[EN] This study defines and proposes a measurement scale for social entrepreneurship (SE) in its broadest sense. The broad definition of SE covers for-profit firms that use social aims as a core component of their strategy. By pursuing social aims, these firms can boost the value of their products or services for consumers or exploit new business areas. Under this broad definition of SE, profit-seeking and the pursuit of social aims converge, thereby revealing a form of SE that has received little attention in either theoretical or empirical research. To fill this research gap, the present study proposes a measurement scale to measure broad SE in firms. The process used to build the scale draws upon research by Churchill (1979) and DeVellis (1991) and combines the Delphi technique, a pre-test questionnaire and structural equation modelling. The main aim of this research is to develop a scale capable of measuring broad SE in firms. The theoretical basis for the scale is supported by an empirical study in the hotel sector. The scale provides a valid, reliable instrument for measuring broad SE in firms. The scale meets all sociometric properties required of measurement scales in the social sciences, namely dimensionality, reliability and validity.

There are good possibilities for expanding the consumer sector in both the traditional and nontraditional marine products. Frozen shrimp continues to be the item of highest demand in foreign markets. Individual quick frozen (IQF) prawns which are indeed value added products and have already penetrated international markets elicit export incentive from development agencies like the Marine Products Export Development Authority. With the projected potential of 1.8 lakh tonnes of cephalopods against the current yield of 13,000 tonnes, there are good prospects of increasing exports of frozen squid and cuttlefish. The technology of packing fish in retortable pouches as an alternative to canning has now been perfected. Salted fish mince has good market potential in India and abroad.

The paper deals with an overview on the preservation of fish by freezing process. Until a few years ago the surplus catches of fish, prawns were being dried, salted or pickled. The Kerala coast had always yielded large catches of prawns and about 5000 tons of dried prawns were annually exported to Burma and other Eastern countries. The Government of India looking at the great potential of this industry, has now, with a view to encourage exports, provided a series of incentives towards this end.
