El beneficio para la salud del consumo diario de al menos 5 raciones entre frutas y hortalizas está bien documentado. En España no se alcanzan los 600 gramos por persona y día que recomienda la Organización Mundial de la Salud (OMS) en sus objetivos de salud pública, por lo que es importante mejorar el acceso a estos alimentos, aprovechar su potencial nutritivo y salvar las barreras para su consumo. Los objetivos de este documento son: facilitar la toma de decisiones responsables con la salud; aprovechar al máximo el valor nutritivo de frutas y hortalizas; ayudar a salvar las barreras para su consumo e informar sobre cómo afecta la conservación, manipulación y cocinado domésticos a su valor nutritivo. Para minimizar la pérdida de nutrientes y mejorar su biodisponibilidad durante la manipulación de frutas y hortalizas, la Asociación para la promoción del consumo de frutas y hortalizas"5 al día" (España) recomienda: evitar almacenamientos prolongados en el refrigerador; aprovechar las capas y hojas exteriores; pelar y/o cortar el alimento justo antes de consumirlo; lavar las piezas enteras y trocearlas posteriormente; controlar el tiempo de remojo de las piezas cortadas; preferir técnicas de cocinado que no requieran contacto directo con el agua; a menor tiempo de cocción, menor pérdida de nutrientes; la fritura correcta conserva muy bien los nutrientes, aunque no debe abusarse de esta técnica; añadir un chorrito de vinagre o de zumo de limón al agua de cocción; aprovechar el agua de los vegetales cocidos para elaborar otros alimentos (ej.: salsas, sopas, purés, etc.), excepto la de acelgas, espinacas o remolacha. La Asociación"5 al día" recomienda aumentar el consumo de frutas y hortalizas, y considera que la pérdida de nutrientes durante su manipulación doméstica no debe entenderse como una barrera para su consumo.

The Chironomidae is a cosmopolitan family of Nematoceran flies with more than 20 000 species described. However the diversity of genera and species of the family in the Andean region beyond the 2 000m.a.s.l are scarcely known. We conducted faunal surveys and biomonitoring research in different streams of Colombia, Ecuador and Peru from May 2005 to October 2011. Based on specimens collections, and a taxonomic key was developed to identify pupae and pupal exuviae of 46 genera of midges (Diptera, Chironomidae) collected from streams at high altitude areas on the Andean tropical mountains. We included illustrations and brief taxonomic descriptions for all genera, of which several ones have not yet been formally described; in this latter case we used the nomenclature of Roback & Coffman (1983). For two genera, Cricotopus and Genus 1, keys to the most common morphospecies were provided. Results showed that in this area the chironomid assemblages are dominated by the members of the subfamily Orthocladiinae (22 genera) followed by the Chironominae (13). Six genera of Tanypodinae were identified, while only three and two genera were present from subfamilies Podonominae and Diamesinae. This key may be very useful for both studies about drift in streams, and for biomonitoring purposes.

Phosphates have been used for lead immobilization in soils but the influence of soil type is not fully understood. In this work, lead chemical behaviour in two Brazilian latosoils (LA and LV) was studied via treatment with phosphates. The Pb concentration in Toxicity Characteristic Leaching Procedure (TCLP) solutions was decreased in all treatments. After treatment with H3PO4 the Pb concentration in the LA remained within the regulatory limit established by EPA. The ecotoxicological results with Daphnia pulex showed that this treatment reduced the lead bioavailability. Sequential extraction analyses showed that the lead was transferred from the most available to the residual fraction. Relevant decrease of soluble lead was observed in all phosphate treatments.

This work aimed at evaluating the contents of extractable Cd, Pb, Zn and Cu with a solution of DTPA (diethyleneaminopentacetic acid) and to relate them with the production of dry material and grain production of bean plants under two conditions of experimentally contaminated soil materials with Cd, Pb, Cu and Zn: (i) samples of distrofic red latosol and (ii) humic yellow-red latosol. A decrease in the yield of dry matter was observed for all treatments, if compared with the zero-dose control sample; the grain yield was affected for the soil samples treated with Cd and Cu but only slightly for those treated with Pb and Zn.

The aim of this work is to evaluate the use of natural zeolites to remove the NH4+ that remains in effluents from swine facilities which were submitted to physico-chemical and biological treatments. Experiments were made in batch made adding 5% (w/w) of adsorbent (0.6-1.3 and 3.0-8.0 mm) to synthetic and real swine facilities effluents. The results show that ammonium removal is influenced by adsorbent particle size and the presence of other ions in the effluent. The adsorption equilibrium was described by Langmuir as well as Freundlich isotherms and the kinetic data fitted well a pseudo-second order model.

This work optimized the HPLC conditions for the simultaneous determination of luteolin, apigenin, myricetin, quercetin and kaempferol in aglycone form, as well defined the best conditions for hydrolysis/extraction of these flavonoids in fruits, using the statistical central composite design and response surface analysis. A reverse phase method was developed using a gradient of methanol/water acidified with 0.3% formic acid as mobile phase and a photodiode array detector. The samples were extracted with methanol/water (50:50 v/v) at 90 ºC. The optimum time and HCl concentration varied for the different fruits investigated, demonstrating the necessity of optimizing these conditions for each fruit analyzed. Good recovery (87.1 to 96.3%), repeatability and linearity were obtained.

Fruits juices are natural sources of several compounds that present antioxidant action. Together with the fruits, they contribute with almost 40% of the antioxidant capacity in a healthy diet avoiding and preventing diseases deriving from oxidative stress. The present study determined the antioxidant capacity of seven samples of industrialized fruits juices applying CRAC (Ceric Reducing/Antioxidant Capacity) assay, a new electrochemistry assay that evaluates, by means of chronoamperometric measurements, the ability of a sample in reducing species Ce4+ in acid media. At the end of the assay was obtained the following classification: cashew > guava > grape > mango > apple > orange > passion fruit.

From the environmental point of view, the textile sector is outstanding for the generation of large amounts of biorecalcitrant effluents. In this paper the textile effluent biodegradability, both before and after its treatment with Fenton's Reagent, were compared by means of biologic tests. These tests showed that the Fenton treatment lowered the biodegradabilty of practically all tested effluents, except one specific effluent from a scouring bath of polyester fibers, which achieved a 93% COD removal. This removal was due to a significant phase separation (oil/water).

Some physicochemical parameters, vitamin C, total phenolic compounds and antioxidant activity (AA) measured by ABTS, FRAP and DPPH methods were determinated in four different varieties of ripe guava produced in Colombia. Samples were statistically similar in their titratable acidity. Soluble solids were statistically similar and higher in "Pear", "Pink Regional", and "White Regional", but lower in "Apple" guavas. Vitamin C was statistically lower in "Pear" guava. Phenolics, ABTS-, FRAP-, and DPPH-AA were statistically lower in "Apple" guava if compared in wet basis. "Pink Regional" and "White Regional" contained the highest levels in vitamin C, phenolics and antioxidant activity.

This work aimed to access the contents and chemical forms and to estimate mobility and availability of cooper and zinc in samples from two soils (Haplortox and Paleudult) previously treated with doses of sewage sludge (SS) and municipal solid waste compost (MSWC), besides a control treatment. Largest percentages of Cu and Zn were determined in the organic matter fraction. Zn showed higher percentages of soluble and exchangeable fractions than Cu. Treatments with SS showed higher potential of Cu and Zn availability. Modifications in soil attributes due to residue application affected metal mobility and availability indexes.

Ion exchange method was employed by means of surface modification of the glass powders of LZSA (Li2O-ZrO2-SiO2-Al2O3) system submitted to a 70wt% NaNO3/30wt% NaSO4 bath salt followed by a heat treatment. Chemical analysis by X-ray fluorescence was used to evaluate the efficiency of ion exchange, while optical dilatometry was employed to evaluate sintering of compacts. Evaluation of the structure of sintered bodies was made by scanning electron microscopy. Substitution of Li+ ions by Na+ ions on the surface of powders during heat treatments of 450 and 600 ºC for 2-10 h promoted an increase in densification of the sintered bodies.

The objective of this study was to evaluate the sorption and leaching of thiamethoxam in dystrophic Red-Yellow Latosol (LVAd), dystroferric Red Latosol (LVdf) and Red-Yellow Argisol (PVAd) with coffee under the effect of sewage sludge doses. There was thiamethoxam sorption decreasing at higher doses of sewage sludge in LVAd and LVdf. In the PVAd, sorption was higher in samples that received the highest dose of sewage sludge. At 150 days after the application of thiamethoxam, the compound began to be detected in the effluent, in all soils. Dissolved organic carbon had no influence on the thiamethoxam leaching.

Ascorbic acid has important nutritional characteristics such as high antioxidant potential, preventing diverse damage and diseases in the tissues and the process of aging. Different isomeric forms of the ascorbic acid can be found in nature and each one have different potential antioxidant and different activity pro-vitamin C. This work examined a method to detect and quantify the isomers L-ascorbic acid (LAA) and D-iso-ascorbic acid (DIAA) in jelly fruit. The method showed acceptable selectivity, linearity, repeatability and recovery. DIAA was not found in the analyzed samples, but LAA was found up to 605 mg in 100 g of sample.

Volatile compounds involved in the chemical communication of fruit flies have been studied for some years; however, their complete elucidation has not yet been reported. Tephritids, which belong to the Anastrepha genus, exhibit inter- and intraspecific changes regarding the chemical composition of their sex pheromones, as well as an evident relationship with the volatiles produced by their hosts. This paper reports advances in the elucidation of the chemical communication of Anastrepha species that involve sex pheromones, cuticular hydrocarbons, and the interaction between the fruit host volatiles and compounds released by the male flies.

Validation of a rapid method for the determination of ascorbic, citric, fumaric and tartaric acids in stored pulp fruit and its application as a quality parameter was performed. The validation parameters showed that for the four evaluated acids, the method presented low limits of detection (LOD) and quantification (LOQ), indicating good precision and accuracy, thus representing an important tool for quality assessment of stored fruit pulp. The results showed that the concentration of organic acids generally decreased with longer storage time in the fruit pulp under study. Amongst all the organic acids under investigation, ascorbic proved the least stable.
