Avaliaram-se os efeitos da suplementação concentrada de novilhos, durante o período das águas, sobre o desempenho e características da carcaça. Foram utilizados 49 novilhos mestiços, mantidos em pastagem de Brachiaria decumbens. O experimento foi conduzido em três períodos experimentais, segundo um delineamento inteiramente casualizado. Foram fornecidos sal mineral (SAL), suplementos à base de milho e farelo de soja, com 20% PB, em níveis de 1,0 e 2,0 kg/dia (MFS1 e MFS2), e suplementos à base de farelo de trigo e farelo de soja, com 20% PB, em níveis de 1,0 e 2,0 kg/dia (FTFS1 e FTFS2), fornecidos diariamente. Não foram encontradas diferenças entre os tratamentos sobre ganho de peso médio diário (GMD) e ganho total (GDP Total). Os GMD foram: 0,887; 0,936; 1,047; 0,943; e 1,012 kg/animal/dia, respectivamente, para os tratamentos SAL, MFS1, MFS2, FTFS1 e FTFS2. Os animais submetidos aos diferentes tratamentos não exibiram diferenças nas características físicas e químicas da carcaça. Não houve diferenças quanto ao rendimento de carcaça dos novilhos dos diferentes tratamentos, que foi, em média, de 52,19%.

Foi utilizada uma análise de segregação com o uso da inferência Bayesiana para estimar componentes de variância e verificar a presença de genes de efeito principal (GEP) influenciando duas características de carcaça: gordura intramuscular (GIM), em %, e espessura de toucinho (ET), em mm; e uma de crescimento, ganho de peso (g/dia) dos 25 aos 90 kg de peso vivo (GP). Para este estudo, foram utilizadas informações de 1.257 animais provenientes de um delineamento de F2, obtidos do cruzamento de suínos machos Meishan e fêmeas Large White e Landrace. No melhoramento genético animal, os modelos poligênicos finitos (MPF) podem ser uma alternativa aos modelos poligênicos infinitesimais (MPI) para avaliação genética de características quantitativas usando pedigrees complexos. MPI, MPF e MPI combinado com MPF foram empiricamente testados para se estimar componentes de variâncias e número de genes no MPF. Para a estimação de médias marginais a posteriori de componentes de variância e de parâmetros, foi utilizada uma metodologia Bayesiana, por meio do uso da Cadeia de Markov, algoritmos de Monte Carlo (MCMC), via Amostrador de Gibbs e Reversible Jump Sampler (Metropolis-Hastings). em função dos resultados obtidos, pode-se evidenciar quatro GEP, sendo dois para GIM e dois para ET. Para ET, o GEP explicou a maior parte da variação genética, enquanto, para GIM, o GEP reduziu significativamente a variação poligênica. Para a variação do GP, não foi possível determinar a influência do GEP. As herdabilidades estimadas ajustando-se MPI para GIM, ET e GP foram de 0,37; 0,24 e 0,37, respectivamente. Estudos futuros com base neste experimento que usem marcadores moleculares para mapear os genes de efeito principal que afetem, principalmente GIM e ET, poderão lograr êxito.

Objetivou-se avaliar os efeitos dos aditivos própolis verde, própolis marrom e monensina sódica sobre as características de carcaça, avaliadas por ultra-som e pós-abate, os componentes corporais e o rendimento de cortes de cordeiros terminados em confinamento. Foram utilizados 32 cordeiros machos, com oito animais por tratamento, mantidos em confinamento por 64 dias. Os animais receberam dieta com relação volumoso:concentrado de 50:50, à base de feno de capim-tifton 85 (Cynodon spp.) e concentrado comercial. O delineamento experimental foi o de blocos ao acaso, com oito animais por dieta, distribuídos aleatoriamente de acordo com o peso: controle, dieta sem aditivo, própolis verde, própolis marrom e monensina sódica. Os rendimentos de carcaça (verdadeiro, quente e comercial) não diferiram entre os aditivos, com médias de 54,97; 44,89 e 41,81%, respectivamente. Os componentes corporais e rendimento de cortes comerciais não foram influenciados pelos aditivos utilizados nas dietas. A metodologia utilizada na determinação teve efeito nas medidas de área de olho-de-lombo (AOL) e espessura de gordura subcutânea (EGS), de modo que, pelo método tradicional, com medidas na carcaça, foram obtidas as maiores médias para AOL (12,14 vs. 9,08 cm²) e as menores para EGS (2,42 vs. 2,69 mm). A correlação entre as medidas de área de olho-de-lombo (AOL) da carcaça e aquelas obtidas por ultra-sonografia foi de 0,8597. Os aditivos não influenciaram as características de carcaça, os componentes corporais e o rendimento de cortes de ovinos terminados em confinamento. A realização de medidas ultra-sonográficas de AOL e marmoreio pode ser utilizada na avaliação de carcaça in vivo em ovinos.

Com o objetivo de estudar as características qualitativas da carne de ovinos de diferentes categorias quanto aos músculos dos cortes da carcaça (paleta, lombo e perna), utilizaram-se 18 ovinos ½ Ile de France ½ Ideal (seis cordeiros não-castrados, seis ovelhas de descarte e seis machos adultos castrados). Os animais foram criados em pasto de capim-tifton 85 e receberam suplementação (concentrado). Os cordeiros foram abatidos aos 32 kg, com aproximadamente 5 meses de idade, e as ovelhas e os machos adultos castrados, com 55 kg e aos 60 meses de idade. Não houve diferenças nos valores de pH 45 minutos e pH 24 horas entre as categorias animais e nos músculos dos cortes da carcaça. A idade de abate influenciou a luminosidade da carne de todos os músculos. O teor de vermelho não diferiu entre os animais adultos, mas foi superior aos valores obtidos na carne dos cordeiros. A carne de animais adultos é mais escura que a de cordeiros. As perdas por cocção no músculo Triceps brachii são maiores que no Longissimus lumborum e Semimembranosus. Os valores de pH e a capacidade de retenção de água são similares entre as categorias animais.

The objective of this work was to evaluate the effect of fasting period in the last growing phase on carcass yield and composition of male broilers. Two thousand one-day old male chicks were distributed in five randomized blocks according to a 4x2 factorial (four feeding programs (P): ad libitum or one of three fasting schedules: 8-12, 12-16 and 8-16; and two strains (S): Ross or Hubbard-Peterson, Fifty birds were used per replicate. Birds were raised under identical feed and management conditions until day 42. The fasting schedules were applied from day 43 to day 56. At day 56, five birds per replicate were randomly sampled, weighed, slaughtered, eviscerated, dry-cooled, cut and deboned. No effects of P or SxP interaction were observed for carcass characteristics. birds, which showed higher weights and yields of head plus neck, feet, leg bones and wings. The ad libitum birds showed higher crude protein in thigh meat than those submitted to the 8-12 h fast. A SxP interaction was observed for meat ash content. The R broilers showed higher ash content in breast and thigh meat than the H birds in the 8-12 h fast treatment. on the other hand, the R broilers submitted to the 8-12 h fast showed higher ash contents in breast and thigh meat than birds from the same strain in the other feeding programs. Fasting in the last phase of rearing did not alter the yield of whole carcass, carcass cuts and abdominal fat, but morning fast influenced carcass chemical composition.

This research was conducted to evaluate the productive performance (live weight gain and carcass weight gain and gain efficiency) of animals from four zebu breed slaughtered in three maturity stages. Thirty-six bulls from Gyr, Guzera, Mocho Tabapua and Nellore with twenty-four months of average age and average initial live weight of 357.6, 362.0, 368.6 and 376.4 kg, respectively, were used. The bulls, from each breed, were randomly assigned to individual pens and were full-fed a diet containing 50% concentrate (DM basis) and distributed to three category (1, 2 and 3) of slaughter weights. The bulls from category 1, 2 and 3 were slaughtered when reached the individual live weight of 405, 450 and 500 kg, respectively. At slaughter the empty body weight was determined. The Nellore breed bulls showed greater average empty body weight gain and carcass gain in relation to the other breeds, which did not differ among themselves. There were no differences among breeds regarding to feed efficiency (empty body weight gain efficiency and carcass gain efficiency per unit of metabolizable energy intake). The slaughter weight did not influence the empty body weight gain and carcass gain, but animals slaughtered at higher slaughter weights showed lower gain efficiency and spent more time in feedlot.

Forty one young bulls of herds selected for 378 day's weight (W378), born in 1996, were finished on pastures of Panicum Maximum (Jacq.), Panicum Maximum (Jaq) cv. Tanzania 1 and Brachiaria brizantha (Hoschst) Stapf cv. Marandu at the Sertaozinho Experimental Station, São Paulo State, Brazil. The samples, representing the W378 mean for each herd, were composed by 11 Nellore Selection (NeS) and by 10 of each one of the groups Nelore Control (NeC), Guzera Selection (GuS) and Caracu (Ca). The slaughter was carried out when the animals were 824 days older, with a body condition score averaging 7.6, in a 1-9 scale. The minimum and maximum adjusted means for the main traits, including all groups, were: average weight daily gain, 406 (NeC) and 501 g (NeS); slaughter weight (SW), 446.8 (NeC) and 544.3 kg (NeS); carcass weight (CW), 249.8 (NeC) and 309.7 kg (NeS); dressing percentage (DP), 54.0 (GuS) and 56.3% (NeC and NeS). In the 9(th) - 11(th) rib section: muscle, 59.6 (NeC) and 65.2% (Ca); fat, 15.6 (Ca) and 21.4% (NeC); bone, 18.9 (NeC) and 20.2% (GuS); fat thickness (FT), 2.0 (Ca) and 4.2 mm (NeC); loin eye area, 65.6 (NeC) and 71.1 cm(2) (NeS and Ca); Warner-Bratzler shear force (SF), 4.5 (Ca) and 6.6 kg (GuS) and total cooking losses (TCL), 22.5 (NeC) and 24.9% (GuS). The selection for weight promoted higher SW and CW in the NeS group, without changing the DP, the physical composition of the rib, SF and TCL in the meat. However, there was lower FT compared to NeC. The GuS animals had intermediates SW and CW, compared to NeS and Ca and lower DP. The Ca animals presented higher muscle percentage, in the rib section, and also higher meat tenderness compared to the meat of the Zebu animals.

The aim of this work was to evaluate the introduction of 8% grains and by-products (meal or cake) of canola in the diets of lambs. To evaluate quantitative carcass characteristics, 24 Santa Ines lambs were used in a completely randomized design. Diets with averages of 15.4% of CP in DM and 80.2% of TDN were composed for 40% Tifton hay and 60% concentrate based on corn grain, soybean meal, whole grain canola, canola meal, canola cake and mineral mixture. The use of whole grains and by-products of canola in the diet of lambs finished in feedlot did not influence (p > 0.05) quantitative carcass characteristics. For cut dressing in relation to the CCW, no effect was observed for the analyzed variables among treatments. It was concluded that the introduction of grains and by-products of canola allow for satisfactory results, and could be recommended in the formulations of lamb diets.

Thirty six piglets weaned at 19 days of age were useddistributed in a randomized block design, were used to evaluate the effects of the addition of crescent levels of betaine (0,0%, 0,1%, 0,2% e 0,3%) in the diets on the performance in initial, growing and finishing phases. The indexes of diarrhea incidence were monitored in the first 14 days post-weaning; and the blood parameters at 20, 75, and 150 days of age, as well as the carcass characteristics at the end of the experiment. It was not observed (P > 0,05) effect of the betaine on the diarrhea incidence. Significative differences (P < 0.05) were verified among treatments in the finishing phase for daily weight gain and feed conversion. Differences (P < 0.0001) among the days to the blood parameters analysed were also observed. In regard to the backfat thickness, it was verified significative difference (P < 0.05) among the treatments.

Aiming to evaluate the mineral composition (iron, calcium and sodium) of the carcass and carcass cuts of meat from different ovine categories, 18 1/2 Ile de France 1/2 Polwarth sheeps (6 uncastrated lambs, 6 discarded ewes and 6 discarded wethers) were used. Animals were in grazing system based on Tifton - 85 pastures and were supplemented with concentrate. Lambs were slaughtered at 32 kg of live weight, at around 5 months of age. Ewes and wethers were slaughtered with 55 kg and 60 months of age. The iron values were differents between categories for those valued cuts muscles, with higher average to legs muscles from adults ovine of 3.86 mg/100g with regard to lambs of 1.91 mg/100g, respectively. The iron values of the muscles from half carcass didn't differ for that animal category, with 3.38 mg/100g average. The calcium values in muscles from half carcass and leg cut were higher to wethers (9.84 e 7.35 mg/100g), intermediaries to ewes (6.28 e 6.54 mg/100g) and smallers values to lambs (5.30 e 4.22 mg/100g). There wasn't differences for sodium values to valued categories and muscles, with values around 56.75 mg/100g. In conclusion, the sodium values are similar between animals categories and from differents carcass muscles and that the iron and calcium values present differences.

The objectives of this study were to estimate genetic parameters involving yearling weight (Ps), carcass weight (Pc), hip height (Ag) and the scores of conformation (C), precocity (P) and musculature (M) and carcass yield (Rd) and finishing score (Ac) in Nellore cattle in order to define criteria for selection in this breed. The data of the 20 732 animals were obtained from Agrope-cuária Jacarezinho, SP. Data were analyzed by restricted maximum likelihood using animal model multi-trait analysis, which included fixed effects of contemporary groups (animals born at the same month and slaughtered on the same day) and the covariate age at slaughter (linear) for carcass traits, and contemporary groups (animals of the same farm, age, sex and management group at weaning and yearling) and yearling age (linear) for growth and as random, the additive effects and residual effects. Estimates ranged from 0.13 (Ac and Rd) to 0.36 (Ag) for heritability and from -0.59 ± 0.62 (Rd with Ac) to 0.71 ± 0.17 (Pc with C) for genetic correlations. Selection for Pc, C, P, M, Ag or Ps may be efficient because their heritability estimates are of magnitude moderate. Selection for Ps and C can favor heavier Pc, considering their positive and high genetic correlation.
