Apple is a fruit that offers promising prospect for industrialization as it has favorable characteristics for this purpose and can obtain products with good acceptance. In Brazil, approximately 15% of the production is processed into juice, and a portion is exported. Among the fresh fruit and juice, apple adds US$ 30 million annually to the Brazilian foreign exchange earnings. The aim of this study was to characterize, using chemical analysis, concentrated juices, commercial apple juice, nectar, and soft drink. In addition, to compare them with their respective Quality and Identity Standards (PIQ) published by the Ministry of Agriculture, Livestock and Food Supply (MAPA) and Codex Alimentarius. Concentrated juices and commercial beverages were analyzed in triplicate for soluble solids content (Brix), pH, total acidity (AT), and ratio. In concentrated juices, the Total Sugar Reducer (ART) was also assessed. The results obtained in the laboratory were compared with the PIQ and Codex Alimentarius to verify compliance with applicable regulations. Seven concentrate juices, five juices, six nectars, and three apple-flavoured soft drinks were analyzed. The Brix of pulpy and clarified concentrated juices were, respectively, 71.16±1.29 and 40.40±0.57°Brix. In all concentrated juices, the Brix was in accordance with Codex Alimentarius. The Brix and AT in sweetened clarified juices were 11.50±0.14°Brix and 0.18±0.04g of malic acid/100g sample. In pulpy whole juices the values were 11.20±0.70°Brix and 0.30±0.06g of malic acid/100g sample. The values of Brix and AT in apple-flavoured soft drinks were 11.03±0.93°Brix and 0.18±0.04g of malic acid/100ml sample. Commercial juices and soft drinks also presented °Brix and AT in accord with the PIQ established by MAPA. The apple nectars could not be compared with the standards because they are not published by MAPA or Codex Alimentarius. The definition of the PIQ is an important tool for quality control of beverages manufacture in Brazil. Therefore, it is recommended for the control agencies to define the parameters that are not established.

The aim of this study was to produce mix beverages of grape juice and soybean hydrosoluble extract (SHE) in laboratory scale. The raw materials were soybean (variety BRS 213), grape (species Vitis labrusca, variety Niagara Rosada), citric pectin, water and sugar. The mix beverage was produced with different proportions of SHE and grape juice (1:1; 1:1.5 and 1:2; respectively; m/m) and different soluble solids concentrations (10, 12 and 14 °Brix) obtained by adding granulated sugar (sucrose). Soybean hydrosoluble extract, grape juice and mix beverages were chemically analyzed (humidity, ash, protein, lipids, carbohydrate, reducing sugars, total reducing sugars, sucrose, titratable acidity and pH). The mix beverages were sensorial analyzed through the acceptance test (hedonic scale). The results of chemically analyzed were expressed as mean and standard deviation and the results of sensorial analyzed were submitted to variance analysis and the means were compared using the Tukey test at 5% of probability. The pH of mix beverages was lower than 3.9, without addition of acidulants. Sugar addition to mix beverages (10; 12 and 14ºBrix) increased the levels of soluble solids, total reducing sugar and carbohydrates, but it did not interfere in the reducing sugar concentration. The increased proportion of grape juice in mix beverages allowed observing the elevation of titratable acidity and reducing sugars levels, as well as the pH reduction. The increase of grape juice in mix beverage did not interfere in the acceptance of mix beverages. The more sweetened beverages were preferred by the sensory panel.

The Baccharis oreophila Malme belongs to the Asteraceae family. In Brazil are reported 120 species of Baccharis, most located in the South and Southeast regions, the latter presents the highest prevalence, especially in the state of São Paulo. Asteraceae is well known for the production of essential oils, which are liquid, volatile and aromatic substances produced by plants specialized for metabolism possess antibacterial, antifungal, and antioxidant properties. Thus, this study aimed, perform chemical and evaluate the antimicrobial and antioxidant activity of essential oil from dried leaves of B. oreophila collected in winter in Piraquara, Paraná. Obtaining essential oil was given by hydrodistillation in Clevenger apparatus, in triplicate, and the analysis was done using a gas chromatograph coupled to mass spectrometry GC / MS. The identification of the components was made based on retention indices calculated from the co-injection of a series of n-alkanes, followed by comparison of their mass spectra with literature. The antimicrobial activity was assessed by disk diffusion method and microdilution. The antioxidant activity was evaluated by the methods DPPH equivalent Trolox, ABTS and FRAP equivalent Trolox equivalent ferrous sulfate. The essential oil showed 0.47% yield. They identified 57 components (89.38%), 1.51% were classified as hydrogenated monoterpenes, oxygenated monoterpenes 15.14%, 34.84% and 37.87% hydrogenated sesquiterpenes sesquiterpenes oxygenates. As the major components were detected kusimono (16.37%), spathulenol (16.12%), the δ-cadinene (5.68%) and bicyclogermacrene (4.09%). The antimicrobial activity of essential oil was performed for the microorganisms Escherichia coli ATCC 25922, Staphylococcus aureus ATCC 25923, Candida albicans ATCC 18804 and Candida tropicalis ATCC 13803, the results showed that the essential oil showed activity against S. aureus Inhibitory Concentration minimum (CIM) 1250 g/mL. In the evaluation of antioxidant activity essential oil showed antioxidant potential for the three methods evaluated, with values of 1,468 m.mol.L-1, 7.126 m.mol.L-1 and 45.515 m.mol.L-1 for ABTS, DPPH and FRAP, respectively. These results demonstrate that the essential oil of B. oreophila showed antimicrobial potential against S. aureus and interesting antioxidant activity, especially for the reducing power of iron ion, demonstrating their potential for future industrial applications. It is important to emphasize that were not observed in the literature reports highlighting such biological properties of B. oreophila oil.

Vaccinum myrtillus L. pertence à família Ericaceae, sendo comumente conhecida pelos seus pequenos frutos e doces: os mirtilos. Largamente consumidos em fresco, estes frutos também são usados em compotas e marmeladas, devido à suas propriedades digestivas e hipoglicémicas bem como, devido à presença de vários compostos bioativos [1]. Portanto, tornou-se uma matriz muito apelativa para o desenvolvimento de novos produtos funcionais que, para além das suas propriedades nutricionais, adicionam um efeito benéfico fisiológico e para a saúde de longo prazo [2]. No presente trabalho, três novos produtos desenvolvidos pela RBR Foods Company (Portugal) tendo como base o mirtilo, foram caracterizados pelas suas propriedades nutricionais e químicas: hidratos de carbono, cinzas, proteínas, gordura e valor energético (seguindo métodos oficiais de análise de alimentos AOAC), perfil de ácidos gordos (por GC-FID), açúcares solúveis (por HPLC-RI), ácidos orgânicos (por HPLC-DAD) e tocoferóis (por HPLC de fluorescência). Os produtos resultam de uma mistura dos frutos com pétalas de rosa (P1), pétalas de calêndula (P2) e bagas goji e maçã (P3). Os frutos de mirtilo foram utilizados como amostra de controlo. O perfil nutricional dos novos produtos mostrou-se muito semelhante ao da amostra controlo: os hidratos de carbono foram os macronutrientes mais abundantes, seguido de proteínas e de gordura total. Em relação aos açúcares, frutose, glucose e sacarose foram identificados em todas as amostras. P1 e P2 não apresentaram diferenças significativas em relação ao controlo, no entanto, P3 revelou uma menor concentração de açúcares. Em termos de composição de ácidos gordos, todas as amostras estudadas apresentaram maiores teores em ácidos gordos polinsaturados, especialmente devido à contribuição dos ácidos linoléico e alfa-linolénico. Os resultados de tocoferóis revelaram que a amostra controlo apresentou apenas duas isoformas de tocoferóis, α- e γ-tocoferol, sendo a mesmo observado em P3. No entanto, P1 revelou a presença de todas as isoformas de tocoferóis, enquanto P2 não apresentaou δ-tocoferol; Estes resultados estão relacionados com a contribuição das pétalas de rosa e calêndula, respetivamente. A isoforma α-tocoferol foi a mais abundante em todas as amostras estudadas. Em geral, este trabalho contribuiu para a caracterização de novos produtos nutricionais com base de mirtilo sendo parte de um projecto mais abrangente que tem por objetivo o estudo detalhado destes produtos, para serem utilizados como alimentos funcionais.

Demand for potassium in Brazil is large and is constantly increasing, but only about 5% of all consumed potassium is produced in the country. This low domestic production implies high rate of potassium imports, leaving the country vulnerable in the event of any difficulty to import this product and currency fluctuations. The modified glauconite is a rock that has a high potential for potassium exploration, found in Minas Gerais state, its extraction is relatively cheap and the prospected rock volume is high. The difficulty for its use as a direct source of potassium is in its low solubility. Thus, the objective of this study was to perform a chemical and mineralogical characterization of the modified glauconite and evaluate the effectiveness of techniques and treatments in the potassium solubilization contained in the rock. For this study, it was used characterization techniques such as X-ray diffraction, scanning electron microscopy, diffraction by Synchrotron Light and chemical analysis of high and low power of potassium extraction. Also granulometric testing and thermal treatments with different forms of calcination were carried out. Overall, it was found that the modified glauconite is a compound of minerals, of the mica groups K-feldspar and quartz and calcination substantially alter the crystal structure of these minerals, increasing the potassium availability. While the natural solubility of glauconite modified be very low, rock calcination added with high fluxes of calcium and low magnesium content at 1200 °C led to potassium solubility increase in order of 100 times compared to that observed in the glauconite natural modified.
