Deep-water coral ecosystems are hot spots of biodiversity and provide habitats and refuges for several deep-sea species. However, their role in shaping the biodiversity of the surrounding open slopes is still poorly known. We investigated how meiofaunal biodiversity varies with and is related to the occurrence of deep-water living scleractinian corals and coral rubble in two deep-sea areas (the Rockall Bank, northeastern Atlantic) and the Santa Maria di Leuca (central Mediterranean). In both areas, replicated sampling on alive and dead coral areas and from the adjacent slope sediments without corals (at the same and increasing depths) allowed us to demonstrate that sediments surrounding the living corals and coral rubble were characterised by higher meiofaunal biodiversity (as number of higher taxa, and nematode species richness) than the slope sediments. Despite the soft sediments surrounding the living coral having a higher nutritional value than those not associated with corals, with the opposite seen for coral rubble, the presence of both alive and dead corals had a significant effect on nematode assemblages. Our data suggest that, due particularly to the effects on habitat heterogeneity/complexity, both living coral and coral rubble promoted higher biodiversity levels than in surrounding slope sediments. We conclude that the protection of deep-water corals can be crucial to preserve the biodiversity of surrounding open slopes, and that the protection of dead corals, a so-far almost neglected habitat in terms of biological conservation, can further contribute to the maintenance of a high deep-sea biodiversity along continental margins.

Sedimentation rates and bottom sediment ages were determined by 14C method in the Kara Sea and the Yenisei River marginal filter. Age of carbon supplied by the Yenisei River is estimated to be 6.9 ka. As supplied carbon mixes with young biogenic carbon under influence of plankton and benthos young carbon flux (planktogenic) sharply diminishes. This has been inferred from studies of organic matter in sedimentary traps deployed along sections from the Yenisei River mouth to 76°N. The major part (70-80%) of organic carbon in bottom sediments of the Kara and Laptev Seas is ancient (Holocene). Planktogenic part comprises only 20-30%. In the Central Arctic Basin percentage of planktogenic organic matter in bottom sediments is still lower, the major part being associated with supply of ancient terrigenous organic material of low nutritional value for organisms. Determinations of sedimentation rates and recent matter fluxes from sedimentary traps served as a basis for locating a sedimentary depocenter in the Yenisei River both for present time and for geological past. Regularities of variations of sediment matter fluxes in the marginal filter were studied.

Phytoplankton are the basis of marine food webs, and affect biogeochemical cycles. As CO2 levels increase, shifts in the frequencies and physiology of ecotypes within phytoplankton groups will affect their nutritional value and biogeochemical function. However, studies so far are based on a few representative genotypes from key species. Here, we measure changes in cellular function and growth rate at atmospheric CO2 concentrations predicted for the year 2100 in 16 ecotypes of the marine picoplankton Ostreococcus. We find that variation in plastic responses among ecotypes is on par with published between-genera variation, so the responses of one or a few ecotypes cannot estimate changes to the physiology or composition of a species under CO2 enrichment. We show that ecotypes best at taking advantage of CO2 enrichment by changing their photosynthesis rates most should increase in relative fitness, and so in frequency in a high-CO2 environment. Finally, information on sampling location, and not phylogenetic relatedness, is a good predictor of ecotypes likely to increase in frequency in this system.

This survey has to general objective to evaluate the Food Safety Policy implemented by Restaurantes Populares do Rio Grande do Norte. The survey is qualitative of type exploratory and descriptive. The universe of survey is all Units of Food and Nutrition (UAN) of the Restaurantes Populares do Rio Grande do Norte. To collects of data were used two instruments: interview and form. The interviews were intended to analyze the four axes of the Food Safety: access, food quality, production and marketing of food and organizational arrangement. The form was used to check the quality of nutrition and sanitary-hygienic food served. We used two types of forms: a spreadsheet with the weekly menu and the portions served to verify that the meals serve the nutritional needs proposed by the program; and the check-list of ANVISA to verify the sanitary-hygienic conditions in each unit. Through the survey data and analyses made observe that the access category have some problems such as lack of registration, lack of advertising of Restaurants and wastage of public resources, making policy that should be of included in a policy of exclusion. In the nutritional aspect there is neglect on the daily nutritional goal, because it is not accomplished nutritional analysis of menu offered, the nutritionists do not know what should be the nutritional value of meals served; in the hygienic-health aspect trough the problems identified is concludes that there is no guarantee of food quality hygienic-sanitary, committing the program as a Food Safety Program. About the production and marketing of food is observed some problems as: the goal of sale of meals is not achieved in full, the purchase of genres does not stimulate the local economy, nor generates jobs and income, and inefficient performance of the MEIOS's supervision. In the analysis of organizational arrangement is concluded that the partnerships are beneficial, despite some negative points, therefore, are these partnerships the problems of non-compliance, as both the MEIOS and Nutriti of important criteria established in the partnership. Therefore, it is understood that the Programa Restaurantes Populares in its original formulation is proposed to be a food safety policy, but has some problems that impossible to meet its goal, making it unprofitable like Food Safety Policy

Introduction - Feed supplies the necessary nutrients for the growth of healthy animals, which are a part of the human diet. The presence of toxigenic fungi in animal feed such as Aspergillus spp. may contribute to 1) the loss of nutritional value of feedstuff, since fungi will assimilate the most readily available nutrients present in the feed, and 2) the development of mycotoxicoses and chronic conditions, which can raise economic issues due to animal disease and contamination of animal derived products. Aim of the study - The goal of this work was to evaluate the incidence of Aspergilli, particularly from the Circumdati, Flavi and Fumigati sections, through real-time quantitative PCR (qPCR) in 11 feed samples.

Desde tempos remotos que as macroalgas marinhas são utilizadas por comunidades humanas, nomeadamente as orientais, como parte importante da sua dieta alimentar. A composição química das diferentes macroalgas marinhas (algas castanhas – Phaeophyta, algas vermelhas – Rhodophyta e algas verdes – Chlorophyta) confirma que além de terem um valor nutricional satisfatório podem ser uma fonte muito interessante de compostos bioativos como, por exemplo, os compostos fenólicos. Quimicamente os compostos fenólicos caracterizam-se por apresentarem um ou mais grupos hidroxilo ligados a um anel aromático. Estes compostos englobam desde moléculas simples até moléculas poliméricas de grandes dimensões. A maioria dos compostos fenólicos apresenta atividade antioxidante. O interesse pelo estudo de metabolitos secundários das macroalgas com propriedades antioxidantes surgiu, numa primeira fase, como uma tentativa de encontrar substitutos para os antioxidantes sintéticos usados como aditivos alimentares (nomeadamente o BHA e o BHT) que demonstravam possuir efeitos carcinogénicos. No entanto, rapidamente a comunidade científica reconheceu que a aplicação de novos compostos fenólicos naturais é muito mais vasta. Sabe-se hoje que é crucial para a promoção da saúde de um indivíduo que se verifique a manutenção do equilíbrio entre a produção de radicais livres e as respetivas defesas antioxidantes. Quando esse equilíbrio se altera e ocorre uma acumulação de radicais livres no organismo, este entra em stress oxidativo, situação que pode conduzir a danos dos lípidos celulares, proteínas e ácidos nucleicos, o que favorece o aparecimento de diversas doenças e acelera o envelhecimento celular. Assim, atualmente existe um crescente interesse por parte da indústria farmacêutica e da indústria da cosmética no estudo dos compostos fenólicos isolados de macroalgas. De entre estes, destacam-se os florotaninos, que para além das propriedades antioxidantes têm demonstrado possuir outras atividades farmacológicas importantes, tais como atividade antibacteriana, anti-viral, antineoplásica, anti-hipertensora e anti-diabética. Este trabalho consiste numa revisão bibliográfica sobre os diversos compostos fenólicos com atividade antioxidante isolados de macroalgas marinhas e que demonstraram vantagens na sua incorporação, quer em formulações cosméticas, quer em medicamentos, debatendo as suas ações farmacológicas, mecanismos de ação e possíveis aplicações futuras.

Brazilian sweet sorghum is used to generate ethanol and the bagasse is burned in industrial boilers or deposited on soil polluting the environment. This study evaluated the performance of sorghum plants and its bagasse silage nutritional value aiming to use it in the ruminant nutrition. Experiments were set up on the UTFPR campus at Dois Vizinhos-PR. The first trial was established on October 2nd, 2012 using the genotypes ADV 2010, Hunnigreen, Sugargraze, Volumax, BR 505, 503, 501 and the second trial at 2013 on November 27th assessing the materials ADV 2010, Sugargraze, Hunnigreen, EX 5110, BR 506, 508, 509 and 511. Experimental was laid out as a randomized block design with three replications. Results were analyzed through ANOVA comparing the averages by Duncan test at 5% error probability. As field variables were evaluated: plant height (Pl hei), green mass production (GM Prod), percentage of leaves, stems and panicles in relation to the plant, stems production without straw (Prod stems with straw), whole stems production (Who stems Prod), stem diameter (Stem diam), juice production (Juice prod) and Brix degree (oBrix). After juice plant extraction, forage bagasse was crushed and packed in silos for 60 days and green matter yield was estimated (GM). In bagasse silage gauged to buffer capacity (BC), dry matter (DM), mineral matter (MM), crude protein (CP), ether extract (EE), total carbohydrates (TC), non-fibrous carbohydrates (NFCH), neutral detergent fiber (NDF), acid detergent fiber (ADF), lignin (LIG ) and digestibility "in vitro" (DIGIV). There was no significant difference (P> 0.05) between genotypes regarding to green matter production and on average, the second crop yield was lower and reflected in the reduction of bagasse production. Bagasse silage DM was of 32.3% and 33.1%; NDF 73% and 65.8%, crude protein 3.8% and 5.9; pH 3.7 and 3.7; TC and 9.8 and 10.7. mg MS-1; the amount of NFCH was 11.1 and 13.5%; DIG of DM 36.9 and 62.4% for the respectively to the bagasse produced from materials grown in the 2012/2013 and 2013/2014 seasons. Hybrid genotypes had a better agronomic performance while the varieties were more efficient in bromatological indexes. And despite the high percentage of NDF and the low protein level, it is possible to feed ruminants with this coproduct.

The microbial spoilage of meat and seafood products with short shelf lives is responsible for a significant amount of food waste. Food spoilage is a very heterogeneous process, involving the growth of various, poorly characterized bacterial communities. In this study, we conducted 16S ribosomal RNA gene pyrosequencing on 160 samples of fresh and spoiled foods to comparatively explore the bacterial communities associated with four meat products and four seafood products that are among the most consumed food items in Europe. We show that fresh products are contaminated in part by a microbiota similar to that found on the skin and in the gut of animals. However, this animal-derived microbiota was less prevalent and less abundant than a core microbiota, psychrotrophic in nature, mainly originated from the environment (water reservoirs). We clearly show that this core community found on meat and seafood products is the main reservoir of spoilage bacteria. We also show that storage conditions exert strong selective pressure on the initial microbiota: alpha diversity in fresh samples was 189 +/- 58 operational taxonomic units (OTUs) but dropped to 27 +/- 12 OTUs in spoiled samples. The OTU assemblage associated with spoilage was shaped by low storage temperatures, packaging and the nutritional value of the food matrix itself. These factors presumably act in tandem without any hierarchical pattern. Most notably, we were also able to identify putative new clades of dominant, previously undescribed bacteria occurring on spoiled seafood, a finding that emphasizes the importance of using culture-independent methods when studying food microbiota.

Microalgae have a wide range of application fields, from food to fuels, to pharmaceuticals & fine chemicals, aquaculture and environmental bioremediation, among others. Spirulina and Chlorella have been used as food sources since ancient times, due to their high and balanced nutritional value. Our research group in Lisbon has developed a range of food products (emulsions, gelled desserts, biscuits and pastas) enriched with freshwater and marine microalgae (Spirulina, Chlorella, Haematococcus, Isochrysis and Diacronema). The developed products presented attractive and stable colours, high resistance to oxidation and enhanced rheological properties. Some of these products will be prepared at the Post-Congress Course “Functional Foods Development” at the University of Antofagasta. More recently, a great interest has arisen on using microalgae for biofuel production. The same group has also been exploring several marine and freshwater species for biofuel production (e.g., biodiesel, bioethanol, biohydrogen and biomethane) within a biorefinery approach, in order to obtain high and low-value co-products using integral biomass maximizing the energy revenue. Namely, supercritical fluid extraction of Nannochloropsis sp. allowed the recovery of valuable carotenoids and lipids, prior to bioH2 production through dark fermentation of the residual biomass. Also, Scenedesmus obliquus residues after sugars (for bioethanol) and lipids (for biodiesel) extraction has been anaerobically digested attaining high biomethane yields. Regarding sustainability issues, the current trend of our group is now focused on using liquid effluents and high CO2 levels for low cost microalgae growth, contributing to a lower water demand, primary energy consumption and global warming potential by reducing the need for potable water and fertilizers (P, N) and increasing CO2 mitigation. Microalgae biomass has been successfully used for urban wastewater treatment with subsequent bioH2 production, in a biorefinery approach. Presently, ammonium-rich raw effluents from piggeries and poultry industry are being effectively used for microalgae growth avoiding any pre-treatment step.

O pescado é considerado um alimento de grande valor nutricional presente na dieta, devido a sua elevada qualidade proteica. O consumo desta importante fonte proteica ainda não faz parte da rotina da população brasileira. Para tanto, o governo busca alternativas para mudança desta realidade. O desenvolvimento e introdução de produtos a base de pescado na merenda escolar vem sendo indicados como uma solução estratégica para inserir este alimento na dieta da população. Nesse sentido, este trabalho teve por objetivo elaborar produto a base de anchoita (Engraulis anchoita) e verificar sua aceitação junto à rede pública de ensino, visando um futuro aumento do consumo de pescado. A matériaprima utilizada foi à espécie anchoita (Engraulis anchoita), capturada através de cruzeiros realizados pelo navio oceanográfico Atlântico Sul, da Universidade Federal do Rio Grande (FURG). O desenvolvimento do trabalho gerou três artigos. O primeiro artigo intitulou-se “Elaboração de almôndegas utilizando como matéria-prima anchoita (Engraulis anchoita)”. O objetivo do trabalho foi formular almôndegas à base de carne de pescado (Engraulis anchoita) e caracteriza-las quanto à composição proximal e aminoacídica. Foi verificado que em torno de 160 gramas do produto elaborado atende às necessidades aminoacídicas estipuladas pela FAO, para um adulto. Os resultados indicaram que o produto elaborado está de acordo com padrão de identidade estabelecido pela legislação brasileira. No segundo artigo “Capacitação de merendeiras na elaboração de produtos de pescado” o objetivo foi promover a capacitação de merendeiras na elaboração de produtos de pescado. Uma análise sobre comportamento, intenção do comportamento e atitude frente ao consumo de pescado, foi realizada. Além disso, também foi realizada uma avaliação sobre a percepção cognitiva das merendeiras em relação a segurança alimentar, antes e após o treinamento. Com relação ao comportamento, os resultados demonstraram que a população estudada apresentou a intenção de comer pescado, no entanto, não apresentou o comportamento de consumo. Os resultados de avaliação cognitiva e segurança alimentar demonstraram que o desenvolvimento do curso foi satisfatório, uma vez que novas percepções e conhecimentos sobre segurança alimentar foram adquiridos pelas merendeiras. O terceiro artigo “Respostas hedônicas e associação de palavras para melhor compreensão da aceitação de produtos de pescado na merenda escolar” teve como objetivo avaliar a aceitação de almôndega de pescado (Engraulis anchoita) junto à merenda escolar de uma escola da rede pública de ensino. Os resultados demonstraram que a idade e aceitação obedecem a uma relação inversa na aceitação de produtos de pescado. A avaliação cognitiva possibilitou identificar que as percepções que melhor explicam a aceitação das almôndegas de pescado pelos escolares estão relacionadas com os atributos hedônicos e sensoriais do produto. Em suma, o desenvolvimento dessa dissertação demonstrou que a elaboração de almôndegas de pescado (Engraulis anchoita) destinadas à merenda escolar surge como uma importante ferramenta para impulsionar a inserção do pescado na merenda escolar e contribuir para uma educação alimentar quanto ao consumo de pescado.

Extreme abiotic factors, such drought combined with heat waves and/or high UVB radiation are predicted to become more frequent in the future. The impact on plant production of these challenges on multipurpose Moringa oleifera L. remains unclear. A susceptibility of this species may lead to increase poverty in endangered regions. M. oleifera is a woody species native from sub-Himalaya regions under high climate stress pressure. The interest on this species is emerging due to its several medicinal properties and its nutritional value. Agropharmaceutical industry is interest in this species too. To understand the impact of increased climate factors, young (2 months old) plants of this species were exposed to water deficit (WD) and UVB (alone or combined). WD and WD+UVB imposition consists of unwater for 4 days. After 1 day withholding water, UVB and WD+UVB were irradiated with 26.3 kJ m-2 distributed per 3 days. Immediately after treatment exposition (1 day) and after 10 days, plant water status, growth, carbon metabolism and oxidative stress were measured. Overall no significant differences were observed in WD, regarding the parameters analysed, except on gas exchanges, MDA and phenols. The plants exposed to UVB showed, in general, more severe effects, as higher pigment content, MDA and membrane permeability, while no changes were observed in the total antioxidant activity. Plants exposed to UVB+WD, despite changes observed, the impact was lower than the one observed in UVB exposed plants, meaning that a protective/adaptive mechanism was developed in the plants under combined stressors. On the other hand, in all treatments the net CO2 assimilation rate decreased. Results suggest that M. oleifera has some tolerance to WD and UVB, and that develops mechanism of adaptation to these two types of stress that often arise in combination under a climate change scenario.

The fish meat has a particular chemical composition which gives its high nutritional value. However, this food is identified for being highly perishable and this aspect is often named as a barrier to fish consumption. The southwestern Paraná region, parallel to the country's reality, it is characterized by low fish consumption; and one of the strategies aimed at increasing the consumption of this important protein source is encouraging the production of other species besides tilapia. Within this context, it is necessary to know about the meat characteristics. In this sense, the objective of this study was to evaluate the technological potential of pacu, grass carp and catfish species. To do so, at first, it was discussed the chemical and biometric assessment under two distinct descriptive statistical methods, of the three species; and it was also evaluated the discriminating capacity of the study. In a second moment, an evaluation of effects done by two different processes of washing (acid and alkaline) regarding the removal of nitrogen compounds, pigments and the emulsifying ability of the proteins contained in the protein base obtained. Finally, in the third phase, it was aimed to realize the methodology optimization in GC-MS for the analysis geosmin and MIB (2-metilisoborneol) compounds that are responsible for taste/smell of soil and mold in freshwater fish. The results showed a high protein and low lipid content for the three species. The comparison between means and medians revealed symmetry only for protein values and biometric measurements. Lipids, when evaluated only by the means, overestimate the levels for all species. Correlations between body measurements and fillet yield had low correlation, regardless of the species analyzed, and the best prediction equation relates the total weight and fillet weight. The biometric variables were the best discriminating among the species. The evaluation of the washings, it was found that the acidic and basic processes were equally (p ≥ 0.05) efficient (p ≤ 0.05) for the removal of nitrogen compounds on the fish pulps. Regarding the extraction of pigments, a removal efficiency was recorded only for the pacu species, the data were assessed by the parameters L *, a *, b *. When evaluated by the total color difference (ΔE) before and after washing for both processes (acid/alkaline) the ΔE proved feasible perceived by naked eye for all species. The catfish was characterized as the fish that presents the clearest meat with the basic washing considered the most effective in removing pigments for this species. Protein bases obtained by alkaline washes have higher emulsifying capacity (p ≤ 0.05) when compared to unwashed and washed in acid process pulps. The methodology applied for the quantification of MIB and geosmin, allowed to establish that the method of extraction and purification of analytes had low recovery and future studies should be developed for identification and quantification of MIB and geosmin on fish samples.

As microalgas têm sido foco de muitos estudos tendo em vista sua grande aplicabilidade na indústria de alimentos e farmacêutica, como também nas áreas da biomedicina e ambiental. A Spirulina é uma microalga que possui alto valor nutricional, apresenta alto teor proteico e é rica em substâncias bioativas. Esta microalga apresenta em sua composição compostos como glicolípidios, fosfolipídios e lipídios neutros, que por sua vez possuem efeito biossurfactante. Assim, o objetivo deste estudo foi verificar a potencialidade de produção de biossurfactantes a partir de diferentes cepas de Spirulina. Para isso, foram realizados experimentos utilizando Delineamento Fatorial Completo 22 , visando avaliar a influência da concentração de fósforo e nitrogênio no cultivo das microalgas Spirulina platensis Paracas, Spirulina platensis LEB 52 e Spirulina sp. LEB 18, como também nos extratos oriundos das microalgas, através da medida da tensão superficial. Foi também avaliada a influência destes nutrientes em extratos de Spirulina platensis LEB 52 e Spirulina sp. LEB 18 a partir do índice de emulsificação e diâmetro médio das gotículas das emulsões preparadas a partir dos extratos. Para extrações de biossurfactantes foram testados os solventes metanol, etanol e hexano. Nas formulações das nanoemulsões utilizou-se homogeneizador de alta velocidade, como fase aquosa os extratos oriundos das microalgas e como fase oleosa, óleo de girassol. As formulações foram preparadas utilizando-se diferentes concentrações da fase aquosa e oleosa, bem como diferentes velocidades e tempos de agitação. De acordo com os cultivos de Spirulina platensis Paracas realizados foi verificado que o cultivo que atingiu maior valor de concentração máxima de biomassa e maior produtividade foi realizado com 114 mg.L-1 de fósforo e sem adição de nitrogênio. Porém em relação às microalgas Spirulina platensis LEB 52 e Spirulina sp. LEB 18, as variáveis fósforo e nitrogênio não apresentaram influência significativa na concentração máxima de biomassa e produtividade máxima. O extrato que apresentou a menor tensão superficial (26,75 mN.m-1 ) foi verificado quando foi utilizado etanol como solvente, sendo este obtido a partir de cultivo da microalga Spirulina sp. LEB 18 realizado sem adição de nitrogênio e de fósforo. Em relação ao índice de emulsificação foram atingidos valores superiores a 59%, porém as concentrações utilizadas de nitrogênio e fósforo não apresentaram influência significativa nesta resposta. Neste trabalho foi possível obter nanoemulsões estáveis por até 30 d e com diâmetro médio de gotículas de até 532 nm. Os resultados obtidos neste trabalho são favoráveis à pesquisa na aplicação tanto dos extratos microalgais como das nanoemulsões obtidas apresentando potencialidade de uso em diversos processos industriais, como nas áreas ambiental, farmacêutica, cosmética e alimentos.

O rápido crescimento da procura e na produção de Physalis está associado às suas características nutracêuticas e medicinais, por estarem associadas ao bemestar e à saúde. O reconhecimento e o conceito da qualidade dos frutos é cada vezmais importante, abrangendo a aparência do produto, o aroma, a textura e o valor nutricional. Com a realização deste trabalho pretendeu-se avaliar as propriedades físicoquímicas das bagas de physalis, bem como os conteúdos em compostos bioativos com potenciais benefícios para a saúde humana. Neste trabalho foi avaliada uma variedade de physalis (Physalis peruviana L.), sendo os frutos provenientes de uma exploração localizada na região Norte-Centro de Portugal. Foram realizadas análises físicas às 'physalis' frescas, tendo sido determinados o calibre, a cor e a textura. Na análise química, realizaram-se as determinações, da humidade, da fibra bruta, dos açúcares totais e redutores, da acidez total titulável, do teor de sólidos solúveis totais, do ácido ascórbico, dos carotenóides, dos compostos fenólicos totais, dos orto-difenóis e dos flavonóides. Foi ainda determinada a atividade antioxidante pelos métodos ABTS e DPPH e os extratos submetidos a condições simulantes do trato digestivo. As physalis em estudo apresentaram, em média um diâmetro de 1,69 cm e uma massa de 2,77 g. Relativamente à cor, as bagas apresentaram-se claras, (L*=65,72), e com uma tendência para a cor vermelha (a*=16,69), e uma forte intensidade amarela (b*=58,11). No que diz respeito à textura, a firmeza foi de 2,40 N e a elasticidade foi de 2,94 mm. Quanto à caracterização química foram encontrados os seguintes resultados: 83,02% de água, 4,61% de fibra, 8,79% de açúcares totais, 1,25% de acidez total, expressa em ácido cítrico. A amostra continha ainda 5,95 μg/g de carotenoides 26,7 mg de ácido ascórbico por 100 g. Os valores de fenóis totais (42,74 e 59,95 mg EAG/100 g) e de atividade antioxidante determinada pelo método DPPH (7,73 e 9,61 μmol TE/g), e pelo método ABTS (12,28 e 13,71 μmol TE/g) variam de acordo com as condições de extração. Verificou-se ainda uma correlação forte entre os dois métodos. No que diz respeito às condições in vitro de simulação das condições do trato digestivo, verificou-se um decréscimo ao longo do trato digestivo tanto no teor em compostos fenólicos bem como na atividade antioxidante. Em termos globais houve uma retenção de 43% dos compostos fenólicos totais e 26% da atividade antioxidante.
