The production of natural extracts requires suitable processing conditions to maximize the preservation of the bioactive ingredients. Herein, a microwave-assisted extraction (MAE) process was optimized, by means of response surface methodology (RSM), to maximize the recovery of phenolic acids and flavonoids and obtain antioxidant ingredients from tomato. A 5-level full factorial Box-Behnken design was successfully implemented for MAE optimization, in which the processing time (t), temperature (T), ethanol concentration (Et) and solid/liquid ratio (S/L) were relevant independent variables. The proposed model was validated based on the high values of the adjusted coefficient of determination and on the non-significant differences between experimental and predicted values. The global optimum processing conditions (t=20 min; T=180 ºC; Et=0 %; and S/L=45 g/L) provided tomato extracts with high potential as nutraceuticals or as active ingredients in the design of functional foods. Additionally, the round tomato variety was highlighted as a source of added-value phenolic acids and flavonoids.

O objetivo deste estudo foi avaliar a inclusão de carne mecanicamente separada (CMS) (0, 20, 40, 60, 80 e 100%), obtido de resíduos de filetagem de tilápias do Nilo, em salsichas e determinar suas propriedades físico-químicas, nutricionais e sensoriais. As salsichas apresentaram diminuição de proteína e aumento de lipídeos com a inclusão de CMS. A qualidade nutricional dos produtos foi alta, com digestibilidade acima de 85%. Os parâmetros de textura e cor instrumental amarela (b*) diminuíram com inclusão crescente de CMS. A avaliação sensorial da cor mostrou que o nível máximo de inclusão de CMS não foi bem aceito pelos provadores. As salsichas com melhor aceitação do atributo sabor foram aquelas com 60% de CMS. Os resultados demonstraram a boa qualidade nutricional das salsichas utilizando CMS de resíduos de filetagem de tilápias do Nilo e de acordo com avaliação sensorial, a porcentagem máxima de inclusão é de 60%.

BACKGROUND Monitoring body temperature is essential in veterinary care as minor variations may indicate dysfunction. Rectal temperature is widely used as a proxy for body temperature, but measuring it requires special equipment, training or restraining, and it potentially stresses animals. Infrared thermography is an alternative that reduces handling stress, is safer for technicians and works well for untrained animals. This study analysed thermal reference points in five marine mammal species: bottlenose dolphin (Tursiops truncatus); beluga whale (Delphinapterus leucas); Patagonian sea lion (Otaria flavescens); harbour seal (Phoca vitulina); and Pacific walrus (Odobenus rosmarus divergens). RESULTS The thermogram analysis revealed that the internal blowhole mucosa temperature is the most reliable indicator of body temperature in cetaceans. The temperatures taken during voluntary breathing with a camera held perpendicularly were practically identical to the rectal temperature in bottlenose dolphins and were only 1 °C lower than the rectal temperature in beluga whales. In pinnipeds, eye temperature appears the best parameter for temperature control. In these animals, the average times required for temperatures to stabilise after hauling out, and the average steady-state temperature values, differed according to species: Patagonian sea lions, 10 min, 31.13 °C; harbour seals, 10 min, 32.27 °C; Pacific walruses, 5 min, 29.93 °C. CONCLUSIONS The best thermographic and most stable reference points for monitoring body temperature in marine mammals are open blowhole in cetaceans and eyes in pinnipeds.

During its history, several significant earthquakes have shaken the Lower Tagus Valley (Portugal). These earthquakes were destructive; some strong earthquakes were produced by large ruptures in offshore structures located southwest of the Portuguese coastline, and other moderate earthquakes were produced by local faults. In recent years, several studies have successfully obtained strong-ground motion syntheses for the Lower Tagus Valley using the finite difference method. To confirm the velocity model of this sedimentary basin obtained from geophysical and geological data, we analysed the ambient seismic noise measurements by applying the horizontal to vertical spectral ratio (HVSR) method. This study reveals the dependence of the frequency and amplitude of the low-frequency (HVSR) peaks (0.2–2 Hz) on the sediment thickness. We have obtained the depth of the Cenozoic basement along a profile transversal to the basin by the inversion of these ratios, imposing constraints from seismic reflection, boreholes, seismic sounding and gravimetric and magnetic potentials. This technique enables us to improve the existing three-dimensional model of the Lower Tagus Valley structure. The improved model will be decisive for the improvement of strong motion predictions in the earthquake hazard analysis of this highly populated basin. The methodology discussed can be applied to any other sedimentary basin.

This article summarizes the main findings of a research on literacy made with immigrant Nicaraguan men and women workers residing in Costa Rica, specifically with parents from students at the Gonzalo Monge School in Pital, San Carlos. In this investigation, the more relevant motives for these Nicaraguan immigrants to come to Costa Rica are established. In addition, some of their needs living in this country are stipulated as well as the role of informal education in their lives. It is clearly important to design a literacy proposal on informal education that allows immigrant Nicaraguan men and women workers to prepare and educate for life and work. According to the Project for Latin America and the Caribbean, Education for Everyone program, education is understood as one basic need of the person: every person –child, young or adult- must have the basic opportunity of taking advantage of education. These needs include not only essential tools for learning (such as reading, writing, learning problems…), but also basic learning contents required for human beings to: survive, develop their capacities, live and work with dignity, fully participate on development, improve the quality of their lives, take their fundamental decisions and continue learning.

Os estudos sobre as línguas em contato têm suscitado interessepor parte de pesquisadores da área da linguagem, especialmente da sociolingüística, por constituírem material potencial para a descrição e a compreensão das várias instâncias que atuam nos processos de interação, quais sejam lingüísticas, sociais, históricas, psicológicas, entre outras. O motivo pelo qual estudiosos têm se dedicado às investigaçõesde comunidades e falantes bilíngües está representado na possibilidade de compreender o uso da língua como elemento desencadeador de ambientes particulares de interação, governados pela necessidade de comunicação e pela constituição de identidades, em que se podem compreender as várias facetas do modus operandi das línguas. É como pensar que, em cada elocução, submergem elementos que constituemo sujeito falante e que remetem a um mundo particular, o qual se faz não apenas pela história de cada um, mas pela sua cultura e pela sua tradição. O estudo do contato lingüístico e dos fenômenos lingüísticos decorrentes desta realidade sociocultural move-se no interior das teorias da variação lingüística, entendidos como decorrentes de fatores inerentes à condição humana. Dentre as perspectivas e tendências, destaca-se o contexto particular de interação do falante diante de condições específicas em comunidades bi e monolíngües. Toma-se, assim, o fenômeno do contato lingüístico e seus resultados, dentre eles a alternância de código e os empréstimos lingüísticos, como processos mediados por uma realidade “multimodal”, em que cada situação comunicativa se desdobra em feixes de complexidade que revelam pistas para descrição e análise do fenômeno da variação lingüística.
