Novos hábitos alimentares da população e as mudanças nos sistemas de produção e distribuição dos alimentos podem estar fortemente relacionados aos casos de doenças transmitidas pelo consumo de alimentos contaminados por microorganismos. Isso faz com que a preocupação com a qualidade microbiológica dos alimentos aumente mundialmente. Dentre os principais patógenos, destaca-se a Salmonella sp, que pertence à microbiota gatrentestinal de animais silvestres e de animais domésticos criados para o consumo humano (aves, bovinos e suínos). Este fato torna o problema de grande relevância para as autoridades de saúde pública, pois esses microrganismos podem estar associados às infecções ou surtos provocados pela ingestão de alimentos contaminados. Foram coletadas 35 amostras de lingüiças e 25 cortes de frango, nos principais supermercados do município de Botucatu-SP e avaliados quanto à qualidade higiênico-sanitária através da determinação do número mais provável de coliformes termotolerantes (CT), além da presença de Salmonella sp. Os resultados obtidos mostram que 31% das lingüiças e 84% das amostras de frango estavam fora dos padrões higiênico-sanitários estabelecido pela ANVISA (RDC n° 12), que determina uma quantidade máxima de 5x103 CT/g em lingüiça e 104 /g em carne de aves. Em relação à Salmonella sp, estabeleceu-se a ausência dessa bactéria em 25g de lingüiça e não determina nenhum parâmetro para o frango. Since dogs presenting several vector borne diseases can show none or nonspecific clinical signs depending on the phase of infection, the assessment of the particular agents involved is mandatory. The present study aimed to investigate the presence of Babesia spp., Ehrlichia spp., Anaplasma spp., Hepatozoon spp. and Leishmania spp. in blood samples and ticks, collected from two dogs from Rio Grande do Norte showing suggestive tick-borne disease by using molecular techniques. DNA of E. canis, H. canis and L. infantum were detected in blood samples and R. sanguineus ticks collected from dogs. Among all samples analyzed, two showed the presence of multiple infections with E. canis, H. canis and L. infantum chagasi. Here we highlighted the need for molecular differential diagnosis in dogs showing nonspecific clinical signs.

Food contamination caused by enteric pathogens is a major cause of diarrheal disease worldwide, resulting in high morbidity and mortality and significant economic losses. Bacteria are important agents of foodborne diseases, particularly diarrheagenic Escherichia coli. The present study assessed the genetic diversity and antimicrobial resistance of E. coli isolates from pasteurized milk processed in 21 dairies in northwestern State of Parana, Brazil. The 95 E. coli isolates were subjected to antimicrobial susceptibility testing according to the recommendations of the Clinical and Laboratory Standards Institute and assessed genotypically by Enterobacterial Repetitive Intergenic Consensus-Polymerase Chain Reaction (ERIC-PCR). The highest rate of resistance was observed for cephalothin (55.78%). ERIC-PCR revealed high genetic diversity, clustering the 95 bacterial isolates into 90 different genotypic patterns. These results showed a heterogeneous population of E. coli in milk samples produced in the northwestern region of Parana and the need for good manufacturing practices throughout the processing of pasteurized milk to reduce the risk of foodborne illnesses.

Results of educative actions on the control of vectors for dengue and leishmaniasis were evaluated by using an online semi-present course directed to teachers from Fundamental I Education level in Araçatuba-SP. 40 teachers from municipal schools located on geographical areas of town with higher occurrence of dengue and leishmaniasis cases, attended to the course, which consisted in a conceptual part directed to specific subjects such as vector borne and zoonotic diseases, responsible ownership of pets and health education and a practical phase, directed to execution and application of educative projects in the target schools. Data about the teacher’s specific knowledge, before and after the attendance to the course, were submitted to the Wilcoxon test with a 5% of significant level. The application of practical educative projects was evaluated by multiplicative actions involving target public. Tests showed statistically significant increase in the knowledge about the studied diseases (p<0.0001) after the course, especially on questions related to etiological agent, clinical symptoms on man and animals and prevention. Activities of knowledge multiplication envolved teachers and students which detected the problems and promoted education actions in their neighborhood as stage performing, group cleaning activities and elaboration and distribution of folders during a student pared. In conclusion, educative actions direct to the control of diseases vectors using a semi-present course, provides new knowledge to the teachers, impelling them to motivate their students to adopt vectors control measures and environmental cares and to sensitive the community to collaborate with control diseases.

Milk is considered a nutritionally complete food but it is also an excellent substrate for microbial growth. Therefore, it may pose a risk to consumers’ health. The aim of this study was to collect data on the occurrence of gastroenteritis outbreaks caused by the intake of milk and dairy products in the state of São Paulo, from 2000 to 2010. The data were collected from the records on foodborne illness outbreaks kept by the Division of Waterborne and Foodborne Diseases of the Center for Epidemiological Surveillance of the Department of Health of the State of São Paulo. A total of 239 outbreaks were notifi ed. They involved 2.418 cases related to the consumption of dairy products during the study period. The etiological agents were identifi ed in 79 outbreaks (33.0%). They were mostly bacteria (84.8%), especially Staphylococcus aureus. Most outbreaks occurred at home (59.4%) and during the months of January (14.2%) and July (12.5%). Most (24.1%) of the affected individuals aged 20 to 49 years. The results shows the need of better manufacturing and handling practices, as well as increasing the awareness of the population and relevant agencies about the importance of notifying cases and implementing preventive measures to ensure food safety.
