Implications Overall, milk consumption provides health benefits to all age groups. Effects of cheese, butter, and fat-reduced and saturated fat-reduced milk and dairy products are less clear and require more research. Public health nutrition policy related to milk consumption should be based on the evidence presented and not solely on the believed negative effects of dietary fat. Milk is not a white elixir since no study has reported eternal youth from drinking it, but there is certainly no evidence that milk is a white poison!

In vitro, the addition of lipids to a carbohydrate food has been found to increase the digestibility of starch. In contrast, in vivo studies have shown that the addition of fat to a food can reduce the glycaemic response (GR). The aim of this study was to assess if delayed gastric emptying (GE) causes reduced GR with the addition of lipids to a carbohydrate food and if a relationship between GR and in vitro digestion of starch exists for high fat foods. Ten healthy volunteers were tested on five occasions after consuming pancakes containing 50 g of available carbohydrate and 202 kcal of sunflower oil, olive oil, butter, medium chain triglyceride (MCT) oil or a control containing no oil. GR was measured using fingerpick blood samples, satiety using visual analogue scales and GE using the 13C octanoic acid breath test. There was a significant difference in GR between the different pancake breakfasts (p = 0.05). The highest GR was observed following the control pancakes and the lowest following the olive oil pancakes. There were significant differences in GE half time, lag phase and ascension time (p < 0.05) between the different pancakes with the control pancakes having the shortest GE time and the MCT pancakes the longest. There was a significant difference in satiety parameters fullness (p = 0.003) and prospective consumption (p = 0.050), with satiety being lowest following the control pancakes. There was a significant inverse correlation between the GR and all satiety parameters. A significant inverse correlation (p = 0.009) was also observed between the digestibility of starch in vitro and GR in vivo. The paper indicates that the digestibility of starch in vitro does not predict the GR for high fat containing foods

The importance of milk in the human diet as a supplier of energy, high quality protein and other key nutrients, including calcium, is broadly accepted yet in the mind of many there remains uncertainty about whether or not these foods contribute to increased risk of cardiovascular and other chronic diseases. The evidence from long term prospective cohort studies that high milk consumption does not increase cardiovascular disease risk and indeed may provide benefit is now pretty unequivocal, although the effects of butter and cheese and benefits of fat reduced milk and saturated fat reduced milk are less certain. Milk is a crucial supplier of calcium, phosphorus and magnesium for bone growth and development in children and it is concerning that due to reduced milk consumption intake of these nutrients is often sub-optimal, particularly for female children. In addition, specific health issues in pregnant women and the elderly can be alleviated by milk or components of milk and these effects are not all explained by traditional nutrition.
Transcriptomic analysis of Enterohaemorrhagic Escherichia coli O157:H7 in response to plant extracts

Enterohaemorrhagic Escherichia coli (EHEC) are a group of food and contact-borne pathogens responsible for haemorrhagic colitis. The bacteria can be transmitted by contaminated meat, but importantly, also by plants. The bacteria can use plants as an alternative host, where they associate with both the leaves and the roots. Colonisation in the rhizosphere of plants is thought to be the main habitat for colonisation. Four different plant species, commonly associated with EHEC outbreaks, were infected with EHEC O157:H7 isolates Sakai and TUV 93-0 over ten days to assess the colonisation potential of the bacteria in both the phyllosphere and rhizosphere of plants. The rhizosphere was found to sustain a higher population level of bacteria over time in comparison to the phyllosphere, yet both strains were unable to utilize root exudates for growth. Global gene expression changes of EHEC O157:H7 strain Sakai were measured in response to plant extracts such as leaf lysates, root exudates and leaf cell wall polysaccharides from spinach cultivar Amazon and lettuce cultivar Salinas. Microarrays analysis showed a significant change in expression of 17 % of genes on exposure to leaf lysates of spinach. A more specific response was seen to spinach leaf cell wall polysaccharides with only a 1.5 % change. In contrast, when exposed to lettuce leaf cell wall polysaccharides a higher change of 4.8 % was seen. Genes that were differentially expressed belonged to multiple functional groups, including metabolism, indicating the utilization of plant-specific polysaccharides. Several areas of further investigation have been determined from this project, including the importance of culturing bacterial strains at a relevant temperature, the proposed lack of the type III secretion system in plant colonization by EHEC O157:H7 and the utilization of plant components for growth and persistence in the plant environment.

Partial budgeting was used to estimate the net benefit of blending Jersey milk in Holstein-Friesian milk for Cheddar cheese production. Jersey milk increases Cheddar cheese yield. However, the cost of Jersey milk is also higher; thus, determining the balance of profitability is necessary, including consideration of seasonal effects. Input variables were based on a pilot plant experiment run from 2012 to 2013 and industry milk and cheese prices during this period. When Jersey milk was used at an increasing rate with Holstein-Friesian milk (25, 50, 75, and 100% Jersey milk), it resulted in an increase of average net profit of 3.41, 6.44, 8.57, and 11.18 pence per kilogram of milk, respectively, and this additional profit was constant throughout the year. Sensitivity analysis showed that the most influential input on additional profit was cheese yield, whereas cheese price and milk price had a small effect. The minimum increase in yield, which was necessary for the use of Jersey milk to be profitable, was 2.63, 7.28, 9.95, and 12.37% at 25, 50, 75, and 100% Jersey milk, respectively. Including Jersey milk did not affect the quantity of whey butter and powder produced. Althoug further research is needed to ascertain the amount of additional profit that would be found on a commercial scale, the results indicate that using Jersey milk for Cheddar cheese making would lead to an improvement in profit for the cheese makers, especially at higher inclusion rates.

Cardiovascular diseases (CVD) are the leading cause of mortality and morbidity worldwide. One of the key dietary recommendations for CVD prevention is reduction of saturated fat intake. Yet despite milk and dairy foods contributing on average 27 % of saturated fat intake in the UK diet, evidence from prospective cohort studies does not support a detrimental effect of milk and dairy foods on risk of CVD. This paper provides a brief overview of the role of milk and dairy products in the diets of UK adults, and will summarise the evidence in relation to the effects of milk and dairy consumption on CVD risk factors and mortality. The majority of prospective studies and meta-analyses examining the relationship between milk and dairy product consumption and risk of CVD show that milk and dairy products, excluding butter, are not associated with detrimental effects on CVD mortality or risk biomarkers, that include serum LDL cholesterol. In addition, there is increasing evidence that milk and dairy products are associated with lower blood pressure and arterial stiffness. These apparent benefits of milk and dairy foods have been attributed to their unique nutritional composition, and suggest that the elimination of milk and dairy may not be the optimum strategy for CVD risk reduction.

The study was carried out to clarify the nature of symptomless infection by Botrytis cinerea and to what extent it differs from aggressive necrotic infection in Lactuca sativa (lettuce) and Arabidopsis thaliana. Symptomless plants were produced by dry spore inoculation in plants growing in controlled environmental conditions or in glasshouses. Plating out of surface-disinfected and non-surface-disinfected samples of inoculated, apparently healthy, plants on selective medium revealed that the fungus was spreading from the initial inoculation site to newly developing plant organs both internally and externally. Similar findings were obtained in microscope experiments in which host plants were inoculated with GFP labelled B. cinerea and symptomless spreading was monitored under confocal laser scanning microscope. Spore germination on leaf surface was followed by development of sub-cuticular vesicles and plant cell damage in the infected epidermal cell and a few nearby cells. Sparsely branched long hyphae arose from the vesicles and spread on the leaf surface; spread was mostly on the outer surface of the epidermal layer but occasionally below the cuticle or epidermal cells. In the late symptomless phase, mycelium arising from single vesicles formed several mycelial networks on leaves. Experiments were carried out to compare the extent of gene expression in symptomless and necrotic infections, using RT-qPCR. Expression of selected genes was quantified in tissue samples based on the amount of mRNA of the respective genes found. In both host species, the mRNA concentration of signalling genes bcg1, bmp1 and calcineurin, and the pathogenicity genes bcsod1 and bcpg1 were similar to or slightly greater in symptomless samples than in necrotic samples. The mRNA of the signalling gene bac and pathogenicity genes bcbot1 and bcnep1, were not detected or detected in lower abundance than in necrosis. In lettuce, the leaves developing distant from the site of inoculation showed similar results to A. thaliana, but in healthy leaves close to the site of inoculation mRNA concentrations of bac and bcnep1 were similar to necrotic samples. Thus, in both host species, the fungus grew along with the plant and moved to newly growing plant parts without producing symptoms; during this growth some pathogenicity genes were less expressed than in necrotic infection.

This work assesses the photocatalytic (TiO2/UV) degradation of a simulated acid dye bath (Yellow 3, Red 51, Blue 74, and auxiliary chemicals). Color and phytotoxicity removal were monitored by spectrophotometry and lettuce (Lactuca sativa) seeds as the test organism, respectively. Mineralization was determined by DOC analyses. Photocatalytic, photolytic, and adsorption experiments were performed, showing that adsorption was negligible. After 240 minutes of irradiation, it was achieved 96% and 78% of color removal with photocatalysis and photolysis, respectively. 37% of mineralization occurred with photocatalysis only. The dye bath was rendered completely non-toxic after 60 minutes of photocatalytic treatment; the same result was only achieved with photolysis after 90 minutes. A kinetic model composed of two first-order in series reactions was used. The first photocatalytic decolorization rate constant was k(1) = 0.062 min(-1) and the second k(2) = 0.0043 min(-1), approximately two times greater than the photolytic ones.

A alface é a hortaliça folhosa mais consumida no mundo. É uma rica fonte de vitaminas e sais minerais que está presente no cardápio diário de grande parte da população brasileira. O nitrogênio é o nutriente mais importante para a produção de alface. O excesso ou falta desse nutriente acarretam queda na produção e problemas de qualidade nutritiva, por excesso de nitrato. A dose recomendada de nitrogênio varia muito entre autores e órgãos oficiais. Uma parte do nitrogênio aplicado ao solo é perdida por lixiviação, contaminando os mananciais de água. Devido a isso é recomendada a sua aplicação em diversas etapas, cujo número também é variável nas recomendações. Este trabalho teve por objetivo determinar qual a dose de nitrogênio e seu modo de aplicação que proporcionam a maior produção, sem comprometer a qualidade da alface do tipo “lisa”, nas condições de clima e solo do município de Eldorado do Sul, região da Grande Porto Alegre, RS. Foram realizados dois estudos, um testando doses crescentes de nitrogênio sob a forma de uréia e o outro testando o parcelamento em diversas épocas do cultivo. Foram avaliados a produção de matéria fresca e seca, os teores de nitrogênio, amônio e nitrato no tecido seco, a extração e a eficiência do uso do fertilizante. Os resultados revelam que a dose de 200 kgha-1 foi a que proporcionou maior rendimento da cultura e que a dose de 400 kgha-1 diminui a produção. A extração de nitrogênio foi da ordem de 35,7 kgha-1 e os teores de nitrogênio, amônio e nitrato foram respectivamente de 2,45%; 651,7 mg.kg-1 e 153,6 mg.kg-1. O teor de nitrato na alface foi muito menor do que o considerado prejudicial a saúde humana. A eficiência do uso do fertilizante foi de 12,06% quando aplicado 200 kgha-1 de N em 3 épocas. A eficiência do uso do adubo foi aumentada em 26,35% com o parcelamento em 4 doses iguais de 50 kg ha-1, aplicadas no plantio e aos 15, 30 e 45 dias após, sem alterar a qualidade visual e nutricional da alface.

Do reconhecimento de que a. prática educativa tem uma especificidade no interior do conjunto das relações sociais, decorre a concepção de que a educação não pode ser encarada como um problema em si, mas articulada à realidade social em que se insere, enquanto uma prática contraditória que medeia interesses antagonicos. Partindo desse pressuposto, o presente trebalho se propõe a refletir sobre a questão da formação dos educa,dores e, mais especificamente, a questão da prática educativo do educador, seus condicionamentos e suas contradições. Para fazer um levantamento das questões e impasses que estão presentes na formação e na prática dos educadores, analisou-se os relatos das experiências de dois projetos educacionais; um envolvendo o 'Centro de ~ducêção da Universidade SlUlta '6~sula e outro o "Projeto NEC/USU", nos sub-projetes integrando a Universidade e escolas de Ensino Supletivo e, em escoléls de lQ grau da Rede Nunicipal do Hio de Janeiro. Nesse processo, desvendou-se a função que a forma- ção de educadores vem desempenhando, uma função de n=S-:DUCAÇÃO, onde um dos pontos-chave e contraditórios da questão seria a relação entre teoria e prática.'~ Propõe-se assim, um repensar desta relação dentro da escola.

Avaliou-se a influência da disposição de mangueiras gotejadoras nos canteiros e a injeção ou não de cloro na água de irrigação, nas condições sanitárias do solo e da alface americana irrigada (Lactuca sativa L.) com águas receptoras de efluentes urbanos. Foram realizadas análises microbiológicas de amostras de água do solo e da alface, no decorrer de todo o ciclo de cultivo. Objetivou-se determinar a possível existência de Salmonella spp. e de formas evolutivas de parasitos humanos e a quantidade de coliformes fecais, em pontos e épocas diferentes do experimento, impedindo assim o consumo da alface. Os resultados não indicaram a presença dos dois primeiros em nenhuma das amostras, mas sim de parasitos não humanos (nematóides) de vida livre no solo. em relação à quantidade de coliformes fecais (NMP ml-1), o valor encontrado na cultura atende às exigências da Secretaria de Vigilância Sanitária do Ministério da Saúde brasileiro, porém a presença dos nematóides em quantidades superiores ao permitido pela Organização Mundial de Saúde (OMS) inviabiliza o seu consumo.

This work was divided in two experiments, the first one to evaluate the lettuce productivity (cv Lucy Brown - American group) influenced by increasing and decreasing periods of coexisting with harmful plants, and a second moment, aiming at to evaluate the allelopathic potential of nutsedge (Cyperus rotundus L.) on the initial lettuce development.The experimental treatments constituted of six increasing and decreasing periods of coexisting with harmful plants, or control of it in the culture, considered from the plantation of the lettuce; being separate in two groups: Weeds and Clean weeds.In the second moment of the experiment, purple nutsedge aerial parts had been collected in the area of experiment 1, that drying had been after triturated and immersed in methylic alcohol P. A in ratios 10, 5,0 and 2.5% (w/ v) and later impregnated in germination paper, where had been placed lettuce seeds.The analyses of results, one concludes that the presence of C. rotundus plants can intervene with the germination, growth and development of the plants of lettuce cv Lucy Brown, and that initial periods of coexisting between the culture and the harmful are associate to an induction of the foliar area development, and can not express the reduction of productivity in the end of the cycle. Drawn out periods of competition induce the reduction of the lettuce foliar area, and then they will intervene with the yield productivity.

A alface-d'água (Pistia stratiotes) é uma das principais entre as macrófitas aquáticas que causam problemas em corpos hídricos no Brasil e são consideradas como plantas daninhas. O presente trabalho foi realizado com os objetivos de conhecer melhor a variabilidade genética dessa macrófita e relacionar essa variabilidade com a resposta à aplicação do herbicida glyphosate. Para isso, foram coletados indivíduos em 12 corpos hídricos em diferentes cidades do território nacional (Americana, Cambaratiba, Curitiba, Itapura, Jaboticabal, Lagoa Santa, Piraí, Rio Grande, Rubinéia, Salto Grande, Santa Gertrudes e Três Lagoas). Os acessos foram caracterizados pelo uso de marcadores RAPD (DNA Polimórfico Amplificado ao Acaso), que permitiram, com o auxílio de iniciadores aleatórios, a caracterização dos locos polimórficos identificados por uma matriz de ausência e presença de bandas. Utilizando essa matriz, a análise de agrupamento permitiu nítida classificação dos acessos em três grupos com diferenças genéticas entre eles. Um ensaio de controle químico, com plantas mantidas em vasos plásticos (5 L) e pulverizadas com o herbicida glyphosate nas concentrações de 0,0, 0,6, 1,2, 1,8 e 2,4 kg ha-1, identificou, utilizando avaliações aos 7, 14 e 21 dias após aplicação, que as duas maiores doses promoveram melhor efeito herbicida. Foi verificado também que os acessos de Curitiba e Cambaratiba apresentaram menor suscetibilidade ao herbicida glyphosate. Não houve correspondência entre a estrutura de grupos dos acessos pela análise multivariada de agrupamento com a técnica RAPD e a suscetibilidade da alface-d'água ao glyphosate.

O trabalho foi conduzido na UNESP, Jaboticabal-SP, de setembro/2003 a janeiro/2004, com objetivo de avaliar a viabilidade da consorciação de pimentão com as culturas de repolho, rúcula, alface e rabanete. O experimento constou de 15 tratamentos, correspondentes a 10 cultivos consorciados (combinações das cinco hortaliças) e cinco monocultivos. Utilizou-se o delineamento experimental em blocos casualizados, com seis repetições. Foram utilizados os híbridos Magali R e Kenzan, respectivamente, para pimentão e repolho; e as cultivares Vera, Cultivada e Crimson Gigante, respectivamente, para alface, rúcula e rabanete. As produtividades de pimentão e repolho em cultivo consorciado não diferiram significativamente das obtidas em monocultivo. Maior massa fresca de parte aérea de plantas de alface (438,86 g/planta) foi observada quando a alface foi consorciada com pimentão, diferindo estatisticamente dos demais cultivos que obtiveram em média 323,05 g/planta de alface. Aumento na produtividade de raízes comerciais de rabanete foi observado quando consorciado com pimentão, porém, foi significativamente superior apenas ao cultivo consorciado de pimentão+repolho+rabanete. A massa fresca da parte aérea da rúcula mostrou diferença estatística apenas entre os consórcios de pimentão+rúcula+alface e pimentão+repolho+rúcula. Exceto o consórcio pimentão+repolho que obteve índice de uso eficiente da terra (UET) de 1,92; todos os outros consórcios apresentaram UET superior a 2,0, com maior UET (2,64) obtido no consórcio pimentão+alface. A superioridade de 92 a 164% na produção de alimento por área dos consórcios sobre os monocultivos, demonstra a viabilidade dos policultivos e maior eficiência do uso da terra.

Avaliou-se a produtividade de grupos de alface e da rúcula, em consórcio, em relação aos seus cultivos solteiros, na UNESP Jaboticabal, em condições de campo, em duas épocas de cultivo, maio a agosto e setembro a novembro de 2001, sob delineamento de blocos casualizados, com quatro repetições. Os tratamentos constaram de combinações dos fatores grupos de alface (crespa, cv. Vera; lisa, cv. Elisa e americana, cv. Tainá), sistemas de cultivo (consórcio e cultivo solteiro) e épocas de semeadura da rúcula para o estabelecimento do consórcio [0; 7 e 14 dias após o transplante (DAT) da alface]. As maiores matérias fresca e seca de alface foram obtidas na primavera, com destaque para a alface americana. As alfaces não foram afetadas pelo sistema de cultivo. A maior matéria fresca de rúcula, no outono-inverno, foi obtida em consórcio, a 0 DAT, com as alfaces crespa e lisa e, aos 7 DAT com americana, enquanto na primavera, quando foi consorciada aos 7 DAT com alface crespa e a 0 DAT com alfaces do grupo lisa e americana. A rúcula teve sua matéria seca reduzida nos consórcios estabelecidos tardiamente, aos 14 DAT. Os cultivos consorciados apresentaram-se superiores aos cultivos solteiros entre 5 e 93%, segundo o índice de uso eficiente da terra. Os maiores índices de uso eficiente da terra foram obtidos com os consórcios de rúcula e alface crespa a 0 DAT (1,93), no outono-inverno e pelas mesmas hortaliças aos 7 DAT (1,84), na primavera.
