used in the treatment 2 proved to be an effective tool in the SH control in broilers at 28 days of age.

The current scenario of the Brazilian poultry production is defined by high productivity motivated by exports to markets with elevated levels of sanitary requirement. The work aimed to evaluate the efficacy of chlorinated compounds (chlorine dioxide, dichloro and trichloro) and organic acids (citric, lactic and peracetic acids) in reducing the contamination of poultry by Salmonella spp., mesophiles and enterobacteriaceae. Were isolated 102 strains Salmonella spp. poultry carcass from June to September 2014. Strains were identified by PCR. Was determined the minimum inhibitory concentration (MIC) of antimicrobial compounds for the standard strains of S. Typhimurium, S. Enteritidis and S. Heidelberg. MIC of lactic acid and peracetic acid (20 to 10 g/L) was applied in strains of Salmonella spp. isolated from the slaughter. The MIC of the compounds lactic acid and sodium dichloro was applied in contaminated chiller water with Salmonella (109 CFU/mL) and this was determined Salmonella count in water. Thighs and drumsticks poultry were contaminated with S. Heidelberg (109 UFC/mL) and were applied dichloro (60 mg/L), lactic acid (20 g/L) and sodium hypochlorite (5,0 and 0,5 mg/L) compounds. In the identification by PCR, 93,1% of the strains were identified as Salmonella. For sodium dichloro the MIC was 60 mg/L for 15 minutes to S. Heidelberg and 60 mg/L for 20 minutes for S. Enteritidis. Lactic acid presented MIC of the 5 g/L for 10 minutes to S. Enteritidis 10 g/L for 15 minutes to S. Typhimurium and 20 g/L for 20 minutes to S. Heidelberg. For peracetic acid, MICs were 10 g/L for 10 minutes to S. Typhimurium and S. Heidelberg and 10 g/L for 20 minutes to S. Enteritidis. To citric acid, MICs were 10 g/L for 10 minutes to S. Typhimurium and S. Enteritidis and 25 g/L for 20 minutes to S. Heidelberg. In the isolated Salmonella strains, lactic acid inhibited 97,89% of the strains and peracetic inhibited 100% of the strains. In contaminated chiller water, the compounds reduced the growth of standards strains. When applied to contaminated poultry meat, there was a reduction of Salmonella spp. 1,06 log10 CFU/g relative to the positive control with the use of sodium hypochlorite at 5,0 mg/L, 0,97 log10 CFU/g with dichloro and 0,56 log10 CFU/g with sodium hypochlorite 0,5 mg/L. For mesophiles reduction observed was 0,90 log10 CFU/g relative to the positive control with the use of sodium hypochlorite at 5,0 mg/L, 0,83 log10 CFU/g with dichloro and there isn´t reduction with hypochlorite with sodium 0,5 mg/L. For enterobacteriaceae reduction was 1,0 log10 CFU/g relative to the positive control with the use of sodium hypochlorite at 5,0 mg/L, 0,79 log10 CFU/g with dichloro and 0,22 log10 CFU/g with sodium hypochlorite at 0,5 mg/L. Lactic acid inhibit growth of the microorganisms tested. The data supports the discussions to regulate the use of the technology coadjuvants in the slaughter of poultry.

O presente trabalho faz parte do Projeto "Gestão Integrada da Bacia Hidrográfica do Rio Formoso", financiado pelo Fundo para o Meio Ambiente Mundial (Global Environment Facility - GEF) e implementado pelo Banco Internacional para a Reconstrução e o Desenvolvimento (Bird). O objetivo deste trabalho foi de caracterizar os sistemas de produção modais (predominantes) praticados pelos produtores rurais da Bacia do Rio Formoso, Bonito, MS e a partir destes, propor sistemas melhorados, mais sustentáveis. As informações para a caracterização de cada sistema foram levantadas por meio de painéis participativos, com a presença de técnicos, pesquisadores, produtores rurais e outros interessados. Foram realizados em 2006, quatro painéis para caracterização dos sistemas modais e outros quatro para proposição dos melhorados. Foram contemplados no estudo os sistemas de produção de gado de leite, gado de corte, agricultura familiar (mandioca de mesa, cana-de-açúcar para rapadura, galinha caipira de corte, suínos, hortaliças e abelha melífera) e agricultura empresarial (produção de grãos). A proposição de sistemas melhorados visa a subsidiar as atividades de planejamento das ações de intervenção nas microbacias, contempladas em outras atividades do projeto.
