The effect on meat quality of integrating pasturing systems into cattle finishing programs was observed over a two-year period. Year one consisted of 84 fall born calves and 28 spring born calves and year two consisted of 116 fall born calves. The effect of using Rumensinâ for cattle on bromegrass pasture was incorporated into year one. In year two cattle on pasture received bromegrass pasture, and one treatment group received switchgrass during the warm season. In both years there was a control group of calves that went directly to the feedlot with the remaining calves going to pasture for varying periods of time before being finished in drylot. At the conclusion of the feeding trial, cattle were processed into beef, and a ribeye steak was removed from each carcass for sensory evaluation. In year one cattle that were on pasture the longest had the lowest (P<0.05) average quality grades. In year two this trend was reversed, and cattle placed directly into drylot had the lowest (P<0.05) average quality grades. In both years cattle carcasses in all treatments averaged yield grade 2. Warner Bratzler shear force values were not affected by treatments. Sensory panel evaluations indicated tenderness was unaffected by treatments, and in year two flavor and flavor intensity were unaffected by treatments. In year one flavor intensity was lowest (P<0.05) for steaks derived from cattle that were on pasture the longest and received Rumensinâ. Inclusion of Rumensinâ for cattle on pasture did not influence yield and quality grades or affect tenderness, juiciness, and flavor. Results of this study indicate that steer calves placed on cool and warm season pastures prior to being finished in drylot, can produce carcasses with acceptable yield and quality grades and that the meat eating qualities will be largely unaffected by the inclusion of pasture.

This experiment was conducted to evaluate the efficacy of daily feeding a live microbial preparation containing two live organisms to finishing cattle. One organism was a lactobacillus, and the other was a propionibacterium, thought to work in concert to improve fermentation in the rumen and overall digestion. The study was conducted with Angus steers with an average initial weight of 550 lbs that were fed a finishing ration containing 50% wet corn gluten feed on a dry basis for 184 days. Feeding the microbial product improved daily gain and feed efficiency 1.7% and 2.4%, respectively, but the differences were not statistically significant. The microbial preparation increased carcass weights 1% but had no effects on quality or yield grades. It is concluded that potential benefits of this product are more likely to be greater when cattle are fed high grain rations rather than diets containing high concentrations of corn gluten feed.

Progesterone secretion is crucial for maintaining pregnancy to parturition in mammalian species, and in cattle the corpus luteum is the primary source of this hormone. This study determined the roles of prolactin (PRL), growth hormone (GH) and luteinizing hormone (LH) in the luteotropic process in beef heifers hypophyseal stalk-transected (HST, n = 7) or sham operated on (SOC, n = 9) during midgestation. The main finding was that endogenous PRL and GH maintained progesterone secretion in HST heifers similar to that in SOC throughout pregnancy. Serum PRL averaged 37 vs 187 and GH 2 vs 4 ng/ml in HST compared with SOC, whereas LH abruptly decreased to undetectable levels after HST compared with a modest 0A4 ng/ml in SOC heifers. The second finding was that parturition and lactation occurred in HST heifers with calf delivery induced to occur at the same time as SOC. Milk production in HST animals was severely limited, and postpartum estrus obliterated compared with SOC. The suckling stimulus sustained milk ejection in HST heifers in spite of diminished PRL and GH secretion. The results suggest that PRL, GH and possibly placental lactogen are luteotropic during pregnancy in cattle.

Six-hundred pound Angus steer calves were fed cornbased finishing diets for 180 days to determine the effects of stepwise reduction of protein in the diet on performance and carcass characteristics. Reducing protein in the diet, but satisfying the requirements projected by the National Research Council model for Nutrient Requirements of Beef Cattle, did not affect performance or carcass measurements. Further reduction in protein content of the diet, so the projected requirement of the rumen microorganisms was not being met, did not affect performance or carcass measurements. It is concluded that quantity of protein fed to finishing cattle can be programmed and abstantially reduced. These reductions will result in substantially less nitrogen excreted in manure from larger feedlots.

Proteferm is a liquid by-product from the production of monosodium glutamate by fermentation that is 40% solids and contains 95% crude protein on a dry basis. Two trials were conducted with yearling steers to study the effects of different levels of Proteferm when added to 90% concentrate diets to replace corn and urea. Feeding Proteferm resulted in a decrease in urine pH, suggesting a metabolic acidosis that was probably caused by a negative cation–anion balance. Correcting the cation–anion imbalance resulted in an increase in feed intake and the performance of steers fed Proteferm as 1.5% of diet dry matter to be similar to the performance of control steers. Addition of sodium bicarbonate to the control diet or to the diet containing 1.5% Proteferm to produce a positive cation–anion balance did not improve performance. The results of these trials indicate that 1.5% Proteferm is the maximum that should be added to high concentrate diets fed to beef cattle without affecting performance or carcass value.

Corn steep liquor is a liquid by-product containing condensed steep water and condensed distillers solubles from a wet corn milling plant. Finishing steers weighing nine hundred and seventy-five pounds were fed cornbased finishing diets containing 0%, 6%, or 12% corn steep liquor for 84 days. Feeding corn steep liquor did not affect performance of the steers or carcass characteristics. Based on value of feeds replaced in the diet, steep liquor had a value of $55 to $60/ton (50% dry matter) when used to replace corn and supplemental protein in a corn-based finishing diet.

For 126 days, 850 lb. steers were fed diets of corn, corn silage, and ground hay containing either 0%, 4%, or 8% wet distillers solubles obtained from an Iowa dry mill ethanol plant. Addition of distillers solubles resulted in a linear decrease in feed consumption. Gains were increased 3.2% and decreased 6.4% by feeding 4% and 8% distillers solubles, respectively. Compared to the control diet, feed required per pound of gain was reduced 5% by low levels of distillers solubles and 1.5% by high levels. Feeding distillers solubles had no effect on carcass measurements. It was concluded that wet distillers solubles has value as a feed for cattle and can replace a portion of corn grain and supplemental nitrogen in a corn-based finishing diet for beef cattle. The decreased performance of steers fed the 8% level suggests that there might be a maximum amount of wet distiller solubles that can be fed to finishing cattle.

White corn was compared with yellow corn in a 180-day finishing trial with 600 lb. Angus steers fed 90% concentrate diets. Steers fed yellow corn consumed 3.3% less feed and were 3.8% more efficient in feed utilization. Rate of gain and carcass characteristics were similar for steers fed white or yellow corn. The color of subcutaneous fat over the ribs was significantly whiter from carcasses of steers fed white corn compared with those fed yellow corn. The results of this study indicate that white corn may be used instead of barley to produce whiter fat in beef carcasses.

The objective was to test the hypothesis that dopamine regulates prolactin (PRL) secretion by determining acute changes in catecholamine concentrations in hypophyseal portal blood of cattle and their relation to peripheral blood concentration of PRL in hypophyseal stalk-transected (HST) and sham-operated control (SOC). Holstein heifers were subjected to neurosurgery to collect hypophyseal portal blood with a stainless steel cannula designed with a cuff placed under the pituitary stalk and peripheral blood via a jugular vein catheter. PRL plasma concentration was measured by radioimmunoassay, and dopamine and norepinephrine in portal plasma by radioenzymatic assay. During anesthesia before HST or SOC, PRL plasma concentration ranged from 20–40 ng/ml throughout 255 minutes. PRL abruptly increased and remained above 90 ng/ml after HST, compared with a steady decrease to <20 ng/ml in SOC heifers throughout 440 minutes. Within 5 minutes after severing of the hypophyseal stalk, dopamine in portal blood (>8 ng/ml) was significantly increased (P<0.05) compared with peripheral blood (<2 ng/ml). Norepinephrine concentration in portal blood was significantly greater (P<0.05) than in peripheral blood during the first 60 minutes. The sustained high PRL level in peripheral plasma after severing the hypophyseal stalk stimulated hypothalamic dopamine secretion from hypophyseal portal vessels during the prolonged period of blood collection. Norepinephrine concentration in these cattle was greater in hypophyseal portal blood than in peripheral blood, implicating both an important hypothalamic source of the catecholamine as well as an adrenal gland contribution during anesthesia.

Teats of 36 ewes (72 udder halves or teats) were dipped with an experimental barrier - type teat dip product to evaluate product persistency post weaning. Persistency was evaluated one to two times/day and scored positive if the teat end orifice was covered and protected. Persistency or the percentage of teats covered/protected at 36, 54, 72, 96, 132, and 156 hours was 100%, 93%, 89%, 63%, 35%, and 24% respectively. Ewes will be dipped again pre-lambing and both persistency and bacteriology (mastitis prevention) will be evaluated compared to 36 control ewes.

Experiments using different types of antigen-adjuvant preparations were conducted in outbred sheep to compare effects of adjuvants on immune responses. Trinitrophenyl-ovalbumin (TNP-ovalbumin) incorporated in a preparation with nonionic block copolymers elicited high antibody titers to both ovalbumin and TNP. Different humoral immune responses were observed when Pasteurella haemolytica lipopolysaccharide (LPS) was added to the preparations. Responses to ovalbumin and TNP were reduced when Pasteurella haemolytica LPS was added to copolymer L121. The antibody titers to ovalbumin or TNP were not affected by the addition of LPS to the preparation containing copolymer L180.5. Lymphocyte proliferation assays demonstrated high stimulation indices at day 17 to ovalbumin by lymphocytes from lambs receiving preparations containing copolymers without Pasteurella haemolytica LPS.

Lambs from two flocks with a chronic respiratory disease characterized by paroxysmal cough and rectal prolapses were tested for their skin reactivity to Mycoplasma ovipneumoniae (MO) and M. arginini (MA) antigens (Ags). There was a marked, immediate skin reaction to intradermal injection of MO Ag in many of the tested lambs. Some of these positive lambs also reacted to MA Ag. Phosphate buffered saline (PBS) used as a negative control gave no skin reaction in any of the tested animals. In addition, simultaneous serological tests revealed low antibody levels against MO and MA. However, both agents could be routinely isolated from nasal swabs of the affected lambs. There is reason to suspect that an immediate type hypersensitivity to MO Ag and perhaps to other allergens that develops in association with the mycoplasmal infection contributes to this coughing syndrome.

Seasonal lamb supply has been established as one of the major hindrances to the American sheep industry. The ability to consistently lamb ewes on an accelerated production system offers additional benefits of reduced maintenance costs, more uniform cash flow along with reduced labor and facility demands. Previous work at McNay with spring breeding indicated that light priming rams regardless of genetic base improved conception rates, however, MGA feeding postweaning gave inconsistent and sometimes depressed reproductive activity in ewes. This study was conducted to evaluate the use of MGA in late lactation and a single PG600 injection at weaning, either individually or in combination.
