The need for universal access to health and the failure of the pedagogical model centered on the transmission of knowledge has led to changes in the training of health professionals. The objective of this study was to provide a new alternative for evaluating dental students through the development, validation and application of evaluation criteria based on the National Curriculum Guidelines (DCN in Brazil). Therefore, the study was conducted in three phases: development and validation of evaluation criteria of Dentistry courses based on the DCN; a pilot study to verify the applicability of the validated criteria and evaluation of the dentistry courses in the Northeast. In the first stage, a logical model was formulated, allowing for the construction of a criteria matrix, validated by a modified Delphi consensus technique. The validated matrix has the following dimensions: Profile of graduates, health care guidance, teaching and service integration, and pedagogical approach. The pilot study was conducted in five dental courses through a documentary study of the pedagogical project course (PPC), and application of validated questionnaires and interviews with course coordinators. The results of the pilot study indicate the possibility of being verified by means of validated criteria and using different methodological proposals, advances and curricular limitations facing the proposed reorientation of training recommended by DCN. The evaluation of Northeast Dentistry courses was carried out by applying a questionnaire validating a matrix of 30 course coordinators, including public and private institutions. The data were submitted to descriptive analysis, and also tested the difference between means and the correlation between the assessment of the coordinators in the dimensions and sub-dimensions with each other, among the general evaluation of courses and between the following variables: administrative category, time since last curriculum updating, participation in reorienting the training of health professionals programs, ENADE and CPC (Preliminary Concepts of the Course) scores in the year 2013. Positive correlation (p <0.01) was found between the means obtained by the perception of the coordinators in most dimensions, and also between them and the overall performance of the course. There were no significant differences between the coordinators’ perception about course performance and the administrative category (public / private). This difference is slightly higher when the average performance is compared with respect to time due to the last curriculum update, getting better performance in courses with the latest updated curriculum, even with there not 11 being this significant difference between dimensions. Better averages of performance were obtained in courses that do not participate in reorientation programs of professional training, with a significant difference (p<0.05) for the overall score and for all dimensions except the dimensions of teaching-service Integration (p = 0.064). There was no significant correlation between the assessment of coordinators in all dimensions, in the overall assessment or ENADE and CPC scores in 2013. The final instrument proposed in this study is a different alternative assessment for health training of both dentists and other professionals, considering that the DCN providing for the training and graduation of professionals is focused on the health needs of the population, integrated with the SUS (the National Brazilian Health System) and based on student-centered learning.

This thesis proposes environmental education as a strategy for the inclusion of sustainability in the academic education of higher level. The dentistry course has been the object of study, which is justified by the recognition of the need for reflection on environmental issues in the dental academia, initially based on professional experience of the author as a dental surgeon. The aim of this study is to investigate the scientific production of dentistry and its content related to environmental issues, in addition to expanding discussions and reflections on the need to insert environmental education as academic content. With the specific purpose of verifying the amount and analyze the content of scientific articles involving issues related to sustainability in dentistry, Chapter 01 presents research in leading journals portals available on the internet. Works were surveyed where sustainability and related issues were present and placed in a theoretical framework that analyzes the dental service inclusion in the dominant economic model. These procedures are intended to prove the hypothesis that the dental profession does not produce significant scientific content that relates the profession to the environment and sustainability. A literature review was conducted with the statement of dentistry changes from its origins to the front position to the dominant development model and exemplification of the deleterious effects of this model on the environment. In addition, there was a scientific research in journals portals available on the internet and investigated the amount and content of scientific articles involving issues related to sustainability in dentistry. Chapter 02 has the specific purpose of providing content to expand discussions and reflections on the need to insert environmental education in undergraduate courses in dentistry, such as insertion strategy into a new development model guided by sustainability. In this, students questionnaires were given the 8th dentistry course of the period the Federal University of Rio Grande do Norte (UFRN), to be understood environmental perception of learners and were obtained grants for proof of the thesis that environmental education applied dentistry has the potential to make people aware and willing to act practicing and propagating sustainability in their conduct. The overall results indicate little scientific production, as the research and work that relates to dentistry to sustainability and the issues related to the environment have not significantly been present in the syllabus of the undergraduate courses in dentistry, despite the interest shown by survey respondents When such issues are addressed. In this context, it is proposed fostering actions to environmental education, so that dental professionals are engaged in the construction of a new development model based on sustainability, as despite the environmental theme seems to be little explored in the academic and scientific world of dentistry, there interest from students and great potential multiplier for appropriate environmental behavior. After proving the hypothesis that the environment-related content are poorly explored in the academic and scientific world of dentistry, the main conclusions were recognizing the importance of environmental education as an interdisciplinary tool for environmental thematic approach in undergraduate courses dentistry, in addition to implementing this new pedagogical proposal in the professional practice of dentists, given their potential multiplier for environmental knowledge.

Este proyecto es la continuación de otro anterior de innovación docente: PIMCD 238/2014 “Implantación de un sistema de telepatología digital para la enseñanza práctica de Anatomía Patológica General (asignatura de 2º curso del Grado en Veterinaria)”. Hemos elaborado una colección completa de preparaciones digitalizadas para todas las prácticas de histopatología de APG. Con la colección completa de preparaciones histopatológicas digitalizadas, se han realizado también guías específicas de auto-ayuda para una mejor comprensión y observación de las mismas por parte del alumno, favoreciendo el auto-aprendizaje individualizado y en grupo. Así mismo, hemos realizado un módulo de auto-aprendizaje teórico-práctico en inglés para que el alumno auto-evalúe sus conocimientos de partes de la asignatura y los conocimientos transversales de otras asignaturas del grado en veterinaria. Como complemento se ha producido un juego de “pasapalabra” con contenidos de Anatomía Patológica, con el fin de estimular el aprendizaje mediante el juego. Ambos sistemas se encuentran en el campus virtual UCM para su utilización por los alumnos de veterinaria. Al finalizar el curso se enlazarán en la página web del Dpto.

No cabe duda que mi inicial vinculación profesional y durante largos años, a la inspección veterinaria en mataderos ha influido de manera fundamental a la hora de elegir el tema de este trabajo de investigación. La peculiaridad de que los mataderos fueran los únicos establecimientos alimentarios donde a tiempo completo se encuentra destinado un veterinario de la administración, y por otra parte la responsabilidad que asume al tener que determinar la aptitud para el consumo de las carnes sacrificadas, para lo cual debe desplegar todos sus conocimientos profesionales, pronto atrajeron mi interés en conocer los orígenes y la evolución de esta importante faceta veterinaria. Autores bien conocidos en la historia de la veterinaria como Sanz Egaña, habían investigado de forma prolija la incorporación de los veterinarios a la inspección de mataderos, dejando bien claro dónde y cuándo se origino este aspecto veterinario. Este trabajo intenta tener en cuenta diversos factores que pudieron influir y contribuir a que los veterinarios se iniciaran en la inspección de alimentos, así como explicar las circunstancias en las que se produjo, con la finalidad de contextualizar el origen y las causas desde varios puntos de vista. De ese modo, abordamos el estudio del abastecimiento de alimentos en Madrid para el consumo de la población, como contexto social y económico. El abastecimiento de alimentos fue una responsabilidad municipal, y siempre una cuestión de difícil gestión, en la que el Ayuntamiento debía procurar evitar fraudes, defraudaciones fiscales y garantizar la cantidad y calidad de los alimentos abastecidos, adaptándose permanentemente a los cambios de la población madrileña. El Ayuntamiento de Madrid desarrolló un autentico cuerpo legislativo con el fin regular y normalizar el abasto de carnes, inicialmente en forma de “bandos de buen gobierno” y después a través de reglamentos...

A global world. One World. The world globalization is the defining characteristic of the world today and that has encouraged major transformations in the international order since the mid-twentieth century. It is an unstoppable force for change that manifests itself in every aspect of life but more evident in the increasing internationalization and economic integration. However, globalization as a process in which markets, laws and policies are denationalized, tend to the interrelation of populations and individuals for a common good and is eroding the traditional distinction between domestic and foreign affairs. In a globalized world there is not control over economic forces and we are under an increased pressure to manage threats of globalization itself. For all sectors involved in food and agriculture, the trend towards internationalization national market is a source of flexibility and a wider range of options.
