The use of bovine rumen protein (raw and extruded) as a replacement for extruded soy protein concentrate in three meat products (pork sausage, chicken hamburger, and kibbe) was investigated. Similarity between rumen and soy protein meat products was assessed using triangle tests and sensory acceptability evaluated by consumer panelists using a nine-point hedonic scale. The addition of raw rumen protein was detected in all meat product types tested, while extruded rumen protein was only detected in kibbe. The addition of raw rumen protein decreased the acceptability of pork sausage aroma and flavor, but improved kibbe appearance, texture and overall acceptability. The addition of extruded rumen protein reduced the acceptability of chicken hamburger texture, but improved pork sausage flavor. Replacement of soy protein by bovine rumen protein is feasible based upon sensory results, but depended upon its form and the type of meat product to which it was added. (C) 2011 Elsevier Ltd. The aim of this study was to evaluate the viability of the use of spent laying hens` meat in the manufacturing of mortadella-type sausages with healthy appeal by using vegetable oil instead of animal fat. 120 Hy-line (R) layer hens were distributed in a completely randomized design into two treatments of six replicates with ten birds each. The treatments were birds from light Hy-line (R) W36 and semi-heavy Hy-line (R) Brown lines. Cold carcass, wing, breast and leg fillets yields were determined. Dry matter, protein, and lipid contents were determined in breast and leg fillets. The breast and legg fillets of three replicates per treatment were used to manufacture mortadella. After processing, sausages were evaluated for proximal composition, objective color, microbiological parameters, fatty acid profile and sensory acceptance. The meat of light and semi-heavy spent hens presented good yield and composition, allowing it to be used as raw material for the manufacture of processed products. Mortadellas were safe from microbiological point of view, and those made with semi-heavy hens fillets were redder and better accepted by consumers. Values for all sensory attributes were evaluated over score 5 (neither liked nor disliked). Both products presented high polyunsaturated fatty acid contents and good polyunsaturated to saturated fatty acid ratio. The excellent potential for the use of meat from spent layer hens of both varieties in the manufacturing of healthier mortadella-type sausage was demonstrated.

Footemineite, ideally Ca2Mn2+square Mn22+Be4(PO4)(6)(OH)(4)-6H(2)O, triclinic, is a new member of the roscherite group. It occurs on thin fractures crossing quartz-microcline-spodumene pegmatite at the Foote mine, Kings Mountain, Cleveland County, North Carolina, U.S.A. Associated minerals are albite, analcime, eosphorite, siderite/rhodochrosite, fairfieldite, fluorapatite, quartz, milarite, and pyrite. Footemineite forms prismatic to bladed generally rough to barrel-shaped crystals up to about 1.5 mm long and I mm in diameter. Its color is yellow, the streak is white, and the luster is vitreous to slightly pearly. Footemineite is transparent and non-fluorescent. Twinning is simple, by reflection, with twin boundaries across the length of the crystals. Cleavage is good on {0 (1) over bar1}) and {100}. Density (calc.) is 2.873 g/cm(3). Footemineite is biaxial (-), n(alpha) = 1.620(2), n(beta) = 1.627(2), n(gamma) = 1.634(2) (white light). 2V(obs) = 80 degrees, 2V(calc) = 89.6 degrees. Orientation: X boolean AND b similar to 12 degrees, Y boolean AND c similar to 15 degrees, Z boolean AND a similar to 15 degrees. Elongation direction is c, dispersion: r > v or r < v, weak. Pleochroism: beta (brownish yellow) > alpha = gamma (yellow). Mossbauer and IR spectra are given. The chemical composition is (EDS mode electron microprobe, Li and Be by ICP-OES, Fe3+:Fe2+ y Mossbauer, H2O by TG data, wt%): Li2O 0.23, BeO 9.54, CaO 9.43, SrO 0.23, BaO 0.24, MgO 0.18, MnO 26.16, FeO 2.77, Fe2O3 0.62, Al2O3 0.14, P2O5 36.58, SiO2 0.42, H2O 13.1, total 99.64. The empirical formula is (Ca1.89Sr0.03Ba0.02)Sigma(1.94)(Mn-0.90(2+)square(0.10))Sigma(1.00)(square 0.78Li0.17Mg0.05) Sigma(1.00)(Mn3.252+Fe0.432+ Fe0.093+Al0.03)Sigma(3.80) Be-4.30(P5.81Si0.08O24)[(OH)3.64(H2O)0.36]Sigma(4.00)center dot 6.00H(2)O . The strongest reflection peaks of the powder diffraction pattern [d, angstrom (1, %) (hkl)] are 9.575 (53) (010), 5.998 (100) (0 (1) over bar1), 4.848 (26) (021), 3.192 (44) (210), 3.003 (14) (0 (2) over bar2), 2.803 (38) ((1) over bar 03), 2.650 (29) ((2) over bar 02), 2.424 (14) (231). Single-crystal unit-cell parameters are a = 6.788(2), b = 9.972(3), c = 10.014(2) A, (x = 73.84(2), beta = 85.34(2), gamma = 87.44(2)degrees,V = 648.74 angstrom(3), Z = 1. The space group is P (1) over bar. Crystal structure was refined to R = 0.0347 with 1273 independent reflections (F > 2(5). Footemineite is dimorphous with roscherite, and isostructural with atencioite. It is identical with the mineral from Foote mine described as ""triclinic roscherite."" The name is for the Foote mine, type locality for this and several other minerals.

Background: Human infection by the pork tapeworm Taenia solium affects more than 50 million people worldwide, particularly in underdeveloped and developing countries. Cysticercosis which arises from larval encystation can be life threatening and difficult to treat. Here, we investigate for the first time the transcriptome of the clinically relevant cysticerci larval form. Results: Using Expressed Sequence Tags (ESTs) produced by the ORESTES method, a total of 1,520 high quality ESTs were generated from 20 ORESTES cDNA mini-libraries and its analysis revealed fragments of genes with promising applications including 51 ESTs matching antigens previously described in other species, as well as 113 sequences representing proteins with potential extracellular localization, with obvious applications for immune-diagnosis or vaccine development. Conclusion: The set of sequences described here will contribute to deciphering the expression profile of this important parasite and will be informative for the genome assembly and annotation, as well as for studies of intra- and inter-specific sequence variability. Genes of interest for developing new diagnostic and therapeutic tools are described and discussed.

The electrochemical methods cyclic and square-wave voltammetry were applied to develop an electroanalytical procedure for the determination of N-nitrosamines (N-nitrosopyrrolidine, N-nitrosopiperidine and N-nitrosodiethylamine) in aqueous solutions. Cyclic voltammetry was used to evaluate the electrochemical behaviors of N-nitrosamines on boron-doped diamond electrodes. It was observed an irreversible electrooxidation peak located in approximately 1.8 V (vs. Ag/AgCl) for both N-nitrosamines. The optimal electrochemical response was obtained using the following square-wave voltammetry parameters: f = 250 Hz, E(sw) = 50 mV and E(s) = 2 mV using a Britton-Robinson buffer solution as electrolyte (pH 2). The detection and quantification limits determined for total N-nitrosamines were 6.0 x 10(-8) and 2.0 x 10(-7) mol L(-1), respectively.

This document constitutes itself a thesis for a master¿s, partial fulfillment for getting a master¿s degree in Public and Business Management. The subject is a research on the influence of the attribute of safety in the segmentation of pork in the northwest border of the State of Rio Grande do Sul, Brazil, involving a bibliographic review related to the theme, and also an explorative research in order to identify the characteristics of the sector. From this information, a descriptive research is carried out from data collected in stores wich commercialize pork products in Santa Rosa, reaching a comprehensive undestanding on the subject. The main results of the research are the theoretical building of the thematic support concerning the safety of the food; the use of interviews aiming at verifying the importance of different attributes of pork which the consumer consider important and also the identification of segments based on these assessments. The conclusions from the research show that the consumers in general consider of high importance the safety of the food, and it is due to the fact that pork is still considered a product which offers a high risk at consumption. Consumers still have a preconceived idea about pork, because years ago, hog breeding was conducted with precarious standards of hygiene. It is imperative that the related business and producers divulge the advances of the sector in order to destroy this negative concept. The study identified three segments of market to the consumer of in natura pork: the first emphasized attributes are the inspection and the presentation of the product (cluster 1), flavour and softness stand out as the second ones. Finally, the third most important attributes that consumers consider when picking a pork product are its price and its aspect. It also favours further studies wich can provide the formulation of new marketing strategies to order products that form part of this agrolimentary system, giving this segment opportunity to boost its business and improve its approach to its consumer.

Este trabalho de tese é um estudo exploratório que pretende abordar a história do Grupo Sadia com o objetivo de identificar e caracterizar teoricamente a evolução das estratégias de crescimento adotadas pela empresa ao longo de sua trajetória de expansão iniciada em 1944 e, paralelamente, verificar se ocorreram rearranjos organizacionais em função das estratégias adotadas.

How do presidents win legislative support under conditions of extreme multipartism? Comparative presidential research has offered two parallel answers, one relying on distributive politics and the other claiming that legislative success is a function of coalition formation. We merge these insights in an integrated approach to executive-legislative relations, also adding contextual factors related to dynamism and bargaining conditions. We find that the two presidential “tools” – pork and coalition goods – are substitutable resources, with pork functioning as a fine-tuning instrument that interacts reciprocally with legislative support. Pork expenditures also depend upon a president’s bargaining leverage and the distribution of legislative seats.

A disputa por investimentos privados, empreendida por governos locais, é um fenômeno comum em países federativos, sendo a oferta de incentivos fiscais, como a redução de impostos, instrumentos corriqueiramente utilizados. De tal forma, correntes teóricas postulam que esta disputa se assemelha a um modelo de concorrência perfeita, em que os eleitores buscam fixar residência nas localidades que lhes oferecem a cesta de impostos e serviços públicos que estão mais próximas de seus desejos. Alguns autores, entretanto, se opõem a este ponto de vista, alegando que tal concorrência leva a uma redução do bem-estar social dado pela baixa arrecadação tributária resultante. Deve-se destacar o fato de que, de uma forma geral, este conflito resulta do desejo de se promover o desenvolvimento econômico local, justificando-se a oferta de benefícios fiscais pela atração de empresas que, por sua vez, fomentam o emprego nas localidades onde se instalam. Assim, nesta tese, optou-se por analisar alguns aspectos relacionados à guerra fiscal no Brasil, sendo, em primeiro lugar, realizado um exercício econométrico sobre externalidades fiscais entre os estados brasileiros, sendo constatados indícios da competição tributária quando se considera a arrecadação de ICMS como um todo e em setores específicos, notadamente o comercial. Em seguida, no segundo capítulo, foi avaliado se a política de incentivos fiscais ao setor industrial do Ceará contribui efetivamente para a geração de empregos no Estado, concluindo-se que os resultados positivos são limitados a indústria calçadista. Finalmente, no terceiro capítulo, é abordado se esta política cearense é uma pork barreling, isto é, as transferências do setor público estadual para o privado resultam do apoio eleitoral dado ao partido que ocupou o Executivo Estadual no período de 1990 a 2006. Os resultados encontrados sugerem a existência de uma elasticidade positiva entre o volume de incentivos fiscais concedidos e a votação nos candidatos do PSDB ao cargo de governador.

A Salmonella sp. é uma das principais causas de doenças transmitidas por alimentos, principalmente de origem animal. Os suínos podem ser portadores assintomáticos de Salmonella sp. e, nessa condição, serem levados ao abate. Desta forma, a entrada de Salmonella sp. na cadeia de produção é uma preocupação para a indústria. Sabendo-se da importância deste microrganismo, pelo seu impacto na indústria e na saúde pública, este trabalho teve como objetivo determinar a prevalêncía de Salmonella sp. em suínos levados ao abate em um frigorífico sob inspeção federal no Rio Grande do Sul, e correlacionar com a contaminação de cortes de pernil. Para tanto, 64 amostras de conteúdo intestinal e 121 amostras de cortes de pernil coletadas em 4 visitas, foram submetidas ao isolamento e identificação de Salmonella sp. As amostras de Salmonella sp. foram avaliadas quanto a resistência a 14 antimicrobianos, através da técnica de difusão em ágar. Salmonella sp. foi isolada de 46,87% das amostras de conteúdo intestinal e de 49,59% dos cortes de pernil. Foi encontrado grande número de sorovares, sendo os mais prevalentes Panama e Bredeney. Das amostras isoladas, 60,8% apresentaram perfil de multiresistência, sendo os maiores índices de resistência a sulfonamida, ácido nalidíxico e tetraciclina. Utilizando o perfil de resistência a antimicrobianos de amostras de um mesmo sorovar forma comparadas quanto a sua similaridade e agrupadas em dendrogramas, observou-se grande diversidade nas linhagens isoladas. Os resultados demonstraram que a entrada de animais no frigorífico excretando Salmonella sp., pode contribuir para a contaminação do produto final. A diversidade de sorovares e linhagens pode representar que são várias as fontes de contaminação, tanto dos animais quanto do produto final.

O presente trabalho consiste na aplicação da simulação computacional como método de aprofundamento do estudo de mecanismos de leilões aplicados na alocação do direito de exploração das reservas de petróleo da camada do pré-sal. A camada do pré-sal está localizada na costa brasileira e apresenta um grande potencial em termos de reserva de óleo e gás. A função lance aplicada para os participantes criados computacionalmente foi estimada com base em dados experimentais e segue uma função exponencial. A simulação possibilita reproduzir o modelo de leilão considerando todas as características e parâmetros dos experimentos sem incorrer no custo da realização de novas sessões de leilão com participantes reais. Os leilões estudados foram o leilão de valores privados de 1° preço e o leilão de valores privados de 2° preço. Através dos resultados obtidos identificou-se que o leilão de valores privados de 1° preço é menos arriscado que o leilão de valores privados de 2° preço; no leilão com simetria, o Princípio de Equivalência de Receita é válido; a eficiência observada é menor em leilões assimétricos; o leilão de 2° preço comparado com o de 1° preço apresenta um tradeoff entre a eficiência e a receita do governo; e que considerando o aprendizado dos participantes, não se observam alterações significativas nas estatísticas analisadas à medida que os participantes se tornam mais experientes.

This paper provides new evidence on the determinants of the allocation of the US federal budget to the states and tests the capability of congressional, electoral and partisan theories to explain such allocation. We find that socio-economic characteristics are important explanatory variables but are not sufficient to explain the disparities in the distribution of federal monies. First, prestige committee membership is not conducive to pork-barrelling. We do not find any evidence that marginal states receive more funding; on the opposite, safe states tend to be rewarded. Also, states that are historically "swing" in presidential elections tend to receive more funds. Finally, we find strong evidence supporting partisan theories of budget allocation. States whose governor has the same political affiliation of the President receive more federal funds; while states whose representatives belong to a majority opposing the president party receive less funds.

The influence of the age in the volatile composition of Madeira wines made with Boal, Malvazia, Sercial and Verdelho varieties and aged in oak barrel during 1, 11 and 25 years old was been studied. For this purpose, the evolution of volatile compounds: higher alcohols, ethyl esters, fatty acids, furan compounds, enolic compounds, γ-lactones, dioxanes and dioxolanes, of the four most utilised varieties were determined using liquid–liquid extraction with dichloromeihane. Octan-3-ol was used as internal standard. The wines made with these varieties showed great differences in sugar content and small variations on pH and alcoholic degree. The results show that during ageing, the concentration of fatty acids ethyl esters, acetates and fatty acids decrease significantly contrarily to the great increase of ethyl esters of diprotic acids. There is a strong correlation between sotolon, 2-furfural, 5-methyl-2-furfural, 5-hydroxymethyl-2-furfural and 5-ethoxymethyl-2-furfural with wine ageing. These findings indicate that these compounds can be used as ageing wine markers. Among the molecules studied, sotolon [3-hydroxy-4,5-dimethyl-2(5H)-furanone] was one of the few molecules present in concentrations above the perception threshold in Madeira wines. 5-Eihoxymethyl-2-furfural formed from 5-hydroxymethyl-2-furfural and 2-furfural, derived from sugars, are also involved in the aroma of sweet fortified white wines aged in oxidative conditions. The sensory properties change significantly after long periods of conservation.
