Vinhos licorosos são elaborados com uvas em estágio muito avançado de maturação ou colhidas e após desidratadas. São muito produzidos em diversos países, mas ainda incipientes no Brasil. Na safra 2016, uvas das variedades Merlot, Petit Verdot e Teroldego foram colhidas ao atingirem teor de sólidos solúveis totais de cerca de 18° Brix e desidratadas em casa de vegetação durante 22 dias. Nesse período, as bagas perderam cerca de 40% do peso. A seguir, foram transportadas ao laboratório de microvinificação e, para cada variedade, divididas em dois lotes de mesmo peso.

No Brasil, a viticultura ocupa uma área de aproximadamente 71 mil hectares, com vinhedos estabelecidos desde o extremo sul do País, em latitude de 31 o Sul, até regiões situadas muito próximas ao equador, em latitude de 5 o Sul. Em função da diversidade ambiental, existem no País pólos vitícolas típicos de regiões temperadas, caracterizadas por um período de repouso hibernal; pólos em áreas subtropicais, onde a videira é cultivada com dois ciclos anuais, definidos em função de um período de temperaturas mais baixas, nos quais há risco de geadas; e pólos de viticultura tropical, onde é possível a realização de podas sucessivas, com a realização de dois e meio a três ciclos vegetativos por ano. Nos últimos anos, as estatísticas oficiais registram uma produção de uvas que varia em torno de 1,2 milhão de toneladas por ano. Deste volume, cerca de 45% é destinado ao processamento para a elaboração de vinhos, sucos e outros derivados, e 55% comercializado para o consumo in natura no mercado interno e exportação.

The production and commercialization of Brazilian grape juice is increasing annually, mainly due to its typicality, quality, and nutritional value. The present research was carried out in view of the great significance of Brazilian grape juice for the grape and wine industry. The purpose of this study, therefore, was to assess its composition as well as the discrimination between grape juice and other beverages. Twenty four samples of whole, sweetened, and reprocessed grape juices, grape nectar, and grape beverage were evaluated. Classical variables were analyzed by means of physicochemical methods; tartaric and malic acids, by HPLC; methanol, by gas chromatography; minerals, by atomic absorption spectrophotometry. These products were discriminated by the Principal Component Analysis (PCA). Results show that whole and sweetened grape juices were discriminated from other grape products because they featured higher values of total soluble solids, tartaric and malic acids, most minerals, phenolic compounds, and K/Na ratio, whereas grape nectar and grape beverage presented higher values of ºBrix/titratable acidity ratio. Reprocessed juice was discriminated due to its higher concentrations of Li and Na and lower hue.

Specialty coffees can be differentiated in various ways, including the environmental conditions in which they are produced and the sensory composition of the drink. This study aimed to evaluate the effect of altitude, slope exposure and fruit color on the sensory attributes of cafes of the region of Matas de Minas. Sampling points were georeferenced in four altitude ranges (< 700 m; 700 < x> 825 m, 825 < x < 950 m and > 950 m) of the coffee crop; two fruit colors of var. Catuaí (yellowand red); and two slope exposures (North-facing and South-facing). Coffee fruit at the cherry stage were processed andsubmitted to sensory analysis. The sensory attributes evaluated were overall perception, clean cup, balance, aftertaste, sweetness, acidity , body and flavor, which made up the final score. The scores were examined by ANOVA and means werecompared by the Tukey test (p < 0.05). From the sensory standpoint, coffee fruits of both colors are similar, as well as the cof fees from both slope exposures when these factors were analyzed separately . However , at higher altitudes, Y ellow Catuaí produces coffees with better sensory quality . Similarly , coffees from North-facing slopes, at higher altitudes produce better quality cup. The altitude is the main factor that interferes with coffee quality in the area. All factors together contribute tothe final quality of the beverage produced in the region of Matas de Minas.
