Background: In order to prevent chronic, non communicable disease, it is essential that lifestyle is modified to include a diet high in fiber. Aim: To assess the effect oat bran (OB) in conjunction with nutrition counseling (NC) have on lipid and glucose profile, anthropometric parameters, quality of diet, and ingestion of ultraprocessed foods (UPF) and additives in hypercholesterolemia sufferers. Method: This was a 90-day, double-blind, placebo-controlled, block-randomized trial undertaken on 132 men and women with LDL-c ≥ 130 mg/dL. The participants were sorted into two groups: OB Group (OBG) and Placebo Group (PLG), and were given NC and 40g of either OB or rice flour, respectively. Lipid and glucose profile were assessed, as were the anthropometric data, quality of diet (Diet Quality Index revised for the Brazilian population - DQI-R) and whether or not UPF or additives were consumed. Results: Both groups showed a significant decrease in anthropometric parameters and blood pressure, as well as a significant reduction in total and LDL cholesterol. There was also an improvement in DQI-R in both groups and a decrease in consumption of UPF. Blood sugar, HOMA-IR and QUICKI values were found to be significantly lower only in the OBG. Conclusion: Our findings in lipid profile and anthropometric parameters signify that NC has a beneficial effect, which is attributable to the improved quality of diet and reduced consumption of UPF. Daily consumption of 40 g of OB was found to be of additional benefit, in decreasing insulin-resistance parameters.

Purpose: To develop some novel molecules effective against antibiotic-resistant bacterial infections. Methods: A series of azomethines (SB-1 to SB-6) were synthesized from β-phenyl acrolein moiety. The structures of the synthesized compounds were confirmed on the basis of their UV ultra-violet (UV) spectroscopy (λmax: 200 - 400 nm), Fourier transform infra-red (FTIR, vibrational frequency: 500-4000 cm-1), 1H nuclear magnetic resonance (NMR, chemical shift: 0 - 10 ppm), 13C NMR (chemical shift: 0 - 200 ppm), mass spectrometry (m/z values: 0 - 500) and carbon hydrogen nitrogen (CHN) elemental analysis. The new compounds were screened for antibacterial activity by test-tube dilution and disc diffusion methods using gentamicin as reference standard. Results: The structures of azomethine were in full agreement with their spectral data. Among all the synthesized compounds, compounds SB-5 and SB-6 exhibited the highest minimum inhibitory concentration (MIC) of 62.5 μg/mL. At MIC of 250 μg/mL, all compounds SB-1 to SB-6 displayed significant antibacterial activity, compared to gentamycin (p < 0.05). SB-5 and SB-6 were active against S. aureus, P. aeruginosa and K. pneumoniae; SB-3 was active against B. subtilis and S. aureus. SB-4 was active against P. aeruginosa and S. aureus while SB-1 and SB-2 were active against S. aureus. Conclusion: The synthesized compounds possess antibacterial activities compared to those of gentamycin.

Miami-Dade County has approximately 27,000 people living with HIV (PLWH), and the highest HIV incidence in the nation. PLWH have reported several types of sleep disturbances. Caffeine is an anorexic and lipolytic stimulant that may adversely affect sleep patterns, dietary intakes and body composition. High caffeine consumption (>250 mg. per day or the equivalent of >4 cups of brewed coffee) may also affect general functionality, adherence to antiretroviral treatment (ART) and HIV care. This study assess the relationship of high caffeine intake with markers of disease progression, sleep quality, insomnia, anxiety, nutritional intakes and body composition. A convenience sample of 130 PLWH on stable ART were recruited from the Miami Adult Studies on HIV (MASH) cohort, and followed for three months. After consenting, questionnaires on Modified Caffeine Consumption (MCCQ), Pittsburg Insomnia Rating Scale (PIRS), Pittsburg Sleep Quality Index (PSQI), Generalized Anxiety Disorder-7 (GAD-7), socio-demographics, drug and medication use were completed. CD4 count, HIV viral load, anthropometries, and body composition measures were obtained. Mean age was 47.89±6.37 years, 60.8% were male and 75.4% were African-Americans. Mean caffeine intake at baseline was 337.63 ± 304.97 mg/day (Range: 0-1498 mg/day) and did not change significantly at 3 months. In linear regression, high caffeine consumption was associated with higher CD4 cell count (β=1.532, P=0.049), lower HIV viral load (β=-1.067, P=0.048), higher global PIRS (β=1.776, P=0.046), global PSQI (β=2.587, P=0.038), and GAD-7 scores (β=1.674, P=0.027), and with lower fat mass (β=-0.994, P=0.042), energy intakes (β=-1.643, P=0.042) and fat consumption (β=-1.902, P=0.044), adjusting for relevant socioeconomic and disease progression variables. Over three months, these associations remained significant. The association of high caffeine with lower BMI weakened when excluding users of other anorexic and stimulant drugs such as cocaine and methamphetamine, suggesting that caffeine in combination, but not alone, may worsen their action. In summary, high caffeine consumption was associated with better measures of disease progression; but was also detrimental on sleep quality, nutritional intakes, BMI and body composition and associated with insomnia and anxiety. Large scale studies for longer time are needed to elucidate the contribution of caffeine to the well-being of PLWH.

Meat industry needs to reduce salt in their products due to health issues. The present study evaluated the effect of salt reduction from 6% to 3% in two Portuguese traditional blood dry-cured sausages. Physicochemical and microbiological parameters, biogenic amines, fatty acids and texture profiles and sensory panel evaluations were considered. Differences due to salt reduction were perceptible in a faint decline of water activity, which slightly favoured microbial growth. Total biogenic amines content ranged from 88.86 to 796.68 mg kg 1 fresh matter, with higher amounts, particularly of cadaverine, histamine and tyramine, in low-salt products. Still, histamine and other vasoactive amines remained at low levels, thus not affecting consumers’ health. Regarding fatty acids, no significant differences were observed due to salt. However, texture profile analysis revealed lower resilience and cohesiveness in low-salt products, although no textural changes were observed by the sensory panel. Nevertheless, low-salt sausages were clearly preferred by panellists.

Objetivou-se avaliar as características agronômicas de genótipos de sorgo e o valor nutricional das silagens produzidas. Foram utilizados 15 genótipos de sorgo. O plantio foi realizado em blocos casualizados com três repetições por genótipo num total de 45 (quarenta e cinco) parcelas. Avaliaram-se as características agronômicas, nutricionais e qualidade da silagem. Houve diferença entre os genótipos para todas as características analisadas, com exceção dos teores de nitrogênio indisponível em detergente ácido (NIDA), proteína indisponível em detergente ácido (PIDA) e atividade de água (aw). Avaliando os parâmetros, com exceção dos genótipos 1016013, 1016025, 1016037, 1016039, Volumax, BRS 610, que apresentaram teor proteico abaixo de 7 %, os demais estão aptos a serem utilizados para a ensilagem, pois possuem um bom perfil de fermentação e digestibilidade in vitro da matéria seca; no entanto, o genótipo SF 15 é o mais favorável para a produção de silagem, devido à sua menor participação na fração de fibra em detergente neutro.

A prevalência de obesidade infantil vem crescendo em todo o mundo e está associada com aumento da morbimortalidade por doenças cardiovasculares na vida adulta. A obesidade na infância, somada às alterações no metabolismo glicêmico e lipídico e ao aumento do estresse oxidativo e estado inflamatório contribuem para o aumento da espessura do complexo médio-intimal da carótida (carotid artery intima-medial thickness - cIMT) em tenra idade, possibilitando o desenvolvimento precoce do processo aterosclerótico. O objetivo deste estudo foi avaliar e comparar a cIMT, os indicadores do metabolismo glicídico e lipídico, o estado oxidativo e antioxidante, a composição corporal e o consumo alimentar em crianças pré-púberes obesas e eutróficas e determinar as inter-relações entre as variáveis. Foram medidos massa corporal total (MCT), estatura (E), circunferência da cintura (CC); glicemia, insulina, colesterol total (CT), lipoproteína de baixa densidade (LDL-colesterol), lipoproteína de alta densidade (HDL-colesterol), ácido úrico, proteína C-reativa ultra-sensível (PCR-us) e capacidade antioxidante (DPPH) sanguíneos; cIMT (USG, General Eletric); consumo alimentar (3 recordatórios de 24 h) para análise de macronutrientes e ácidos graxos. Foram, ainda, calculados o índice de massa corporal por idade (IMC/I) e HOMA-IR. O grupo de crianças obesas (n = 30) apresentava IMC/I acima do p97 (WHO, 2007) cujos dados foram comparados com os de um grupo controle (n = 25), composto por crianças eutróficas, da mesma faixa etária. As análises estatísticas acompanharam as características da amostra para dados não-paramétricos, com graus de significância de p < 0,05. A idade das crianças, em média, foi de 7,8 1,3 anos. A comparação dos indicadores entre os grupos mostrou valores significativamente maiores de MCT, IMC/I, CC, consumo calórico e de carboidratos, CT, LDL-colesterol, insulina, HOMA-IR, ácido úrico, PCR-us e cIMT no grupo de crianças obesas. Foram encontradas associações positivas da cIMT com MCT, IMC/I e CC. Essa última associou-se positivamente com ácido úrico, insulina e HOMA-IR. A PCR-us mostrou associação positiva com MCT, IMC/I, CC, ácido úrico, insulina e HOMA-IR. Os resultados analisados nos permitem concluir que as crianças obesas apresentaram maior massa adiposa abdominal, maior consumo energético, proveniente de carboidratos e valores maiores dos fatores de risco para doenças cardiovasculares do que seus pares eutróficos. Nossos resultados analisados em conjunto, mostram que a obesidade infantil acarreta danos cardiometabólicos que poderão causar prejuízos a saúde na vida adulta. O processo de aterosclerose precoce sofre influência da massa de gordura total e abdominal, a qual está diretamente relacionada à resistência à insulina, ao estado inflamatório e antioxidante. O conhecimento dos fatores de risco desta população deverá embasar estratégias de tratamento com o objetivo de reduzir a morbimortalidade por doenças cardiovasculares na idade adulta.

Introdução - O exercício aeróbio é considerado uma ferramenta eficaz na redução de fatores de risco cardiometabólico e na melhora da qualidade de vida em adolescentes obesos. No entanto, os benefícios de um programa exclusivo com exercícios resistidos (ER) ainda não foram estabelecidos nesta população. Objetivo - Avaliar o efeito de um programa exclusivo com ER sobre a função endotelial, parâmetros hemodinâmicos e metabólicos, modulação autonômica, biomarcadores inflamatórios, composição corporal e condicionamento físico de adolescentes obesos. Materiais e Métodos - Quarenta adolescentes participaram do estudo e foram divididos em dois grupos de acordo com o nível de adiposidade: grupo controle (C, n = 20; 13 meninos e 7 meninas) e grupo obeso (Ob; n=24; 7 meninos e 17 meninas). O grupo Ob foi submetido a um programa de ER, três vezes por semana, durante três meses. A função endotelial, o perfil metabólico e hemodinâmico, a modulação autonômica, os biomarcadores inflamatórios, a composição corporal e o condicionamento físico foram avaliados antes e ao final da intervenção. Na investigação de nossa hipótese utilizamos: laser-Doppler fluxometria, análises bioquímicas e de células endoteliais circulantes, monitorização da pressão arterial ambulatorial, variabilidade da frequência cardíaca (Polar), densitometria com dupla emissão de raios X, análise de força muscular em aparelho isocinético e teste cardiopulmonar de exercício submáximo em cicloergômetro. Resultados - Após três meses de intervenção exclusiva com ER observamos uma melhora na vasodilatação endotélio-dependente (P<0,05) e uma redução na pressão arterial sistólica (P<0,01), diastólica (P<0,01) e média (P<0,01), independentes de alterações no peso corporal. Adicionalmente, também observamos redução na frequência cardíaca (FC) de repouso (P<0,01), aumento na variabilidade da FC (P<0,01) e na atividade parasimpática (P<0,05). Observamos também redução na circunferência da cintura (P<0,001), na relação cintura/quadril (P<0,001), no percentual de gordura total (P<0,01), troncular (P<0,01) e de distribuição andróide (P<0,01). Os níveis de fibrinogênio (P<0,05), endotelina-1(P<0,05) e de insulina (P<0,01), e o índice HOMA-IR (P<0,05) foram menores após intervenção. Após a intervenção proposta houve redução na incidência de síndrome metabólica (16,6 vs. 0%) nos adolescentes obesos. Além disso, os estes adolescentes aumentaram a força muscular (P<0,05) e reduziram o consumo de oxigênio, a produção de gás carbônico, a ventilação e o dispêndio energético (P <0,01) durante o teste cardiopulmonar de exercício submáximo. Conclusões - Um treinamento exclusivo com ER resultou em benefícios cardiovasculares, metabólicos e na composição corporal e condicionamento físico de adolescentes obesos, independente de alterações no peso corporal. Nossos resultados sugerem que a prática de ER foi capaz de reduzir fatores de risco cardiovascular em adolescentes com obesidade.

The imprecision of the frontier that separates those cognitive deficits inherent to the human physiological aging process from those which represent the early signs of nervous system degenerative pathologies ,very prevalent among the elderly, has brought attention to the need of studies aiming to establish clinical and/or laboratorial criteria to allow this differentiation. Elderly people living in poor and developing countries are frequently exposed to precarious socioeconomic conditions which facilitate the development of an array of pathologies which have metabolic and nutritional dysfunctions as the established or proposed etiological agents. The levels of certain micronutrients, such as the vitamins B12 and B9 (folic acid), and of some intermediary metabolites, such as homocysteine are being thought of as etiological factors and/or as biological markers of a group of alterations which affect the normal functioning of the nervous system with important reflexes upon cognitive performance. This study aims to investigate the influence of homocysteine, B12 vitamin and folic acid levels on the cognitive performance of the low income elderly population. This transversal study took place in Natal, Rio Grande do Norte State, Brazil, and involved 205 dwelling elderly people, users of the Programa de Saúde da Família, a public healthcare program, maintained by the city s health authorities. A multidimensional questionnaire was used to assess the socio-demographic aspects and the overall health and nutrition conditions. The cognitive performance was measured by the use of the Portuguese version of the Mini Mental State Exam (MMSE). The serum levels of homocysteine, B12 vitamin and folic acid were determined by chemiluminescence. The association between the socio-demographic and serum levels of Hcy, B12 vitamin and folic acid was determined by multiple linear regression. Serum levels higher than 13.5 μmol/l, indicative of hyperhomocysteinemia (HHcy), were found on 25.4% of the sample, being more prevalent in men (p<0.05). Deficitary levels of folic acid (<5ng/mol) and of B12 vitamin (<193 pg/ml) were found on 3.9% and 10.2% of the sample respectively. A negative correlation was found between cognitive performance with both age and HHcy and a positive correlation was found between cognitive performance and schooling. The isolated HHcy R2 values were an explanation to only 4% of the variance of the MMSE scores. However, when associated with schooling and age, this model explains about 25% of this association

A estimativa de pessoas vivendo com HIV-1 no Brasil, até junho de 2008, é de 432.890 casos, sendo que 3% destes residem na região Norte. O presente trabalho teve como objetivo descrever o perfil nutricional de portadores do HIV-1 no Estado do Pará e sua correlação com fatores da dieta usual, aspectos demográficos, sociais e laboratoriais que possam estar influenciando a sua qualidade de vida. O grupo populacional constou de 58 indivíduos, atendidos na Unidade de Referência Especializada em Doenças Infecciosas e Parasitárias Especiais (URE-DIPE) e avaliados longitudinalmente (19 meses). Houve predominância do sexo masculino, na faixa etária entre 20 e 50 anos e com escolaridade menor que 8 anos. O perfil antropométrico da maioria, com relação ao peso corporal (% peso atual, % peso usual e IMC) mostrou eutrofia, porém quando avaliadas as reservas de gordura (prega cutânea triciptal, PCT) e proteínas (circunferência braquial, CB e circunferência muscular braquial, CMB), a maioria mostrou desnutrição. A contagem de linfócitos T CD4+ foi maior do que 350 células/mm³ e a carga viral, menor do que 10.000 cópias/mL. Níveis de colesterol total, LDL-colesterol, triglicerídeos, glicemia, ferro sérico e hemograma encontravam-se dentro dos padrões de referência, mas não o de HDL-colesterol. A correlaçãodos resultados laboratoriais com o estado nutricional mostrou significância estatística em pelo menos uma variável antropométrica (CMB), a exceção da contagem de linfócitos T CD4+ e triglicerídeos. O uso da TARV foi observado em 83% do grupo, no entanto, não houve correlação com o perfil nutricional. A dieta usual mostrou equilíbrio qualitativo (normoproteica, normoglicídica e normolipídica), porém insuficiente quantitativamente (hipocalórica). A correlação entre a alimentação utilizada e o perfil nutricional mostrou diferença estatística apenas quando associada ao consumo de proteínas e carboidratos.

Pea-shoots are a new option as ready-to-eat baby-leaf vegetable. However, data about the nutritional composition and the shelf-life stability of these leaves, especially their phytonutrient composition is scarce. In this work, the macronutrient, micronutrient and phytonutrients profile of minimally processed pea shoots were evaluated at the beginning and at the end of a 10-day storage period. Several physicochemical characteristics (color, pH, total soluble solids, and total titratable acidity) were also monitored. Standard AOAC methods were applied in the nutritional value evaluation, while chromatographic methods with UV–vis and mass detection were used to analyze free forms of vitamins (HPLC-DAD-ESI-MS/MS), carotenoids (HPLC-DAD-APCI-MSn) and flavonoid compounds (HPLC-DAD-ESI-MSn). Atomic absorption spectrometry (HR-CS-AAS) was employed to characterize the mineral content of the leaves. As expected, pea leaves had a high water (91.5%) and low fat (0.3%) and carbohydrate (1.9%) contents, being a good source of dietary fiber (2.1%). Pea shoots showed a high content of vitamins C, E and A, potassium and phosphorous compared to other ready-to-eat green leafy vegetables. The carotenoid profile revealed a high content of β-carotene and lutein, typical from green leafy vegetables. The leaves had a mean flavonoid content of 329 mg/100 g of fresh product, mainly composed by glycosylated quercetin and kaempferol derivatives. Pea shoots kept their fresh appearance during the storage being color maintained throughout the shelf-life. The nutritional composition was in general stable during storage, showing some significant (p < 0.05) variation in certain water-soluble vitamins.

Recently, new lines of yellow-seeded (CS-Y) and black-seeded canola (CS-B) have been developed with chemical and structural alteration through modern breeding technology. However, no systematic study was found on the bioactive compounds, chemical functional groups, fatty acid profiles, inherent structure, nutrient degradation and absorption, or metabolic characteristics between the newly developed yellow- and black-seeded canola lines. This study aimed to systematically characterize chemical, structural, and nutritional features in these canola lines. The parameters accessed include bioactive compounds and antinutrition factors, chemical functional groups, detailed chemical and nutrient profiles, energy value, nutrient fractions, protein structure, degradation kinetics, intestinal digestion, true intestinal protein supply, and feed milk value. The results showed that the CS-Y line was lower (P ≤ 0.05) in neutral detergent fiber (122 vs 154 g/kg DM), acid detergent fiber (61 vs 99 g/kg DM), lignin (58 vs 77 g/kg DM), nonprotein nitrogen (56 vs 68 g/kg DM), and acid detergent insoluble protein (11 vs 35 g/kg DM) than the CS-B line. There was no difference in fatty acid profiles except C20:1 eicosenoic acid content (omega-9) which was in lower in the CS-Y line (P < 0.05) compared to the CS-B line. The glucosinolate compounds differed (P < 0.05) in terms of 4-pentenyl, phenylethyl, 3-CH3-indolyl, and 3-butenyl glucosinolates (2.9 vs 1.0 μmol/g) between the CS-Y and CS-B lines. For bioactive compounds, total polyphenols tended to be different (6.3 vs 7.2 g/kg DM), but there were no differences in erucic acid and condensed tannins with averages of 0.3 and 3.1 g/kg DM, respectively. When protein was portioned into five subfractions, significant differences were found in PA, PB1 (65 vs 79 g/kg CP), PB2, and PC fractions (10 vs 33 g/kg CP), indicating protein degradation and supply to small intestine differed between two new lines. In terms of protein structure spectral profile, there were no significant differences in functional groups of amides I and II, α helix, and β-sheet structure as well as their ratio between the two new lines, indicating no difference in protein structure makeup and conformation between the two lines. In terms of energy values, there were significant differences in total digestible nutrient (TDN; 149 vs 133 g/kg DM), metabolizable energy (ME; 58 vs 52 MJ/kg DM), and net energy for lactation (NEL; 42 vs 37 MJ/kg DM) between CS-Y and CS-B lines. For in situ rumen degradation kinetics, the two lines differed in soluble fraction (S; 284 vs 341 g/kg CP), potential degradation fraction (D; 672 vs 590 g/kg CP), and effective degraded organic matter (EDOM; 710 vs 684 g/kg OM), but no difference in degradation rate. CS-Y had higher digestibility of rumen bypass protein in the intestine than CS-B (566 vs 446 g/kg of RUP, P < 0.05). Modeling nutrient supply results showed that microbial protein synthesis (MCP; 148 vs 171 g/kg DM) and rumen protein degraded balance (DPB; 108 vs 127 g/kg DM) were lower in the CS-Y line, but there were no differences in total truly digested protein in small intestine (DVE) and feed milk value (FMV) between the two lines. In conclusion, the new yellow line had different nutritional, chemical, and structural features compared to the black line. CS-Y provided better nutrient utilization and availability.
